Fish-meat gel is being produced mostly relying on surimi and raw materials imported from Southeast Asia and North America and present in small amount in local markets. In this study, common farmed local fishes were examined as stable and reliable sources of surimi for fish-meat gel production. For testing, five main farmed-fish of Korea, namely; Bastard halibut (Paralichthys olivaceus), Red sea bream (Pagrus major), Korean rockfish (Sebastes schlegeli), Common mulle (Mugil cephalus), and Finespotted flounder (Pleuronichthys cornutus) were used following a traditional washing process. The quality of the surimi was determined by the values of water content, whiteness index, gel strength and impurity. Accordingly, fish-meat gel and surimi quality experiments were carried out by measuring compressive and texture properties, expressible moisture content, Hunter color scale values and SDS-page protein patterns. Also gel characteristics were compared with that of FA and RA grade surimi (Alaska Pollock). Fish-meat gels were prepared by salt mincing the farmed-fish surimi with NaCl (2% w/w) and moisture adjustment to 84% by ice water adding. Prepared fish-meat paste was filled into 20-25 cm long polyvinylidene chloride casings and heated at 90℃ for 20 min. The whiteness values of fish-meat gels produced from surimi were increased by using farmed-fish and became comparable to that of FA Alaska Pollock gel. Among all tested farmed-fish, P. olivaceus and P. major exhibited better properties than RA Alaska Pollock and similar properties to FA Alaska Pollock. Therefore, current data suggests that fish farming can be an efficient and sustainable fish-meat source for fish-meat gel production in Korea.

The aim of this study was to compare the physicochemical properties of domestic and imported commercial plain wheat flour and dough. Four types of domestic wheat flour (DW; DW1-4) were compared to four types of imported wheat flour (IW; IW1-4). DWs exhibited lower moisture content, lightness (L), and whiteness, and higher protein content, redness (a), and yellowness (b), than those exhibited by IWs. Solvent retention capacity of DWs and IWs was similar; however, DWs showed higher gluten performance index. Pasting properties, analyzed by rapid visco analyzer (RVA), were similar for DW1, DW2, and IWs; however, DW3 and DW4 showed different RVA patterns. Considering that DW3 and DW4 were organic wheat flour, possible incorporation of damaged kernel might increase amylase activities resulting in decreased peak viscosity. Dough resistance (108.4-159.9 g) and extensibility (11.8-16.7 mm) of IWs were higher than those of DWs (78.0-118.7 g, 8.7-12.5 mm, respectively).

