밤가공공장의 밤껍질에서 밤분말의 생산에 관한 연구(IV) -밤껍질에서 분리한 분말의 수요개발- (A Study on the Production of Chestnut Powder in the inner Shell(endo carp) of a Chestnut from its Treatment Plant -Study on the Utilities of Separated Powder from Chestunt inner Shell-)

  • 본 연구는 밤가공 과정에서 폐기물로 나오는 밤껍질에서 분리한 밤 가루의 이화학적 특성을 규명하고, 식품 자원으로의 이용가능성을 검토해보고자 빵, 국수, 묵 등 식품을 제조하여 기호성과 관능검사를 실시하였다. 밤 가루의 물결합능력은 순수한 밤에서 분리한 것보다 껍질에서 분리한 것이 약 40%정도 높았으며 요드반응은 유사한 상태를 보였으며 amylose 분해한도는 밤 껍질에서 분리한 밤가루가 약 8.0%높았다. 밤 가루로 만든 빵, 국수, 묵 등은 냄새, 경도, 탄력성, 응집성, 부착성, 씹힘성, 검성 등에서 밀가루나 도토리로 만든 것과 유의적 차이가 없었다.

고춧가루 및 고추장을 이용한 핫소스의 저장 중 품질 특성 변화 (Quality Changes in Hot Sauce with Red Pepper Powder and/or Kochujang during Storage)

  • 고춧가루로 제조한 핫소스, 고추장으로 제조한 핫소스, 고춧가루와 고추장으로 혼합 제조한 핫소스 등을 제조한 후 저장 기간에 따른 품질특성치의 변화를 조사하였다. 제조된 한국식 핫소스를 $20^{\circ}C$$30^{\circ}C$ 항온기에 56일간 저장하면서 품질변화를 측정한 결과 pH의 경우 고춧가루로 제조한 핫소스, 고추장으로 제조한 핫소스, 고춧가루와 고추장으로 혼합 제조한 핫소스의 초기 pH는 각각 3.90, 3.81 및 3.90 이었으며, 56일 저장기간동안 변화를 볼 수 없었으며 적정산도는 pH와 유사한 경향을 나타내었다. Capsanthin과 표면색도의 경우 저장온도가 높을수록 색깔의 급속한 변화를 볼 수 있었다. 핫소스의 저장기간 중 미생물의 변화 결과는 생균수의 경우 저장온도가 증가함에 따라 약간 감소하는 경향을 보여주고 있었으나 효모 및 곰팡이, 대장균 및 젖산균은 검출되지 않았다. 저장기간 중의 관능검사를 실시한 결과 전반적으로 고춧가루와 고추장을 이용하여 혼합 제조한 핫소스가 다른 처리구에 비해 우수한 것으로 나타났다. 핫소스의 유통기간을 예측한 결과 고춧가루를 이용하여 제조한 핫소스의 경우 $30^{\circ}C$에서는 85.3일, $20^{\circ}C$에서는 221.7일, 고추장으로 제조한 핫소스의 경우 $30^{\circ}C$에서는 70.0일, $20^{\circ}C$에서는 230.0일, 고춧가루와 고추장으로 혼합 제조한 핫소스의 경우 $30^{\circ}C$에서는 67.3일, $20^{\circ}C$에서는 204.0일이 예측되었다.

아마씨 분말을 첨가 스펀지케이크의 품질 및 항산화 활성 (Quality and Antioxidant Properties of Sponge Cake added with Flaxseed Powder)

