Particle size distribution, pasting properties by Rapid Visco Analyser, and textural properties of acorn, mungbean and buckwheat starches, which are the basic raw materials for mook, are compared. The major particle size of mungbean starch was $10{\sim}30$ micron, whereas acorn and buckwheat starches were $5{\sim}20$ micron. At the same starch concentration, mungbean starch had the highest peak viscosity, breakdown and setback. Acorn starch showed the lowest peak viscosity and breakdown. The peak viscosity of buckwheat starch was close to that of mungbean, however the trough and final viscosity were comparable to those of acorn starch. At the same peak viscosity, mungbean starch showed the lowest trough and final viscosity and the highest breakdown and setback. Acorn starch was differentiated from buckwheat starch in that the former had the higher value of setback. The textural properties of mungbean starch gel were significantly different from others. The texture of gels from acorn and buckwheat starches revealed that only the hardness and gumminess were different each other. The hardness of starch gels were negatively correlated with trough and final viscosity, and positively correlated with setback.
This experiment was conducted to collect the basic information on the varietal diversity in amylogram properties of 3 different rice sub-species under tropical conditions in IRRI 2001 wet season based upon correlation and principal component analysis. The peak viscosity and breakdown property of Tongil type, i.e.; temperate Indica species showed higher similarity with Japonica type species rather than typical Indica and tropical japonica types. The amylogram properties such as final viscosity, pasting consistency and setback of Tongil type varieties were lower than those of typical Indica and tropical japonica types. The peak viscosity showed positive correlation with trough, while the breakdown showed negative correlation with setback in all tested 3 rice subspecies. The first principal component was applicable to increase the gelatinization temperature, final viscosity, pasting consistency and setback, and applicable to decrease the peak viscosity and breakdown. Varietal classification by the principal component score of each pedigree could be applied to the interpretation of the community by the scatter diagram for the amylogram properties to the different sub-species of rice at IRRI conditions.
Physicochemical properties of starches isolated from 3 new potato cultivars developed by Potato Valley Ltd. were investigated and compared to those of starch isolated from 'Superior' being distributed prominently in Korea. Significant differences were observed in physicochemical properties such as granule size, amylose content, phosphorus content, water binding capacity, swelling power, solubility, and in vitro digestibility of starches from different potato cultivars. Thermal properties were evaluated using differential scanning calorimetry (DSC), and onset gelatinization temperatire ($T_o$), peak temperature ($T_p$), and enthalpies of gelatinization (${\triangle}H$) of different potato cultivars ranged as $58.0{\pm}0.3-61.7{\pm}0.4^{\circ}C,\;63.7{\pm}0.2-$$66.5{\pm}0.0^{\circ}C$, and $15.6{\pm}0.5-17.0{\pm}0.3$ J/g, respectively. Pasting properties were evaluated using a rapid visco analyzer (RVA), and pasting temperature, peak viscosity, and final viscosity of different potato cultivars ranged as $65.0{\pm}0.1-68.9{\pm}0.1^{\circ}C$, $8,163.7{\pm}196.3-9,035.7{\pm}6.4$ cp, and $4,397.7{\pm}166.7-7,025.0{\pm}271.3$ cp, respectively. Especially, 'Gogu valley' starch showed the highest values in the amylose and phosphorus content among tested potato cultivars and higher water binding capacity, swelling power, and solubility than those of other tested starches. And it also showed high pasting temperature, peak viscosity, trough viscosity, and final viscosity as compared to other tested starches.

The power curve during rubber mixing presents useful information for the understanding of rubber mixing process, because the power curve is determined the mixing state of rubber at the point. The time to the second peak on the power curve is known as carbon black incorporation time, BIT. This study gets the quantity relationship of BIT and viscosity of natural rubber, so by determining the mixing time of the compound on the ground of viscosity of the raw rubber. The mixing with natural rubber and carbon black is examined for various grade natural rubbers, encompassing a wide range of Mooney viscosity. Alter smoothing the mixing power curve using a polynomial, the carbon black incorporation time, BIT, was determined time to second power peak on the curve, The BIT's versus specific values on Mooney viscometer test curve show a linear relation, Especially, the peak of initial maximum torque on Mooney viscometer curve, PMT, is most relevant property relating to the BIT. PMT is useful index for determined optimum mixing time, To apply this results at the mixing, we effectively control the natural rubber mixing but can also know the grading of natural rubber upon processability.
