Objective: This study was conducted to determine catalytic properties of wheat phytase with exopolyphosphatase activity toward medium-chain and long-chain inorganic polyphosphate (polyP) substrates for comparative purpose. Methods: Exopolyphosphatase assay of wheat phytase toward polyP75 (medium-chain polyP with average 75 phosphate residues) and polyP1150 (long-chain polyP with average 1150 phosphate residues) was performed at pH 5.2 and pH 7.5. Its activity toward these substrates was investigated in the presence of Mg2+, Ni2+, Co2+, Mn2+, or ethylenediaminetetraacetic acid (EDTA). Michaelis constant (Km) and maximum reaction velocity (Vmax) were determined from Lineweaver-Burk plot with polyP75 or polyP1150. Monophosphate esterase activity toward p-nitrophenyl phosphate (pNPP) was assayed in the presence of polyP75 or polyP1150. Results: Wheat phytase dephosphorylated polyP75 and polyP1150 at pH 7.5 more effectively than that at pH 5.2. Its exopolyphosphatase activity toward polyP75 at pH 5.2 was 1.4-fold higher than that toward polyP1150 whereas its activity toward polyP75 at pH 7.5 was 1.4-fold lower than that toward polyP1150. Regarding enzyme kinetics, Km for polyP75 was 1.4-fold lower than that for polyP1150 while Vmax for polyP1150 was 2-fold higher than that for polyP75. The presence of Mg2+, Ni2+, Co2+, Mn2+, or EDTA (1 or 5 mM) exhibited no inhibitory effect on its activity toward polyP75. Its activity toward polyP1150 was inhibited by 1 mM of Ni2+ or Co2+ and 5 mM of Ni2+, Co2+, or Mg2+. Ni2+ inhibited its activity toward polyP1150 the most strongly among tested additives. Both polyP75 and polyP1150 inhibited the monophosphate esterase activity of wheat phytase toward pNPP in a dose-dependent manner. Conclusion: Wheat phytase with an unexpected exopolyphosphatase activity has potential as a therapeutic tool and a next-generational feed additive for controlling long-chain polyP-induced inappropriate inflammation from Campylobacter jejuni and Salmonella typhimurium infection in public health and animal husbandry.
The neurotrophin plays an important role in the development, differentiation and survival of the nervous system in vertebrates. It exerts its cellular effects through two different receptors, the Trk receptor tyrosine kinase neurotrophin receptor and the p75 neurotrophin receptor, a member of the tumor necrosis factor receptor superfamily. Trk and p75 neurotrophin receptors utilize specific target proteins to transmit signals into the cell. An ankyrin-rich membrane spanning protein (ARMS) was identified as a new p75 interacting protein and serves as a novel downstream target of p75 neurotrophin receptor. We sought to delineate the interaction between p75 and ARMS by deletion constructs of p75 and green fluorescent protein (GFP)-tagged ARMS. We examined the interaction between these two proteins after overexpressing them in HEK-293 cells. Using both Western blot analysis and immunocytochemistry followed by confocal laser scanning microscopy, we found out that the intracellular domain of the p75 neurotrophin receptor was important for the interaction with ARMS. The results from this study suggest that ARMS may play an important role for mediating the signals from p75 neurotrophin receptor into the cell.

The pH, acidity, color, reducing sugar, total sugar, alcohol, and organoletic characteristics of Takju containing puffed rice powder (0, 25, 50 and 75%) were investigated during fermentation for 10 days. After drastic decrease at Day 1, the pH increased gradually until Day 5 and then tended to decrease after Day 6. A lower concentration of puffed rice powder resulted in a greater pH reduction (p<0.05). Acidity increased quickly with days, especially for the 0% after Day 6 (p<0.05). After a sudden rise at Day 1, the Hunter ‘L’ value tended to decrease with days of fermentation. At the same day, the 75% showed the lowest Hunter ‘L’ value, however, it had the highest Hunter ‘a’ value except on Days 0, 3 and 10 (p<0.05). After a rapid reduction in reducing sugar on Day 3, no differences were observed in the samples (p<0.05). The 75% tended to be higher in reducing sugar. Total sugar decreased rapidly at Day 2, and then either remained unchanged or decreased after Day 3. With the exception of Day 4, the 75% had higher amounts of total sugar than the others at the same day (p<0.05). The Highest alcohol contents [13.0-16.4% (v/v)] occurred on Day 6. Higher alcohol concentrations were observed with higher puffed rice powder (p<0.05). In the sensory evaluation, no differences were detected between the 0% and those with puffed rice powder added (p<0.05).
