인식과 소비행동의 상관분석을 통한 식품 선택요인에 관한 연구 (Study on the food selection by analyzing the correlates of perceptions and consumptions frequency of foods)

  • This study was conducted to identify the factors that correlated with food consumption frequency and perceptions of attributes for food selection. The purpose of this study was to improve menu's quality which is related to the food consumption frequency. Taste health and cost perceptions were chosen as the main factors of foods selection from the former related researches. There were differences in foods perception and consumption patterns according to gender. For both of female and male consumers, taste perceptions were highly correlated with consumption of most of foods. Finally, some recommendations which should be considered to correct or improve the quality of menu.

서울과 강원지역 학생들의 육가공품에 대한 인식 및 섭취 조사 (A Survey on the Perception and Consumption of Processed Meat Products by Students in Seoul and Gangwon Province)

  • In this study the perception and consumption of processed meat products by students in food service schools was investigated. The total number of subjects in Seoul and Gangwon province used for this survey was 569. The most preferred processed meat product for students was the fried pork cutlet(17.7%), followed by bacon(11.4%), ham(7.9%) and sausage(7.6%). The main reasons for the consumption of these processed meat products were 'good taste'(52.5%), 'convenience in eating'(18.8%) and 'as the parent buy'(18.8%). The preference for the processed meat products had a relatively high perception value(4.0). However, the effect of consuming processed meat products on nutrition and health had a relatively low perception value(2.9). Reasons for distrusting the processed meat products were attributed to 'bad influence by media'(25.9%) and the 'unsanitary manufacture'(23.6%). In regards to the question about sodium nitrite, most of the students(56.2%) replied that they had 'never heard of it' or 'didn't know it well'. In conclusion, an improvement in public information would be a prerequisite for expanding wholesome use of processed meat products.

  • 본 연구의 목적은 프로야구 경기장을 방문한 관람객들의 서비스스케이프 체험과 현장에서의 통제지각, 소비감정, 재방문의도 의 관계를 규명하는 것이다. 총 273부의 설문지를 SPSS 20.0과 AMOS 20.0을 사용하여 분석을 실시하였다. 빈도분석과 신뢰도 분석, 확인적 요인분석, 상관관계분석을 통해 자료의 타당성을 검증하였으며, 구조방정식 모형분석을 실시하여 가설을 검증하였다. 첫째, 서비스스케이프는 통제지각에 통계적으로 유의한 영향을 미치는 것으로 나타났다. 둘째, 서비스스케이프에서의 통제지각은 소비감정에 유의한 영향을 미쳤다. 셋째, 서비스스케이프는 소비감정에 영향을 미쳤다. 넷째, 소비감정은 재방문의도에 유의한 영향을 미치는 것으로 나타났다. 본 연구의 결과는 야구경기장을 방문하는 관람객들이 서비스스케이프에 대한 긍정적 체험을 통해 재방문을 유도할 수 있음을 시사하였다. 구체적인 논의와 시사점을 본문에 서술하였다.

  • Conspicuous consumption is often investigated in Korea and consumers purchase a product to publicly display economic power or social status. The existing studies argue that brand loyalty and luxury brand preferences escalate conspicuous consumption, and it is important to identify different visual perception to understand irrational consumers' behavior. Car emblem as brands' visual identity represents the brand's image, mission and message. Irrational consumers thus are expected have different visual perception to the emblem or logo. To understand the impact of irrational consumer behavior on visual perception, this study explored how brand loyalty and luxury brand preferences impact on the visual perception of car emblems between Korean domestic brand and imported brand. This study used eye tracking technology to measure the respondents' attention on an emblem of the cars. Eye tracking tools analyze fixations and measure the attention on a specific area of interests (AOI). This study explored the maintaining time and frequency on AOI, as well as explored the size of pupil to identify the respondents' attention on the AOI. In this experiment, the logos of domestic cars (i.e., Hyundai and Kia) and foreign cars (i.e., Mercedes-Benz and BMW) were swapped to see how irrational consumer behavior impact on visual perception of car emblem.

Factors Influencing the Consumption of Calcium-Rich Foods among Adolescents

  • The purpose of this study was to identify factors influencing the consumption of calcium-rich foods among adolescents. A total of 96 adolescents divided into twelve focus groups were investigated during April to May 2000 in Busan. Focus group discussions were audio-taped, transcribed and analyzed using a grounded theory approach. Key factors influencing the consumption of calcium-rich foods were taste, food type, body image, and family. Motivators among the factors were taste, flood type, body image, health, family and perception, and barriers were taste, flood type, location, friends, price, weather and lactose intolerance. Taste, flood type, location and weather were found to be both motivators and barriers of consumption of calcium-rich floods according to circumstances. Some of these factors varied in importance by gender and age. Younger adolescents were more strongly influenced by taste and family than older ones. Older adolescents were strongly influenced by body image, convenience and perception. These findings could be used as a guideline for adolescents to consume calcium-rich foods.

  • As the demand for ready-to-eat foods continues to grow, concerns about the sodium in processed foods are also growing. In this study, a survey was conducted on the perception of low-sodium products and diffusion plans according to the type of employee (manufacturer, retailer, distributor). Of the 191 responses collected, 189 valid responses (98.9%) were analyzed. The results showed that the employees were aware of the health contribution of a low-sodium diet, labeling for low-sodium, and the promotion of low-sodium food to increase its consumption. Furthermore, retailers recognized the positive contribution of low-sodium products in terms of Environmental, Social, and Governance (ESG) management. The use of sodium substitutes was preferred as the best way to reduce sodium in ready-to-eat foods. With regard to sodium reduction in ready-to-eat foods, we found that the technical factors involved were clustered by the type of business. Specifically, distributors showed a similar performance but had a lower perception of importance than retailers. Manufacturers had a lower perception of both importance and performance. In this study, we collected perceptions from employees who were working at food companies, which differed from previous research. We sought to examine the differences in the perception of sodium reduction and consumption of ready-to-eat foods across various types of employment. Furthermore, we provided specific approaches to reduce perception gaps and enhance understanding among employees.

