As the important pathogens of potato storage diseases, Fusarium solani, F. reseum, F. oxysporum, and Erwinia carotovora were isolated from rot potato tubers. The cut potato pieces of the three cultivars, Epicure, Irish Cobbler, and Superior were held in moist chambers of $4^{\circ},\;14^{\circ},\;24^{\circ},\;and\; 34^{\circ}C$ and 7 days and then rated for suberin and periderm development. The cut potato pieces thus treated were inoculated with the four organisms and held at $24^{\circ}C$ for 9 days and then rated for decay. As the temperature and period of holding increased, more suberin and periderm were developed with decrease in decay. Although there were differences in pathogenicity of the organisms, varietal reaction and protective barrier development, the effect of temperature and holding period had greater importance for decay prevention. At $4^{\circ}C$ within 7 days of holding period the potato pieces developed no protective barrier with severe decay. It is required to avoid placing cut potatoes directly in cold storage of the low temperature. At $34^{\circ}C$ the pieces developed abundant protective barriers even though decay occurred in somecases. Practically no decay was found with moderate protective barrier development after 3 days and 5 days at $24^{\circ}C\;and\;14^{\circ}C$, respectively. Since the potato pieces decayed occasionally during the holding period when they were held at the higher temperature, the holding at $14^{\circ}C$ for longer than 5 days is considered to be feasible for prevention of storage rots.
Recently, Pleurotus eryngii, King oyster mushroom is the main export item in South Korea mushroom industry. For appropriate transportation to Europe and USA markets, it is necessary to elucidate suitable conditions of storage and treatment of post-harvest during long time shipping. Whole mushrooms were packed with polypropylene anti-fog film (30 um) without trimming. The range of package weight and oxygen permeability of film were 200 g~400 g and 2000~5000 $cc/m^2$, 24 h,atm, respectively. The weight loss ratio was increased with increasing storage time. There were no big differences in weight loss ratio according to package weight and oxygen permeability of film at low temperature storage($4^{\circ}C$). In case of package weight is 400 g and oxygen permeability of film is 3000 $cc/m^2$, 24 h, atm. As a results of freshness, the optimum packing weight and oxygen permeability of film of P. eryngii were 400 g and below 2,000 $cc/m^2$, 24 h, atm, respectively.
This study was carried out in order to investigate sterilization effect and to extend storage periods of the Rubus coreanus by treating with tap water (TW), electrolyzed water (EW) and aqueous chlorine dioxide ($ClO_2$). After each treatment plot was soaked with 10, 50, 100, 200 ppm in each sterilizing solution within 30 sec, each treatment was compared during the storage time at room temperature and refrigerator temperature. As results of total plate count according to temperatures and periods, the microbial sterilizing power of each treatment plot was bigger at EW and $ClO_2$ treatment plots than the TW treatment plot; however, it sharply increased on the high concentration $ClO_2$ treatment plot. Futhermore, the cold storage treatment plot had more outstanding microbial sterilizing power than the room temperature treatment plot. As a result of observing the surface of the Rubus coreanus using scanning electron microscope (SEM), no microbe was seen in EW and $ClO_2$ treatment plot. The results of measuring enzyme activity showed a more significant decrease in EW and $ClO_2$ solutions treatment plot than TW treatment plot but gradually increased with time. The contents of total polyphenol revealed similar values on each treatment. The EW and $ClO_2$ treatment of the Rubus coreanus could be considered as good methods for inhibiting microbial growth in fresh vegetables and fruit, thereby contributing to quality maintenance.

The purpose of this study was to investigate damages of garlics occurred under cold storage and farmhouse storage condition, influence of cultural and environmental factors on storage spoilage of garlics, and to establish control strategies to reduce damages occurred under storage of garlics. Decays of garlics were highly related with cultural condition (paddy field or upland soil), ventilation, storage temperature and relative humidity, continuous cropping years, and harvesting stage. Early-harvested garlics were more decayed than late-harvested garlics. Garlics cultivated on paddy field were less decayed than ones cultivated on upland soil under farmhouse storage condition. The densities of Penicillium spp. and Fusarium spp. were higher on plot with long term continuous cropping cultivation history than on plot with short term continuous cropping cultivation history. However there is no relation between continuous cropping years and percent of decay of garlics. As a result of investigating influence of environmental factors on decay of garlics, P. hirsutum caused severe spoilage under high relative humidity condition, while F. oxysporum and Stemphyllium botryosum were not related with relative humidity. The three postharvest pathogens grew well above woe. In addition when P. hirsutum and S. botryosum were cultured for two months, they grew even at $-1^{\circ}C$. Except for environmental factors, wounds occurred through farming works. had an effect on storage spoilage of garlics. Garlics only hurt with a toothpick without inoculation of pathogens were decayed more severe than those inoculated with pathogens without wounds. Seven agro-chemicals showed highly suppressive effect were selected by measuring mycelial growth of three major pathogens of garlics on potato dextrose agar amended with 0.1% (v/v) of each fungicide. When they were foliar-sprayed on garlics 30 days before harvesting, it was confirmed that they suppressed storage spoilage of garlics. Also when garlics were sprayed with and drenched into the suspension of Benoram WP very after harvesting garlics, garlic damages by postharvest pathogens were reduced remarkably.