In this study, purple sweet potato muffins were made with the addition of 0, 25, 50, 75, and 100% rice flour, and their quality characteristics were determined. The weight and height increased with the increase in the amount of rice flour added. The moisture contents decreased significantly. As the amount of rice flour added increased, the pH and acidity decreased. The lightness and yellowness of the rice flour decreased significantly, but the redness increased with increasing purple sweet potato content. The textural properties, such as the cohesiveness, chewiness, and brittleness, were significantly lower in the groups with added rice flour. The DPPH radical scavenging activity was significantly higher in the purple sweet potato muffins to which 50 and 75% rice flour were added compared to those in the control. The results of the sensory evaluation showed that there was no significant difference in flavor among the samples. The chewiness was higher with 50, 75, and 100% rice flour than with 0 and 25% rice flour. The groups with 50 and 75% rice flour had significantly higher scores for overall acceptability compared to the control group.

This experiment was conducted to investigate the effects of pelleted food waste on performance and meat quality of broiler ducks. One hundred-forty four broiler ducks were divided into 4 groups with 3 replicates per treatment for 5 weeks. Dietary levels of food waste 0%, 25%, 50% and 75% were included in experimental diets Daily weight gain was significantly increased by addition of food waste 25% and .50%, whereas decreased(P<0.05) by addition of 75% food waste. Feed intake were not affected by the pelleted food waste supplementations. Feed efficiency was improved(P<0.05) by the addition 25% food waste, however, there was depressed(P<0.05) by the addition of 75% food waste. Carcass weight was significantly decreased(P<0.05) by the addition 75% food waste. Moisture composition of breast meat were not significantly different by 25% and 50% food waste, however, there was significantly increased by 75% food waste. As the food waste level was increased, lipid and protein composition in beast meat was significantly decreased As the food waste level was increased. pH of beast meat was increased, whereas lightness and redness of meat color were decreased. Cholesterol content was significantly decreased(P<0.05) by addition of food waste. Odor and appearance of sensory evaluation was depressed by addition of food waste, whereas taste of sensory evaluation was improved by addition of food waste. There was no pathological findings from liver, spleen and kidney in slaughtered ducks. The results of this study suggests that pelleted food waste 25% and 50% improved broiler ducks performance and meat quality in broiler ducks.
This study was carried out in order to investigate the relationship of antioxidant enzyme activity, lipid oxidation, and aroma pattern of Hanwoo (Korean cattle) beef for 8 d at $15^{\circ}C/RH$ 100% under 0% $O_2$/20% $CO_2/80%\;N_2$, 25% $O_2$/20% $CO_2/55%\;N_2$, 50% $O_2$/20% $CO_2/30%\;N_2$, and 75% $O_2$/20% $CO_2/5%\;N_2$-conditions. The reduction of $O_2$ and the induction of $CO_2$ were shown in the 25-75% $O_2$-groups during storage and total change rates of $O_2$ and $CO_2$ were followed in order: 25%>50%>75%. Catalase activity was not significantly different among all groups. During storage, glutathione peroxidase activity decreased by increasing the $O_2$ concentration and was followed at 8 d in order: 0%>25%>50%>75% (p<0.05). From 2 d of storage, TBARS content had significant (p<0.05) differences in order: 0%>25%>50%>75%. The CIE $L^*$ value was higher (p<0.05) in the 25-75% $O_2$-groups, compared with the 0% $O_2$-group. During the first time, the CIE $a^*$ value was higher (p<0.05) in order: 0%<25%<50%<75% but was lower (p<0.05) in the 25-75% $O_2$-groups from 2 d of storage than in the 0% $O_2$-group. The CIE $b^*$ value was higher (p<0.05) in the 25-75% $O_2$-groups than in the 0% $O_2$-group and had significant (p<0.05) differences at 0 and 8 d in order: 0%<25%<50%<75%. Aroma patterns with the electronic nose were clearly discriminated between the 0% $O_2$-groups and the 25-75% $O_2$-groups at 8 d of storage. Therefore, high oxygen reduced stabilities of antioxidant enzymes, lipid oxidation, and color in Hanwoo beef. Furthermore, antioxidant enzyme activities and lipid oxidation could affect aroma patterns.

