Fecal contaminations on poultry carcasses, not easily discemable by human eyes, are potential harbor sites of pathogenic Escherichia Coli (E. coli O157:H7). Development of sensitive detection methods for fecal contamination is essential to ensure safe production of poultry products. Fluorescence has been shown to be very sensitive in detecting fecal and other biological substances that can harbor pathogens. In this study, fluorescence excitation-emission spectra of poultry fecal matter were compared with spectra for poultry skin and meat. Results indicated that the combinations of fluorescence intensities at the wavelength of 520 nm, 579 nm, 625 nm, and 635 nm with 411 nm excitation showed above 97% accuracy for differentiation of the contaminants from poultry tissues. Excitation and emission bands determined could be used for constructing a real-time fluorescence imaging device for detection of harmful residues on poultry carcasses.
This work was carried to evaluate production efficiency factor, carcass yield and meat quality with weeks of Large-type Korean native ducks. Korean native ducks (n = 90) from National Institute of Animal Science (RDA, Korea) were used in this work. Ninety ducks were divided into 6 groups (15 birds/group) and were fed with meat-type duck diets for 8 wk old. When ducks grew at specific wk (6, 7 and 8 weeks), 2 ducks per group were slaughtered at 6, 7 and 8 wk old. Production efficiency factor, carcass yield, partial meat and meat quality were researched in this work. There was no significant difference on livability with weeks, but body weight at 7 and 8 wk old was higher than that at 6 wk old (P<0.05). Feed conversion ratio at 6, 7 and 8 wk old were 2.25, 2.69 and 3.21, respectively, so there was significant difference with weeks (P<0.05). Production efficiency factor at 6, 7 and 8 wk old were 256.6, 199.8 and 153.0, respectively, so there was significant difference with weeks (P<0.05). Carcass yield at 8 wk old was higher than that at 6 and 7 wk old as 73.5% (P<0.05). Lightness at 6, 7 and 8 wk were 41.8, 39.0 and 38.1, respectively, and that at 6 wk old was the higher than other weeks (P<0.05). There was no significant difference on redness at 6, 7, and 8 wk old (P>0.05) and yellowness at 8 wk old was higher compared to other weeks (P<0.05). Cooking loss was the highest at 6 wk old as 31.6%, but water holding capacity was the highest at 8 wk old (P<0.05). There was no significant difference on shear force among weeks. pH at 6 wk old was the lower than that of other weeks as 5.84. Moisture content significantly decreased with weeks (P<0.05) and fat content at 8 wk was the highest as 1.88% (P<0.05). Protein content significantly increased with weeks until 20.9% at the age of 8 wk (P<0.05). Ash content at 7 and 8 wk old was the higher than that at 6 wk old (P<0.05). There was no significant difference on juiciness, tenderness, and flavor with weeks. Finally, these results may provide that shipping time at 7 wk old preferred to that at 6 and 7 wk old, but further research was needed because of deficiency of data.
A study was conducted to investigate the fattening performance, physico-chemical properties of breast meat, vaccine titers in cross bred meat type hybrid chicks fed organic sulfur. Total three hundred and sixty chicks of eight weeks old were replaced in individual cage from 8 to 10 weeks old. Four levels of organic sulfur (0, 1.0, 2.0, 4.0%) containing 45% sulfur were added into basal diet containing CP 19% and ME 2,950 kcal/kg. Weight gain, feed intake, fred conversion were weekly measured. The proximate composition, physico-chemical properties of breast meat, vaccine titer and sensory characteristics were examined at the end of experiment. Weight gain, feed intake and feed conversion of birds fed organic sulfur were not statistically different with control. There were no significant difference in feed intake and feed conversion. However, abdominal fat(%) of birds fed organic sulfur tended to increase compared with control. Crude fat of breast meat decreased significantly in organic sulfur treatments(P<0.05). The red color of breast meat seemed to increase but was not statistically different among the treatments. Cooking loss showed decrements significantly in organic sulfur treatments(P<0.05). Mechanical Hardness, cohesiveness and springiness were prone to be high and gumminess greatly high in breast meat of birds fed organic sulfur addition compared with control. Juiciness tended to increase and greasiness decreased(P<0.05) in organic sulfur treatments by the sensory evaluation. The overall acceptability of the breast meat was the highest at 2.0% organic sulfur added chicks(P<0.01). There were no different blood cholesterol, AST, ALT and BUN.

