종류가 다른 식용유지에 첨가된 고DHA(Docosahexaenoic Acid) 어유가 흰쥐의 지질대사에 미치는 영향 (The Effect of Docosahexanoic Acid-Rich Fish oil Added to Different Dietary Fats on Lipid Metabolism in Rat)

  • This study was undertaken to elucidate the effect of DHA-rich fish oil (DHA-rich oil) added to different dietary fats on lipid metabolism. Rats were fed perilla oil, sesame oil and beef tallow with or without DHA-rich oil for 12 weeks. The weight gain was higher in groups with DHA-rich oil than that of groups without DHA-rich oil, with DHA-rich oil, while weight of epididymal fat pad was lower in perilla oil and beef tallow groups with DHA-rich oil. The contents of total lipid and triglyceride in plasma were not affected by dietary fat types, but that of total and HDL cholesterol in plasma were higher in sesame oil group than perilla oil and beef tallow groups without DHA-rich oil. The contents of total lipid, triglyceride, total cholesterol, HDL cholestrol and LDL cholesterol in plasma were decreased by DHL-rich oil addition. The contents of total lipid, total cholesterol and triglyceride in the liver were not affected by dietary fat type. The contents of total cholesterol and triglyceride in the liver were not affected by dietary fat type. The contents of total lipid and TG in liver were not affected by DHA-rich oil addition while hepatic cholesterol increased by DHA-rich oil addition. The activities of glucose 6-phosphate dehydrogenase and malic enzyme were highest in beef tallow group without DHA-rich oil and decreased by DHA-rich oil addition. Peroxisomal ${\beta}$-oxidation had an inverse relationship against the activities of lipogenic enzymes. In conclusion, dietary DHA-rich oil decreased fat accumulation and had hypolipidemic effect, especially in beef tallow group. Also groups with DHA-rich oil showed more hypolipidemic effect than perilla oil group. And DHA-rich oil addition to diets resulted in increasing dietary n-3/n-6 ratio. Therefore increase in n-3/n-6 ratio as well as dietary DHA were considered to be responsible for the hypolipidemic effect resulted from DHA-rich oil addition.

자외선 흡수특성을 이용한 참기름의 이종기름 혼입판별에 관하여 (Determination of Sesame oil Adulterated with other Vegetable oils by Spectrophotometric Method)

  • 참기름에 이종의 식용유를 혼합하였을 때 이를 판별할 수 있는 방법을 연구하기 위하여, 순수한 참기름을 비롯한 일반적인 식용유 5종의 UV흡수양상을 조사하여 각 식용유의 UV흡수특성을 이용하여 순수한 참기름과 혼합 기름을 구별할 수 있는 근거를 마련하였다. 순수한 참기름의 spectrum은 215, 230 및 290 nm에서 흡수피크를 형성한 반면, 옥수수유, 들기름 및 대두유는 모두 215, 230 및 280 nm에서, 그리고 미강유는 215, 290 및 320 nm에서 흡수피크를 형성하였다. 참기름의 290 nm에서의 흡수피크는 참기름 제조과정인 참깨의 볶는 온도와 시간이 증가할수록 그 흡광도가 증가하는 경향이 있었으며, 일반적인 조건으로 추정되는 $200^{\circ}C$, 60분간 볶은 후 제조한 참기름은 대략 0.7 정도의 흡광도를 나타내었다. 참기름에 미강유를 혼합한 기름에서는 320 nm에서 미강유의 존재를 확인할 수 있는 흡수피크가 나타나고, 참기름에 옥수수유, 들기름 또는 대두유를 각각 혼합한 기름들은 290 nm에서의 흡광도가 순수한 참기름의 흡광도에 비하여 적었으며, 이종기름의 혼합율이 높을수록 비례적인 감소를 나타내었다.

  • The young leaf of Perilla species was cultured by two stage culture system using the medium containing mevalonic acid lactone. The growth rate and productivity of essential oil of callus were increased. The essential oil from intact plant and callus was also analysed. Sesquiterpene hydrocarbons and one sesquiterpene alcohol were identified in essential oils of callus.

