버섯 피클(Fickle) 제조 및 저장 중의 품질변화 (The Preparation of Mushroom Pieties and Change in Quality during Storage)

  • The mushroom pickles were prepared as a processed mushroom product. The changes in pH, total acidity, brix. color and texture of the mushroom pickles (Lentinus edodes, Pleurotus ostreatus, Agaricus bisporus and Pleurotus eryngii) were measured during storage at 4$^{\circ}C$. In addition, sensory evaluations on the mushroom pickles were performed. While the pH of Lentinus edodes and Pleurotus ostreatus pickles declined slowly, the pH of Agaricus bisporus and Pleurotus eryngii pickles declined rapidly during storage. The total acidity of Lentinus edodes pickles rose slowly, while the acidity Pleurotus ostreatus, Agaricus bisporus and Pleurotus eryngii pickles rose rapidly. As for the color of mushroom pickles, "L" , "a" and "b" values changed slightly. The changes in texture were determined by a rheometer Hardness, cohesiveness, springiness, gumminess and brittleness of Lentinus edodes pickles were lower than those of the other mushroom pickles. In the sensory evaluation of mushroom pickles, Lentinus edodes showed higher acceptability ratings than the other mushrooms in taste, color, clearness, texture and overall acceptability. This study showed that among the mushrooms tested, Lentinus edodes was the most acceptable mushroom pickle for storage.

미숙 청방울 토마토 피클 제조 조건에 관한 연구 (Properties of Immature Green Cherry Tomato Pickles)

  • This study was carried out to optimize the production of immature green cherry tomato pickles and to produce green cherry tomato pickles of good sensory quality. The composition of immature green cherry tomato pickles was optimized using a central composition design with 3 variables and 3 levels. The overall acceptability score, based on sensory evaluation, was best, when the immature green cherry tomato pickles contained 231 g of vinegar, 52.6 g of salt, 168.3 g of sugar, 204 g of tomatoes, and 231 $m{\ell}$ of water. The statically predicted optimal formulation of immature green cherry tomato pickles on overall acceptability value was 33.54%(w/w) of vinegar, 7.64%(w/w) of salt, 25.28%(w/w) of sucrose, 33.54%(w/w) of water. The optimal conditions for producing immature green cherry tomato pickles should consider the factors of time and temperature of storage.

순창 고추장민속마을에서 생산한 장아찌의 이화학적 특성 비교 (Comparison of Physicochemical Characteristics of Pickles Manufactured in Folk Villages of Sunchang Region)

  • 전북 순창지역의 고추장민속마을에서 생산한 장아찌 제품의 품질을 균일화하기 위한 기초 연구로서 10품목의 장아찌 제품 90종을 수집하여 이화학적 특성을 비교하였다. 감, 마늘, 오이, 무, 더덕, 매실장아찌는 고추장으로 버무렸으며, 깻잎장아찌는 된장으로, 울외장아찌는 주박으로, 고추장아찌는 된장과 간장으로 버무렸다. 장아찌 제품의 수분 함량, pH 및 총산함량은 원료의 특성에 따라 차이가 있었다. 당도는 $22.10{\pm}3.04$(간장고추) - $55.53{\pm}7.67$(마늘장아찌) $^oBrix$로서 비교적 높았으며, 고추장으로 절임한 경우가 된장이나 간장 절임보다 높았다. 염도는 $3.56{\pm}1.11$(매실장아찌) - $9.15{\pm}6.35%$(간장고추)로서 매우 높았으며, 간장으로 절임한 제품에서 높았다. 경도는 제품에 따른 차이가 매우 컸으며, 총균수는 $5.62{\pm}0.10$(간장고추) - $6.83{\pm}0.55$ log CFU/g(된장깻잎)로서 비슷하였다. 결론적으로, 제품의 품질 균일화와 함께 염도가 높은 장아찌 제품들의 염도를 낮추는 제조 방법에 대한 연구의 필요성이 제기되었다.

Determination of Suitable Kohlrabi (Brassica oleracea var. gongylodes) Cultivars for Pickle Preparation

  • This study was designed to determine the best cultivar of kohlrabi for making pickles among KM-1 (Worldcol), KM-2 (Bejo), KM-3 (Takii), and KM-4 (Monsanto) cultivars. The initial pH of pickles was different in all cultivars; however, they all had a pH in the range of 3.81~3.86 after 28 days of storage. The pickles made from KM-4 had the lowest acidity, while there was no significant difference in acidity among the KM-1, KM-2, and KM-3 pickles. The salinity of all kohlrabi pickles was consistent during the storage period. The changes of color values were accelerated in the following order: KM-4>KM-1>KM-2>KM-3. Though kohlrabi pickles were non-fermented, the change in reducing sugar contents was similar to that of a fermented pickle. The highest value of reducing sugar content was found in pickles made with KM-4. In all cases, the firmness of the pickle decreased as time of storage increased. On the initial day, KM-4 pickle showed the highest firmness with 807.4 g. KM-4 also showed the highest firmness on the 28th day of storage with 602.3 g. In sensory evaluation, the KM-4 pickle exhibited the highest texture (hardness) among the pickles. The pickle made with the KM-4 cultivar showed relatively higher firmness of texture than other cultivars, suggesting that KM-4 could be utilized in other kinds of processed foods, in addition to being pickled.