Agricultural systems in South Asian countries are dominated by smallholder farmers. Additionally, these farmers have limited access to pre- and post-harvest technologies due to their high initial cost. The lack of these technologies in postharvest handling is responsible for 20% to 44% of fruit and vegetable losses. These high losses are largely the result of a generally weak basic postharvest infrastructure for the preservation of products, which avoids damage from improper handling, transportation, packaging, and storage. High postharvest losses of products negatively affect food availability, food security, and nutrition, as the producer is able to sell less of the farm yield and the net availability of these food commodities for consumption is reduced. An underlying cause of these postharvest losses is the limited awareness and knowledge bases of stakeholders (researchers, farmers, governments, non-governmental organizations, and merchants) in the traditional supply chains in which these losses occur. The analysis presented in this paper explores the state of postharvest practice in South Asian countries and discusses options for low-cost postharvest technologies in the region that can support small-scale farmers and provide a viable pathway for supply to the market, joining with modern value chains and bringing about individual and regional reduction in postharvest losses of fruits and vegetables. The improvement of basic and simple low-cost technologies through precise research efforts has the potential to prevent such huge losses of products, and help meet the ever-increasing demand for food in South Asian countries.
Post-Harvest processing engineering is a field that studies prevention of the quality change of agricultural products during sorting, packaging, storage, and distribution after harvested. In distribution steps, agricultural products could be damaged by physical force, it is the main reason of low quality and they lost value of commodities. This study was performed to find the vibration characteristics of the peach, and to find the extent of the damage on the peach by fatigue stress. The vibration data was obtained on expressway and the vibration characteristics of peach was used to find the damage on the peach. To analyze the vibration characteristics of peach, the resonance frequency and vibration transmissibility were measured. The resonance frequency of the peach was 167.98 Hz and the transmissibility was 4.06 at resonance point. It was 150 ~ 250 Hz that the transmissibility was more than 1. And the transmissibility in simulated test was measured. When the trasmissibility was more than 1, the range was 15 ~ 65 Hz, and when it was less than 1, the range was 65 ~ 175 Hz. When the transmissibility was about 1, the range was 5 ~ 15 Hz. The damage and the vibration cycle numbers of peaches were compared with input frequency and acceleration. More damage and less cycle number happened in 30 Hz than in 62.5 Hz. The reason was that the transmissibility of 30 Hz was higher and the vibration displacement in lower frequency was more. The more acceleration and cycle number increased, the more the bruising volume of peaches increased. The bruising volume ratio for vibration fatigue was measured according to input acceleration and cycle number. Using measured data, regression models for bruising volume ratio(BVR) was developed as a function of the acceleration(A) and cycle number(CN) as follows. BVR = a * $A^b*$$(CN)^c$

Vietnam is one of a country with an important strategic position in economic development in the Asia Pacific region. In addition, Vietnam has a longtime agricultural more than 70% of agricultural labor. With favorable natural conditions, agricultural growth in Vietnam is'key'to the developing countries. However, Vietnam's agriculture has still encounter many problems due to drought, climatic conditions, natural disasters. The level of development and agricultural production is weak, the process of post-harvest storage is limited and particularly agricultural competitiveness with other countries is obstacles. In fact, the Government of Vietnam decided to cooperate with other countries have highly developed agriculture such as America, Korea, Japan... hoping to get help and promote agricultural development in a sustainable manner. Since 1992, Vietnam and Korea established formal diplomatic relations. During 20 years of cooperation and development, We have been obtained many satisfactory results not only in fields invest infrastructure, technological science but also exchange experience especially in the agricultural sector. From the Korea ODA project, Vietnam's agriculture in general has made significant progress. With vision, ODA projects continues to support the Central Highlands region in which the Da Lat city, Lam Dong province. Pass the cooperation between Dongguk University and Da Lat University has many positive results. Hopefully in the near future, the relationship between Vietnam and Korea in general will continue to grow strongly, the Korea ODA project will be continue to support Vietnam's agriculture in general and in particularly for the Central Highlands which in Da Lat City, Lam Dong province.
