아산연안 수질환경의 특성과 장기변동 (Long-term Variation and Characteristics of Water Quality in the Asan Coastal Areas of Yellow Sea, Korea)

  • Long-term trends and distribution patterns of water quality were investigated in the Asan coastal areas of Yellow Sea, Korea from 1975 to 2005. Water samples were collected at 3 stations and physicochemical parameters were analyzed including water temperature, salinity, suspended solids(SS), chemical oxygen demand(COD), dissolved oxygen(DO) and nutrients. Spatial distribution patterns were not clear among stations but the seasonal variations were distinct except COD, SS and nitrate. The trend analysis by principal component analysis(PCA) during twenty years revealed the significant variations in water quality in the study area, Annual water qualities were clearly discriminated into 4 clusters by PCA; year cluster 1988-1991, 1994-1997, and 1992-1993/1998-2005. By this multi-variate analysis we can summarize the annual trends as the followings; salinity, suspended solids and dissolved oxygen tended to increase from late 1980's, increased pH and COD from 1992, and decreased salinity and increased nitrogen and COD from 1990 due to the runoff frow agricultural lands causing eutrophication.

절임 배추 및 김치의 동결 저장에 따른 품질변화 (Quality Changes of Salted Chinese Cabbage and Kimchi during Freezing Storage)

  • 절임 배추와 숙성된 김치의 동결저장 가능성을 조사하였다. 생배추의 조직은 급속침지동결이나 예비건조하면 완만공기동결이나 건조하지 않은 것에 비해 우수하였다. 절임 배추는 생배추에 비해 동결손상이 적었고 급속동결이나 예비건조에 의해 조직이 개선되지 않아 조직특성은 숙성된 김치와 비슷하였다. 김치는 동결시 동결하지 않은 것에 비해 약간 질겼으나 전체적인 품질에서는 유의적인 차이를 보이지 않았다. 동결저장시 절임배추는 3개월후 약간의 핑크색을 띄었으나 김치는 6개월 저장동안 이런 현상이 나타나지 않았고 품질도 거의 변화가 없었다.

변성전분을 첨가한 증편의 특성 (The Effect of Modified Starch(Acetylated Distarch Adipate) on the Quality Characteristics of Jeungpyun)

  • This study was performed to determine the quality characteristics of Jeungpyun with added modified starch. The addition of modified starch did not change the pH level of the samples, but it did increase the volume. The b-value of Jeungpyun with 3% modified starch was significantly lower than that of the control group. The addition of 3% modified starch also significantly increased the hardness, adhesiveness, gumminess and chewiness of the experimental group over the control group. In the test of sensory characteristics, the cell size of Jeungpyun with 2 and 3% modified starch was larger than that of the control group. Cell uniformity of Jeungpyun with 2% modified starch was lower than that of the control group. The hardness of Jeungpyun with modified starch was significantly higher than that of the control group. In the test of taste preference, Jeungpyun with modified starch beat the control group substantially. The quality of Jeungpyun with 1 and 3% modified starch showed a higher overall score than that of the control group.

강원도 홍천강의 조류군집과 생물학적 지수에 의한 수질 평가 (The Water Quality Assessment based on the Algal Communities and Biotic Indices in Hongcheon river, Gangwon-do)

  • This research has studied the physicochemical environmental factors and communities of epilithic diatom and phytoplanktons at Hongcheon river from December 2011 to September 2012. In case of TN, the result was hypertrophic, and for TP, it ranged from mesotrophic to eutrophic. As for BOD, Hongcheon river was rated level II or better, according to the water quality level; values were found to be below 3mg/L at most sites. Total of 83 and 114 taxa of epilithic diatom and phytoplanktons respectively, were found during the research. When assessed using the TSI, it ranged from oligomesotrophic to eutrophic. In case of DAIpo, it ranged from 64.1 to 99.5, and TDI ranged from 51.5 to74.0. These results signify good water quality, level B or better, for Hongcheon river. P-IBI was rated moderate to low, which showed higher pollution than other indices. Among the biological water quality measures analyzed in the Hongcheon river study, DAIpo best matches TDI and BOD, while TDI showed greater pollution. Therefore, P-IBI appears to be inappropriate when assessing the domestic small rivers and lakes.

Quality Bread as Influenced by Sweet Pumpkin Powder

  • Physicochemical properties of bread as influenced by the addition of sweet pumpkin powder (SPP) were investigated. Freeze-dried sweet pumpkin was ground, sieved through a laboratory sieve and a fraction with particles less than $250\;{\mu}m$ was used. Amount of SPP added to the bread was found to affect the bread quality significantly (p<0.05). Loaf volume and weight of the control were significantly higher than others (p<0.05) and decreased significantly (p<0.05) with the addition of SPP. In other words, the enrichment of product with SPP decreased bread volume and weight without significant changes in the moisture content. There were distinctive color changes with the addition of the powder: L- and a-values were reduced but b-value was significantly increased (p<0.05). The hardness, springiness, and gumminess of bread were found to increase with the addition of the powder. Consumer test indicated that bread contained with 3% SPP had the highest overall acceptability score while 1 or 5% addition produced an acceptable quality for the bread.

