Comparison of taste ingredients between Long-term aged Korean Ganjang and manufactured brewed Ganjang

  • In this study, we tried to compare and analyze the taste components of Korean Ganjang made by a conventional method on a small scale and aged for 3 years and brewed Ganjang produced by a large company. As a result of the study, a total of 22 types of free amino acids in liver were detected. The main amino acids of Korean Ganjang were glutamic acid, lysine, serine, citrulline, alanine, and leucine, then, the main amino acids of brewed Ganjang were leucine, glutamic acid, aspartic acid, valine, serine, alanine. The content of glutamic acid in the composition of free amino acid was 12133.69 mg/mL, more than twice as much as that of Korean Ganjang. The content of leucine (bitter taste) was 5933.37 mg/mL of brewed Ganjang, which was 2.9 to 7 times higher than that of Korean Ganjang. Overall, the content of glass amino acids with savory, sweet, and bitter flavors was found to be very high in brewed Ganjang (BGS) than in Korean Ganjang (KAS, KBS, and KCS). On the other hand, GABA was 456.43 mg/mL for Korean Ganjang KBS, 3.3 times higher than brewed Ganjang. Brewed Ganjang had higher glucose content, inorganic content, iron (Fe), organic acid lactic acid and acetic acid content than Korean Ganjang. Korean Ganjang was found to contain high saturated fatty acids, calcium (Ca), and sodium (Na).

  • Poly(4-vinylpyridine)-supported $Br{\phi}nsted$ acids (P4VP-HX) were prepared by wet impregnation technique. These supported acids were found as efficient heterogeneous green catalysts for acetylation of alcohol, amine and phenol with different catalytic activities. The wide application of P4VP-HX as reusable solid acid catalyst in organic reactions is possible because of its simple preparation and handling, stability, simple work up procedure.

  • N,N'-(bicyclo[2,2,2]oct-7-ene-tetracarboxylic)-bis-L-amino acids 3a-g were synthesized by the condensation reaction of bicyclo[2,2,2]oct-7-ene-2,3,5,6-tetracarboxylic dianhydride 1 with two equimolars of Lalanine 2a, L-valine 2b, L-leucine 2c, L-isoleucine 2d, L-phenyl alanine 2e, L-2-aminobutyric acid 2f and L-histidine 2g in an acetic acid solution. Seven new poly(amide-imide)s PAIs 5a-g were synthesized through the direct polycondensation reaction of seven chiral N,N'-(bicyclo[2,2,2]oct-7-ene-tetracarboxylic)-bis-L-amino acids 3a-g with bis(3-amino phenyl) phenyl phosphine oxide 4 by two different methods: direct polycondensation in a medium consisting of N-methyl-2-pyrrolidone (NMP)/triphenyl phosphite (TPP)/calcium chloride ($CaCl_2$/pyridine (py), and direct polycondensation in a tosyl chloride (TsCl)/pyridine (py)/N,N-dimethylformamide (DMF) system. The polymerization reaction produced a series of flame-retardant and thermally stable poly(amide-imide)s 5a-g with high yield. The resulted polymers were fully characterized by FTIR, $^1H$ NMR spectroscopy, elemental analyses, inherent viscosity, specific rotation and solubility tests. Data obtained by thermal analysis (TGA and DTG) revealed that the good thermal stability of these polymers. These polymers can be potentially utilized in flame retardant thermoplastic materials.

Soaking Effects of Brassinosteroids on Germination of Rice Under Simulated Acid Rain (인공산성비에 의한 볍씨발아 장해경감에 대한 Brassinosteroids의 처리효과)

  • This study measured the soaking effects of two brassinosteroids(BRs), homobrassinolide(hBR : 225, 23S-homobrassinolide) and epibrassinolide(epiBR : 22R, 23R. 24R-$2{\alpha}$, $3{\alpha}$, 22, 23-Tetrahydroxy-B-homo-7-oxa-$5{\alpha}$-ergostan-6-one) on the germination of two rice cultivars, 'Milyang 23' and 'Naepungbyeo' exposed to simulated acid rain(SAR). The results suggested that promoting effect of two BRs on alleviating damage to SAR would be attributed to the promotion of plant growth, root elongation, and particularly germination rate of both cultivars. Eight organic acids were determined by HPLC. Succinic acid acetic acid in 'Milyang 23' under SAR were highest among eight organic acids.