Sulgidduk samples containing 2, 4, and 8% red ginseng powder and a control[ED highlight - consider specifying what the control was, if 0%, then change to Sulgidduk samples containing 0(control), 2, 4 and 8%] were examined for moisture content, color, gelatinization properties, textural characteristics, and sensory qualities to determine the optimal ratio of red ginseng powder in the formulation. The moisture contents among the samples did not differ significantly. Specifically, they ranged from 39.64 to 40.69%, and increased as the red ginseng powder content increased. Additionally, the lightness decreased and the yellowness and redness increased as the red ginseng powder content increased. Evaluation of the gelatinization properties revealed that the, peak viscosity(P), hold viscosity(H), final viscosity(F), setback, and time to peak viscosity decreased with increasing red ginseng powder content, but the breakdown and temperature to peak viscosity did not differ significantly among samples[ED highlight - please ensure my changes are correct]. The hardness and adhesiveness decreased with increasing red ginseng powder content, as did the cohesiveness, gumminess, and chewiness; however, the springiness did not differ significantly among samples. Sulgidduk samples made with additions of 2, 4, 6, 8, and 10% Houttuynia cordata Thunb. powder, and a control were examined for quality characteristics such as moisture content, water activity, color, gelatinization properties, textural characteristics, and sensory qualities in order to determine the optimal ratio of Houttuynia cordata Thunb. powder in the formulation. The moisture contents among the samples ranged from 41.98% to 44.97%, and increased as the content of Houttuynia cordata Thunb. powder increased. The water activities of the samples were not significantly different. As the Houttuynia cordata Thunb. powder content increased, the redness and yellowness of the samples also increased, but lightness decreased. For the gelatinization properties, the additions of Houttuynia cordata Thunb. powder caused decreases in peak viscosity (P) and holding strength viscosity (H). Furthermore, final viscosity (F), setback, and time to peak viscosity decreased with increasing Houttuynia cordata Thunb. powder content; however, breakdown and temperature to peak viscosity were not significantly different among the samples. Hardness and gumminess decreased with increasing Houttuynia cordata Thunb. powder content, and adhesiveness, cohesiveness, chewiness, and resilience also tended to decrease; however, springiness was not significantly different among the samples. In the consumer acceptance test, as the content of Houttuynia cordata Thunb. powder increased, the scores of all evaluated characteristics decreased; while the characteristic intensity ratings showed the reverse effect, and the 2 and 4% Houttuynia cordata Thunb. powder samples obtained fairly good scores. In conclusion, the results indicate that adding $2{\sim}4%$ Houttuynia cordata Thunb. powder to Sulgidduk is optimal, providing good physiological properties and reasonably high overall consumer acceptability.

The survival rate and thermal, crystal, and physicochemical properties of starches in chinese yam tubers irradiated to proton beam were determined. Survival rate was decreased with increased proton beam irradiation. Amylose content of D. opposita starches from different proton beam ranged from 13.2% to 17.8%. D. opposita starch at 5 Gy showed the highest ${\Delta}H_{gel}$ values (12.0 J/g) while D. opposita starch at 25 Gy showed the lowest values (10.1 J/g). Several parameters such as PKV (peak viscosity), HPV (Hot peak viscosity) and CPV (Cooling peak viscosity) decreased with the increase in irradiation dose. The degrees of crystallinity of the D. opposita starches at 5, 10, 15, 20 and 25 Gy were 37.2, 38.3, 38.9, 39.2 and 39.9%, respectively. It might be deduced that proton beam irradiation causes changes of starch, especially at high dose irradiation.
The changes in gelatinization patterns of potato were investigated while steeping in water for 7 days at 30${\pm}$1$^{\circ}C$. The transmittance of 0.1% starch suspension was increased rapidly from 60$^{\circ}C$ in raw starch and the starch steeped for 2 days, and increased rapidly from 65$^{\circ}C$ in the starch steeped for 4 and 6 days. As the steeping period increased, the transmittance was decreased at above condition. The gelatinization temperature of the starch measured by differential scanning calorimetry was increased from 62.79$^{\circ}C$ to 63.72$^{\circ}C$ as the steeping period increased. The gelatinization enthalpy reached the maximum in the starch steeped for 4 days. By amylograph, the initial gelatinization temperature was increased from 66$^{\circ}C$ to 84$^{\circ}C$ as the steeping period increased. Peak viscosity was decreased during steeping and the starch steeped for 5 days had no peak viscosity. Peak height after cooling to 50$^{\circ}C$ was increased up to the 4th day and began to decrease. As the steeping period increased, there was much loss of birefringence at higher temperature. The crystallinity by X-ray diffraction disappeared from 65$^{\circ}C$.
Three oat cultivars and one oat breeding line were evaluated for chemical, hydration and pasting properties. Protein, starch and ${\beta}$-glucan levels ranged 11.13~14.37, 56.37~64.86 and 3.44~4.76%, respectively. The oat cultivars Daeyang and Seonyang contained higher ${\beta}$-glucan levels of 4.76 and 4.35%. The Daeyang variety had a higher water absorption index (WAI) of 2.83~3.35 (g/g), but a lower water solubility index (WSI) of 8.67~11.08%. Daeyang and Seonyang cultivars showed higher peak and trough viscosity, but lower breakdown and setback, indicating that they easily swell, and thus could possibly provide the desirable viscosity of an oat product. The ${\beta}$-glucan levels were correlated positively with WAI, peak and trough viscosity, and negatively to WSI, breakdown and setback viscosity.
Intrinsic viscosity of starch irradiated with Co-60 (0.25-9.1 kGy) significantly decreased, and swelling power and solubility measured at $80^{\circ}C$ linearly increased with increasing irradiated dose. Radiation treatment up to 1 kGy increased amylose content of starch. Water-binding capacity increased rapidly up to 3 kGy. Peak viscosity of irradiated starches by Rapid visco Analyser and Visco/amylo/Graph indicated that the decrease in peak viscosity was dose-dependent. Gamma irradiation showed no effect on endothermic temperatures of irradiated starches, but decreased endothermic enthalpy with increasing dose level. Viscosity of starch autoclaved at $120^{\circ}C$ and air-dried significantly decreased with increasing irradiation dose. Resistant starch content slightly decreased upon irradiation.