In this study, miscanthus with C/N ratio of 224 were applied to the soil and treated with 0 (control), 10 tons and 20 tons·ha-1 to improve the soil and promote crop growth. As a result, soil organic matter content increased from 11.0 g·kg-1 before the test to 16.3 after 3 years. Soil cation exchangeable capacity increased to 15.3 cmolc·kg-1 after 3 years. In the sweet sorghum, stem was the most thickest at 20 tons·ha-1 application of miscanthus and the highest juice amount per plant was 60 ml. The yield index multiplied by the soluble solids content of juice and juice amount was the highest at 1,913 for 10 tons application and 1,851, 1,839 for 20 tons, control respectively. Number of sweetpotato storage root were 2,9 in 20-tons application plot, the same as control, and 10-tons application plot was 3.6, the most. Two-year average yields of 20 tons plot and control were low at 2,579 kg/10a and 2,708 respectively, and 10 tons plot was the highest at 3,289. For onions, the biomass application did not effect the yield. but onion plant and leaf length were longer in 20 tons plot than in control or 10 tons. The yield of garlic was 2,630~2,901 kg/10a and there was no effect of miscanthus application. Plot of 10 tons application were the longest in plant and leaf length, and the number of scale was 8.2-8.3 per in bulb, and 8.9 tons·ha-1 in control. Therefore, it was confirmed the possibility that miscanthus biomass application of about 10 tons·ha-1 could improve the soil condition and promote crops growth and yield.
This study was performed in order to provide basic data for predicting the usefulness of Jicama (Pachyrhizus erosus) as a food raw material. The changes in the physicochemical properties of freeze-dried and hot air-dried Jicama were investigated and analyzed. The moisture content of raw Jicama was 81.84%. The crude protein, crude fat, crude ash and carbohydrate content of hot air-dried Jicama powder were 2.85, 0.79, 7.93 and 88.44%, while those of freeze-dried Jicama powder were 3.93, 0.83, 7.92 and 87.32%, respectively on dry basis. Regarding the color values, the lightness of freeze-dried Jicama (92.86) was higher than that of the hot air-dried Jicama (88.01), whereas the redness (-0.67) and yellowness (3.21) of freeze-dried Jicama were lower than those of the hot air-dried Jicama (0.43) and (11.96), respectively. The brown index was lower in the freeze-dried Jicama (0.029) than in hot air-dried Jicama (0.107). The total sugar content showed no significant differences between freeze (46.49 mg/g) and hot air-dried Jicama (45.11 mg/g). Finally, the amylose content was higher in freeze-dried Jicama (5.66%) than in hot air-dried Jicama (6.63%).
To assay the quality of anchovy sauce, 10 kinds of commercial anchovy sauce(CAS) were purchased from markets and traditional anchovy sauce(TAS) were prepared. And their physicochemical-microbial characteristics were compared. The compositions of CAS were as followed; pH $5.5{\sim}5.7$, salinity $21.0{\sim}23.2%$, VBN $92.8{\sim}305.4\;mg/100g$, total nitrogen $928.0{\sim}1870.9\;mg%$, amino-nitrogen $338.6{\sim}680.3\;mg%$, and acidity $11.58{\sim}24.58\;ml$. The CAS was lower in pH, smaller in contents of VBN, total-N, amino-N and larger in contents of moisture, salinity than TAS. In Hunter values, CAS was generally lower in L, b values whereas higher in a and ${\Delta}E$ values than TAS. Viable cell counts on 0% NaCl-medium of CAS and TAS were $6.4{\times}10^1{\sim}3.0{\times}10^5\;and\;8.7{\times}10^4$, and those on 2.5% NaCl-medium were $0.8{\times}10^2{\sim}2.2{\times}10^5\;and\;1.6{\times}10^4{\sim}4.5{\times}10^5$, respectively. These viable cell counts in CAS and TAS were gradually decreased according to storage time. In composition of extractives, total free amino acid contents of CAS and TAS were $5498.5{\sim}12123.8\;mg%$, 12797.9 mg%, and these contents were gradually decreased during storage. The major amino acids were found glutamic acid, alanine and leucine in CAS, and alanine, glutamic acid, leucine and valine in TAS. Also contents of hypoxanthine, TMAO, TMA in CAS and TAS were shown $86.4{\sim}161.2\;mg%,\;51.6{\sim}99.2\;mg%,\;23.2{\sim}42.9\;mg%$ and 103.7 mg%, 128.8 mg%, 55.8 mg%, respectively. We may conclude from the results of present experiments that parts of tested CAS were somewhat putrefied and there was a great difference in the quality compared with TAS, whereas TAS maintained good conditions for preserving the quality until storage 2 years.

This study was carried out to analyze the antioxidant components and activities of cooked mixed grain rice-added foxtail millet with different addition rates (5, 10, 15, and 20%) and cooking methods. The two foxtail millet varieties used in this study were non-waxy foxtail millet, 'Samdame', and waxy foxtail millet, 'Samdachal'. Cooked mixed grain rice-added foxtail millet was cooked by general and high pressure cooking methods with and without fermented alcohol. Except for breakdown viscosity, pasting characteristics of foxtail millet were reduced with increasing amounts of foxtail millet. Water-binding capacity and swelling power significantly decreased with increasing amounts of foxtail millet, whereas water solubility index significantly increased. Total polyphenol and flavonoid contents increased with increasing amounts of foxtail millet. DPPH and ABTS radical scavenging activities also increased with increasing amounts of foxtail millet. Moreover, foxtail millet cooked by general cooking method with fermented alcohol showed higher antioxidant effect compared to other cooking methods. In this study, antioxidant components and activities of cooked mixed grain rice-added foxtail millet with different addition rates and cooking methods can be used as basic data for manufacturing processed products.
As its high functional properties to be used as medicine or food, the cultivation of Agaricus mushroom has been expanded and iぉ commercialization required better storage methods that can extend its functional and nutritional value for longer period. We selected drying as the most plausible method to meet such requirement, and several drying conditions were investigated to locate the optimum drying condition that can be used to keep the quality of mushroom. Drying temperature of 50$^{\circ}C$, 60$^{\circ}C$, 100$^{\circ}C$ were selected to trace the drying time required to achieve the moisture content of mushrooms less than 10%. The drying temperature at 50$^{\circ}C$ required 29 hrs of drying time, while 100$^{\circ}C$ required only 10 hrs of drying tune. However, their quality characteristics on the following categories, on the degree of browning and color were investigated to find the optimum drying condition. In addition, sensory evaluation was conducted to evaluate the quality of dried mushrooms produced by each drying condition. The browning of the mushroom was evidently increased as the higher drying temperature was used and 50$^{\circ}C$ drying produced the most desirable quality of all in pileus or stipe. The aeon of browning intensified by drying temperature was comparable to the result of whiteness index value, which resulted lower L values as drying temperature increased. and the 50$^{\circ}C$ drying resulted the most highest L values among all drying samples. As the browning and whiteness results implied, the sensory evaluation result gathered from the present research indicated that the 50$^{\circ}C$ drying was the most favorable drying condition by scoring the most highest average scores on flavors, color, appearance, and overall acceptability conducted by the 10 evaluation panels.