  • Among organic acids, Prunus mume extract(PME) was mostly consisted of $0.47\;mg\%$ citric, $0.43\;mg\%$ malic and $0.25\;mg\%$ oxalic acid Volatile compounds in PME were identified by GC/MSD, showing that acetic acid($8.3\%$) and p-coumaric acid($13.1\%$) as well as 5-hydroxymethyl furfural($32.3\%$), furfural($8.3\%$), and 3-methyl-2,3-furandione($2.3\%$) were major compounds which are known as antimicrobial substances.

  • The effect of genotype, fibre level and fibre source on gut morphology, environment and microflora was studied using 18 Mong Cai (MC) and 18 Landrace${\times}$Yorkshire (LY) pigs, aged around 60 d. The diets were based on maize, rice bran, soybean meal, fish meal and soybean oil, and cassava residue (CR) or brewer's grain (BG) as fibrous ingredient sources in the high-fibre diets (HF). A low-fibre diet (LF), containing around 200 g NDF/kg dry matter (DM), was formulated without CR and BG as feed ingredients. The HF diets (HF-CR and HF-BG) were formulated to contain around 270 g NDF/kg DM. The experiment was arranged according to a $2{\times}3$ factorial completely randomized design with six replications, and lasted 30 d. Crypt density in ileum was lowest (p<0.05) and villus height in jejunum and ileum were the greatest (p<0.05) in pigs fed diet HF-BG. Villus width in ileum was greatest in pigs fed diets HF-CR and HF-BG (p<0.05). Lactic acid bacteria (LAB) counts in stomach were greatest (p<0.05) and E. coli counts in ileum and colon were lowest (p<0.05) in pigs fed diet HF-CR. The concentration of total organic acids in ileum, caecum and colon were greatest (p<0.05), and pH in ileum and colon were lowest (p<0.05) in pigs fed diet HF-CR. Crypt density in ileum was lowest, and villus height in ileum and villus width in jejunum and ileum was greatest in LY pigs (p<0.05). LAB counts in stomach and ileum were greatest, and E. coli counts in ileum were lowest in MC pigs (p<0.05). The concentration of total organic acids in ileum, caecum and colon were greatest (p<0.05) and pH lowest (p<0.05) in MC pigs.

Group Separation of Water-soluble Organic Carbon Fractions in Ash Samples from a Coal Combustion Boiler

  • The chemical characterization of water-soluble organic carbon in ash emitted from a coal combustion boiler has not been reported yet. A total of 5 ash samples were collected from the outlet of an electrostatic precipitator in a commercial 500 MW coal-fired power plant, with their chemical characteristics investigated. XAD7HP resin was used to quantify the hydrophilic and hydrophobic water-soluble organic carbons (WSOC), which are the fractions of WSOC that penetrate and remain on the resin column, respectively. Calibration results indicate that the hydrophilic fraction includes aliphatic dicarboxylic acids and carbonyls (<4 carbons), amines and saccharides, while the hydrophobic fraction includes aliphatic dicarboxylic acids (>4-5 carbons), phenols, aromatic acids, cyclic acid and humic acid. The average mass of the WSOC in the ash samples was found to depend on the bituminous coal type being burned, and ranged from 163 to 259 ${\mu}g$ C/g of ash, which corresponds to 59-96 mg C of WSOC/kg of coal combusted. The WSOC mass accounted for 0.02-0.03 wt% of the used ash sample mass. Based on the flow rate of flue gas produced from the combustion of the blended coals in the 500 MW coal combustion boiler, it was estimated that the WSOC particles were emitted to the atmosphere at flow rates of 4.6-7.2 g C/hr. The results also indicated that the hydrophilic WSOC fraction in the coal burned accounted for 64-82% of the total WSOC, which was 2-4 times greater than the mass of the hydrophobic WSOC fraction.

