Effects of Temperature and UV Irradiation on Stability of Anthocyanin-Polyphenol Copigment Complex in Mulberry Fruits (오디에서 열처리와 자외선 조사가 Anthocyanin-Polyphenol Copigment Complex의 안전성에 미치는 효과)

  • Anthocyanin and polyphenolic compounds present in fruits of mulberry (Morus alba L.) were determined and the influence of temperature and UV irradiation on stability of the anthocyanin-copigment complex were investigated. The copigmentation substance selected in non-anthocyanin fraction from mulberry for the study included: phenolic acid (hydroxybenzoic acid) and flavonoid (quercetin-3-O-$\beta$-D-glucopyranoside). The copigmentation effect increased with the copigment content. UV irradiation had a stronger degradation effect on the copigmentation complex than heating at $80^{\circ}C$. The non-anthocyanin fraction of mulberry and isolated flavonoid (quercetin-3-O-$\beta$-D-glucopyranoside) from mulberry fruit predominated over other copigment substances.

  • Antioxidant properties and antioxidant activities were analyzed for water extracts and 50% and 70% ethanol extracts of the leaf of Angelica gigas Nakai. The polyphenol and flavonoid contents in water, 50%, and 70% ethanol extract of the leaf of Angelica gigas Nakai, it was found that the polyphenol contents were 18.75 mg GAE/g, 28.95 mg GAE/g, and 34.73 mg GAE/g, respectively, and flavonoid contents were respectively. The DPPH IC50 scavenging activity was 45.84 mg/mL, 36.44 mg/mL, 19.11 mg/mL, respectively, and theABTS+ radical scavenging ability (1 mg/mL) was 28.73%, 22.79%, and 12.70%, respectively. Tyrosinase inhibitory activity, 70% ethanol extract, 50% ethanol extract, and water extract 33.14%, and 4.53%, respectively. Nitrite scavenging activity, 70% ethanol extract, 50% ethanol extract, and water extract were in the order of 1 mg/mL scavenging activity, 36.43%, 34.80%, and 18.85%, respectively.

Quality Characteristics of Omija (Schizandra chinesis Baillon) Extracts Under Various Conditions for Beverage Production (음료 제조를 위한 오미자 추출물의 추출 조건에 따른 품질 특성)

  • The quality characteristics of Omija (Schizandra chinesis Baillon) extracts under various extraction temperatures and times were examined. The pH level of the extracts ranged from 3.35-3.47. The sugar and solid content of the samples significantly increased with increasing extraction temperatures and times (p<0.01). In contrast, the lightness of the extracts decreased with increasing extraction temperatures and times (p<0.001). In a palatability test, extracts boiled at $80^{\circ}C$ for 30 minutes scored high in terms of color, flavor, turbidity, sourness, and overall acceptability. Hydroxy radical scavenging activity and polyphenol content of the extracts significantly increased with increasing extraction temperatures and times (p<0.01). Furthermore, direct correlations between hydroxy radical scavenging activity and polyphenol content (or flavonoid content) were established through simple regression (r>0.9) for different extraction temperatures and times. From these results, extracts boiled at $80^{\circ}C$ for 120 minutes is the best to product omija beverage considering functionality and sensory evaluation as well.

Antioxdant Activity of Hibiscus cannabinus L. Leaves in Different Growth Time (생육시기에 따른 양마 잎의 항산화 활성)

  • The results on the useful functional compounds of kenaf (Hibiscus cannabinus L.) leaves cultivated in reclaimed lands and the biological activity effects of extracts were as follows. On 98 days after sowing (DAS) Tainung-2 showed the highest total chlorophyll content (1.68 mg/g), and on 141 DAS Dowling showed higher chlorophyll content (1.50 mg/g) than the other two did. In all cultivars the total chlorophyll content was higher on 141 DAS than on 98 DAS. Total polyphenol and total flavonoid contents were the highest in Tainung-2 (30.50 mg/g and 57.03 mg/g, respectively), and total polyphenol and total flavonoid contents (30.50 mg/g and 57.03 mg/g, respectively) were the highest in 30% ethanol extraction. Ascorbic acid contents were higher on 141 DAS than on 98 DAS in three cultivars. SOD activities of kenaf leaf extract were generally over 90%. DPPH radical scavenging activity of Tainung-2 was higher than others.