The red flour beetle, Tribolium castaneum, is one of the most common and economically important pests of stored cereal products worldwide. Furthermore, these beetles can act as vectors for several fungal post-harvest diseases. In this study, we collected T. castaneum from 49 rice processing complexes (RPCs) nationwide during 2016-2017 and identified contaminating fungal species on the surface of the beetles. Five beetles from each region were placed on potato dextrose agar media or Fusarium selection media after wet processing with 100% relative humidity at $27^{\circ}C$ for one week. A total of 142 fungal isolates were thus collected. By sequence analysis of the internal transcribed spacer region, 23 fungal genera including one unidentified taxon were found to be associated with T. castaneum. The genus Aspergillus spp. (28.9%) was the most frequently present, followed by Cladosporium spp. (12.0%), Hyphopichia burtonii (9.2%), Penicillium spp. (8.5%), Mucor spp. (6.3%), Rhizopus spp. (5.6%), Cephaliophora spp. (3.5%), Alternaria alternata (2.8%) and Monascus sp. (2.8%). Less commonly identified were genera Fusarium, Nigrospora, Beauveria, Chaetomium, Coprinellus, Irpex, Lichtheimia, Trichoderma, Byssochlamys, Cochliobolus, Cunninghamella, Mortierella, Polyporales, Rhizomucor and Talaromyces. Among the isolates, two known mycotoxin-producing fungi, Aspergillus flavus and Fusarium spp. were also identified. This result is consistent with previous studies that surveyed fungal and mycotoxin contamination in rice from RPCs. Our study indicates that the storage pest, T. castaneum, would play an important role in spreading fungal contaminants and consequently increasing mycotoxin contamination in stored rice.
Traditional cuisine reflects cooking traditions shaped by political, economic, social, cultural, and environmental conditions characterized by authenticity and uniqueness. Traditional food is not only a part of our cultural heritage but also a knowledge resource. Application of food science and technology in Korean traditional foods was reviewed from six points of view, including food preservation, fermentation, changes in food materials, utilization of food functionality, and packaging and development of cooking appliances. Books from disparate times were chosen in order to cover a wide range of materials from the past to the present. Food preservation and fermentation techniques were applied to various food materials. Combination of science and skills contributes to the accessibility of diverse food materials and better quality foods. Koreans use assorted and resilient plants, which have an abundance of functional substances such as food materials. Among cooking appliances, microwave oven and refrigerator are the most innovative products with huge influences on food eating patterns as well as lifestyle. Packaging effectively reduces post-harvest preservation losses, and better packaging has technical improvements for storage and distribution. Kimchi was chosen as an example in order to study technology from the past to the present. Availability of Kimchi cabbage, enrichment of functional ingredients, identification of useful microbial species, standardization of recipe for commercialization, prevention of texture softening, introduction of salted Kimchi cabbage and Kimchi refrigerators, and packaging were reviewed. The future of traditional foods in the market will be competitive. First, traditional foods market should be maintained to protect the diversity of food materials. Secondly, tailored foods for individuals should be considered using foods with functional properties. Information on health benefits would provide insights into health and traditional food products. Third, speedy transfer of new technology to the traditional food industry is needed to ensure food quality production and new opportunities in the market. Fourth, safety of traditional foods should be ensured without sacrificing the essential characteristics of culturally important foods. Improvement of logistics, distribution, and facility should be carried out. As demand for convenience foods increases, traditional foods should be developed into products.
Recently, silk farming trends are changed from silk production to functional production because of a slump in only silk production. The 'Functional silk farming production promotion and assistant ACT', which has been enacted and effective since 2009, provides an environment to create the integrated functional sericulture production program. The purpose of this study is to derive the current industry status and the development strategy resulting in promoting and creating a new value-added industry. The main items to be improved in current sericulture industry are production infra and facilities, post-harvest storage technology, processing and marketing, sericulture farming products trading, exporting and merchandised promoting, farm management and farm income etc. Future sericulture industry should be focus on Mulberry production and Processing instead of silk farming only for a new valued added industry.