Changes in the Physico-chemical and Microbial Quality during the Production of Pastırma Cured with Different Levels of Sodium Nitrite

  • Pastırma, a dry-cured meat product, is produced from the whole muscle and/or muscles obtained from certain parts of beef and water buffalo carcasses. The purpose of this study was to determine the effects of different levels of sodium nitrite on changes in the physicochemical and microbial quality during the production of pastırma. The changes in residual nitrite, salt, pH, moisture, thiobarbutiric acid reactive substances (TBARS), colour (L*, a*, b*), total aerobic mesophilic bacteria (TAMB), lactic acid bacteria (LAB), Micrococcus/Staphylococcus (M/S), mould-yeast (M-Y), and Enterobacteriaceae counts of pastırma with 0, 50, 100 and 150 ppm sodium nitrite were determined during the production. The nitrite levels and the production stages had significant effects (p<0.01) on residual nitrite, TBARS, pH, salt, and colour values. The TBARS values of the pastırma with nitrite were significantly lower (p<0.05) than the control. The final TAMB, LAB, M/S, and M-Y counts of pastırma with 150 ppm nitrite were significantly (p<0.05) lower than the control. Also, the a* (relative redness) values of control pastırma were significantly lower (p<0.05) than the pastırma with nitrite. The production stages had a significant effect (p<0.01) on the moisture.

Comparison of Three Commercial Collagen Mixtures: Quality Characteristics of Marinated Pork Loin Ham

  • Various commercial collagen mixtures aimed at improving the quality of meat products are available, but the optimal composition is unclear. This study aimed to compare the functional properties, including physicochemical characteristics and lipid oxidative stability, of loin ham marinated with three commercial collagen mixtures sold as food additives. The addition of collagen mixtures led to significant increases in the moisture content, water holding capacity (WHC), cooking yield, and instrumental tenderness, regardless of the type of collagen mixture. In particular, meat samples containing collagen mixture C showed the highest (p<0.05) WHC and tenderness among all groups. Furthermore, collagen mixture B induced increases (p<0.05) in pH values in both raw and cooked samples. The $a^*$ values of samples with collagen mixtures were lower (p<0.05) than those of samples without collagen mixtures. All collagen mixtures effectively improved oxidative stability during 7 days of storage at $4^{\circ}C$. The samples containing collagen mixture B had the lowest lipid oxidation (p<0.05) among groups. These results indicated that collagen mixture C could be used in injection brine to enhance the quality characteristics of meat products, particularly the WHC and tenderness. Collagen mixture A could be used for meat products with high fat contents based on its ability to improve lipid oxidative stability during long-term storage.

  • Processed meat products are prone to oxidation and spoilage due to prolonged storage. By using natural spices that are harmless to the human body and have antioxidant and antibacterial effects to replace synthetic preservatives in consideration of consumers' qualitative consumption patterns that pursue nutrition and safety, and stimulate appetite with taste, aroma, and color of food. The purpose of this study was to study the effect on the quality characteristics of processed meat products. The spice group had a low crude fat for both the loin and sirloin cuts. Brightness, redness, and yellowness in the chromaticity of beef jerky and PYUNYUK added with spices were different from those of the control group and increased. In terms of texture, all the beef jerky groups increased firmness and friability, and there was a difference between refrigeration and room temperature storage. The elasticity and stickiness decreased with the lapse of storage period. In the PYUNYUK, the flavor of the spice group was low and the meat quality was soft. It was found that the addition of natural spices to replace synthetic preservatives had different effects on processed meat products and had a positive effect on general ingredients, mechanical properties, physicochemical properties, and sensory quality properties.

막걸리박 열수추출물 분말을 첨가한 모닝롤의 품질 특성 (Quality Characteristics of Morning Rolls Added with Makgeolli Lees Extract Powder)

  • The objective of this study was to assess the physicochemical characteristics of morning rolls containing various levels (0, 2, and 4%) of Makgeolli lees extract powder, which has nutritional and health effects. The results demonstrated that pH, moisture content, volume, weight, and baking loss rate of morning rolls were not significantly different among the groups. In the morning rolls with 4% Makgeolli lees extract powder, the Hunter's color 'a' (redness), but not L (lightness) or b (yellowness), was significantly higher than that in the other two groups. After estimating the texture quality of morning rolls, hardness, chewiness, and gumminess decreased significantly with added Makgeolli lees extract powder, but springiness was not significantly different. The results of the sensory test showed that appearance and texture increased as more Makgeolli lees extract powder was added, and that the overall acceptability score and air cell uniformity score for 2% and 4% Makgeolli lees extract powder morning rolls were significantly higher than those of controls. These results indicate that the texture and sensitivity of morning rolls can be increased by adding Makgeolli lees extract powder without affecting the overall quality.

Comparative review of muscle fiber characteristics between porcine skeletal muscles

  • Meat derived from skeletal muscles of animals is a highly nutritious type of food, and different meat types differ in nutritional, sensory, and quality properties. This study was conducted to compare the results of previous studies on the muscle fiber characteristics of major porcine skeletal muscles to the end of providing basic data for understanding differences in physicochemical and nutritional properties between different porcine muscle types (or meat cuts). Specifically, the muscle fiber characteristics between 19 major porcine skeletal muscles were compared. The muscle fibers that constitute porcine skeletal muscle can be classified into several types based on their contractile and metabolic characteristics. In addition, the muscle fiber characteristics, including size, composition, and density, of each muscle type were investigated and a technology based on these muscle fiber characteristics for improving meat quality or preventing quality deterioration was briefly discussed. This comparative review revealed that differences in muscle fiber characteristics are primarily responsible for the differences in quality between pork cuts (muscle types) and also suggested that data on muscle fiber characteristics can be used to develop optimal meat storage and packaging technologies for each meat cut (or muscle type).
