Quality Stability of Powdered Soup Using Powder from Oyster Wash Water (굴 세척액 유래 분말수프의 품질안정성)

  • This study was carried out to examine the quality stability of powdered soup using powder from oyster wash water (PSW). To compare the quality stability, powdered soup from oyster hot-water extracts (PSE) was also prepared by mixing hot-water extract powder (15 g), table salt (5 g), cream powder (19 g), milk replacer (12 g), wheat flour (20 g), corn flour (15 g), starch (5 g), glucose (7.5 g), and onion powder (1.5 g). In preparing PSW, powder from oyster wash water, instead of powder from oyster hot-water extracts, was added and other additives were the same proportion as PSE. The PSW and PSE were packed with laminated film bag (OPP,$20\;{\mu}m$; PE, $20{\mu}m$; paper, $45\;g/m^3$; PE, $20\;{\mu}m$; Al, $7\;{\mu}m$; PE, $20\;{\mu}m$), and then stored at ambient temperature for 12 months. The moisture content, water activity, peroxide value, and fatty acid composition showed little changes during storage of the PSW, The pH, volatile basic nitrogen content, and brown pigment formation increased slightly, while white index decreased slightly during storage of PSW. No significant difference was observed in the changes of food components between PSW and PSE during storage. According to a sensory evaluation, the change in quality of PSW was negligible during 12 months of storage. From the results of the chemical experiment and sensory evaluation, PSW packed with laminated film bag (OPP, $20\;{\mu}m$; PE, $20\;{\mu}m$; paper, $45\;g/{\mu}m$; PE, $20\;{\mu}m$) was revealed to be preserved in good quality during 12 months of storage.

Effects of Various Calcium Powders as Replacers for Synthetic Phosphate on the Quality Properties of Ground Pork Meat Products

  • The aim of this study was to identify the optimal and superior type of natural calcium for replacing phosphate in cooked ground pork products. To achieve this, 0.5% eggshell calcium (ESC), oyster shell calcium (OSC), marine algae calcium (MAC), or milk calcium (MC) was added to ground pork meat products. The effect of this substitution was studied by comparing the substituted products with products containing 0.3% phosphate blend (control). ESC was considered an ideal phosphate replacer for minimizing the cooking loss, which likely resulted from the increase in the pH of the product. Among the other natural calcium types, OSC treatment did not cause a significant increase in pH, but it lowered the cooking loss. CIE $L^*$ values were higher (p<0.05) in products treated with OSC or MC than the control, and lowest (p<0.05) in the products with ESC. However, products with ESC had higher (p<0.05) CIE $a^*$ and CIE $b^*$ values than the control and products treated with other powders. Compared to the control, products treated with ESC and OSC had similar substitution effects on the textural properties of the products. Therefore, the results of this study suggested that the combined use of ESC and OSC could be a potentially effective method for replacing synthetic phosphate in ground pork products.

Application of spent oyster mushroom substrate for bag cultivation of Lentinula edodes (느타리버섯 수확후 배지를 이용한 표고 배지 개발)

  • To determine the optimum amount of spent oyster mushroom substrate (SOMS) for use in cultivation of Lentinula edodes, the chemical properties of the substrate and culture conditions of Lentinula edodes were investigated. Replacing 20-50% of a sawdust substrate with SOMS yielded a C/N ratio of 62-76. In case of substrates containing SOMS, the total nitrogen and phenolic contents of were higher, whereas fructose and organic acid contents were lower than those of the control substrate. Cultivation tests showed that the 3-cycle yield of 20% SOMS treatment was 286.7 g, similar to that of the control, while 50% SOMS treatment significantly decreased the yield. In conclusion, development of oak mushroom substrate using SOMS would recycle waste products and decrease material costs.

  • The chemical constituents of the cooked-released fluid of oyster, Crassosetra gigas which was collected in the harvesting season (Sept., 1973 to Apr., 1974), were analyzed Periodically to evaluate the potential utility in the view point of food and nutrition, an8 the following results are summarized ; 1. The content of crude protein nitrogen was low in January, but tended to increase since February. This result resembled with non protein nitrogen. 2. Amino nitrogen of the non protein nitrogen was continuously increased since September, and observed a remarkable increase from February. 3. The most content of crude carbohydrate is found to be composed of glycogen, and the variation of glycogen content also increased till April, with the similar tendency of amino nitrogen. 4. The variation of the content of crude protein and crude carbohydrate showed a reverse correlation to the moisture content.

