Molecular Identification of Adoxophyes honmai (Yasuda) (Lepidoptera: Tortricidae) Based on Mitochondrial COI Gene Sequences

  • Molecular identification techniques are used where morphological characters are not useful for distinguishing species that resemble each other closely. The example studied here is the Adoxophyes species complex, in which A. orana (Fischer von $R{\ddot{o}}sslerstamm$) is officially the only known Korean species in the genus Adoxophyes (Lepidoptera: Tortricidae). However there have been suspicions that at least two types of A. orana exist in Korea based on the distribution and range of the host, with A. orana attacking apples and peaches, and another Adoxophyes sp. attacking tea and pears. The latter is presumed to be A. honmai (Yasuda), but the two have remained confused because of their extreme morphological similarity, despite several Asian studies of pheromonal and morphological characteristics. To confirm the occurrence of an Adoxophyes species other than A. orana in Korea, we compared 940 bp of the mitochondrial cytochrome oxidase I (COI) gene from 16 samples of Adoxophyes and found that there is a second Adoxophyes species different from A. orana. Comparison of the different sequences to that of Japanese A. honmai confirmed that they belong to the latter. From the sequence difference between the two Korean species, we were able to develop new PCR primer sets that distinguish them. This molecular identification technique with no enzyme digestion or sequencing step is a convenient and rapid way of differentiating between species that are hard to distinguish morphologically.

복숭아 유통개선을 위한 단계별 등급화 체계 연구 (A Study on the New Peach Graching System in Stages for Efficint Marketing)

  • 본 연구는 소비자와 생산자는 물론이고 유통종사자까지도 모두 이익을 볼 수 있는 과학적이고 합리적인 등급화 방안의 모색을 위해 복숭아 생산자, 유통종사자, 소비자의 등급화에 대한 실태 및 의향을 조사 분석하여 각 주체의 입장차이를 조화시킬 수 있는 방안을 도출함을 목적으로 하고 있다. 1997년부터 1999년까지 3년에 걸쳐 생산농가, 소비자 및 유통종사자를 대상으로 면접청취조사와 질문지법을 병행하여 복숭아 농가 등급화실태, 소비실태 및 소비의향, 유통실태를 조사하였다. 현행 등급 기준으로 가장 중요시하는 것은 생산농가에서는 무게를, 유통종사자 및 소비자는 색깔로 나타났으며, 무게와 색깔은 복숭아를 먹어보기 전에 맛을 예측하는 방법으로 향후 비파괴 당도선별이 가능할 경우에는 생산농가, 유통종사자, 소비자 모두가 당도를 1순위로 선택하였다. 특히 소비자는 당도를 가장 중요시하며 소량구입 및 소포장 상자규격을 가장 선호하는 것으로 나타났다. 그러므로 소비자를 비롯하여 생산자 및 유통종사자들 모두가 이익을 얻을 수 있는 바람직한 복숭아 표준화, 등급화를 이룰 수 있는 세부포장규격을 신설하고 등급을 당도와 무게 범위로 표시하는 이원적인 체계가 시행될 수 있도록 등급을 세분화할 필요성이 대두되고 있다.

품종별 복숭아 유과 장아찌의 저장 중 품질특성 변화 (Quality Changes in Unripe Peaches Jangachi according to Cultivar during Storage)

  • 영양생리학적 활성은 우수하나 전량 폐기 처분되고 있는 복숭아 유과의 이용 증진을 위해 품종별 복숭아 유과로 장아찌를 담아 상온에서 60일간 저장하면서 품질평가(pH, 염도, 당도, 색도, 경도, 효모 및 곰팡이수의 변화, 관능평가)를 실시하였다. 장아찌의 pH는 모든 품종의 장아찌와 침지액에서 저장기간이 지남에 따라 감소하는 경향을 나타내었다. 장아찌육의 염도는 저장기간에 따라 증가하였고, 침지액염도는 감소하는 경향을 나타내었다. 당도는 모든 품종에서 장아찌와 침지액 모두 저장기간이 지남에 따라 감소하였다. 색도는 저장기간에 따라 모든 품종에서 L값은 감소, a값은 증가, b 값은 감소하였다. 경도는 저장 30일까지 감소하다가 이후 증가하였으며, 효모 및 곰팡이 수는 저장기간 동안 2.30~5.55 log CFU/g 범위 내에서 증감을 반복하였다. 관능평가 결과, 마도카와 장택백봉의 전반적인 기호도가 우수한 것으로 평가되었다.