This study was designed to estimate effect of wood vinegar on meat quality in old Layer which was low production and low economic value. The old layer chickens were used to resource for income increase of layer farm and protein supply. Two hundred forty Isa Brown chickens were assigned with control(Broiler feed), Treatment 1 (Broiler feed with addition of domestic wood vinegar $0.8\%$) and Treatment 2(Broiler feed with addition of foreign wood vinegar $0.4\%$). Feed intake of control group was lower 3g than other treatments. This is the reason of result that what organic acid in wood vinegar of treatment groups affect to feed digestibility, The different of chicken production was depended on ingredient and included value of wood vinegar in domestic and foreign. Foreign wood vinegar have organic acids which that functionally act sexual Pheromone so that promote endocrine matter. This is reason that old Layer chicken increase to egg production rate. Treatment 2 group effect to thigh meat rather than breast meat and improve to value of crude fat and meat color. The Meat quality and sensory test of thigh meat of foreign wood vinegar was better appraise rather than that of domestic wood vinegar. Because foreign wood vinegar make to fine of meat tissue and to decline cooking loss and also to increase juiciness and tenderness on sensory test.
Objective: Detection of adulteration in processed meats is an important issue for some countries due to substitution of beef with a cheaper source of protein like poultry. In this study, the presence of chicken meat was investigated using real-time polymerase chain reaction (real-time PCR) and enzyme-linked immunosorbent assay (ELISA) techniques to verify adulteration of fermented sausage samples. Methods: A total of 60 commercial samples were collected from 20 establishments in three replicates including 10 fermented sausage manufacturers and 10 butchers to investigate the presence of chicken meat with the sequential use of real-time PCR and ELISA techniques. In addition, pH, moisture content, water activity and color values of the samples were determined. Results: Both real-time PCR and ELISA showed agreement on the presence or absence of chicken meat in 55 out of 60 fermented sausage samples and chicken meat was identified with both methods in 16 samples. Five samples produced inconsistent results for the presence of chicken meat in the first run. Nevertheless, the presence of chicken meat was verified with both methods when these samples were analyzed for the second time. In addition, the average physico-chemical values of the fermented sausage samples tested positive for chicken meat were not significantly different from some of those fermented sausage samples tested negative for the chicken meat. Conclusion: The sequential use of real-time PCR and ELISA techniques in fermented sausages could be beneficial for the government testing programs to eliminate false negatives for detection of adulteration with chicken meat. Furthermore, consumers should not rely on some of the quality cues including color to predict the adulteration of fermented sausages with chicken meat since there were no statistical differences among some of the samples tested positive and negative for chicken meat.

Rabbit meat has high nutritional and dietetic characteristics, but its consumption rate is comparatively lower than other meat types. The nutritional profile of rabbit meat, by comparison with beef, pork, and poultry, is attributed to relatively higher proportions of n-3 fatty acids and low amounts of intramuscular fat, cholesterol, and sodium, indicating its consumption may provide health benefits to consumers. But, the quality attributes of rabbit meat can be originated from different factors such as genetics, environment, diet, rearing system, pre-, peri-, and post-slaughter conditions, and others. Different rabbit breeds and the anatomical location of muscles may also affect the nutritional profile and physicochemical properties of rabbit meat. However, adequate information about the effect of those two factors on rabbit meat is limited. Therefore, cumulative information on nutritional composition and carcass and meat quality attributes of rabbit meat in terms of different breeds and muscle types and associated factors is more important for the production and processing of rabbits. Moreover, some studies reported that rabbit meat proteins exhibited angiotensin-converting enzyme inhibitory characteristics and antioxidant properties. The aim of this review is to elucidate the determinants of rabbit meat quality of different breeds and its influencing factors. In addition, the proven biological activities of rabbit meat are introduced to ensure consumer satisfaction.