Antioxidant and Antitumor Activities of Methanolic Extracts from Humulus japonicus (환삼덩굴 메탄올 추출물의 in vitro 항산화 및 항암 활성)

  • To evaluate the antioxidant and potential of Humulus japonicus, total polyphenol and flavonoid content, radical scavenging activities, and antitumor activities were measured. The total polyphenol and flavonoid contents of the methanol extracts from Humulus japonicus were $30.13{\pm}1.13$ and $13.61{\pm}0.49$ mg gallic acid equivalent/g extract, respectively. DPPH radical and hydroxyl radical scavenging activities of methanol extracts of Humulus japonicus were 60% and 35%, respectively. The Humulus japonicus higher activities of anticancer activities on liver cancer cell lines compared to other cancer cell lines.

Quality Characteristics of Cookies with Added Dried Laver (Porphyra tenera) Powder (김 분말을 첨가한 쿠키의 품질특성)

  • This study investigated the quality characteristics of cookies containing laver powder, which is well known for its various functions and biological activity. This study assessed the quality characteristics of cookies containing various concentrations (0, 2, 4, 6 and 8%) of laver powder(LP). To analyze quality characteristics, pH of dough, moisture content, color, hardness, and sensory properties were measured. Qualities, such as pH, brightness, and redness and yellowness and hardness decreased significantly (p<0.001). The total flavonoid and total polyphenol and ABTS radical scavenging activity were proportionally increased with increasing the level of laver powder added in cookies(p<0.001). The antioxidant activity measured by total flavonoid and total polyphenol activities was significantly higher than control and increased proportionally to the laver powder. The result of sensory test shows that sample group adding 2% of laver powder achieved the highest. Based on the above results, this study suggests that the addition of 2% laver powder may be the best substitution ratio for cookies of the improvement of sensory preference and antioxidant. This study exhibited both the functional and health based benefits of laver when it is added to cookies and confirmed the development feasibility of laver cookies considering consumer satisfaction.

Fabrication of Electrospun PVA Nanofibers Loaded with Artemisia capillaris Thunberg Extracts (인진쑥 추출물 함유 PVA 나노섬유 제조)

  • This study extracted Artemisia capillaris Thunberg with distilled water and ethanol to investigate its antioxidant effect. We then investigated the possibility of producing nanofibers by an electrospinning process by adding the extracts to polyvinyl alcohol (PVA). The electrospinning method used a PVA concentration of 12wt.%, an applied voltage of 10kV, and a tip-to-collector distance of 15cm. Total polyphenol and total flavonoid contents were measured to verify the antioxidant activity of Artemisia capillaris Thunberg extracts (ACEs). The total polyphenol content of the distilled water extract and the ethanol extract were measured as 218.47 and 271.26mg/g, respectively, and the total flavonoid content of the distilled water extract and the ethanol extract were measured as 141.68 and 34.98mg/g, respectively. As the content of the ACEs in the PVA nanofibers increased, the Diameters of the nanofibers and the uniformity of the diameters decreased. The electrospinning process was fabricated in a relatively uniform form without beads, and the diameters of the nanofibers that were produced ranged from 340 to 390nm. The results of FT-IR, XRD and DSC analyses confirmed that the ACEs were well mixed with the PVA molecules and were electrospun.

