An investigation was carried out to study the effects of aging time, storage temperature, and drying type on the physical, chemical and sensory properties of Korean rice cake. Water content and cooking properties were significantly influenced by aging time and storage temperature. However, aging time did not affect the soup turbidity. Difference in water content was noticeable by drying type. The microwave treated rice cake (MW) showed a higher water content than the other ones. The lightness (L-value) was not affected by the aging time and drying type. Rice cake storaged at 4oC showed the highest L-value. The textural properties of rice cake were influenced by the all sources of variables. There was a significant difference in hardness between microwave and hot air treated rice cake (MWH), and microwave and vacuum treated rice cake (MWV). In the sensory properties, mean intensities of all attributes except chewiness were significantly different among drying types. The MWV showed a higher acceptability than the MW and the MWH. Scanning electron photomicrographs revealed that the MWV has more porous structure. The MWV was the most desirable one as determined by the physical, chemical and sensory evaluation.

Starch phosphates were prepared from the corn starch mixed with 2% sodium tripolyphosphate by twin-screw extruder with a feed rate of 20 kg/hr and an extrusion temperature of $130^{\circ}C$, and the effects of extrusion variables on the physicochemical properties (target parameters) of starch phosphates were investigated. Interrelations of system parameters (specific mechanical energy and extrudate moisture) and rheological properities of starch was analyzed by using the response surface analysis. Degree of substitution (DS) was increased with increasing the feed moisture, and showed the maximum value at the screw of near 250 rpm, Degree of gelatinization was proportionally increased with increasing the screw speed and decreasing the feed moisture. Apparent viscosity of the paste was increased with increasing the feed moisture, but it was not significantly affected by the screw speed. It was found by scanning electron microscopy that the starch microgranules were much more degradaded, and as consequent result, the intrinsic viscosity was decreased, whereas, water solubility index was increased. The rate of retrogradation of the gels was retarded with increasing DS and decreasing viscosity.
The present study was conducted to investigate the relationships of muscle fiber characteristics to dietary energy density [3.0(Low-E) vs. 3.2 (Med-E) Mcal DE/kg)] and slaughter weight [SW; 110, 125, and 138 kg] in finishing pigs (gilt vs. barrow) using a $2{\times}3{\times}2$ factorial treatment design. Forty-one longissimus dorsi muscle (LM) samples were analyzed histochemically, with growth performance and physicochemical data for the 41 animals and their LM out of 192 animals and 72 LM used in a previous study retrospectively included. The ADG was less (P<0.01) in the Low-E than in the Med-E group (0.93 vs. 0.73 kg) whereas lightness ($L^*$) and redness ($a^*$) of LM were greater in the Low-E group SW did not influence these variables. The diameter and perimeter of the type I (slow-oxidative), type IIA (fast oxido-glycolytic) and type IIB (fast glycolytic) fibers increased with increasing SW whereas densities of the fibers decreased. However, the number and area percentages of the fiber types were not influenced by SW or dietary energy density. The percentage and per-$mm^2$ density of type IIB fibers were negatively correlated with SW (r = -0.33 and -0.57, with P<0.05 and <0.01, respectively), whereas type I fiber number percentage was positively correlated with SW (r = 0.31; P<0.05). Marbling score was negatively correlated (P<0.05) with type I (r = -0.36) and type IIB (r = -0.39) fiber densities. The $a^*$ was correlated (P<0.01) with both type I and type IIB fiber number percentages in the opposite way (r = 0.42 and -0.47, respectively). However, $L^*$ (lightness), drip loss and $pH_{24h}$ were not correlated with the fiber number percentage or density of any fiber type. Collectively, results indicate that muscle fibers grow by hypertrophy during the late finishing period, but that fiber characteristics other than the size are not significantly influenced by dietary energy density or SW.