The current study was conducted to evaluate the effect of music enrichment on the live body weight of chickens and meat quality grade of the carcasses. Fourteen flocks at four broiler farms with identical windowless houses were provided with identical starter and finisher diets. These were either exposed to classical music or not exposed to any music from the starter to slaughter age. At 30 days posthatch, the chickens were transported from farms to a slaughterhouse. Two hundred carcasses from each flock were randomly selected for measurement of the carcass traits by the licensed meat inspectors at the slaughterhouse. The live body weights at the slaughter age were not significantly different between the two treatments. In addition, music enrichment did not affect meat freshness (i.e., torrymeter values) nor did it affect other carcass trait variables including percentage of bruises, flesh blemishes, abnormalities, and quality A grade. In conclusion, music enrichment did not affect the body weight or carcass quality of broiler chickens.
A total of 528 broilers ($47{\pm}0.1g$; 1 day of age) were used in a 35-day feeding trial to evaluate probiotics, prebiotics and their interactive effects on growth performance, blood characteristics, relative organ weight and meat quality. Broilers were randomly distributed into 1 of 6 treatments on the basis of body weight (BW) (4 replicate pens per treatment, 22 broilers per pen). The dietary treatments were CON, basal diet; B, CON + 0.1 g kg-1 Bacillus subtilis; K, CON + 1 g kg-1 Kefir; G, CON + 1 g kg-1 ${\beta}-glucan$; GB, G + 1 g kg-1 Bacillus subtilis; and GK, G + 1 g kg-1 Kefir. The overall effects indicated that broilers fed the K, G and GK diets had greater body weight gain (BWG) than those fed the CON diet (P<0.05). The number of white blood cells increased (P<0.05) in the GB group compared with the CON, B and G treatments; however, the lymphocyte percentage in the B group was higher than in the G group. The weight of bursa fabricii was lower in the B and G groups compared to the K group (P<0.05), whereas a higher spleen weight was observed in chickens that were fed the GB and GK diets compared to the B group (P<0.05). The treatments did not affect the meat quality parameters, except for meat redness, which improved with all of the supplementation groups (P<0.05). The population of Lactobacillus spp. in gizzard was significantly higher in the K treatment compared with CON, B, G and GB. In conclusion, supplementation with kefir and ${\beta}-glucans$ improved growth performance.

An experiment was conducted to investigate whether Saccharomyces cerevisiae(S. cerevisiae) could improve the growth performance and meat quality of broiler chicks. Day old 160 male broiler chicks were fed one of the two experimental diets without (0.0 %) or with S. cerevisiae (3.0 %) for five wks. Each treatment consisted of eight cages with 10 chicks per cage. Feed and water were provided ad libitum. Although not significant, BW gains of S. cerevisiae fed chicks tended to increase during 4∼5 wk of age. The addition of S. cerevisiae into the control diet significantly lowered the shear force in raw drumstick meat (P<0.05). After 10 d of incubation, significantly lower levels of oxidation products were found (P<0.05) in drumstick meats and skin samples from broiler chicks fed diets enriched with S. cerevisiae compared to those of the control group, while in breast meats the significant difference was monitored after 6 d of incubation. It is concluded that dietary S. cerevisiae could improve the tenderness and oxidative stability of broiler meats.
The experiment was conducted to study the effect of sea urchin shell powder (SUSD) on the sensory evaluation, meat color, fatty acid and amino acid contents of chicken meat. One hundred sixty broilers were fed diets for five weeks containing 0, 1, 3 and $5\%$ of sea urchin shell powder. The shear forces of the treatment groups were higher than the control uoup and the water holding capacity (WHC) was higher in the control group (P<0.05). The heating loss and pH were not significantly different between control and treatment groups (P<0.05). The hardness, juiciness and flavor evaluated by sensory evaluation were improved by treatments, especially in T2 (P<0.05). The meat color of the treatments group showed redder and darker than that of the control group owing to lower L$\ast$ and higher a$\ast$ value. Among fatty acids, oleic acid contents of the treatment groups were higher than that of the control group. The treatment groups showed a significantly higher total amino acid content (P<0.05) compared to the control group. The results of this experiment indicated that dietary SUSP tended to improve the sensory evaluation.
