A Study on the Variation of Nutrients and Water Quality in Suk Chon Lake (石村湖의 營養鹽類 및 수질의 動態에 관한 조사연구)

  • This study was performed to investigate a seasonal and vertical variation of the nutrients, water temperature, pH, DO, BOD, COD in Sukchon lake from May 1985 to Jan. 1986. The results were as follows. 1. Vertical descent of water temperature was the remarkable situation on Jul. and difference between surface layer and bottom layer was 3.5$\circ$C. 2. The value of pH was average 8.0 in both lake. The value of pH in the winter was average 7.6, and Summer was average 8.3. 3. The contents of dissolved oxygen was the highest value (13.0mg/l in surface layer on Jan. and the lowest value (8.1mg/l in bottom layer on Ul. 4. The contents of PO$_4$-P, NH$_3$-N, NO$_3$-N and T-N were 0.03~O.17mg/l 0.12~0.34mg/l 0.36~0.91mg/l and 0.76~1.37mg/l respectively.

Effects of Pretreatment Time and pH low set value on Continuous Mesophilic Hydrogen Fermentation of Food Waste (열처리 시간과 pH 하한값이 음식물쓰레기 연속 중온 수소 발효에 미치는 영향)

  • Since 2005, food waste has been separately collected and recycled to animal feed or aerobic compost in South Korea. However, the conventional recycling methods discharge process wastewater, which contain pollutant equivalent to more than 50% of food waste. Therefore, anaerobic digestion is considered as an alternative recycling method of food waste to reduce pollutant and recover renewable energy. Recent studies showed that hydrogen can be produced at acidogenic stage in two-stage anaerobic digestion. In this study, the authors investigated the effects of pretreatment time and pH low set value on continuous mesophilic hydrogen fermentation of food waste. Food waste was successfully converted to $H_2$ when heat-treated at $70^{\circ}C$ for 60 min, which was milder than previous studies using pH 12 for 1 day or $90^{\circ}C$. Organic acid production dropped operational pH below 5.0 and caused a metabolic shift from $H_2/butyrate$ fermentation to lactate fermentation. Therefore, alkaline addition for operational pH at or over 5.0 was necessary. At pH 5.3, the result showed that the maximum hydrogen productivity and yield of 1.32 $m^3/m^3$.d and 0.71 mol/mol $carbohydrate_{added}$. Hydrogen production from food waste would be an effective technology for resource recovery as well as waste treatment.

Effects of Dietary Alpha-lipoic Acid and Acetyl-L-carnitine on Growth Performance and Meat Quality in Arbor Acres Broilers

  • An experiment was conducted to evaluate the effects of dietary alpha-lipoic acid (LA) and acetyl-L-carnitine (ALC) on growth performance, carcass characteristics and meat quality in Arbor Acres broilers. A total of 486 1-d-old male Arbor Acres broilers were randomly allocated to 9 dietary treatments, 9 treatments were group A (0 mg/kg LA and 0 mg/kg ALC), group B (50 mg/kg LA and 0 mg/kg ALC), group C (100 mg/kg LA and 0 mg/kg ALC), group D (0 mg/kg LA and 50 mg/kg ALC), group E (50 mg/kg LA and 50 mg/kg ALC), group F (100 mg/kg LA and 50 mg/kg ALC), group G (0 mg/kg LA and 100 mg/kg ALC), group H (50 mg/kg LA and 100 mg/kg ALC), group I (100 mg/kg LA and 100 mg/kg ALC). Birds were slaughtered at 42 days old. Average daily gain (ADG), average feed intake (AFI), feed conversion rate (FCR), eviscerated rate, breast muscle percentage, thigh muscle percentage, abdominal fat percentage, liver weight, muscle color ($L^*$ value, $a^*$ value, $b^*$ value), pH values at 45 min and 24 h postmortem were measured. Results showed that there existed an interaction between LA and ALC in growth performance of broilers, carcass traits and meat quality. The overall result is that high level of LA and ALC led to lower AFI, ADG (p<0.01), lower abdominal fat percentage, liver weight (p<0.01), lower $L^*$ value, $a^*$ value, and $b^*$ value of breast muscle, $L^*$ value of thigh muscle (p<0.05), and higher FCR (p<0.01), eviscerated rate (p<0.01), breast muscle percentage, thigh muscle percentage (p<0.05), $a^*$ value, pH 45 min and pH 24 h of thigh muscle (p<0.01). These results suggested that dietary LA and ALC contributed to the improvement of meat quality in broilers.