To study the influences of thermal effluents flowing from hot spring on epilithic algal community, seasonal survey was carried out at stream and its watersheds from Seokjeong hot spring in Chollabuk-Do, Korea. Totally 7 points were divided into three regions fur sampling of water and epilithic algae, such as the direct effected, uneffected and the mixed region, respectively. At the discharging points of effluents, a dark-green cyanobacterial mat were remarkably constructed, mainly by two cyanobacteria, Oscillatoria and Phormidium. The mat formation were more obvious at low temperature than any other season, and even result in disappear with downstream and season. Totally, one hundred and fifty-three taxa of epilithic algae were classified with 15 unidentified species. Among the, diatoms occupied 58% of total species, whereas cyanobacteria was 67% of total biomass, comparatively. In terms of stream direction, relative abundance of cyanobacteria was only limited in the upstream in cold season, and result in this pattern disappeared with season change. Although all physicochemical variables at the discharging points, was very high, compare to other points, they were quickly decreased downstream. Among them, some heavy metals were not detected or below the detection levels at downstream. Nitrate nitrogen increased with downstream, as well as phosphorus and sulfate have a similar trend throughout, while ammonia quickly decreased in the initial period of discharging effluents. This suggest that although the thermal effluent with high temperature and organic compounds could polluted the small study stream, various contributions such as flowing water, intake of uneffected streawater and collaboration of cyanobacterial mat and stream bottom gradually induces a stable water system.
This study was conducted to investigate the quality and organoleptic properties of dehydrated onions with steaming and heating. Sliced onions were treated as follows: steaming time ($X_1$, 5~25 min); drying temperature ($X_2$, $55{\sim}70^{\circ}C$) and drying time ($X_3$, 4~20 hr). All the variables were modelled and analyzed using a central composite design and response surface methodology (RSM). The coefficients ($R^2$) of the water content and water activity model induced from RSM were 0.9514 (p<0.01) and 0.9455 (p<0.01), respectively. The water content and water activity were affected by the drying temperature and time. The $R^2$ on the models of Hunter's L, a, b values were 0.9419 (p<0.05), 0.8818 (p<0.01) and 0.9360 (p<0.01), respectively. Hunter's L, a, b values were affected by the drying temperature and time, but Hunter's b value was not affected by the steaming time. In addition, the $R^2$ on the models of overall palatability was 0.8867 (p<0.05). The maximum palatability response was 5.92 when the steaming time was 13.14 min, the drying temperature was $63.11^{\circ}C$ and the drying time was 14.49 hr.

The amount of electric furnace dust has been steadily increasing due to the increase of iron scraps which are usually recycled by electric furnace melting process. To date, this electric furnace dust has usually been treated by landfilling, however, because of shortage of landfill sites and heavy metal leaching more desirable treatment schemes are urgently needed. Among several possible schemes for the proper treatment of electric furnace dust, its recycling can be said to be most desirable. In present study, the triboelectrostatic separation of zinc and zinc-containing components from electric furnace dust was attempted based on its physicochemical properties such as particle shape, size distribution, and chemical assay. The dust was found to be mixed with spherical and non-spherical shaped particles and its major component materials were $ZnFe_2$$O_4$, ZnO, Fe, Zn, and FeO. The content of zinc-containing components in the entire dust was observed to be in the range of 15~30 wt%, which reasonably justified that zinc is recyclable. The triboelectrostatic characteristic of each component material was found to be different each other since their work functions were different, and based on this characteristic zinc and zinc-containing component could be flirty separated from the dust. After selecting a proper tribo-elec-trification material, the separation features of zinc and zinc-containing component were examined by taking the distance of electrodes, electric field strength, and scavenging as the experimental variables. The highest zinc-content obtained under the optimal separating condition was found to be up to 50wt%.
A total of 582 gilts and barrows were analyzed to investigate the regressive relationships to slaughter weight (SW) of variables related to production efficiency and pork quality. Average initial weights and SW were 88.6 and 122.5 kg, respectively, for gilts and 88.7 and 121.4 kg, respectively, for barrows. Average daily gain and gain:feed ratio were not affected by SW. Backfat thickness, which was significantly greater (p<0.01) in barrows (23.3 mm) than in gilts (20.7 mm), increased with increasing SW (0.21 mm/kg; p<0.001). When the 4-notch carcass yield and quality grades were quantified according to an arbitrary 1 point-per-1 notch scale, the former, but not the latter, regressed on SW (-0.64/10 kg; p<0.01). The percent yield of the belly per total lean (overall mean=20.7%) increased with increasing SW (0.37%/10 kg; p<0.001), whereas in other cuts, the SW effect was negligible. The redness of the loin also increased with increasing SW (p<0.05), but other physicochemical characteristics were minimally influenced by SW. In sensory evaluation, effects of SW for fresh and cooked loin, ham, and belly were mostly considered insignificant in terms of quality, albeit statistically significant in several cases. However, positive regressions on SW (p<0.01) of the marbling and acceptability scores of fresh loin as well as the fat:lean ratio of fresh belly were noteworthy. Collectively, SW of approximately 125 kg was maximal for both sexes under the current carcass yield grading, in which 94 kg is the upper weight limit for grade A carcass. However, if the carcass weight limit of the grading was to be removed or broadened, the SW for gilts (but not that for barrows because of their excessive fat content at above 125-kg SW) could be increased to 135 kg or greater without compromising carcass quality.
