Quality Characteristics of Madeleine with Peach(Prunus persica L. Batsch) Juice (복숭아즙 첨가 마들렌의 품질 특성)

  • In this study, we investigated the quality characteristics and the sensory evaluation for madeleine added with peach (Prunus persica L. Batsch) juice. The pH and specific volume of madeleine were decreased with increase of peach juice, whereas the moisture and loss rate were increased. In the color of madeleine crust, L and b value were decreased with increase of peach juice, and these results showed significant differences compared to control(p<0.05). The other hand, the colors of madeleine crumb showed less significant changes compared to the control. On texture of madeleine with increase of peach juice, the hardness, chewiness, gumminess and cohesiveness were increased, whereas the adhesiveness was decreased. In the sensory evaluation with taste, color, flavor and overall preference, the madeleine with 20%(w/w) peach juice showed the highest value. Consequently, these results should provide the possibile use of peach processing in bakery industry because the addition of peach juice enhanced the quality and sensory characteristics of madeleine.

Quality Properties of Peach Pudding Added with Korean Peach (Prunus persica L. Batsch) Juice and Gelatin (복숭아 과즙과 젤라틴을 이용한 복숭아 푸딩의 품질특성)

  • In this study, we investigated the quality properties and sensory evaluation of pudding added with peach (Prunus persica L. Batsch) juice and gelatin. The water content and pH of pudding decreased with increased peach juice content, whereas the sugar content increased. Further, the water content of pudding decreased with increased gelatin content, whereas the pH was constantly maintained and the sugar content slightly increased. Regarding the color of pudding, the L and b values decreased with increased peach juice content, whereas the L value increased with increased gelatin content. Regarding the texture of pudding, hardness and springiness decreased with increased peach juice content, whereas adhesiveness, chewiness, and cohesiveness all increased. All texture properties increased with higher gelatin content. In the sensory evaluation of color, flavor, taste, texture, and overall preference, pudding with 60% (w/w) peach juice and 1.5% (w/w) gelatin showed the highest values. These results demonstrate the possibility of using high value-added products for peach processing in the food industry, as the addition of peach juice and gelatin enhanced the quality and sensory properties of pudding.

Inhibition of Polyphenol Oxidase and Peach Juice Browning by Onion Extract

  • The inhibitory effect of onion extract on polyphenol oxidase (PPO) and browning of peach juice was investigated. Various reducing agents such as L-ascorbic acid, L-cysteine, dithiothreitol, glutathione, and sodium pyrosulfite strongly inhibited polyphenol oxidase extracted from peach. The enzyme was also inhibited by addition of water extract of onion. Regardless of substrates used, the addition of heated onion extract exhibited stronger inhibitory effect on peach polyphenol oxidase activity than that of the fresh one. The inhibitory effect of onion extract was dependent on heating temperature and time. The onion extract inhibited the peach polyphenol oxidase non-competitively. The heating of onion extract in the presence of glucose, glycine stimulated the inhibitory effect of the onion extract, which suggests non-enzymatic browning products produced during heating might be responsible for the stronger inhibitory action of the heated onion extract. The retardation of peach juice browning by onion extract seems to be caused by inhibition of peach PPO.

The Effect of Gel Layer Formation on Fouling Characteristics in Ultrafiltration of Peach Juice (복숭아 주스의 한외여과시 겔층형성에 따른 막오염 특성)

  • The performance of a 30K polysulfone membrane for clarification of depectinized peach juice was studied Ultrafiltration of peach juice could minimize to loss of flavor and many compounds and was expected to effectively remove precipitation and suspended solid. The results showed that permeate flux increased with the increase of operating pressure and temperature. The permeate flux declined continuously as the process time increased. The values of soluble solid and titratable acidity of permeate were decreased or were at the same level, the turbidity was largely decreased. Total resistance decreased with lower temperature and lower pressure.

