Effects of Low Temperature and Starvation on the Physicochemical Characteristics of Muscle of the Olive Flounder Paralichthys olivaceus (수온 및 절식에 따른 넙치(Paralichthys olivaceus) 근육의 물리화학적 특성 변화)

  • The effects of low temperature and starvation on the physiochemical characteristics of the muscle of the olive flounder Paralichthys olivaceus, were examined. Fish were deprived of feed for 28 days at 2, 4, 6, 8, 10, 12, and $20^{\circ}C$ in order to establish suitable conditions for live fish transportation. Throughout most of the 4 weeks of feed restriction, the physiochemical characteristics of the muscle of olive flounder were found to be dependent on the acclimation temperature. The breaking strength of muscle did not show a significant reduction during feed restriction at 2 and $4^{\circ}C$. With increasing temperatures, however, the breaking strength of muscle differed significantly according to the individual and feed restriction period (P<0.05). The moisture content in muscle acclimated at 10, 12, and $20^{\circ}C$ increased steadily over the feed-restriction period, while the crude lipid content decreased during the same period (P<0.05). At water temperatures above $2-8^{\circ}C$, no significant differences were shown during the same period. After it reached 6, 8, 10, 12, and $20^{\circ}C$, the muscle had an accumulation of lactate, and a loss of ATP. There was no change in the lactate or ATP content during the feed restriction period at 2 and $4^{\circ}C$, although there were differences among the water temperature groups. These results clearly show that temperature can have an important influence on the of muscle of physiochemical characteristics of muscle during live fish transportation.

Physiochemical Characteristics of Coastal Pseudo-Estuarine Environment Formed During the Summer Flood season in the South Coast of Korea (한국 남해 연안역에서 여름 홍수기에 형성된 연안 염하구 환경의 물리 -화학적 특성)

  • In this study, we investigated the physiochemical characteristics of temporal estuarine environment formed during the summer flood season (consecutive rainy days with average 50 mm day$^{-1}$ precipitation) in the coastal area of South Sea of Korea. The freshwater from the Seomjin River was characterized by lower temperature, salinity and pH, and high concentrations of COD and nutrients. In the summer flood season, such peculiar Somejin-River freshwater was dispersed southward along the coast of Yeosubando-Dolsando-Geumodo, form-ing temporal estuarine environment (defined as "Coastal Pseudo-Estuary" in this study) throughout the entire study area (as far as 60 km from the Seomjin River mouth). Compared to the winter dry season, the DIN/DIP ratio was almost doubled (16-36) during the summer flood season. This excessive nitrate supply during the summer flood season was probably due to nitrogenous fertilizer. Distribution and behaviors of physiochemical factors in this coastal pseudo-estuarine environment were controlled not only by the runoff of the Seomjun River (physical mixing of river water with seawater) but also by the biogeochemical estuarine processes which are mostly similar to those of the river estuary.r estuary.

Physiochemical Changes and Optimization of Phosphate-Treated Shrimp (Litopenaeus vannamei) Using Response Surface Methodology

  • The objective of this study was to determine the factors responsible for the changed physiochemical properties of unpeeled shrimp treated in cold phosphate solution ($2{\sim}4^{\circ}C$) with the intervention of 4 factors: phosphate concentration, dipping time, rotation speed, and volume of brine solution. Response surface analysis was used to characterize the effect of the phosphate treatment on shrimps by running 33 treatments for optimizing the experiment. For each treatment, phosphate amount, moisture content, and weight gain were measured. The results showed that phosphate concentration is the most important factor than other factors for facilitating phosphate penetration in the meat of the shrimp and for getting the best result. The optimum condition of phosphate-treated shrimp in this study was 110 to 120 min dipping time, 500 to 550 mL brine solution for 100 g shrimp sample, and 190 to 210 rpm agitation speed. The studied conditions can be applied in fisheries and other food industries for good phosphate treatments.