This study investigated the growth characteristics of juvenile abalone when has been rearing as other different feed rates by the commercial abalone formulated feed on indoor tank, during the winter period that was maintaining on the low water temperature. Experimental abalones were use to 1 year old (shell length $29.14{\pm}2.56mm$, wet weight $2.9{\pm}0.6g$), and it has cultured at six feeding rate groups (0.75 DFW, 1.50 DFW, 2.25 DFW, 3.00 DFW, 3.75 DFW, 4.5 DFW) that were set up the daily feeding rate about total weight (DFW), and two replicated. The average water temperature in the experiment period was $9.7{\pm}3.27^{\circ}C$. In the monthly change absolute growth rate (AGRSL) and specific growth (SGRSL) of shell length, at January, 3.00 DFW was significantly higher than all feeding rate groups (P < 0.05). And in the monthly change of weight change and weight gain (WG), at March, 3.75DFW was significantly higher than all feeing rate groups (P < 0.05). The growth coefficient of thermal units (TGC) was decreased rapid since January, and 3.75 DFW was show significantly higher than all feeding rate groups (P < 0.05). In monthly change of feed efficiency (FE), at December, the 0.75 DFW was significantly higher than all feeding rate groups (P < 0.05), and in February and March, there was no significant difference between all feeding period. Therefore, In this study, was show that juvenile abalones can do to maintain or increasing from weight to supply commercial artificial diet during winter period when rearing into the indoor tank.
To elucidate the relationship among the levels of nutrients intake, bone mineral density(BMD) and the urinary biochemical markers of bone metabolism, this survey is conducted with 225 postmenopausal women over 50 years of age. The urinary biochemical markers including deoxypyridinoline(DPD) and Ca excretion were measured. Bone mineral densities of lumbar spine(L2-L4), femoral neck, ward's triangle and trochanter were measured with dual-energy X-ray absorptiometry and the nutrient intake data obtained by 24 hr recall method. Mean age of all subjects was 64.8 years old, and the BMDs of the subjects were $0.86g/cm^2$(lumbar spine), $0.60g/cm^2$(femoral neck), $0.49g/cm^2$(trochanter), and $0.41g/cm^2$(ward's triangle). The results were compared among 3 groups with different nutrient intake levels classified by the percentage of Dietary Reference Intakes(DRIs) for Koreans as follows: low < 75% DRIs, 75% DRI $\leq$ adequate < 125% DRIs, high $\geq$ 125% DRIs. Bone mineral density of adequate protein intake group was significantly higher than those of low and high protein intake groups(p<0.05). Urinary DPD excretion was lowest in protein and calcium adequate intake groups(p<0.05, p<0.05), respectively. In relation to urinary Ca excretion, it is revealed to be considerably lower in the groups taking protein and vitamin C adequate intake(p<0.05, p<0.05). The percent DRI of protein and calcium were positively correlated with the BMD of the femoral neck after adjusted age(p<0.05, p<0.05). These results showed that there are probably some relationships between nutrient intake levels and urinary biochemical markers. For postmenopausal women with adequate nutrition expecially protein, calcium and vitamin C, has an important role to postpone bone resorption and to prevent the decrease of bone density.
Iron oxide (hematite, $\alpha$-${Fe}_{2}{O}_{3}$) particles were prepared directly from aqueous solution using a crystal growth controller. Paticles properties and reaction mechanisum of products as a function of basicity, formation process and mechanism of needle-lkie hematite were investigated. hexagonal hermatite particles were formed in teh range below pH 9.0, ellipsoidal or rectangular hematite particles in the range of pH 10.75-11.75 respectively. In the range above pH 12.50, acicular $\alpha$-FeOOH was formed. Basicity of product solution produced in the range of pH 10.7511.75 was increased slightly as compared with basicity of reastants due to hydroxly ion(OH-) formed by dissociation crystal growth controller. Citric acid which is acted as a crystal growth controller was adsorbed in the form of itrate anion(R-COO-) on the ferric hydroxide and exerted important role on the formation to the needle-like $\alpha$-${Fe}_{2}{O}_{3}$ particles in this reaction system.

In order to study the effect of air pollution on the ventilatory function of lung, pulmonary function studies were carried out in middle school students (male) living isn Sasang industrial area more than 10 years, and were compared with those of control group. The following results were obtained; 1. Lung capacities were normal in observed & control group, and were not significantly different between two groups. 2. The respective parameters of ventilatory function test of observed group were smaller than that of control group, but FVC, $FEV_1$, $FEV_1/FVC$, FEF 25-75%, Vmax 50, MVV of two groups were normal. 3. PEFR, Vmax 25, Vmax 75 of observed group were significantly decreased, and there were statistically significant differences between two groups in FEF 25-75% (p < 0.01), Vmax 25 (p < 0.05), Vmax 50 (p < 0.01), Vmax 75 (p < 0.05), PEFR (p < 0.05) and MVV (p < 0.02).