Dieticians' intentions to recommend functional foods: The mediating role of consumption frequency of functional foods

  • This study explored the conceptual framework of dieticians' intentions to recommend functional food and the mediating role of consumption frequency. A web-based survey was designed using a self-administered questionnaire. A sample of Korean dieticians (N=233) responded to the questionnaire that included response efficacy, risk perception, consumption frequency, and recommendation intention for functional foods. A structural equation model was constructed to analyze the data. We found that response efficacy was positively related to frequency of consumption of functional foods and to recommendation intention. Consumption frequency also positively influenced recommendation intention. Risk perception had no direct influence on recommendation intention; however, the relationship was mediated completely by consumption frequency. Dieticians' consumption frequency and response efficacy were the crucial factors in recommending functional foods. Dieticians may perceive risks arising from the use of functional foods in general, but the perceived risks do not affect ratings describing dieticians' intentions to recommend them. The results also indicated that when dieticians more frequently consume functional foods, the expression of an intention to recommend functional foods may be controlled by the salience of past behaviors rather than by attitudes.

제천지역 학부모와 어린이 보육시설 원장들의 어린이 기호식품 품질인증에 대한 인식 및 소비행동 조사 (Study on Recognition and Consumption Behavior of Quality-Certified Children's Preferred Foods of Nursery Directors and Parents in Jecheon Area)

  • Purpose: This study aimed to identify the perception of quality-certified children's preferred foods as well as consumption behaviors of nursery directors and parents. Methods: A total of 243 nursery directors and parents of preschool children were surveyed using questionnaires. Results: Parents' perception scores were lower than directors' scores for many of the questions. Parents showed significantly higher scores for food safety standard questions and nutritional fortifying questions than directors (p<0.001 each). On the other hand, directors showed significantly higher scores for questions about products nutrition and safety (p<0.001, p<0.01). When buying children's favorite food items, food additives and hygiene level of vendors were the most important, in that order. Parents' scores for questions on purchasing behaviors of quality-certified children's preferred foods were significantly higher than those of directors'. Further, respondents with nutritional education experience showed high behavior scores. Conclusion: It can be concluded that promotion of quality-certified children's preferred foods is insufficient. The nutrition education group showed high scores for perception and positive consumption behaviors of quality-certified children's preferred foods. It is important to cooperate with nursery directors and parents of preschoolers to further children's nutritional education.

베트남 주부의 한류지각이 한국 브랜드 아동복 구매의도에 미치는 영향 (The Effect of Vietnamese Mothers' Perception of the Korean Wave on Purchase Intention of Korean Brand Children's Wear)

  • This study explored the product attributes Vietnamese mothers consider for the purchase of children's wear, the differences of product attributes between groups with different levels of conspicuous consumption, and the extent to which the Korean wave affects the purchasing behavior of children's wear brands. The results are as follows. First, the product attribute that Vietnamese mothers consider most when purchasing children's clothes is the comfort in physical activities. Fabric type and quality, sizing and fit, durability, color, child suitability, design, cutting and construction, price, fashionability, and maintenance and laundering are the other attributes (respectively) that influence the purchase of children's wear. Second, the high conspicuous consumption group considers brand, maintenance and laundering, durability, the reactions of others, and fashionability significantly more than the low conspicuous consumption group. Third, the purchase intention of Korean children's wear brands is affected by the perception of the Korean wave than the influence of the reference group or the tendency of conspicuous consumption. The results show that low prices and practicality were important considerations for children's clothing purchases by Vietnamese mothers; however, brand name and fashionability were more powerful predictors for the high conspicuous consumption group. Those with a high perception of the Korean wave also had a higher intention of Korean children's wear brand, which is indicative of the halo effect of the Korean wave. Thus, Korean children's wear brands that plan to enter the Vietnamese market should make active use of the Korean wave.

블렌딩티와 구절초에 대한 인식과 소비행동 연구 - 20대 여대생을 중심으로 - (A Study on the Perception and Consumption Behavior of Blended Tea and Siberian Chrysanthemum - Focusing on female college students in their 20's -)

  • In this study, consumers' perception and consumption behavior of blended tea were investigated. Also, consumer perception of Siberian chrysanthemum, consumption behavior, and awareness of efficacy were investigated. As a result of the survey, it was confirmed that it was necessary to develop a blended tea with taste and flavor characteristics that consumers prefer, having the capability of relieving stress, and preventing cold or respiratory disease. In addition, the degree of recognition of Siberian chrysanthemum was very low, and the recognition of the efficacy appeared in the order of 'cold relief' and 'respiratory disease relief'. Factor analysis results, safety attributes, health attributes, product attributes, marketing attributes, and sensory attributes were factorized into five factors, and after analysis, it was concluded that the sensory attributes of taste and aftertaste were considered the most important. Consumers surveyed appeared to consume blended tea for 'relieving mood or stress relief', to enjoy the taste, and to prevent cold or respiratory diseases. Siberian chrysanthemum displays efficacy in cold relief and relief of respiratory diseases. Therefore, developing Siberian chrysanthemum as a blended tea could be a practical application that can expand the range of its use, making it more popular and increase its commercial applications.