Attitudes and preferences of consumers toward food allergy labeling practices by diagnosis of food allergies

  • BACKGROUND/OBJECTIVES: The objective of this study was to investigate food allergens and prevalence rates of food allergies, followed by comparison of consumer attitudes and preferences regarding food allergy labeling by diagnosis of food allergies. SUBJECTS/METHODS: A total of 543 individuals living in Seoul and Gyeonggi area participated in the survey from October 15 to 22 in 2013. RESULTS: The results show that the prevalence of doctor-diagnosed food allergies was 17.5%, whereas 6.4% of respondents self-reported food allergies. The most common allergens of doctor-diagnosed and self-reported food allergy respondents were peaches (30.3%) and eggs (33.3%), respectively, followed by peanuts, cow's milk, and crab. Regarding consumer attitudes toward food labeling, checking food allergens as an item was only significantly different between allergic and non-allergic respondents among all five items (P < 0.001). All respondents reported that all six items (bold font, font color, box frame, warning statement, front label, and addition of potential allergens) were necessary for an improved food allergen labeling system. PLSR analysis determined that the doctor-diagnosed group and checking of food allergens were positively correlated, whereas the non-allergy group was more concerned with checking product brands. CONCLUSIONS: An effective food labeling system is very important for health protection of allergic consumers. Additionally, government agencies must develop policies regarding prevalence of food allergies in Korea. Based on this information, the food industry and government agencies should provide clear and accurate food labeling practices for consumers.

강동구 어린이급식관리지원센터 등록 시설의 식품알레르기 관리 현황 (Management of Food Allergy in the Facilities Registered at Center for Children's Foodservice Management in Gangdong-gu)

  • Objectives: We examined the common allergenic foods, symptoms and management of food allergies in children attending the facilities registered at Center for Children's Foodservice Management in Gangdong-gu, Korea. Methods: The survey was conducted among the directors or head teachers of 186 children's food service facilities with 7,591 children in 2019. The questionnaire consisted of three parts, including general information about food service facilities, information related to food allergies and allergenic foods and symptoms in individual children. Results: The number of children with food allergy was 271 (3.6%), and the proportion decreased with the increase of age. There were 91 children (33.6%) with a medical certificate, and these children had a significantly higher number of allergenic foods and symptoms than those without a medical certificate. Allergenic food groups included meat, fish, eggs and legumes (59.1%), fruits (12.4%), milk and dairy products (8.9%), cereals (7.8%), vegetables (6.2%), processed foods (3.8%) and oils and sugars (1.9%). Eggs accounted for 22.1%, followed by peanut and tree nuts (18.6%), fruits (12.4%), milk and dairy products (8.9%), shellfish (8.6%), vegetables (6.2%), fish (5.7%), cereals (4.3%) and meat (1.1%). The common allergenic foods were eggs, peanuts, walnuts, kiwi, shrimp, milk, tomatoes, mackerel, blue-green fish, peaches, shellfish (clams and abalone), buckwheat, wheat and soybeans. The most common allergic symptoms were skin and mucous membrane symptoms, such as hives, rash, itching and oral angioedema. Meal management for children with food allergies showed different trends depending on the causative food. Conclusions: The objective diagnosis by an allergist should be done for food allergy management in children's catering facilities. A system for systematic meal management of causative foods should be prepared.