  • The study produced a functional sponge cake added with 0~20% proportion of excellently functional flaxseed powder aimed at obtaining basic data for the possibility to develop new products through a physiochemical properties assessment and a sensual assessment of the product. The water content was the lowest in the control, at 27.63%, and the 5~20% water content following the increase in added flaxseed powder failed to display a significant difference (p<0.05). The pH of the dough was 6.77~6.44, and displayed a significant difference according to the added amount of flaxseed powder (p<0.05). The specific weight of the dough appeared to be 0.40~0.51, and displayed a significant increase according to the added amount of flaxseed powder. The DPPH radical scavenging activity of the sponge cake added with flaxseed powder was 12.8%, and the plot added with flaxseed powder displayed a significantly higher percentage of 22.34~55.57% than the control plot. Crumb color change had increased values for value a and value b, and a significantly decreased L value. Texture significantly increased according to the increase in hardness, gumminess, chewiness, and cohesiveness, while springiness significantly decreased. Sensual assessment displayed a high preference for the 10% flaxseed powder additive plot in all items including appearance, taste, color, flaror, softness, and overall acceptability. The assessment of physiochemical properties and sensuality of the sponge cake added with flaxseed powder revealed that 10% flaxseed powder is suitable as the optimum proportion.

당근 분말을 첨가한 Sugar Snap-Cookie의 품질 특성에 관한 연구(1) - 반죽의 리올로지 특성 - (Quality Characteristics of Sugar Snap-Cookie Added to Carrot Powder (I) - Rheology Characteristics of Cookie Dough -)

  • This study involved the making of sugar snap cookies with the addition of carrot powder at two to twelve percent which furnishes modern people with much lacking and needed dietary fiber. The review of the physiochemical properties, rheology and sensory evaluation of such contents resulted in the following findings: The sedimentation value and Pelshenke value all decreased in weak flour with the addition of more carrot powder, in comparison with the control group. The water retention capacity (WRC) and alkaline water retention capacity (AWRC) all increased in weak flour with the addition of more carrot powder in comparison with the control group. As for the gelatinization properties of the test samples measured by rapid visco-analysis, the addition of more carrot powder resulted in the initial pasting temperatures increasing in the case of weak flour, yet showing no significant difference between the control group and the carrot-added groups, as well as the maximum viscosity, minimum viscosity and final viscosity all showed the tendency of decreasing. The addition of more carrot powder led to the peak times in the mixographs for weak flour all exhibiting the tendency of decreasing, which might be interpreted as gradually weaker physical properties of the dough as well as less stability in the shape of the dough in turn.

Comparison of Carcass and Sensory Traits and Free Amino Acid Contents among Quality Grades in Loin and Rump of Korean Cattle Steer

  • This study was performed to compare carcass traits, sensory characteristics, physiochemical composition, and contents of nucleotides, collagen, and free amino acids among quality grades (QG) and to understand the association between QG and above parameters in loin and rump of Korean cattle steer. Loin and rump samples were obtained from 48 Korean cattle steers with each of four QG (QG 1++, 1+, 1, and 2; average 32 months of age). Carcass weight and marbling score (MS) were highest in QG 1++, whereas texture score measured by a meat grader was highest in QG 2. A correlation analysis revealed that MS (r = 0.98; p<0.01) and fat content (r = 0.73; p<0.01) had strong positive correlations with QG and that texture had a strong negative correlation (r = -0.78) with QG. Fat content in loin was highest but protein and moisture contents were lowest in QG 1++. Our results confirmed that a major determinant of QG is the MS; thus, intramuscular fat content. The International Commission on Illumination $L^*$, $a^*$, and $b^*$ values in loin were highest in QG 1++. Numeric values of shear force in loin were lowest in QG 1++, whereas those of tenderness, juiciness, and overall acceptability tended to be highest in QG 1++ without statistical significance. QG was strongly correlated with juiciness (r = 0.81; p<0.01) and overall acceptability (r = 0.87; p<0.001). All sensory characteristics were higher (p<0.05) in loin than those in rump. Adenosine-5'-monophosphate (AMP) and inosine-5'-monophosphate (IMP) contents in both loin and rump did not differ among QGs. No nucleotide (AMP, IMP, inosine, hypoxanthine) was correlated with any of the sensory traits. Total, soluble, and insoluble collagen contents in loin were higher in QG 1++ than those in QG 1. All three collagens had lower content in loin than that in rump. All three collagens were positively correlated with tenderness, juiciness, and overall acceptability. Glutamic acid content did not significantly differ among the four QGs in either loin or rump. In conclusion, it is confirmed that QG is associated with sensory traits but nucleotide contents in beef may not be a major factor determining meat palatability in the present study.