절임농도와 건조시간에 따른 가지장아찌의 저장 중 품질 특성 변화 (Changes in Quality Characteristics of Eggplant Pickles by Salt Content and Drying Time during Storage)

  • Eggplant pickles were classified into three groups based on salt concentration (1, 3, 5%) and three groups based on drying time (30, 60 and 120 minutes), followed by storage at $5^{\circ}C$ for 28 days. Raw eggplant contains 94.82% water content. The increase in salt concentration and drying time caused a decrease in the moisture content. Compared to the 0.27% ash content of raw eggplant, the ash content of eggplant pickles increased noticeably with increasing salt concentration due to penetration into the eggplant pickles. pH values decreased significantly as the levels of salt concentration and dying time increased (p<0.05). In terms of storage time, pH values decreased from 21 days. The variation in salinity increased significantly as the concentration of salt increased. Compared to normal pickles salted at 5.39% salinity, eggplant pickles constituted 0.27~0.77% (1%), 0.40~1.14% (3%), and 0.47~11.20% (5%) 'low-salinity' eggplant pickles. Reducing-sugar content differed on the dates of 7, 14 and 21 in drying time and at 3% salinity. Hardness differed at 30, 60, and 120M on the 28th and 1, 5% salt concentration. Resilience differed according to drying time and from dates of 0 to 14th. The number of total microbes decreased at low salinity. In terms of storage time, the number of microbes tended to decrease after the 21st. In the consumer preference test, lightness of 5%-30M was the highest value.

스테비아잎 첨가량에 따른 무 피클의 품질 특성 (Quality Characteristics of Radish Pickles added with Different Amounts of Stevia Leaf)

  • Physicochemical and antioxidant activity characteristics of radish pickles added with different amounts of stevia leaf (0, 1.0, 2.0, and 3.0 g) were investigated. Radish slices ($4{\times}4{\times}4cm$) were salted with NaCl, soaked into pickling solution added with different amounts of stevia leaf, and then stored at $4^{\circ}C$ for 6 months. Throughout the whole storage periods, L and b values of radish pickles increased significantly with increasing amount of stevia leaf, whereas a value decreased. Hardness and strength increased significantly with increasing amount of stevia leaf during the storage period. Antioxidant compound contents and antioxidant activity increased significantly with increasing amount of stevia leaf. These results are expected to be useful in producing stevia leaf radish pickles with antioxidant activity and we propose the manufacture and commercialization of radish pickles added with 2.0 g of stevia leaf.

마늘장아찌 숙성 중 텍스쳐 특성의 변화 (Changes in the Texture Property of Garlic Pickle during Aging)

  • 마늘장아찌를 담글때 껍질의 유무와 염화칼슘의 첨가가 텍스쳐의 변화에 어떤 영향을 미치는지 조사하였다. 알코올 불용성 고형물(AIS)은 숙성에 따라 모든 시료군에서 점차 감소하는 경향이었다. AIS의 감소율은 염화칼슘을 첨가한 마늘에서 더 적었다. 펙틴질에 있어서는, 모든 시료군이 숙성에 따라 염산 가용성 펙틴은 소량 감소하였으며, 메타인산 가용성 펙틴은 크게 증가하였고, 총펙틴질과 열수 가용성 펙틴은 거의 변하지 않았다. 염화칼슘을 첨가한 마늘이 첨가하지 않은 마늘보다 염산 가용성 펙틴의 보존율이 높고 메타인산 가용성 펙틴의 증가율은 더 낮았다. Instron에 의한 경도는 통마늘이 깐마늘보다 약간 더 높았고 염화칼슘을 첨가한 마늘이 첨가하지 않은 마늘보다 더 높았으며, 숙성에 따라 모든 시료군에서 점차 감소하였다.

