A Note on the Preparation and Evaluation of Ramyon (deep fat fried instant noodle) Using Barley-wheat Composite Flours (보리-밀 복합분(複合粉)의 라면제조(製造) 및 제품특성(製品特性)에 관(關)하여)

  • A study was conducted on the preparation of Ramyon using composite flours of raked barley (20 or 30%)-wheat(80 or 70%) in commercial plant scale and on the quality evaluation of Ramyon made from those flours. The naked barley(20%)-wheat(80%) flour gave acceptable Ramyon-making characteristics during the continuous Ramyon manufacturing process. The composite flours had a higher water absorption rate in kneading process and oil absorption value of the Ramyon product than those of wheat flour alone. Even though the Ramyon of composite flours showed a little inferior value compared with wheat flour alone in the cooking and texture characteristics, sensory panel scores of Ramyon indicated that the naked barley (20%)-wheat(80%) flour was acceptable in Ramyon.

Effect of Planting Dates and Nitrogen Fertilization Rates on the Forage Yield and Feeding Value of Introduced Triticale (파종기 및 질소 시비량이 도입 트리티케일의 수량 및 사료가치에 미치는 영향)

  • This experiment was conducted to establish the cultural method of triticale(Triticum Secalotriticum Saratoviense Meister) as a whole crop silage by evaluating the effect of seeding date and nitrogen fertilization rate on forage yields and feeding value. Heading date, flowering date, and the dough stage of development came significantly earlier as triticale was seeded earlier. Soilage, dry matter yields and percent dry matter significantly varied with seeding dates and crude ash, NFE and TDN. However, TDN yield was significantly reduced by delayed seeding. Macromineral contents were not affected by seeding date. Soilage, dry matter yield, and percent dry matter significantly increased as nitrogen fertilization rate increased. The contents of crude protein, crude fat, crude ash, NFE, TDN and TDN yield also significantly increased. In contrast, crude fiber content of triticale decreased with increasing N fertilization rate.

Relation among Snack Intake, Obesity Index and Blood Parameters in Obese Elementary-school Children (비만 아동의 간식 섭취와 비만지수 및 혈액성상과의 관련성)

  • This study was designed to evaluate the relationships among snack intake, obesity index, and blood parameters in obese elementary school children. Anthropometric measurements, nutrient intake from meals and snacks, serum cholesterol, glucose, GOT, GPT, and hemoglobin levels were obtained 36 obese elementary students (boys=28, girls=8). The average age, height, weight, % body fat, and obesity index were 11.9 years, 145.5cm, 53.5kg, 45.7%, and 32.4%, respectively. The mean energy intake was 1,818.7 kcal in boys and 1,818.1 kcal in girls. In addition, the energy intake from snacks was 470.4 kcal in boys and 479.4 kcal in girls. The levels of plant fat (p<0.05) and cholesterol (p<0.001) consumed during snacks (1,000 kcal per energy intake) were higher than those consumed during meals. The serum cholesterol, glucose, and hemoglobin levels were 177.4 mg/dL, 90.4 mg/dL, and 14.5 g/dL, respectively. In addition, the levels of serum GOT (p<0.001) and GPT (p<0.05) were higher in boys than in girls. Height was positively correlated with food intake (p<0.05), snack intake (p<0.05), and energy intake from snacks (p<0.05). Based on these results, further studies are needed in order to investigate the relationships among various aspects of snacking and obesity in elementary school children.

Attitudes Toward Family Meals and Comparisons of Dietary Quality Between Family Meals and Meals Eaten Alone in Middle and High School Students (중.고등학생의 가족식사에 대한 태도와 혼자 식사와의 영양소 섭취 비교)

  • This study investigated attitudes and behaviors related to family meals among middle and high school students. Furthermore, it evaluated the dietary quality of family meals as compared to meals eaten alone. The data were collected between March and May, 2006, from 353 male and female students attending middle and high schools in Seoul and Gyeonggi-do, using pre-tested self-administered questionnaires. The following results were obtained. In terms of family meal frequency, 44.0% of the middle school students ate with their family 'more than once per day', and 19.3% participated in family meals 1 or 2 times per day. However, only 16.4% of the high school students had family meals 'more than once per day', and 32.9% participated in family meals '1 or 2 times per a week', showing a significant difference between the groups (p<0.001). Fifty-nine percent of the middle school students answered they ate with their family everyday or on week days, whereas 67.8% of the high school students had family meals only on holidays (p<0.001). The nutrient intakes of those participating in family meals were compared to the intakes of those who ate meals alone. For both males and females, calorie intake was higher for those who ate family meals. Animal protein intake was significantly different (p<0.001) between groups, with the results showing a two-fold higher intake for those eating family meals as compared to meals alone. In addition, the intake of animal fat was significantly higher in the family meal group (p<0.001); however, plant-based fat intake was higher in the meal alone group.