Temporal and spatial variations of water quality were investigated in the Cheonsu Bay of Yellow Sea, Korea from 2010 to 2011. Water samples were collected at 16 stations and physicochemical parameters were analyzed including water temperature, salinity, suspended solids (SS), chemical oxygen demand (COD), dissolved oxygen (DO), Chlorophyll a and nutrients. Spatial distribution patterns of all survey items were not clear among stations but the bimonthly variations were distinct except the bottom water of the suspended solids. The trend analysis by principal component analysis (PCA) during 2 years revealed the significant variations in water quality in the study area. Spatial water qualities were discriminated into 3 clusters by PCA; station cluster in the surface water 1, 2~11, and 12~16, the bottom water 1, 2~7, and 8~16. Annual bimonthly water qualities were clearly discriminated into 3 clusters by PCA. But tend of cluster in the surface and bottom water was difference, period most of the research was low in nutrient. Ecology-based water quality criteria was a good level of grade II. Bimonthly results are shown as III grade(normal) at June and August, II grade(good) at October and December and I grade for February and April. Water quality was showed by the input of fresh water same as those of Kyoungin coastal area, Asan coastal area, Gunsan coastal and Mokpo coastal area in the Cheonsu.
A total of 5 female elk dEER $(220kg\pm10kg)$ were included in a study on the changes in physicochemical properties of deer meat during storage at $4^{\circ}C\;and\;-2^{\circ}C$. The deer was exposed to normal pre-slaughter handling and put under anesthesia before slaughtered. The loin and leg cuts were deboned from the carcass after 24hrs slaughter. The samples weighing approximately 300g were packaged using wrap packaging and stored for 3, 7, 11 and 15 days at $4^{\circ}C\;and\;-2^{\circ}C$. Water-holding capacity was decreased with increasing storage days at $4^{\circ}C\;or\;-2^{\circ}C$, respectively The deer meats kept at $-2^{\circ}C$ showed lower TBARS value than the meats kept at $4^{\circ}C$, and it was possible to extend the storage period of the meats. VBN values of the meats kept at $4^{\circ}C\;and\;-2^{\circ}C$ showed as edible values after storage for 15 days, although there were no significant differences among the storage temperature. pH values of loin and leg tended to be increased with the passage of storage time, and the values of the meats kept at $-2^{\circ}C$ was lower than that at $4^{\circ}C$. The change of meat softness was remarkable at $4^{\circ}C$, and the change at $-2^{\circ}C$ was slow. Therefore, it was effective to extend the storage period when the meats were kept at $-2^{\circ}C$. Color of the meats kept at $-2^{\circ}C$ was darker than that at $4^{\circ}C$, the index of red color was higher for the meats kept at $-2^{\circ}C$, and yellow color of meats kept at $-2^{\circ}C$ was more rapidly changed with the passage of storage time.

The leaching behaviour of [aniline-$^{14}C$]mefenacet in soil was investigated using glass columns (5 cm I.D. $\times$ 30 cm. H) packed with two types of soils with different physicochemical properties. $^{14}C$-Mefenacet (8.33 kBq) and mefenacet (in total, 1.05 mg/kg) were treated onto soil columns and rice plants (Oryza sativa L.) were grown for 17 weeks on these columns. Leachates from the columns were collected at the rate of 122.5 mL per week. $^{14}C$-Activities leached from soil A (OM, 3.1%; CEC, 86 mmol(+)/kg; texture, loam) columns with and without rice plants were 1.95 and 4.19% of the originally applied, whereas those from soil B (OM, 1.3%; CEC, 71 mmol(+)/kg; texture, loam) were 2.69 and 7.05%, respectively. These results indicated that larger amounts of $^{14}C$ were percolated from soil B with less organic matter and from the columns without vegetation. $^{14}C$-Activities absorbed by rice plants from soil A and B were 8.95 and 8.47%, respectively, most of which remained in the root and shoot excluding unhulled grains and ears without grains. $62\sim73%$ of the originally applied $^{14}C$ remained in the depth of $0\sim5cm$ in soil. The mass balance indicated that the losses by volatilization and/or mineralization amounted to $3.4\sim9.2%$ of the originally applied. $^{14}C$-Radioactivities in the aqueous phase of the leachates ranged from 59.4 to 97.7% of the radioactivities in leachates, showing the fast transformation of mefenacet to the polar metabolites.