Currently graphite is used as an anode active material for lithium ion battery. However, since the maximum theoretical capacity of graphite is limited to $372mA\;h\;g^{-1}$, a new anode active material is required for the development of next generation high capacity and high energy density lithium ion battery. The maximum theoretical capacity of Si is $4200mA\;h\;g^{-1}$, which is about 10 times higher than the maximum theoretical capacity of graphite. However, since the volume expansion rate is almost 400%, the irreversible capacity increases as the cycle progresses and the discharge capacity relative to the charge is remarkably reduced. In order to solve these problems, it is possible to control the particle size of the Si anode active material to reduce the mechanical stress and the volume change of the reaction phase, thereby improving the cycle characteristics. Therefore, in order to minimize the decrease of the charge / discharge capacity according to the volume expansion rate of the Si particles, the improvement of the cycle characteristics was carried out by pulverizing Si by a dry method with excellent processing time and cost. In this paper, Si is controlled to nano size using vibrating mill and the physicochemical and electrochemical characteristics of the material are measured according to experimental variables.

The phytoplankton community in the estuarine system is affected by changes of physicochemical factors easily. The present study analyzed phytoplankton community distribution and similarity, in addition to exploring factors influencing variations in phytoplankton community structure in three lakes located in the Yeongsan River estuary from March 2014 to November 2017. We carried out non-multidimensional scaling (NMDS) and random forest analysis (RF) for comparing the pattern of phytoplankton distribution and the relationship between phytoplankton distribution and environmental variables. Similarity Percentage (SIMPER) and Analysis of Similarity (ANOSIM) were performed to figure out the similarity of phytoplankton community at each site of three lakes. From NMDS, Phytoplankton community distribution differed between Yeongsan and Gumho lakes, and the factors influencing the distribution of phytoplankton communities across the three lakes were water temperature, dissolved oxygen, total nitrogen (T-N), nitrate-N (NO3-N), and conductivity. NO3-N was a key factor influencing phytoplankton community structure in the three lakes based on RF. A total of 24 species were identified as indicator species in the three lakes studied, with the highest species numbers observed in Yeongsan Lake (13) and the lowest observed in Yeongam Lake (2). According to SIMPER and ANOSIM results, the phytoplankton community in Yeongsan and Yeongam lakes were similar, and they differed from those in Gumho Lake. In addition, the phytoplankton community structure varied across the study sites in the three lakes, indicating that water channels across the lakes a minor influence phytoplankton community distribution.
It is a global trend that the water management policy is shifting from a water quality-oriented assessment to the aquatic ecosystem-based assessment. The majority of aquatic ecosystem assessment systems were developed solely based on physicochemical factors (e.g., water quality and bed structure) and a limited number of organisms (e.g., plankton and benthic organisms). Only a few systems use plants for a health assessment, although plants are sensitive indicators reflecting long-term disturbances and alterations in water regimes. The development of an assessment system is underway to evaluate and manage lakes as ecosystem units in the Korean Ministry of Environment. We reviewed the existing multivariate health assessment methods of other leading countries, and discussed their applicability to Korean lakes. The application of multivariate assessment methods is costly and time consuming, in addition to the correlation problem among variables. However, a single variable is not available at this moment, and the multivariate method is an appropriate system due to its multidimensional evaluation and cumulative data generation. We, therefore, discussed multivariate assessment methods in three steps: selecting metrics, scoring metrics and assessing indices. In the step of selecting metrics, the best available metrics are species-related variables, such as composition and abundance, as well as richness and diversity. Indicator species, such as sensitive species, are the most frequently used in other countries, but their system of classification in Korea is not yet complete. In terms of scoring metrics, the lack of reference lakes with little anthropogenic impact make this step difficult, and therefore, the use of relative scores among the investigated lakes is a suitable alternative. Overall, in spite of several limitations, the development of a plant-based multivariate assessment method in Korea is possible using mostly field research data. Later, it could be improved based on qualitative metrics on plant species, and with the emergence of further survey data.