Processing and Characteristics of Pearl Oyster (Pinctada fucata) Extracts (진주조개(Pinctada fucata) 추출물의 가공 및 품질특성)

  • This study examined the effective utilization of pearl processing by-products. Three extracts of hot-water extract (WE), hydro-cooked extract (HE), and two-step enzymatic hydrolysate (EH) were prepared from pearl oyster muscle, and their characteristics were examined. The moisture, crude protein, volatile basic nitrogen (VBN), and amino-N contents were 97.5-98.0%, 0.5-1.3%, 2.1-4.9 g/100 mL, and 35.0-74.5 g/100 mL, respectively. EH had the lowest VBN and highest amino-N contents. In addition, EH had the highest yields. In terms of its functional properties, EH inhibited angiotensin-I converting enzyme ($IC_{50}$, 1.39 mg/mL) more strongly than the other extracts ($IC_{50}$, 4.17-7.95 mg/mL). The free amino acid contents of WE, HE, and EH were 661, 470 and 1,150 mg/100 mL, respectively. Major amino acids were taurine and glutamic acid. Major inorganic ions were Na, Mg, and Ca. Contents of taste compounds, such as free amino acids, inorganic ions, and quaternary ammonium bases, differed significantly according to the extract methods. Based on the results of chemical experiments and sensory evaluation, the quality of EH was superior to the other extracts, and EH is suitable for use in natural flavoring materials.

Studies on $\alpha$-amylase of Bacillus circulans F-2 (Part 3) Hydrolysis of Various Substrates by Purified $\alpha$-amylase (Bacillus circulans F-2가 생산하는 $\alpha$-amylase에 관한 연구 (제3보) 정제 $\alpha$-amylase에 의한 각종 기질의 분해)

  • These experiments were conducted to investigate the hydrolysis products on the various oligosaccharides of Bacillus cirulans F-2 $\alpha$-amylase, and the hydrolysis rate on the various raw starches of Bacillus circulans F-2 $\alpha$-amylase, Bacillus amylotiquefaciens $\alpha$-amylase and Rhizopus niveus glucoamylase. The results obtained were as follows : 1. Maltotetraose, maltopentaose, maltohexaose, maltoheptaose and maltooctaose were hydrolyzed, but maltose and maltotriose were not hydrolyzed by Bacillus circulans F-2 $\alpha$-amylase. Among maltotetraose, maltopentaose, maltohexaose, maltoheptaose and maltooctaose, especially maltotetraose was hydrolyzed weakly by Bacillus circulans F-2 $\alpha$-amylase. 2. The Hydrolysis rate of oyster glycogen was slightly lower than soluble starch, amylose and amylopectin. 3. The hydrolysis rate of com starch was higher in shaking incubation than in stationary incubation, but the hydrolysis rate of potato starch was not definite according to kinds of enzyme. 4. On com, rice, arrowroot, high amylose corn, banana, sago, yam and potato starch, Bacillus circulans F-2 $\alpha$-amylase exhibited a remarkably higher hydrolysis rate than Bacillus amyloquefaciems $\alpha$-amylase and Rhizopus niveus glucoamylase.

  • In this study, ethylene vinyl acetate (EVA) and low density polyethylene (LDPE) composite films (EVA/LDPE-OSP) containing calcined oyster shell powder (OSP) were prepared using twin-screw extruder as an antimicrobial packaging material. The OSP composite was initially prepared and then incorporated into an EVA/LDPE blend at different ratios (0, 1, 3 and 5%) to develop the EVA/LDPE-OSP composite films. The as-prepared EVA/LDPE-OSP composites films were evaluated using FT-IR, DSC, TGA, OTR, WVTR, SEM and UTM as well as antimicrobial activity was examined using JIS Z 2801:2000 standard. OPS endowed the antimicrobial potency to the composite films against Gram-positive (Staphylococcus aureus) and Gram-negative (Escherichia coli) bacteria. In addition, the incorporation of OSP remarkably enhanced the thermal stability. OSP as a natural biocidal agent can be used as a multifunctional additive in packaging industry such as improving the thermomechanical properties and preventing the microbial contamination of packaged products.