  • In order to promote the consumption of small red muscle fish, such as saury, sardine, herring, etc., a new conditioning technique to soften backbone and small bones was investigated by using kimchi seasoning ingredients and organic acids. In the conditioning process, various chemical changes were examined during 60 days at 15 days intervals, The decrease of moisture content and the increase of salt concentration in seasoned fish meat were good correlated respectively. In the dry salt conditioning, the moisture content was more rapidly decreased than wet salt conditioning. The pH of fish meat during conditioning were more slowly decreased in dry salting than in wet salting. The VBN contents were suppressed under 30 mg/100 g in dry salt conditioning during 60 days at $5^{\circ}C$. The addition of rice bran in dry salting was effective on retarding lipid oxidation because the TBA value was most effectively retarded.

Antimicrobial Activity of Glycerol Monolaurate and Organic Acids on the Survival of Escherichia coli O157:H7

  • Minimal inhibitory concentrations (MIC) and antimicrobial effects of glycerol monolaurate (monolaurin) and organic acids, either alone or in combination, against Escherichia coli O157:H7 in tryptic soy broth were determined. MIC values of monolaurin(ML), acetic (AA), citric (CA), lactic (LA) and hydrochloric acid (HCl) were 300$\mu\textrm{g}$/mL (0.03%), 1250$\mu\textrm{g}$/mL(0.125%), 5000$\mu\textrm{g}$/mL(0.5%), 2500$\mu\textrm{g}$/mL(0.25%) and 2500$\mu\textrm{g}$/mL(0.25), respectively. When 150$\mu\textrm{g}$/mL of ML was combined with 50$\mu\textrm{g}$/mL AA, 250$\mu\textrm{g}$/mL HCl and 125$\mu\textrm{g}$/mL LA, the combined agents did not increase the inhibitory effect of the most active single compound alone. This result indicates that there was little interaction between ML and A, HCl and LA. However, the combination of 150$\mu\textrm{g}$/mL ML and 250$\mu\textrm{g}$/mL CA synergistically inhibited growth of E. coli O157:H7. The present study showed that the nature of combined antimicrobial response against E. coli O157:H7 was complex, but this information would be useful for determining interaction that could compromise effectiveness in food systems.

Studies on the Trace Elements, Heavy Metals and Organic acids Content of Edible Mushrooms (버섯류의 미양금속, 중금속 및 유기산 함양에 관한 연구)

  • To investigate on the element content of twelve edible mushrooms and Aloe arborescent, i.e., Lentinus edodes, Ganoderma lucidum (culturing in wood and soil), Tricholoma matsutake, Agaricus auricula-Jude (produced in Korea and China), sarcodon asparatus, Pleurotus ostreatus, Coriolus bisporus, Cyrophora esculenta, Auricularia auricula-Jude (produced in Korea and China), Sarcodon asparatus, Pleurotus ostreatus, Coriolus rersicolor, Smilax rotundifolia and Aloe arborescenstyl were analyzed by Atomic absorption spectrometer. The obtained results were summarized as follows : 1. Potassium, sodium, magnesium and iron content for the most part samples were in large quantities, especi phosphorus content of those was highest ammount for the all samples. 2. Sodium content f·as much ammount in the Lentinus edodes(39 mg, and Ganoderma lucidum(20 mg) , Culturing in wood and soil, while potassium was very high ammount in the Aloe arborescens and other samples. Mush ammount of magnesium as compared with others was Lentinus edodes(144 mg) , Ganoderma lucidum(128 mg), Aloe arborescens(50 mg) and Pleurotus ostreatus (60 mg) . 3, Phosphorus content of Lentinus edodes, Gyrophora esculenta, Auricularia polytricha and Agaricus bisporus was much ammount while iron content of all samples equality higher ammount. Sodium content of Aloe arborescens was not analyzed out for almost all, its potassium(82 mg), magnesium(50 mg) and iron(18 mg) content comparatively higher quentity than others nllnerals and phosphorus volume (4.9 mg) as compared with others, was conspicuously lower detect. 4. Cadimium and lead content of harmful metal element were detected on trace quantity for the most part samples. 5. Organic acids of samples i.e., Lentinus edodes, Agaricus bisporus, Pleuritus ostreatus and Ganoderma lucidum were Citrate, Malate, Fumalate, Succinate, Oxalate, Acetate, Lactate, and Tartarate and Citrate, Malate and Fumarate contents were higher amount remarkbly than other organic acids. Tartarate content was trace amount.