숙지황 농축액의 첨가량을 달리하여 제조한 갈비찜 소스의 품질 특성 및 항산화성 (Quality Characteristics and Antioxidant Activities of Steamed Rib Sauce Added with Rehmannia glutinosa preparata (Sookjihwang) Concentrate)

  • This study was performed to evaluate the physiochemical and sensory quality characteristics as well as the antioxidant activities of steamed rib sauce prepared with different amounts of Rehmannia glutinosa preparata concentrate(0, 6, 12, 18%). The moisture content and salinity of control were 80% and 0.8%, respectively, but those of sauces added with Sookjihwang concentrate were not significantly different from those of control. The acidity and reducing sugar content increased according to the amount of Sookjihwang concentrate. Hunter's color L (lightness) and b (yellowness) values decreased according to the amount of Sookjihwang concentrate, whereas a (redness) value was not significantly different among the treatments. Viscosity increased according to the amount of Sookjihwang concentrate. Total phenol and flavonoid contents increased according to the amount of Sookjihwang concentrate. Antioxidant activities (DPPH and hydroxyl radical scavenging activities) also increased according to the amount of Sookjihwang concentrate. Results of sensory preference test revealed that the scores for color, glossiness, and overall preference were the highest in sauce added with 12% Sookjihwang concentrate. It can be suggested that sauce added with Sookjihwang concentrate may be a functional sauce with high antioxidant activity.

건조조건에 따른 오디분말을 첨가한 마들렌의 품질특성 (Quality Characteristics of Madeleine Added with Mulberry Powder According to Drying Conditions)

  • 본 연구는 냉동오디를 냉동건조와 열풍건조 방법으로 건조 후 분말화하여 마들렌에 첨가하여 제품의 품질 특성을 알아보고자 하였다. 냉동건조와 열풍건조로 냉동오디를 건조 후 분말화하여 각각의 시료의 일반성분과 이화학적 특성을 측정하여 비교 분석하였다. 마들렌은 제과기능사 실기시험에 출제되는 레시피를 토대로 각각의 시료를 밀가루 양에 대비하여 0%(control), 1%, 3%, 5%, 7%를 첨가하여 만들어 pH, 색도, 텍스쳐를 측정하고 관능검사를 통하여 소비자의 기호도를 파악하였다. 먼저 pH는 열풍건조오디분말 첨가군이 낮게 나타났으며, 색도에서 명도(L값)는 냉동건조오디분말과 열풍건조오디분말의 첨가율이 증가할수록 대조구와 비교해 감소하는 경향이 나타났다. 적색도(a값)는 열풍건조오디분말을 첨가했을 때가 냉동건조오디분말을 첨가했을 때보다 적색도가 증가하는 것으로 나타났다. 황색도(b값)는 오디분말의 첨가량이 증가할수록 감소하는 경향을 나타내었다. 냉동오디분말 첨가군은 경도(Hardness)와 탄력성(Elasticity)은 오디분말의 첨가량의 증가에 따라 유의적인 차이가 나타났다. 응집성(Cohesiveness)과 검성(Gumminess)은 첨가량이 증가함에 따라 감소하는 경향이 나타나고 있다. 열풍건조오디분말을 첨가한 마들렌의 경도(Hardness)는 오디분말 첨가량에 따라 유의적인 차이를 나타내었다. 탄력성(Elasticity)은 오디분말 첨가량에 따라 증가하며, 응집성(Cohesiveness)은 첨가량이 줄어들수록 감소하는 경향을 보였다. 검성(Gummines)은 첨가량이 증가할수록 증가하는 경향을 나타내었다. 관능검사의 기호도 결과는 냉동건조오디분말 5% 첨가군과 열풍건조오디분말 7% 첨가군의 기호도가 가장 높게 나타났다.