  • Noroviruses, members of the family Caliciviridae, are often found in shellfish grown in polluted water and are emerging as a leading cause of foodborne disease worldwide. As the presence of norovirus in food commodities becomes an important medical and social issue, there are increasing needs for designing improved detection methods for the virus. In this study, we tested the Agilent 2100 Bioanalyzer for the analysis of norovirus DNA amplified from oyster samples. Microchip electrophoresis provided us with more accurate information, compared to conventional agarose gel electrophoresis, in the resolution and quantification of amplified products. The development of an improved method for food-associated noroviruses would contribute to a rapid identification of contaminated food and improve our understanding of the modes of food contamination and norovirus transmission.

Effect of the Cultivation Technology on the Yield of Paddy Straw Mushroom (Volvariella volvacea)

  • The edible paddy straw mushroom Volvariella volvacea (Bull. ex F.) Singer has high nutritional and medicinal values. They are grown on a wide variety of agricultural by-products using different several methods. The result of this present study showed that type of bed and cultivation condition (outdoor/indoor) had effects on the yield of paddy straw mushrooms grown on the spent oyster mushroom sawdust. The treatment of circular compact bed under indoor cultivation condition (CYIC) had the best yield and biological efficiency (B.E.) with 2,119.2 g/bed and 14.5%, respectively, followed by the treatment of conventional bed under outdoor cultivation condition (COOC) with the yield and B.E. of 1,935.5 g/bed and 13.2%, respectively, but the lowest yield and B.E. were observed in the treatment of conventional bed under indoor cultivation condition (COIC) with 1,226.1 g/bed and 8.4%, respectively. Paddy straw mushrooms cultivated on spent oyster mushroom sawdust should be proper in both outdoor and indoor conditions by conventional and circular compact methods as well. However, in indoor conditions, paddy straw mushrooms should be grown in a circular compact bed to ensure the temperature of the bed is suitable for the mushroom growth.

The Development of High fiber Food for Constipation (변비 환자를 위한 고섬유질 음식 개발에 관한 연구)

  • In recent yearn, eating habit that is not right causes disease the dietary fiber (DF) intakes of Korean decreases. Occurrence of chronic disease such as constipation increased gradually. This study was performed to investigate of high fiber standard recipes for one day including major source of DF such as vegetables, cereals and grain products, seaweeds, fruits, fungi and mushrooms, and legumes and products for improving constipation through dietary treatment. Nutrient analysis per person marked energy, protein, fat and DF content. The food of high I : S ratio (Insoluble fibers: Soluble fibers) are soybean sprout salad, rice gruel with vegetables, pan fried mushroom with vegetables. The food of low I:S ratio are fermented soybean paste stew, fried rice with kimchi, fruits salad with yogurt dressing and seasoned noodle with vegetables. The representative high fiber diet menu is rice gruel with vegetable, rice with radish and oyster, fermented soybean paste stew, kimchi stew, assorted soybean sprout salad, three kinds of pancake roll, pan fried mushroom with vegetables, fruits salad with yogurt dressing and seasoned noodle with vegetables. The menu developed in this study, contains fiber of at least 8.97 times of RDA and in point view of 1 day intake, that is similar to the scope of RDA, 20-25 g per day. This findings should be appliable to nutritional education and medical food for constipation. And also, the aim of study is constipation patients easily applicate that developed the food of high fiber using Korean common food. And the result of the study will be the basic data about clinical test of food developed in this study and the danger of high fiber diet. The representative high fiber diet menu is rice gruel with vegetable, rice with radish and oyster, fermented soybean paste stew, kimchi stew, assorted soybean sprout salad, three kinds of pancake roll, pan fried mushroom with vegetables, fruits salad with yoghurt dressing and seasoned noodle with vegetables. This findings should be applicable to nutritional education and medical food for constipation.