푸른 방울토마토로 제조한 저염 장아찌의 저장 중 품질 특성 변화 (Quality Changes of Immature Green Cherry Tomato Pickles with Different Concentration of Soy Sauce and Soaking Temperature During Storage)

  • The principal objective of this study was to develop and standardize a preparation method for low-sodium tomato jangachi (traditional Korean pickle) via short-term fermentation with immature green cherry tomatoes. In order to determine the preferred concentrations of soy sauce and soaking temperatures of immature cherry tomato pickles in different stages of storage, we conducted an analysis of physico-chemical characteristics and microbiological properties, and also performed a preference test on samples of immature green cherry tomato pickles. Immature cherry tomatoes were prepared in three different soy sauce concentrations --20, 40, and 60%-- and three different soaking temperatures --60, 80, and 100$^{\circ}C$-- and then stored for 28 days at 5$^{\circ}C$. As a result, the pH increased significantly with increases in the amount of soy in the dipping solution (p<0.05). The saltiness was maintained at levels of approximately $0.17{\sim}0.28%$ (20% group), $0.32{\sim}0.67%$% (40%group), $0.48{\sim}1.00%$ (60% group) during storage periods. These results show that the saltiness of immature cherry tomato pickles was substantially lower than that of commercial pickles. The contents of reducing sugar and lightness decreased significantly with increasing concentrations of soy dipping solution. The redness and yellowness values of the tomatoes decreased significantly with increasing concentrations of soy sauce. Additionally, the lower the concentration of soy sauce used, the more rapidly the hardness of the immature cherry tomato pickles was reduced at 100$^{\circ}C$. PME activity moved within a narrow range, and then stabilized during the storage period. With regard to the results of the consumer preference test, 20%-100$^{\circ}C$ was the most preferred condition overall, 40%-80$^{\circ}C$ was the condition in which the texture was most preferred, and 40%-80$^{\circ}C$ was the condition that yielded the highest color scores.

감장아찌의 성분특성 및 관련 미생물 (Associated Microorganisms and Chemical Composition of Persimmon Pickles)

  • 우리나라의 남부지방의 대부분 농가에서 대량 생산되고 있으나 농가소득에는 기여하지 못하고 있는 떫은 감의 손쉬운 가공에 의한 대량 소비를 촉진시키기 위하여 감장아찌의 화학적 품질 특성을 규명하고 감장아찌 제조 및 유통과정에서의 품질과 관련된 미생물을 순수분리하여 동정함으로써 감장아찌의 품질관리에 기여코자 하였다. 제조된 감장아찌 완제품의 수분함량은 80.04%, 당질함량은 13.72%로 원료감과 큰 차이가 없었으나 조회분함량은 염액에 침지한 감장아찌의 특성때문에 원료감보다 훨씬 높은 4.26%였다. 수용성 탄닌함량은 81.04mg%로 635.45mg%인 원료감보다 크게 감소되었고 총 비타민 C는 23.76mg%로 약간 감소되었으며 유리당은 포도당, 과당, 자당의 순으로 함유되었다. 유리아미노산은 총 17종이 함유된 것으로 분석되었고 그 함량은 glutamic acid(24.97mg%), aspartic acid(24.02mg%), leucine(22.33mg%)의 순으로 높았으며 methionine이 2.42mg로 가장 낮았다. 감장아찌 제조와 관련된 미생물로는 세균 4균주와 효모 3균주가 각각 동정되었는데 동정된 Bacillus subtilis, B. cereus, B. pumilus, B. thuringiensis였고 효모는 Candida glabrata, C. guilliermondi and Hansenula였으며 진공포장하여 상품화한 감장아찌 완제품의 유통과정에서 포장의 부풀림과 감장아찌 맛의 변화를 일으키는 원인균은 효모인 Candida glabrata인 것으로 확인되었다.

감식초와 매실액을 첨가한 마늘 피클의 품질 특성 및 항산화성 (Quality Characteristics and Antioxidative Activity of Garlic Pickles Prepared with Persimmon Vinegar and Maesil (Japanese Apricot) Juice)

  • The quality characteristics and antioxidative activity of garlic pickles prepared with persimmon vinegar with or without Maesil (Japanese apricot) juice were investigated. Heat treated garlic cloves ($110^{\circ}C$, 5 min and then rapidly cooling) were salted with NaCl and $CaCl_2$, and then soaked in pickling solution, and stored at $20^{\circ}C$. The pH of the garlic pickles initially ranged from 2.36~3.24, after which the pH slightly increased to 3.22~4.13 during storage, while the acidity was decreased to 1~1.97. Throughout the entire storage periods, the acidity of the garlic pickle containing persimmon vinegar and Maesil was the highest (1.97%). The hardness of the control sample (non heated garlic) decreased during storage, whereas the hardness of all the heat treated groups did not change after 21 days of storage. Moreover, the chewiness of the persimmon vinegar+Maesil group was the highest among the groups. The Hunter color L value of garlic pickles decreased during storage, while the b value (yellowness) increased for all groups except the two persimmon groups. The $IC_{50}$ of the DPPH radical scavanging activity of garlic pickles at 5 day of storage was 85.98~97.81 mg/mL. However, the antioxidative activity of garlic pickles gradually increased with longer storage times. The persimmon vinegar+Maesil group showed the highest antioxidative activity. Results from the sensory evaluation showed that scores of flavor, taste and over-all preference were higher for the persimmon vinegar+Maesil group than the other groups (p<0.05).
