Effects of Organic Acids Mix and Modified Atmosphere Packaging on the Storage Quality of Sliced Bacon

  • The effects of organic acids mix (0.4%) and modified atmosphere packaging (MAP) on the storage quality of sliced bacon were investigated. Pork bellies were treated with or without organic acids at the curing stage. The organic acids mix comprised 35% sodium acetate, 25% salt, 15% calcium lactate, 11% trisodium citrate, 7% ascorbate, and 7% citric acid. The cured pork bellies were smoked and packaged with 50% $CO_2$ + 50% $N_2$ (50% $CO_2$-MAP) and 100% $N_2$ (100% $N_2$-MAP), and stored at $5^{\circ}C$ for 14 d. The 50% $CO_2$-MAP showed a higher pH value (p<0.05) up to 10 d, a lower protein deterioration (p<0.05) as measured by volatile basic nitrogen (VBN) from 6 to 14 d, and a higher color value of lightness (CIE $L^*$) compared to 100% $N_2$-MAP. The development of lipid oxidation measured by thiobarbituric acid reactive substance (TBARS) values seemed to be effectively controlled throughout the storage period in both 50% $CO_2$-MAP and 100% $N_2$-MAP regardless of the application of organic acids. The 50% $CO_2$-MAP inhibited the growth of aerobic and anaerobic bacteria (p<0.05) both in non-added and bacon added with organic acids mix. The 50% $CO_2$-MAP alone seemed to be effective in delaying the growth of bacteria since the use of organic acids mix gave no additional effects. The addition of organic acids mix lowered the pH value (p<0.05), effectively retarded the protein deterioration (p<0.05), and showed a higher color value of lightness (CIE $L^*$) value (p<0.05) and lower color value of redness (CIE $a^*$) value (p<0.05). In conclusion, 50% $CO^2$-MAP showed better quality and self-life of sliced bacon during storage. However, the beneficial effect of organic acids mix was not noticed in the concentration used in this experiment.

  • This study was conducted to investigate the effect of addition levels of coffee and green tea by products extract including polyphenols through hot water extraction on rumen fermentation. The treatment groups consisted of coffee extract (CO), green tea extract (GR) and mixed extract (MIX), and the addition level was 10 µL, 20 µL and 30 µL of three levels. The experiment consisted of a total of 10 experimental groups including the control group, and a full factorial design was used. The effect of polyphenol addition in coffee and green tea by-products was analyzed through main and interaction effect of statistical analysis. The total polyphenol content of the extracts was 106.15, 79.10 and 185.25 ㎍ GAE/g DM for coffee by-product, green tea by-product and mixture, respectively. Total gas production was significantly lower in the treatment groups than in the control (114.00 mL/gDM) (p<0.05). Methane emission tended to decrease as the polyphenol addition level increased. Moreover, the MIX showed the lowest methane emission when 30 µL was added (p<0.05). Volatile fatty acids showed a significant difference compared to the treatment group as a control (98.06 mM) (p<0.05), but there was no change according to the level of polyphenols. As a result of the main effect and interaction, it is thought that the effect on methane reduction and improvement of rumen fermentation in MIX20 can be expected. In a series of studies, the addition of 20 µL of a blended extract of coffee and green tea by-products is thought to reduce methane to levels that do not inhibit rumen fermentation.

보리등겨로 제조한 간장의 맛성분 특성 (Taste Characteristics of Kanjang Made with Barley Bran)

  • 본 연구는 보리등겨로 제조한 간장 맛의 특성을 찾기 위해서 수행되었다. 맛성분은 기기분석으로, 관능검사는 panel로, 그 외 통계적 처리의 방법 등을 이용하였다. 보리간장 맛성분은 유기산, 유리당 및 유리아미노산으로 분류하였으며, 이들과 관능검사 성적과의 단순상관으로 보리간장 맛의 품질을 결정하는 것은 불가능하였다. 중상관계수는 절대값의 대수 변환에서 가장 높게 나타났으며, 따라서 단계적 중회귀분석은 가장 설명력이 높으며, 표준오차가 적은 절대값의 대수 변환을 이용하여 실시하였다. 단계적 중회귀분석 결과, 보리간장 맛의 좋고 나쁨에 기여를 하는 성분은 짠맛, 구수한 맛 및 쓴맛을 내는 성분 순이었다.

  • Korean MEJUES were prepared by means of ordinary, Improved and compromised methods, and analyses of the changes in various chemical compositions of the Soy-sauces throughout the fermentation period of 10 weeks. Now, their result, are as the following as. (1) In all of the Soy-sauces under study the content of organic acids showed a slight increase upto 4 week, and a marked increased after this period. (2) In all of the soy-sauces the total nitrogenous content indicated a rapid increase until 4 weeks, and a slower increase after this. (3) In all of the soy-souses, the content of free amino acids displayed a liner proportional increament until 8 weeks and then slower increose. (4) In all of the soy-souses the content of reducing sugars indicated a slight increase until 4 weeks, and after this it showed a rapid decrease until 4 weeks, in the improved soy-souses and, then maintained an almost flat curve. In the ordinary and Compromised soy-souses there was a rapid decrease in reducing sugars until 6 weeks, and then an almost 리at curves. (5) In the ordinary soy-sauce the SAMWOL-ZANG-BUB(soy-sauce prepared in March) is considered to be based on a comparatively scientific ground during the fermentative period. (6) In order to improve the taste in ordinary soy-sauce it is favorable to delay the period of preparation. The adequate period appears requires 8 weeks at least. Accordingly it is recommended to mix the materials with carbohydrate source. (7) In the improved soy-sauce according to the SAMWOL-ZANG-BUB of ordinary soy-sauce it is thought that 8 weeks were adequate for the fermentation. (8) The compromised method may be recommended for the improvement of nomemade soy-souce, and it may be also superior to the ordinary soy-sauce in quality.