Selenium, Manganese, Copper and Zinc Contents in Serum of Patients with Cervical Intraepithelial Neoplasia (자궁경부 상피내 종양 환자의 혈청 셀레늄, 망간, 구리 및 아연 함량)

  • The purpose of this study was to investigate the implications of dietary intake and the level of serum micronutrients (Se, Mn, Cu, Zn), lipid peroxidation, and antioxidant capacity in Korean women with cervical intraepithelial neoplasia (CIN) . From October 2002 to March 2003, 50 patients diagnosed with CIN (confirmed with colposcopy directed biopsy) and 50 patients without any cervical disease as the control group were enrolled in the study at the Department of Gynecology Cancer Center at Samsung Cheil Hospital. Animal fat intake in CIN group was significantly higher than that of the control group, but plant protein intake in the CIN group was significantly lower than that of the Control group. Energy and zink intakes were similar in the two groups. The serum concentration of antioxidant minerals in the CIN group were not significantly different from the control group. The total radical trapping antioxidant potential concentration of plasma was significantly lower in the CIN group (1.12mM) than in the control group (1.25mM) (p<0.05). But MDA (malondialde-hyde) of serum was significantly higher in the CIN group (7.60mM) than in the control group (4.99mM) (p<0.005). The serum selenium concentration of the control group showed significant positive correlation with the MDA level (r=0.311). These findings are suggestive of protective roles for healthy dietary habit including increasing antioxidant nut-rients and decreasing intake of fat.

Nutrients Contents in Different Parts of Pickly Pear(Opuntia humifusa) and Possible Anti-Breast Cancer Effect (천년초선인장의 부위별 영양성분 분석과 정상 및 암세포에 미치는 효과)

  • In order to examine the nutritional value of prickly pear(Opuntia humifusa), contents of ash, protein, fat, minerals and vitamins were determined on freeze-dried stem, fruit, seed and root from plants harvested in autumn. The average moisture contents for stem, fruit, seed and root were 67~87%. Crude ash content determined on dry weight basis was 2~3%. Crude protein existed mostly in seed(2.95%) and root(2.37%). Crude fat was detected mainly in seed(4.49%). Contents of major minerals(mg/100 mg dry weight) was generally higher in stem. Ca in stem(4,142.30) and fruit(2,790.86) were much higher than in seed(43.37). P in stem, seed and fruit were 448.19, 263.20 and 161.59, respectively. Stem also displayed more abundant Mg(1,110.86), Zn(35.62) and Mn(37.07). However, fruit contained higher amounts of Fe(13.38) and Se(0.15). Vitamin A was negligible in all plant parts. Vitamin E contents in fruit and stem were 1.78 mg and 1.22 mg/mg dry weight, respectively. Vitamin C was detected mostly in fruit(445.40) and stem(260.94). Use of a 3-(4,5-dimethylthiazol-2-yl)-2,5-diphenyltetrazolium bromide-based microtiter assay of cell viability demonstrated an anti-proliferative effect of O. humifusa extract on the MCF-7 estrogen-dependent human breast cancer cell line.

  • Chemical changes with time of frying-fats during the frying process (beef tallow with 0.01% BHA and 0.01% BHT, turnover rate 9%/hr and $140{\pm}10^{\circ}C$ temperature) of Ramyon on a commercial scale were studied. No significant changes of carbonyl value and peroxide value were noted up to 120 hrs. However, small increases in acid value, color and dimeric fatty acid were noted. Small decreases in iodine value and the content of unsaturated fatty acids were also observed. Under the experimental storage condition, when the stability of fats heated were compared to fresh fat, minor differences in carbonyl value and weight gain were noted. All of these demonstrated that frying-fats commercially used in Ramyon frying system were maintained in good quality during the frying process.

Ensiled Banana Wastes with Molasses or Whey for Lactating Buffaloes during Early Lactation

  • Low-quality roughages [banana wastes (B), wheat straw (WS) and dried broiler litter (BL)] were ensiled using either sweet whey (W) or diluted molasses (M) as rehydration media to study their effects on milk yield, milk composition and some parameters of blood plasma. The feeding trial involved 25 lactating buffaloes in five groups (five animals each). Buffaloes as control animals received diets of concentrate feed mixture, rice straw and wastelages (70:30:00). In the other 4 treatments, the wastelages replaced 50% of rice straw in the control diets. The wastelages were BL:B:M(3:2:10) (T1), BL:WS:M (3:2:10) (T2), BL:B:W (3:2:10) (T3) and BL:WS:W (3:2:10) (T4) on a fresh matter basis, during the 1st 17 weeks of lactation period. Results indicated that feeding lactating buffaloes on wastelages resulted in slightly higher (p>0.05) milk yield, 4% fat-corrected-milk yield and feed efficiency, and slightly lowered (p>0.05) contents of milk total solids, fat and protein. Wastelages, especially BL-B-M, increased (p<0.05) milk non-protein-nitrogen and ash contents and plasma urea, GOT and GPT. The results demonstrate that banana plant wastes with some additives in silage form may be good untraditional roughage for lactating buffaloes without any adverse effect on milk production.

Effect of Cultivation Methods and Harvesting Time on Yield and Quality of Safflower(Carthamus tinctorius L.) Seeds (홍화 재배유형 및 수확시기가 종실 수량 및 품질에 미치는 영향)

  • This study was conducted to investigate the plant growth and seed yield between rain-shelter plastic house and out-door cultivation, and analysed the effect of harvesting time on seed quality. In rain-shelter plastic house cultivation, emergence date was 3 days and flowering date was 8 days earlier than out-door cultivation. Seed yield of rain-shelter plastic house cultivation was increased $25\%$ compared to out-door cultivation and it's more beneficial than out door cultivation. The crude fat content was higher and seed was whiter and better quality in rain-shelter plastic house cultivation than out-door cultivation. In out-door cultivation, the crude fat content was steadily increased until 40 days after full bloom, but the seed color was getting dark which was harvested at 30 days after full bloom and the color was turn to the dark brown when the seed was harvested at 40 days after full bloom. Harvesting of safflower seed's quality is best between 20 days and 30 days after full bloom.