들기름, 옥수수기름의 섭취와 2-Acetylaminofluorene 투여가 지질과산화물 및 PG $E_2$ TX $B_2$ 생성에 미치는 영향 (Effect of Intake of Perilla oil or Corn oil and 2-Acetylaminofluorene Treatment on Lipid Peroxidation PG $E_2$ and TX $B_2$ Productions in Rats)

  • This study was conducted to compare the effects of perilla oil or corn oil on lipid peroxidation and eicosanoid productions which are associated with the promotion of carcinogenesis. in liver or blood in rats. Male Sprague-Dawley8 weaning rats were fed on semisynthetic diets containing 15%(w/w) beef fat(BF). corn oil(CO) or perilla oil(PO) Three weeks after the half of rats in each diet group were injected with a single dose of 50mg 2-acetylaminofluorene (AAF)/Kg BW hepatocarcinogen intraperitoneally 3 times at 2-day interval and all of the rats were sacrificed after 8 weeks from the first injection. The rats fed on different dietary fats without 2-AAF treatment had not different MDA produc-tion and conjugated diene content in liver microsome. CO+AAf group had significantly higher conjugated diene content than BF+AAF and PO+AAF groups. and lower glucose-6-phospha-tase activity than BF+AAF group But PO+AAF had similar conjugated diene content to BF+AAF group and significantly lower MDA production than BF+AAF and CO+AAF groups. The hepatic mocrosomal lipid peroxidation was slightly greater in CO group than in PO group though perilla oil(P/S=9.67) has much more polyunsaturated fatty acids than corn oil(P/S=2.92) PG E2 level in liver and TX B2 level in plasma were significantly higher in CO group than in BF and PO groups. TX B2 level was lowered in CO and BF groups by 2-AAF treatment. These results reach to the contclousion than the type of dietary fatty acid as well as the P/S ratio has effect on hepatic microsomal lipid peroxidation and eicosanoid production and perilla oil or linolenic acid(n3) might be less effective on lipid peroxidation or PG E2 and TX B2 mediated tumor promotion than corn oil or linoleic acid(n6).

Activities of Essential Oils from Perilla frutescens var. acuta against Antibiotic-Susceptible and -Resistant Vibrio and Salmonella Species

  • We determined the inhibitory activity of the essential oil fraction obtained by steam distillation from the fresh and dried leaves of Perilla frutescens var. acuta against some pathogenic Salmonella and Vibrio spp. The activities of compounds isolated from the essential oils, apiol and myristicin, were also tested and the results were compared with those of the essential oil fraction. The Perilla essential oil fraction and its main components showed significant inhibition against antibiotic-susceptive and antibiotic-resistant strains of the tested Salmonella and Vibrio strains. Synergistic or additive effects were identified by combing the oils with ampicillin by checkerboard-titer tests. We conclude that essential oils from P. frutescens can be useful in the treatment of Salmonella and Vibrio infections and as safe additives to food materials for the prevention of contamination of food by these bacteria. This is especially important because of the rapid increase in antibiotic-resistant strains, which could cause severe symptoms in humans.

조선시대 동유(桐油) 사용의 진위 (The Authenticity of the Use of Tung Oil in the Joseon Dynasty)

  • There are records and claims that tung oil was applied to Korean traditional buildings and furniture as finishing paint. Records of the use of tung oil(桐油) exist in the Annals of the Joseon Dynasty(朝鮮王朝實錄) and The Royal Protocols of the Joseon Dynasty(朝鮮王朝儀軌). However, there is also a claim that tung oil was not produced in Korea on its own, and that tung oil was not applied to important buildings such as palaces. Silhak scholar(實學者) Seo Yu-gu says that in Korea, people do not know how to grow tung trees, and boiled perilla oil is called tung oil. If tung oil was used in the Joseon Dynasty, it would be necessary to use tung oil for waterproof coating to preserve current architectural heritage, otherwise, tung oil coating would not be desirable. Analyzing the Yeonggeon Uigwe(營建儀軌) among the Joseon Dynasty's Uigwes shows that tung oil is neither mentioned nor used. In addition, as a result of analyzing the Uigwes mentioned in tung oil, it was found that perilla oil or Myeongyu(明油), not tung oil, was recorded in the actual material used. Therefore, the records of the use of tung oil during the Joseon Dynasty can be seen as records using Myeongyu(明油) or Beopryeon perilla oil(法煉荏油).