The Effects of Dietary Urea on Microbial Populations in the Rumen of Sheep

  • Two experiments were conducted to examine the effects of a range of concentrations of ruminal fluid ammonia ($NH_3$-N) on forage digestibility, microbial growth efficiency and the mix of microbial species. Urea was either continuously infused directly into the rumen of sheep fed 33.3 glh of oaten chaff (Exp. I) or sprayed onto the oaten chaff (750 g/d) given once daily (Exp. 2). Concentrations of $NH_3$-N increased with incremental addition of urea (p < 0.01). Volatile fatty acids (VFA) concentrations and 24 h in sacco organic matter digestibility in the rumen were higher when supplemental urea was given (p < 0.01). The (C2 + C4) : C3 VFA ratio was lower (p < 0.05) when $NH_3$-N was above 200 mgN/I. The fungal sporangia appearing on oat leaf blades were significantly higher when urea was supplemented, indicating that $NH_3$-N was a growthlimiting nutrient for fungi at levels of $NH_3$-N below 30 mgN/l. The density of protozoa was highest when $NH_3$-N concentrations were adjusted to 30 mgN/I for continuously fed ($4.4{\times}10^5/ml$) and to 168 mgN/1 for once daily feeding ($2.9{\times}10^5/ml$). Thereafter increasing concentrations of $NH_3$-N, were associated with a concomitant decline in protozoal densities. At the concentration of $NH_3$-N above 200 mgN/l, the density of protozoa was similar to the density of protozoa in ruminal fluid of the control sheep ($1.8{\times}10^5/ml$). The efficiency of net microbial protein synthesis in the rumen calculated from purine excretion was 17-47% higher when the level of $NH_3$-N was above 200 mgN/1. The possibilities are that 1) there is less bacterial cell lysis in the rumen because of the concomitant decrease in the protozoal pool and/or 2) microbial growth per se in the rumen is more efficient with increasing $NH_3$-N concentrations.

맛버섯균의 균배양 특성 및 톱밥재배 기술에 관한 연구 (The study of sawdust cultivation and the characteristics of mycelial growth of Pholiota nameko)

  • 맛버섯균의 균사 배양을 위한 최적배지는 버섯완전배지(MCM), 최적균사 생장온도는 25 C, 최적pH는 5.0이었다. 균사생장이 가장 양호한 탄소원은 GLUCOSE, MANNOSE, 질소원은 YEAST EXTRACT, PEPTONE 및 ASPARAGINE, 등 이었다. 톱밥 병재배시($850m{\ell}$) 30일 배양후 숙성일수에 따른 초발이소요일, 자실체 생육일 수 및 수량을 검토한 결과 숙성하지 않은 배양 30일 처리시 초발이소요일 15~20일, 병당 수량 79g인 반면 숙성일수가 가장 긴 배양 70일 처리시 초발이 소요일 6~9일, 병당 수량 98g으로 숙성 일수가 길수록 초발이소요일이 빠르고, 수량이 증가하는 경향이었다. PP봉지 재배시 배 850g 배지에서 초발이소요일 17~21일, 갓의 수 39개, 수량 157g으로 배지 회수율이 가장 양호하였다.

Antimicrobial Effects of EcoCal® and GF Bactostop® Formulated in Emulsified Sausages against Lactic Acid Bacteria

  • 본 연구는 EcoCal® (산화 칼슘) 및 GF Bactostop® (유기산염 믹스)을 소시지에 사용하였을 때 항균 효과를 확인하였다. 소시지 제조 시, 대조군과 0.1% EcoCal® (0.1ECO), 0.1% EcoCal®+0.5% GF Bactostop® (0.1ECO + 0.5GF), 0.2% EcoCal® (0.2ECO) 및 0.2% EcoCal®+0.5% GF GF Bactostop® (0.2ECO+0.5GF) 등 총 5개 군을 첨가하여 소시지를 제조하였다. 제조가 완료된 소시지를 진공포장하고 10주 동안 10℃에서 저장하며 7-10일 마다 시료를 균질화 하고 tryptic soy agar 및 Lactobacilli MRS agar에 도포하여 호기성 일반세균 및 젖산균을 각각 확인하였다. 그 결과, 0.1ECO+0.5GF 첨가한 소시지가 가장 효과적인 항균 효과를 나타냈으며, 0.1ECO 첨가 소시지가 두번째로 효과적인 항균 효과를 나타냈다(P<0.05). 일반세균수는 대조군, 0.2ECO 및 0.2ECO+0.5GF 첨가 소시지에서는 저장 후 42일까지 점차 증가했지만(P<0.05), 0.1ECO 및 0.1ECO+0.5GF 첨가 소시지에서는 저장 후 49일까지 일반세균의 생장이 억제되었다(P<0.05). 젖산균 수는 대조군, 0.2ECO 및 0.2ECO+0.5GF 첨가 소시지에서 약 49일까지 증가하였으나(P<0.05), 0.1ECO 및 0.1ECO+0.5GF 첨가 소시지에서 젖산균 생장이 억제되었다. 본 결과는 소시지 제형에 0.1% EcoCal®+0.5% GF Bactostop®을 첨가하면 젖산균의 생장을 억제하여 소시지의 보존 기한을 연장시키는데 유용할 것으로 판단된다.