  • To study the dyeability(K/S value) and surface color of silk fabrics dyed with Impatiens balsamina extract, its flower, leaf and stem, was extracted by water. This paper investigated some experiments with Impatiens balsamina extract under the various dyeing conditions such as dyeing temperature, dyeing time, repetition of dyeing, dyeing pH with silk fabrics. The results obtained were as follows. 1. It was found that it $\lambdamax$. of silk fabrics dyed with Impatiens balsamina extract was 260nm and its flower, leaf, stem and flowers(white, pink, violet) had same it $\lambdamax$ at 260nm. 2. K/S value was increased when dyeing temperature, repetition of dyeing and time was higher, value of munsell of silk fabrics dyed with Impatiens balsamina extract was yellow-red. dyeing temperature, repetition of dyeing and time was higher, shifted to longer wavelength side. 3. pH added acetic acid was colored reddish yellow-red, but pH added alum was colored yellowish yellow-red in silk fabrics dyed with Impatiens balsamina extract and repetition of dyeing was increased the dye-uptake.

  • Many methods are used in the measurement of antioxidative capacity. These meth­ods require very complex procedures and pretreatment. Our suggestions for research will be simple and accurate methods for obtaining many kinds of samples, especially colored samples such as natural product extracts for measuring antioxidative capacities. For oxidation-reduction potential (ORP) system value, we examined the relationships between the ORP-pH system and the ORAC, FRAP methods. To evaluate ORP System value, we calculated the absolute slope/intercept from the linear regression of each standard material at different concentrations and ORP-pH system, and compared the correlations with ORAC and FRAP values.

  • Rhizobium japonicum was isolated from the nodule of soybean root grown at the reclaimed tidal land in Kang-Wha island. The effect of pH and salt concentration to the viability of the isolated strain were examined in relationship between microbial growth and accumulation of PHB. Optimal pH value for the good viability of the isolated strain was 7.0 and also, at 5.0 and 6.0 viability was favorable to large extent, but 9.0 was unfavorable. Examined the effect of salt concentration treated two times as of the salinity in the reclaimed tidal land, viability of the isolated strain showed about 30 to 40%. And also in treatment with NaCl(40g/l) whatever the pH value adopted, viability was mostly less than 10%. The amount of accumulated PHB was relatively high at low pH value(5-6) and at high salt concentrration, respectively.

Effects of Dietary Alpha-lipoic Acid on Anti-oxidative Ability and Meat Quality in Arbor Acres Broilers

  • An experiment was conducted to evaluate the effects of dietary alpha-lipoic acid (LA) on growth performance, carcass characteristics and meat quality in Arbor Acres broilers. A total of 240 1-d-old male Arbor Acres broilers were randomly allocated to 4 dietary treatments (0, 300 ppm, 600 ppm, and 900 ppm dietary LA supplementation, respectively). Birds were slaughtered at 42 days old. Live body weight (BW), average daily gain (ADG), average feed intake (AFI), feed conversion ratio (FCR), dressing percentage, breast muscle percentage, thigh muscle percentage, abdominal fat percentage, muscle color (L*, a*, b*), pH values at 24 h postmortem, meat shear force value (SFV) and anti-oxidative ability were measured. Results showed that addition of 600 ppm or 900 ppm LA decreased BW (p<0.01), ADG (p<0.01) and AFI (p<0.05) compared with other diets. FCR was not affected by dietary LA content. LA had no marked effect on dressing percentage, breast muscle percentage or thigh muscle percentage. Abdominal fat percentage was lower (p<0.05) in the 900 ppm LA supplementation group than the control group. Dietary 900 ppm LA increased (p<0.05) breast and thigh muscle pH value at 24 h postmortem compared with the control treatment. Dietary LA increased thigh muscle a* value, though no significant difference was found in thigh muscle a* value among the treatments. Dietary LA significantly decreased breast muscle L* value (p<0.05), breast muscle b* value (p<0.01) and thigh muscle b* value (p<0.05). Broilers fed LA had higher breast muscle a* value (p<0.05) and thigh muscle L* value (p<0.05). All test groups had lower (p<0.05) breast muscle SFV than the control group. Dietary 600 ppm or 900 ppm LA both decreased (p<0.01) thigh muscle SFV compared with the control treatment. Dietary 900 ppm LA significantly increased (p<0.05) TAOC, SOD and GSHPx compared with no LA treatment. Broilers fed LA had lower (p<0.01) MDA compared with the control treatment. These results suggested that dietary LA enhanced the anti-oxidative ability and oxidative stability, and contributed to the improvement of meat quality in broilers.