조선시대 식물문양의 현대화를 위한 패턴디자인 개발 연구 (A study on the development of pattern design for the modernization of the plant pattern in the Joseon dynasty)

  • A pattern is a symbolic mark of the psychological expression and ornamental desire of the human interior. In particular, plant patterns, from ancient times to modern times, express beauty across both the east and the west. The Joseon dynasty had a strong national will, and it was a time when the symbolism of Korea was established. Plant patterns were decorative and symbolic, filled with meaning in both the textile and craft sectors. This study looked at the frequency and figurative characteristics of the types of plant patterns in textiles, ceramics, woodworking, and metal craftsmanship of the Joseon dynasty. In addition, pattern designs were developed by extracting unit patterns to maintain the original shape, and by adding, magnifying, reducing, and superimposing flat steps and employing the four-fold sequence. The data collected was 826 examples in textiles and crafts, and 34 species of plants were analyzed as follows. In general, the flower patterns preferred soft flowers, flowers, apricot, and peony patterns, and fruit patterns emerged as decorative designs for pottery and woodwork from the 17th century, featuring pomegranates, grapes, fluorines, peaches, and walnut floss. Textiles and woodwork were arranged with many circular designs, while pottery and metal crafts were filled in many ways. Expressive types appeared to be the same as stylistic types for textiles and ceramics, and the construction types were the same in pottery and metal crafts. As such, it was found that even in the different areas of the sculpture, the same aesthetic values were reflected in the common figurative features today. Therefore, in this study, we developed a unique and competitive pattern design that accommodates the modern times and the Joseon dynasty. This development is expected to contribute not only to the development of cultural and tourism products in the future, but also to the tourism industry induced by the Korean wave.

복숭아 분말 첨가량이 스프레드 프리믹스의 품질에 미치는 영향 (Effects of Adding Peach Powder on the Quality of a Peach (Prunus persica L. Batsch) Spread Premix)

  • The purpose of this study was to develop a peach spread premix to increase the usability of peaches with low storage stability. We analyzed the effect of adding different ratio of peach powder (0, 5, 10, 15%) on the physicochemical and sensory quality characteristics of peach spread premix. The result showed that the pH of the spread premix significantly decreased with the addition of greater amounts of peach powder (p<0.05). The total titratable acidity (TTA) and sweetness of the peach spread premix were significantly increased as the amount of added peach powder increased (p<0.05). The redness (a-value) and yellowness (b-value) increased with an increase of the peach powder ratio; however, the lightness (L-value) decreased (p<0.05). The water activity and viscosity of the spread decreased with an increased amount of added peach powder. The results of the sensory test with spread premix prepared with 10% peach powder had the highest score for color, taste, texture, stickiness, and overall acceptability (p<0.05). We suggested that the peach spread premix made with 10% peach powder may be the most desirable for manufacturing spread premix and for improving sensory preference.

기계학습을 이용한 복숭아 경락가격 및 거래량 예측모형 비교 (The Comparison of Peach Price and Trading Volume Prediction Model Using Machine Learning Technique)

  • 과일의 경우 다른 작물보다 날씨의 영향을 많이 받으므로, 농업인의 고부가가치 창출을 위해서는 날씨를 고려한 작물모형개발이 필요하다. 본 연구에서는 과실류 중에서 비교적 제한된 조건에서 생산되는 복숭아를 연구대상으로 선정하였으며, 옥답 4.0에서 제공하는 2015년부터 2017년까지 대구에서 거래된 복숭아자료를 사용하였다. 분석에 사용되는 기상자료는 재배면적에 대한 가중치를 부여하여 생성하였으며, 1일 전부터 7일 전까지 날씨자료 중 상관성이 높은 변수를 사용하였다. 분석 방법으로는 기계학습법에 해당하는 랜덤포레스트와 그래디언트부스팅(gradient boosting machine), XGboost을 사용하였다. 분석결과, XGboost의 성능이 가장 우수하게 나타났으며, 경락가격 예측은 비교적 잘 예측할 수 있었지만, 거래량 예측의 정확성은 그리 높지 않았다. 복숭아 거래량 예측에 영향을 미치는 상위 3개의 기상변수로는 최저온도, 평균최대온도, 강수량으로 나타났다.

