Rice quality must certainly be considered as one of the primary preference for consumers. On aspect concerns marketing, such attributes as appearance, physicochemical characteristics, and palatability of brand rice are very important. Therefore this study was carried out to observe the quality of commercial brand rice in Gyeongbuk Province, Korea from 2002 to 2004. In seasonal changes of mean air temperature from early July to middle August, it was lower in 2003 by $0.8{\sim}3.3^{\circ}C$ than that in normal year. Among the rice quality characteristics, the cv of percentage of head rice and palatability (Toyo value) were very low but those of chalky rice and protein content were very high during three years, and the same tendency was also observed among the brands. The average percentages of head rice were 92.5% in 2002, 89.9% in 2003 and 93.3% in 2004, respectively. On the contrary, the percentages of chalky rice were higher in 2003 as 4.9% than those in 2002 (3.9%) and in 2004 (2.8%). These results were caused by the abnormal meteorological conditions in 2003. Due to the higher protein content (8.0%) in 2003, the palatability was deteriorated to 71.0. However the protein content in 2004 was reduced to 7.0% and this result improved the palatability to 77.0.
This experiment was conducted in 2001 to investigate the effect of four nitrogen levels (0, 5.5, 11, 16.5kg/10a) on the yield and quality of vice especially with respect to eating quality. One early-maturing variety (Daejinbyeo) and two mid-late-maturing varieties (Ilpumbyeo and Chucheongbyeo) were used in this experiment. Rice yields of all varieties were increased by the higher rate of nitrogen application, mainly due to a larger number of panicles per m2. Head rice ratio was reduced significantly with an increased rate of nitrogen, while immature vice ratio was increased significantly. Increasing the nitrogen application rate, a considerable increase of protein content was found in all tested rice varieties. Palatability value of Daejinbyeo and Ilpumbyeo measured by rice taster was not affected by nitrogen application rate ranging from 0 to 11 kg/10a, but it was decreased significantly at the rate of 16.5kg/10a. In contrast, the palatability value of Chucheongbyeo was decreased significantly by increasing nitrogen application at the whole application rate. A positive correlation was found between nitrogen application rate and protein content (r=$0.88^{**}\textrm{-}0.96^{**}$), but head rice (r=$-0.84^{**}$~$-0.91^{**}$) and palatability value (r=$-0.72^{**}$~$-0.85^{**}$) showed a negative correlation with the nitrogen application rate. Regardless of the fact that eleven aroma-active volatile compounds were detected in cooked vice of Chucheongbyeo, it was concluded that the aroma-active volatile compounds of cooked rice was not affected by the different nitrogen application rate. The results of this study showed that the standard nitrogen fertilization rate of 11kg/10a could be appropriate considering both rice yield and palatability.
This study was carried out to investigate the possible for utilization of garbage in pig feed by investigating the functional characteristics of pork from pigs fed tangerine-peels. The samples consisted of the pork loin from pigs not fed with tangerine-peel (control), the pork loin fed with 3% and 5% tangerine-peel during growing and finishing period (TP-1), and fed with 6% and 10% tangerine-peel during growing and finishing period (TP-2) there is no respective comparison here. The pH, VBN content TBARS value, bacterial counts, surface color, water holding capacity, loss degree and rheological properties of the samples were determined by physicochemical properties, and the sensory scores were evaluated. The pH, TBARS value, surface color, water holding capacity and loss degree were not different among the samples, but the VBN content and bacterial counts of TP-1 and TP-2 were significantly lower than those of the control (p<0.05). The hardness, springiness, cohesiveness, gumminess and chewiness, taste, aroma, tenderness and juiciness were not different among the samples, but the shear force value and palatability of TP-1 were the highest among the samples (p<0.05).