Experiment on Settling Behaviour of Fine Mineral Particles (광물성 미립자의 침전거동에 관한 실험)

  • Experiments on settling behaviour of fine-grained particles without destroying the large fragile aggregates were carried out in still water with a CCD (Charged Coupled Device)-Camera. The experiments dealt with the measuring of the vertical concentration profile of cohesive particles with a CCD-Camera and the physico-chemical influences (NaCl, density, temperature and pH value) on the vertical distribution of the concentration. The vertical concentration profile of fine suspended particles (alumina and quartz) was possible up to $20,000\;mg/{\ell}$ with a CCD-Camera. The vertical concentration profile of cohesive sediments was on the decrease because of the increasing initial concentration, temperature and salinity. The vertical concentration profile of alumina was on the decrease quicker than quartz with increasing salinity. Furthermore, the pH value affects the settling behaviour of alumina. At a PH value of 4.2 the settling rate of the particles was very low and on the increase until pH 8.9 because of the aggregation behaviour of particles. From the PH value of 9 the average settling velocity was on the decrease.

Quality Characteristics of Takju added with Finger Root (Boesenbergia pandurata) (핑거루트를 첨가한 탁주의 품질특성)

  • In this study, the traditional takju was manufactured using the finger root, which was recognized as a health functional ingredient, and analyzed the physicochemical and sensory quality characteristics according to the period of fermentation. The pH was significantly low(p<0.05) in all samples until the second day of fermentation, and the pH tended to increase again from the third day of fermentation. The pH value was decreased as the amount of finger root was decreased(p<0.05). The acidity of takju was significantly lower at 0.17~0.21 immediately after fermentation(p<0.05). The acidity of FR0 showed significantly the highest value(p<0.05). The sugar content of takju was significantly increased in all the samples until the 2nd day of fermentation(p<0.05). On the 7th day, it showed the lowest value at $11.01{\sim}12.63^{\circ}Brix$. The sugar content of FR0 was significantly lowest value(p<0.05). The alcohol content of takju was significantly increased as the fermentation proceeded, and the highest value was 11.90~13.50% at 7 days(p<0.05). The alcohol content of RF0 was significantly higher than other samples(p<0.05). As a result of organic acid analysis of finger root takju fermented for 7 days, citric acid(3.35%) showed the highest content of FR3(p<0.05). The content of fructose increased with increasing finger root amount (p<0.05). As a result of sensory evaluation of finger root takju, FR1 and FR2 samples tended to be lower in score than FR0, and FR3 showed the highest score. The overall acceptance value of FR0 was 7.5 and FR3 was 7.57.

A Comparison Study on Functional Properties of Peanut Protein and Chemically Modified Peanut Protein (분리 땅콩 단백질과 화학적으로 수식화한 단백질간의 식품학적 특성 비교)

  • This study was carried out in order to study the protein functionality such as foaming and emulsifying properties by succinylation of peanut protein isolates. Succinylated and unsuccinylated peanut protein isolate was tested for to find out the effect of pH, heat treatment and sodium chloride concentration on the solubility, foam expansion, foam stability, emulsion capacity and emulsion stability. The results are summarized as follows; 1. Succinylation enhanced the solubility of peanut protein isotate (PPI). The solubility of succinylated PPI markedly increased at pH 4.5. When the protein solutions was heated, the solubility of succinylated PPI greatly increased than PPI at pH 3. With addition of NaCl, solubility of succinylated PPI increased at pH 7 and pH 9. 2. The foam expansion of PPI and succinylated PPI on pH was no difference between both proteins. Addition of NaCl and heat treatment caused steeply increased in foam expansion at pH 3. 3. The foam stability of PPI and succinylated PPI showed the lowest value at pH 4.5. When PPI and succinylated PPI was heated, foam stability of two proteins incensed at pH 3 and showed similar aspects between PPI and succinylated PPI. However, at pH 9 stability of succinylated PPI decreased by heat treatment over $60^{\circ}C$. 4. Emulsion capacity of succinylated PPI on pH was markedly increased and showed the highest value at pH 11. At pH 4.5 which is isoelectric point of PPI, emulsion capacity of PPI by succinylation improved than that of PPI. When succinylated PPI was heated, emulsion capacity was greatly increased at pH 2 and pH 7. With NaCl was added, emulsion capacity of succinylated PPI increased than that of PPI. 5. Emulsion stability of PPI and succinylated PPI was affected by pH and showed its highest value at pH 11. At pH 4.5, emulsion stability of succinylated PPI increased than that of PPI. Addition of NaCl and heat treatment caused slightly increased in emulsion stability of succinylated PPI.