Quality Characteristics and Antioxidant Effect of Sugar Preserved Wild Peach (Prunus persica L.) Juice by Enzymatic Treatment (효소 처리에 따른 야생복숭아(Prunus persica L.) 당절임액의 품질 특성 및 항산화 효과)

  • This study was to investigate the effects of enzyme on quality characteristics and antioxidant activities of wild peach (Prunus persica L.) juice. pH levels and S.S (soluble solid) values in all samples ranged from 3.86 to 4.13 and from 48.0 to $55.0^{\circ}Brix$, respectively. The TA (total acidity) values of control (not treatment enzyme) were higher than those of the others. The highest 'L', 'a' and 'b' values were observed on PWP (preserved wild peach (Prunus persica L.) juice of cellulase/pectinase (1:1, w/w) sample. Glucose (26.65 g/100 g) and fructose (17.42 g/100 g) in PWP product were determined, however sucrose and maltose were not detected. The predominating organic acid components analyzed in PWP sample were tartaric (32.36 g/100 g) and lactc acids (209.34 g/100 g), whereas citric acid, acetic acid and malic acid were not detected. Higher scores for taste, flavor, color and overall acceptance were found for PWP products compared to other samples. The total phenolic content (13.31 mg GAE/mg dry weight) analyzed using Folin-Ciocalteu's reagent, of PWP sample was higher than those of the others and the total flavonoid concentrations were also 10.95 mg CE/mg dry weight. The DPPH radical scavenging and ABTS radical scavenging activities in all samples ranged from 55.16 to 74.29% and from 39.59 to 82.79%, respectively. The antioxidant activities were affected by addition of enzyme. These results indicate that the use of the mixture of cellulase and pectinase could increase the quality, and antioxidant potentials of sugar preserved wild peach (Prunus persica L.) juice by enzymatic treatment.

Development of Peach Fermented Wine (복숭아 발효주 개발에 관한 연구)

  • 본 연구는 '96학년도 배재대학교 교내 학술 연구비 지원으로 수행되었다. ^x Juice yield of peach "Yoo Myung" by pretreatment of various enzymes and heat was determined, and physicochemical properties of peach wine fermented by some Saccharomyces cerevisiae were also investigated. 89.2% of juice yield was showed in mixture treatment of pectinase and cellulase at 35$^{\circ}C$ for 8 hrs, 82% of yield was also showed in single treatment of pectinase and cellulase. Ethyl alcohol content of peach wine fermented by wild type Saccharomyces cerevisiae 49-2 was 14.55. However, wine from thermophilic Saccharomyces cerevisiae D-71 was excellent in taste and flavor.nd flavor.

A study on the Usefulness of Peach-juice as a Raw Material for Traditional Fermented Peach Vinegar (복숭아 전통발효식초 원료로서의 복숭아즙 유용성 연구)

  • To increase the added value of peaches and utilize overproduced peaches, it is necessary to develop peach raw materials in various forms. In this study, usefulness of juice as raw material for vinegar was investigated by comparing and analyzing the characteristics of the traditional fermented vinegar prepared with 4 types of juice (fresh, refrigerated, boiled and frozen puree). Sugar content (6.20~6.50°Brix), total acidity (5.25~5.61%), pH (3.42~3.74), and acetic acid content (48.81~54.29 mg/mL) of the vinegar were all similar to existing traditional fermented vinegar. However, contents of total phenol and flavonoid were higher in vinegar prepared from refrigerated and boiled juice. Therefore, it was confirmed that boiled and refrigerated juice are very suitable as raw materials for traditional fermented peach vinegar, in particular, it was confirmed that boiled juice with a high content of total phenol and flavonoid can be used as a high value-added functional material. These results are considered to be important guidelines for developing high value-added raw materials for peaches.