Hydrothermal extraction from dates was done, and then 3 groups of the date extract liquid group (A), the date puree group (B) and the jujube skin flesh group (C) were prepared. And, the omija extract liquid was added to the 3 groups at respective rates of 3:7, 5:5 and 7:3. Then, total 9 medicated diet sources were prepared by adding cinnamon, the ginger extract liquid, honey and pectin. And their physicochenmical and sensory attributes were examined. Total sugar, free sugar and pH increased in the samples of the 3 groups as the addition amount of the jujube extract increased. In chromaticity of respective samples, the "L" value did not show any difference among the 3 groups, but the "a" value was the highest in the "A"group, and "b"value was the highest in the "B"group. In the date puree group and the jujube skin flesh group, their viscosity increased as the addition amount of the jujube extract increased, but in the jujube extract liquid group, no difference was found in its viscosity. As a result of conducting the discrimination test, it was identified that the as the addition amount of the jujube extract was increased, color and sweet taste were feltto be stronger and our taste was felt to be weaker in all 3 groups. In the jujube puree group and the jujube skin flesh group, as the addition amount of the jujube extract increased, the jujube fragrance was felt to be stronger, but in the jujube extract liquid group, no difference was found in its fragrance. And, no difference was found in brightness and viscosity between samples. As a result of conducting the palatability test, no difference was showed in the appearance, but as for the overall palatability including texture, taste and fragrance, preference increased as the addition amount of the jujube extract increased.

The effects of aging time (1, 8 and 15 days) and endpoints cooking temperature (70, 75 and $80^{\circ}C$) on the physicochemical and sensory characteristics of pork neck were evaluated. Pork neck was obtained from the carcass (live weight, 105~110 kg ; grade B) chilled for 24 hours after slaughter. As a aging period became longer, the pH, L value and drip loss became higher while its a value and shear force value (SFV) of raw meat became lower. As a aging period became longer, the cooking loss, hardness, chewiness, SFV became lower, and its tenderness, juiciness and taste became better. However, no difference was observed in the aroma, and the one aged for 8 days in the cooked meat showed the best palatability. Increasing endpoint cooking temperature from 70 to $80^{\circ}C$ increased hardness, SFV and taste, and decreased chewiness, sensory tenderness and juiceness (p<0.05). However, it had no effect on the cohesiveness. Also, the one for which the endpoint cooking temperature became $75^{\circ}C$ in the cooked meat showed the best springiness, aroma and palatability.
The physicochemical properties and sensory characteristics for the neck, belly and ham of crossbred pigs SW90 (slaughter weight $90\sim100\;kg$) and SW110(slaughter weight $110\sim120\;kg$) were evaluated to investigate their quality. The water holding capacity, freezing loss, thawing loss, pan boiling loss and water boiling loss were not significantly different between SW90 and SW110, but the thawing loss and water boiling loss of belly were higher than those of other parts(p<0.05). The surface color was not affect by slaughter weight, but the L* value of belly was higher than that of the other parts and a* value was lower than that of the neck and ham(p<0.05). The mechanical texture was not affect by slaughter weight, the hardness of belly was lower than that of the neck and ham, but the springiness, cohesiveness, gumminess, chewiness and shear force of neck and ham were lower than those of belly(p<0.05). The pH, VBN content and TBARS value was not significantly different by slaughter weight. The taste, aroma, texture, juiciness and palatability of SW110 were higher than those of SW90, and the sensory characteristics of belly were higher than those of neck and ham, but their difference was not significant.