The Influence of Saturated Fats, ${\alpha}-linolenic$ Acid, EPA and DHA on the Lipid Hydroperoxide Level and Fatty Acid Composition in Liver Microsomes and in Plasma Lipid of Rabbits

  • To investigate the influence of saturated fats, ${\alpha}-linolenic$ acid, EPA and DHA on the lipid hydroperoxide concentration and fatty acid composition in liver microsomes and in plasma lipid of rabbits, the animals were fed on the perilla oil rich ${\alpha}-linolenic$ acid or sardine oil rich EPA and DHA diet for four weeks Were examined. The fatty acid composition of plasma lipid and liver microsomes of rabbits fed on the perilla oil diet was an accumulation of arachidonic acid(AA) 20:4 n-6, eicosapentaenoic acid(EPA) 20:5 n-3, and docosahexaenoic acid(DHA) 22:6 n-3, The fatty acid composition of plasma lipid and liver microsomes of rabbits fed on the sardine oil was an accumulation of ${\alpha}-linolenic$ acid(LNA) 18:3 n-3, and arachidonic acid(AA) 20:4. The p/s ratio of rabbits fed on the perilla oil diet changed from 7.4 to 2.27 for plasma lipid and 2.47 for liver microsomes. The concentration of lipid hydroperoxide was 3.48 nmol MDA/ml and 4.35 nmol MDA/ml for plasma lipid and liver microsomes, respectively, in perilla oil diet. The lipid hydroperoxide liver was 4.22 nmol MDA/ml and 67 nmol MDA/ml for plasma lipid and liver microsornes in sardine oil diet.

들깨의 발아가 들깨유의 산화 및 토코페롤 안정성에 미치는 영향 (Effects of Seed Germination on Oil Oxidation and Tocopherol Stability of Perilla Oil)

  • 본 연구에서는 비발아들깨와 12, 36, 48시간 발아시킨 들깨로 부터 유지를 추출한 후 $60^{\circ}C$의 빛이 차단된 상태 또는 빛의 존재 하에 4일 동안 저장하면서 가속조건에서의 유지 산화 및 토코페롤 안정성을 평가하였다. 들깨유의 과산화물값과 공액이중산 값은 저장기간이 증가함에 따라 유의하게 증가하였으며, 비발아 들깨유에 비해 발아들깨유에서 낮은 경향을 보였다. 또한 빛이 차단된 조건에 비해 빛 존재 하에서 들깨유의 산화와 토코페롤 분해가 더 많이, 더 빨리 진행되었다. 들깨유 중 12시간 발아시킨 들깨로부터 추출한 들깨유는 유의하게 낮은 공액이중산값과 토코페롤의 낮은 분해속도 등에 기인하여 가장 높은 자동산화, 광산화 안정성을 보여주었다.

Fatty Acid Content in Perilla Cultivars and Commercial Oils Determined by GC Analysis

  • The content analysis of fatty acids in Perilla cultivars and commercial oils is conducted through gas chromatography with a flame ionization detector. Results show that Perilla cultivars, such as Deulsaem and Daesil, contain high amounts of ${\alpha}-linolenic$ acid (262.22 and 261.97 mg/g, respectively). Among commercial oils, Perilla oil contains a higher amount of ${\alpha}-linolenic$ acid (515.20 mg/g). Accordingly, ${\alpha}-linolenic$ acid is a major fatty acid of Perilla cultivars and oil. Therefore, Perilla cultivars could be used as a food supplement for nutritional and pharmaceutical purposes.

랜시매트법에 의한 들기름의 산화안정성 측정 (Determination of Oxidation Stability of Perilla Oil by the Rancimat Method)

  • 최근 유지의 산화안정성 측정방법으로서 이용되기 시작한 Rancimat법의 측정결과를 oven 시험 및 중량법의 결과와 비교하여 세 측정법의 결과가 거의 일치함을 확인하였고, Rancimat 측정에 있어서 들기름의 측정온도와 유도기간 사이에는 다음의 관계가 있음을 알았다. $t_p=e^{-0.0815T+9.183}$ 들기름 항산화제로서 TOC 단독으로는 효과가 없으며, 유기산의 경우에는 AA>ASE>MA>TA>CA 순으로 항산화 효과가 있었다. AA의 경우 500ppm까지는 항산화 효과가 급속히 증대하나 그 이상 첨가시에는 완만하였다. AA 500ppm에 TOC를 함께 첨가한 경우 TOC 200ppm까지는 상승효과가 없었으며, TOC 200ppm 이상 첨가할 경우 상승효과가 나타나 TOC 700ppm의 경우에는 들기름의 산화안정성을 4.6배 향상시킬 수 있었다.