  • A series of thermal destruction studies of the most heat resistant yeast strain No. 15 among 61 isolates were conducted in order to establish the optimum pasteurization condition of peach solid pack. The results obtained are summarized as follows: 1. A survival curve of the selected yeast strain No. 15 at $58^{\circ}C$ consisted of heat labile and heat stable fraction, showing broken curve. 2. The actively growing cell showed less recovery rate than 10 day rested cell after agitation-growing for 90 hr. For heating menstrua, peptone solution gave higher recovery rate than peach juice. For recovery medium, YM agar gave higher recovery rate than peach juice agar. The selected yeast was more resistant to heat at pH 4.0 than at pH 3.5 in both heating menstrua and recovery medium. 3. Z value of TDT curve of the selected yeast (heating : at pH 3.5 in peach juice. recovery: at pH 3.5 in peach juice agar) was $4.8^{\circ}C$. 4. The selected yeast No. 15 was identified as Torulopsis candida. 5. In the inoculated pack test of 4 oz can, it was concluded that the optimum P.U. 70/5 was 168 (center temp; $78.5^{\circ}C$, initial temp; $18^{\circ}C$, processing time; 18 min, initial yeast count; $1.0{\times}10^7$ per can).

Characteristics of Peach Wine Prepared by Using Different Cultivars (복숭아주 제조를 위한 품종별 가공 적성)

  • The study was conducted to investigate the fermentation characteristics of Daegubo, Harutoh and Yumyung peach cultivars produced mainly in Kyungbuk. soluble solidss, pH, titratable acidtidy, sap rate, alcohol degree, color and sensory quality were analyzed. Sap rates of the three fresh peaches were in the range from 92 to 94%. SS in the juice were 9.6% for Daegubo peach, 9.0% for yumyung and 7.4% for Hakutoh. titrable acidity of DAegubo , harutoh and Yumyung peaches were 0.54, 0.41 and 0.37 % , respectively. In alcohol fermentation , Daegubo and Yumyung peach cultivars showed high sugar decrease and alcohol formation , good color and sensory quality, while Hakutoh showed low sugar decrease and alcohol fermentation.

Characteristics of Lactic Acid Fermentation of Peach Juice by Lactobacillus plantarum KLAB21 Possessing Antimutagenic Effects (항돌연변이원성 Lactobacillus plantarum KLAB21에 의한 복숭아 주스의 젖산발효 특성)

  • Lactic acid fermentation of peach juice was carried out by using Lactobacillus plantarum KLAB21, a strain with a high level of antimutagenic activity, When the fermentation was carried out at 25, 30, 37 and $40^{\circ}C$, the highest level in the viable counts and acid production was obtained at $37^{\circ}C$. The sterilized peach juice showed a higher level of viable counts and acid production than the non-sterilized juice. And more viable counts and acid production were observed in the juice fermented by L. plantarum KLAB21 only than that obtained by a mixed culture of L. plantarum KLAB21 and Leuconostoc mesenteroides cells. When the lactic acid fermentation was performed for 5 days, the first 3 days of fermentation resulted in an increase of the viable counts from 8.2 to of 9.2 of log cfu/mL which is the highest level, as well as a decrease of the residual reducing sugar content from 5.6 to 0.1 % Decrease in the viable counts and m significant changes in the residual reducing sugar content were observed for further fermentation up to 5 days. However, the titratable acid content increased and the pH value decreased during the fermentation for 5 days to reach the highest titratable acid content (1,98%) and the lowest pH value (3.14) after 5 days of fermentation. HPLC analysis of the organic acids showed 1,236 mg% of lactic acid and 841 mg% of galacturonic acid contents in the fermented juice which were not detected in the fresh juice before fermentation. Antimutagenic effects of $100\;{\mu}L$ of the fermented peach juice supernatant were shown to be 97.7% against MNNG(N-methyl-N'-nitro-N-nitrosoguanidine), and 58.3% against NPD(4-nitro-O-phenylenediamine) in Salmonella enterica serovar Typhimurium TA100.