Effects of Physiological Active Substance Extracted from Silkworm Fece

  • Silkworm (Bombyx mori ) feces have long been used in the pharmaceutical and food industries as a natural colorant. However, there is limited data on the bioactive compounds that constitute silkworm feces. This research emphasizes the antioxidant activity of different solvent and flavonoid extracts of silkworm feces. The solvents were ethanol, butanol, and water, while the methods utilized included ultrasonification, stirrer, reflux, and reflux after ultrasonification extraction. Results showed that butanol ultrasonification extraction (BUE) yield the lowest extraction (1.75%), while the other methods yielded 7 to 14%. The total polyphenol content utilizing BUE was 3.3 mg TAE/g, while water ultrasonification extraction (WUE) yielded the highest extraction rate with 51.6 mg TAE/g. The total flavonoid content was significantly higher using ethanol reflux extraction (EUE) at 266.8 mg QRE/g BUE, which was 158.3 and 151.3 mg QRE/g. Both DPPH radical scavenging activity and SOD-like (superoxide dismutase) activity, showed significant antioxidant effects. Finally, all other extracts except for BUE had a-glucosidase inhibition at 60%. Therefore, an effective extraction method for physiologically active substances must be selected.

Evaluation of crude protein, crude oil, total flavonoid, total polyphenol content and DPPH activity in the sprouts from a high oleic acid soybean cultivar

  • Soybeans [Glycine max (L.) Merill] are a rich source of antioxidants and other phytonutrients. Soybean sprouts contain many biologically active secondary metabolites and are rich in polyphenols, flavonoids, and phenolic compounds. In the present study, two soybean cultivars, Hosim, with high oleic acid (- 80% in total seed oil), and Pungsannamul, with normal oleic acid (- 23%) in seed, were examined for changes in the content of crude protein, crude oil, total flavonoids, total phenolics, and DPPH (1,1-diphenyl-2-picryl-hydrazyl) during the sprouting duration of 5 days. The protein content in both the varieties was found to increase by the days of sprouting. The crude oil content of Pungsannamul sprouts was found to be maximum on day 1 (16.9%, w/w) and decreased thereafter to reach to the level of 14.8% on day 5. No significant differences in the crude oil content of Hosim sprouts from day 1 to 5 were observed. Flavonoid content was found to increase up to day 4 and then dropped on day 5, in both the cultivars. Total polyphenol content showed a tendency to increase up to day 3 and started to decrease significantly from day 4. DPPH activity was found to increase up to day 5 in both the varieties. All the components studied in the high oleic acid soybean sprouts showed a change in content during the sprouting process similar to the change that would occur in normal oleic acid soybeans. The study showed that the contents of antioxidant, flavonoid, and polyphenol significantly increase during the sprouting.

Antioxidant and Anti-Diabetic, Anti-Alzheimer Activities of Stem from Opuntia ficus-indica var. saboten Cultivated in Jeju at Harvest Time (채취시기별 보검선인장 줄기의 항산화, 항당뇨 및 항알츠하이머 활성평가)

  • In this study, we assessed antioxidant, anti-diabetic, and anti-Alzheimer activities of Opuntia ficus-indica var. saboten (OFI) at harvest time. OFIs were cultivated December 2015~November 2016 in Jeju island. The 70% ethanol extracts of OFI were used to investigate total polyphenol and flavonoid contents, antioxidant(DPPH and ABTS radical scavenging assay), anti-diabetic(yeast ${\alpha}$-glucosidase and rat ${\alpha}$-glucosidase inhibition assay), and anti-Alzheimer(Acetylcholinesterase and butyrylcholinesterase inhibition assay) activities. Total polyphenol and flavonoid contents of OFIs were $17.40{\sim}23.11{\mu}g$ garlic acid/mg Ex and 2.17~6.22 ug (+)-catechine/mg Ex, respectively. DPPH and ABTS radical scavenging activity of OFIs were 131.98~184.90 mg ascorbic acid(AA) eq/100 g and 63.60~101.83 mg AA eq/100 g, respectively. In the anti-diabetic and anti-Alzheimer activities, 70% ethanol extracts of OFI exhibited moderate inhibition activity, compared to control (acarbose and beberine). Total polyphenol and flavonoid contents, antioxidant, anti-diabetic, and anti-Alzheimer activities were no significant differences by season, respectively. Therefore, information on comparative biological evaluations of OFI may be a beneficial in exploring functional food and drug development.