대홍복숭아 과실주의 품질 특성에 미치는 효소와 침용 시간의 영향 (Effects of Enzyme Treatment and Skin Contact Time on the Characteristics of Dae-hong Peach Wine)

  • This study investigated the effects of pectinase treatment and skin contact time on the quality characteristics of Dae-hong peach wine. Wine was produced with variations in enzyme treatment and skin contact time (1 hour, 2 hours, 1 day, 2 days, and until the completion of fermentation). Enzyme treatment increased the production yield by 6%, as well as ethanol and redness levels, compared to the non-treated control. Volatile components were higher when the skin contact time was 2 hours or 1 day. Results were compared according to enzyme treatment and skin contact time and found to be influenced by methanol and 3-methyl-1-butanol. Enzyme treatment effectively enhanced yields and volatile compound contents. However, skin contact should be concluded a day before 1 day to ensure compliance with methanol legislative requirements. Therefore, our findings show that enzymatic treatment with shorter skin contact time preserves the distinctive characteristics of Dae-hong peaches and ensures the production of safe and flavorful wine.

품종과 수확시기 및 발효조건에 따른 매실의 아미그달린 함량에 관한 연구 (Analysis of Amygdalin of Content Prunus mume by Variety, Harvest Time, and Fermentation Conditions)

  • 본 연구는 품종과 수확시기 및 발효조건에 따른 매실의 아미그달린 및 프루나신 함량분석을 통해 매실에 대한 일부 소비자 인식을 전환하고 매실의 적정 가공원료를 선정하는 것에 과학적인 근거를 설정하고자 진행하였다. 전 품종을 기준으로 매실의 아미그달린 함량은 종자가 과육보다 약 12.8배 높게 함유하고 있었으며, 종자와 과육에서 모두 5월 3일에서 5월 19일 사이 아미그달린 함량이 급격히 증가한 이후, 점차 증가폭이 줄어들었다. 일반적인 가식부인 과육 부분의 경우 선암매 품종이 모든 수확시기에서 가장 높게 측정되었는데, 가장 높은 수치인 34.7 mg(100 g 기준)은 기존 연구의 반수치사량($LD_{50}$)이 7,500 mg/kg(ICR계 마우스)이라는 것을 고려한다면 매우 낮은 수치였다. 매실의 섭취 방법 중 하나인 매실청을 제조하였을 때는 150일 이후 아미그달린이 거의 검출되지 않았다. 또한, 아미그달린과 프루나신이 점차 감소하는 데에 비해 매실의 성숙 또는 매실청으로 발효할 경우 시간이 지남에 따라 유기산 함량이 증가하는 것을 확인하였는데, 이는 아미그달린 및 프루나신 분해 효소의 활성에 영향을 미치는 것으로 추측할 수 있었다. 추가로 시판 중인 네 종의 과일에 대해 동일하게 분석을 진행한 결과, 자두와 복숭아, 포도에서도 아미그달린이 검출된 것을 알 수 있었다. 따라서 매실에 존재하는 아미그달린은 매실에만 존재하는 것이 아니며, 존재하는 아미그달린은 발효과정으로 충분히 제거할 수 있고 식품의약품안전처에서도 매실에 대한 독성사례 보고가 없는 것으로 미루어 볼 때, 그 위험성은 매우 미미하다고 판단된다. 따라서 매실의 독성에 대한 부정적인 인식을 전환하고, 매실에 존재하는 다양한 유효물질을 활용한 고부가가치 기능성 원료로서의 깊이 있는 연구가 활발히 진행되어야 할 것으로 생각된다.