감마선 조사 포도의 저장온도에 따른 품질특성 변화 (Quality Characteristics of Grapes during Post-irradiation Storage at Different Temperatures)

  • 포도의 보존기한 연장 및 미생물학적 품질 향상을 위한 방법으로 적숙기의 포도에 1 kGy의 감마선 조사를 실시한 다음, $4^{\circ}C$$25^{\circ}C$의 저장조건에서 6주간 저장하면서 포도의 일반적인 품질특성 및 관능 품질특성을 평가하였다. 연구 결과, 포도에 대한 1 kGy 선량의 감마선 조사에 의한 총당, pH, 적정산도, 안토시아닌 함량 등의 일반 품질 특성변화는 나타나지지 않았으며, 미생물분석 결과 포도의 초기 오염미생물을 약 $1{\sim}2\;log$ 단위($10{\sim}10^2\;CFU/g$) 감소시키는 미생물 제어 효과가 확인되었다. 감마선 조사 포도의 보존 실험에서, 감마선 조사된 포도는 $25^{\circ}C$의 조건에서는 약 2주, $4^{\circ}C$의 조건에서 약 6주 이상의 미생물학적 품질 안전성을 나타내었으며 수분감소, 경도 등의 이화학적 품질에서도 개선효과가 확인되었다. 감마선 조사 직후에는 감마선 조사 포도와 비조사 시료간의 관능특성 차이는 관찰되지 않았으나, 보존기간이 경과함에 따라 감마선 조사 시료의 선호도가 비조사 시료보다 더 높아짐을 확인하였다. 따라서 감마선 조사와 냉장보존을 병용할 경우, 상온 2주 이하인 포도의 보존기한을 최소 6주 이상으로 연장시킬 수 있을 것으로 사료되었다.

  • Beef quality is characterized by marbling (marbling degree and marbling fineness), physiochemical (shear force, meat color, fat color, texture, and maturity), and sensory (tenderness, flavor, juiciness, taste, odor, and appearance) traits. This paper summarizes and addresses beef-quality characteristics and the beef-grading systems in Korea, Japan, the USA, and Australia. This paper summarizes recent research progresses on the genetic and nutritional factors that affect beef quality. Intramuscular (i.m.) adipose tissue deposition or marbling is a major determinant of beef quality. This paper addresses the mechanisms of i.m. adipose tissue deposition focused on adipogenesis and lipogenesis. We also address selected signaling pathways associated with i.m. adipose tissue deposition. Nutrients contribute to the cellular response and phenotypes through gene expression and metabolism. This paper addresses control of gene expression through several nutrients (carbohydrates, fat/fatty acids, vitamins, etc.) for i.m. adipose tissue deposition. Several transcription factors responsible for gene expression via nutrients are addressed. We introduce the concept of genome-based precision feeding in Korean cattle.

Effects of Dietary Fiber and Stevioside Mixture on Quality Attributes of Sausage and the Blood Properties of Rats

  • This study was conducted to examine the physiochemical characteristics (PC) of a sausage with added dietary fiber and stevioside mixture, as well as the blood properties (BP) of rats with feeding of the sausage. There were no significant differences between the control and the treatments in the PC; in case of treatments, as additive contents of dietary fiber (1-3%) and stevioside (0.05-1.5%), redness ($a^*$) gradually increased, but yellowness ($b^*$) rapidly decreased (p<0.05). The pH level and water holding capacity (WHC) also tended to decrease. Thiobarbituric acid reactive substances (TBARS) were of little change. However, the texture of sensory evaluation and the adhesiveness of texture analysis had significantly low values (p<0.05). BP, such as blood sugar, high density lipoprotein (HDL) cholesterol, low density lipoprotein (LDL) cholesterol and triglyceride (TG), did not increase and total cholesterol (TC) actually decreased (p>0.05). However, body weights of rats increased with treatments. Overall, it is suggested that adding dietary fiber and stevioside mixture to sausages can moderately improve the redness, and also reduce the levels of sugar, cholesterol and neutral lipids in the blood without noticeably affecting the WHC, oxidant stability, appearance, and taste.