This study was investigated the herbage productivity and nutrient contents of corn (Suweon 19 and Kwanganok) and sweet sorghum (Ramiki sorgo and Silage sorgo) at the stage of maturity (10-DBS, silking, milky and dough stages) to identify the utility value of sweet sorghum as a substituting crop for corn. The silage materials (dough stage) were chopped and were storaged for 90 days in polyethlene bag with O.lmm thickness. Chemical composition, nitrogen content and in vitm dry matter digestibility were evaluated. Also, daily intake and palatability were checked in the feeding trial with four male sheep in average weight about 57kg. Both fresh and dry matter yield of corn and sweet sorghum were increased as the maturity processed (P< 0.05), and sweet sorghum showed higher total yield potential than corn. Crude protein content of the cultivars was decreased as the maturity was processed (P< 0.05). Neutral detergent fiber (NDF) content of the cultivars, in general, showed highest at silking stage, followed by 10 days before silking (10-DBS), and milky and dough stages (Pi0.05) in order. Acid detergent fiber (ADF) content was increased as the maturity processed, and it showed the highest value at milk stage. However, the contents of ADF in sorghum plant was decreased during the late maturity. Crude protein content of the silage was not significantly different among cultivars used, while NDF content was highest in Ramiki sorgo, followed by Silage sorgo, Kwanganok and Suweon 19. In v i m DM digestibility of the silage was highest in Kwanganok, followed by Suweon 19, Silage sorgo and Ramiki sorgo. Total N content of the silage was highest in Ramiki sorgo, followed by Suweon 19, Silage sorgo and Kwanganok. DM intake of the silage was highest in Ramiki sorgo, followed by Suweon 19, Silage sorgo and Kwanganok and it was closely related to the palatability value.

This study was carried out to investigate the effects of collection time on the physical characteristics, Nutritive value, digestibility and palatability in rice straw. Collection time of rice straw after the rice harvest was allocated into nine treatments: T1 (10 days), T2 (25 days), T3 (40 days), T4 (55 days), T5 (70 days), T6 (85 days), T7 (100 days), T8 (115 days) and T9 (130 days). The results are summarized as follow: Plant length, leaf length and green degree were decreased with prolonging collection time. Mold distribution and dry matter loss were increased with prolonging collection time. Crude protein and crude fat were decreased with prolonging collection time, crude fiber were increased with prolonging collection time. But crude ash showed multifarious. In situ dry matter digestibility was decreased with prolonging collection time. Palatability of Hanwoo, Holstein and deer was decreased with prolonging collection time. The results of this study indicate that good rice straw collection time would be recommendable during the from 10 days to 40 days after rice straw harvest.
This study was performed to examine the relationship between quality characteristics and palatability on 21 varieties of commercial brand rice in North Kyeong-sang Province, Korea. The average percentages of translucent kernels, an important factor in rice quality, were the higher in the Ilpumbyeo cultivar than other six rice cultivars including Mihyangbyeo, Ilbanbyeo, Chuchungbyeo, Saechuchungbyeo, Hidomebore, and Nampyeongbyeo. The mean contents of amylose among commercial brand rice were not significantly different. The protein content was inversely associated with palatability (Toyo value). The sensory evaluation showed that clumpiness was positively correlated with the moisture content. The preference in color of cooked rice was increased as the percentage of translucent kernels increased. The roasted nutty flavor was highly correlated with the cooked rice with high protein content, while the chewiness was associated with high moisture and low amylose content.

This experiment was carried out to determine on the growth characteristics, yield and palatability in mono-cropping(T1; sorghum $\times$ sudagrass hybrid, T2; soybean) and inter-cropping[T3; sorghum $\times$ sudagrass hybrid(1) + soybean(2)]. The results obtained are summarizes follows; In plant length. leaf length, leaf width and stem diameter of sorghum $\times$ sudagrass hybrid(SSH). T3(1) was lower than T1 at 1st cutting time. But in 2nd and 3rd cutting time. T3(1) was higher than T1 Stem diameter of T2 was higher than soybean of T3(2). but plant length, leaf length and leaf width of T2 were higher than T3(1). The leaf ratio of SSH in T3(1) was higher than T1 in the first cutting time, but T3(1) was higher than T1 at 2nd and 3rd cutting time. The number of tiller of T1 was higher than SSH of T3(1) at 1st cutting time, but T3(1) was higher than T1 at 2nd and 3rd cutting time. Dead stubble rate of SSH in T3(1) showed a little lower value than T1. Dry matter and fresh yield of T1 was higher than T2 and T3. But protein yield of T3 was higher than T1 The palatability of 1st cutting time was 100.0. 76.8 and $18.5\%$ on T2, T3 and T1, respectively.