Sensory Characteristics of Espresso Coffee According to Green Coffee Processing (생두 가공법에 따른 에스프레소 커피의 관능 특성)

  • Coffee beans are processed from coffee cherries by either natural, pulped natural, or washing. The aim of the present study was to evaluate the physiochemical and sensory characteristics of espresso coffees processed by different methods. The color of the washed coffee sample presented the highest value of lightness while the natural coffee sample presented the highest value of redness and yellowness. The biggest difference in brewed coffee, whether natural, pulped natural, or washed, was in the TDS content, which was higher in natural coffee and lower in washed coffee. Sensory descriptive analysis and acceptance test for espresso coffee using a 15 cm line scale were carried out by 12 trained panelists. Natural coffee had the highest cherry-like flavor and sweetness taste while washed coffee had the highest citrus flavor and acidity taste. An important attribute of espresso coffee is body, and natural coffee presented strong body while washed coffee presented a low body attribute. In conclusion, significant differences were observed among the three processing methods of green coffee. Pulped natural coffees presented intermediate physiochemical and sensory characteristics compared to washed and natural coffee. Natural coffees are appreciated for their increased body, and washed coffees are appreciated for added citrus flavors and acidity espresso coffee blends.

Physiochemical Properties of Repeated Deep-frying Oil and Odor Pattern Analysis by Electronic Nose System (재가열 튀김유의 이화학적 특성과 전자코에 의한 향기 패턴 분석)

  • Chemical characteristics of soybean oil after deep-frying with potato sticks (200 g, 10% w/w of soybean oil) were studied according to the 34 deep-frying times. After consecutive 34 deep-frying, total polyunsaturated FA contents was gradually decreased while the total saturated FA and trans FA were increased. Acid value and peroxide value were increased while iodine value decreased, respectively. The Hunter $L^{\ast}$ value decreased while each $a^{\ast}\;and \;b^{\ast}b$ value were gradually increased. Electronic nose equipped with 12 metal oxide sensors was used for the discrimination of odor pattern of frying oils against the times of deep-trying. The proportions of 1st and 2nd principal component analysis showed 75.97% and 21.23%, respectively. While 6 among total 12 sensors well responded to discrimination of odor in the repented frying oils, suggesting that the odor pattern of each oil after deep-frying would be discriminated against fresh soybean oil, especially after 14 times. From the results, electronic nose could differentiate the degree of quality deterioration of the repeated deep-frying oils.

An Analysis of Sasa Borealis' Growth Properties and Positional Environmental Factors in Jirisan National Park (조릿대의 생장특성 및 입지환경요인 분석)

  • The present study elucidated the growth properties of Sasa borealis communities distributed in the lower layer of deciduous broadleaf forests in temperate zones and analyzed the correlation between the growth properties of S. borealis and positional environmental factors. The higher the culm height of S. borealis was, the higher the values of the leaf number, leaf area, and foliage layer thickness became. This might be because as the culm height of S. borealis increased, the acquisition of light sources became easier so that the biomass of leaves increased simultaneously for smooth anabolism. S. borealis seem to change their growth mode for smooth acquisition of light resources. The culm density of S. borealis and the leaf number, leaf area and foliage layer thickness of S. borealis did not show any clear correlation. The values of the culm height, leaf number, leaf area, and foliage layer thickness of S. borealis as the above altitude of the location of S. borealis increased. It seems like that growth conditions such as temperatures and winds are deteriorated as the above altitude of the location of S. borealis increased so that S. borealis becomes smaller. No clear correlations were shown between the physiochemical properties of soil and S. borealis' growth properties. It seems like that the growth of S. borealis complexly intertwined with diverse environmental factors and that due to the physiological integration of S. borealis, certain physiochemical properties do not unilaterally affect S. borealis' growth properties.

Water quality of an Indian tributary affected by various industrial effluents- a case study

  • Industrialization and urbanization are modern need and trends. Such trends affect the natural ecosystem of rivers. Indian rivers face such problems in a high ratio. The aim of this study is to investigate the cause and amount of pollution in a tributary river Krishni. Pre-monsoon sampling of Krishni river water was performed as per APHA standard. Water samples were collected from different sites of Krishni river. Physiochemical parameters as well as trace elements concentrations have been analysed and results were compared with BIS-2012, WHO-2017 and EPA-2001 recommendations. The presence of high BOD, COD, TDS and others physiochemical parameters along with heavy metals reveals that tributary is highly polluted owing to industrial and domestic discharge either directly or through drains. High values of these parameters are harmful for the ecological health of the river because it makes survival of aquatic flora and fauna at risk. On the basis of the results obtained by the present study, it was concluded that level of the pollution in river Krishni is at alarming phase, where if strong action for the rejuvenation of river not takes place, river becomes a dead pool.
