Fat replacement by pecan nut and oregano oil and their impact on the physicochemical properties and consumer acceptability of frankfurters

  • Objective: A study was conducted to determine the physicochemical quality and consumer acceptability of beef frankfurter-type sausages formulated with pecan nut paste and Mexican oregano oil (MO) of two varieties, Poliomintha longiflora Gray (Mexican oregano Poliomintha, MOP) or Lippia berlandieri (Mexican oregano Lippia, MOL). Methods: Frankfurters were processed under six treatment conditions: control (10.67% pork fat), MOP (control + 0.01% MOP), MOL (control + 0.01% MOL), MOP-N (control + 0.01% MOP + 6% pecan nut paste), MOL-N (control + 0.01% MOL + 6% pecan nut paste), and C-N (control + 6% pecan nut paste). The physicochemical properties and the consumer acceptability were determined. Results: The addition of MO and nut did not influence the water holding capacity, drip loss, and luminosity of frankfurters, but those ingredients increased pH and shear force (p<0.05) and decreased redness (p<0.05) of frankfurters. Frankfurters were generally well accepted by consumers. However, general acceptability of sausages decreased with the addition of MO. Control sausages showed the highest acceptability. Conclusion: The MO and pecan nut paste do not affect drastically the quality of frankfurters. These results provide evidence that partial replacement of pork fat by pecan nut in frankfurters maintain a consistent physicochemical quality and its commercialization looks promising given consumers' acceptance.

  • For centuries, plants have been used for a wide variety of purposes, from treating infectious diseases to food preservation and perfume production. Presently, the increasing resistance of microorganisms to currently used antimicrobials in combination with the appearance of emerging diseases requires the urgent development of new, more effective drugs. Plants, due to the large biological and structural diversity of their components, constitute a unique and renewable source for the discovery of new antibacterial, antifungal, and antiparasitic compounds. In the present paper, the history, composition, and antimicrobial activities of the basil, oregano, and thyme essential oils are reviewed.

Therapeutic effect of oregano essential oil on subclinical bovine mastitis caused by Staphylococcus aureus and Escherichia coli

  • Oregano (Origanum vulgare) is an aromatic herb belonging to the Lamiaceae family. This study evaluated the therapeutic effect of oregano essential oil (OEO) on clinical bovine mastitis caused by Staphylococcus (S.) aureus and/or Escherichia (E.) coli. Thirty-two quarters from 18 lactating cows with subclinical mastitis were selected from a dairy farm and were divided into 4 groups (8 quarters/group): negative control (CON), positive control (GEN) and two OEO-treated groups (OEO-1 and OEO-2). Each group was intramammarily treated with saline, 10 g/tube of gentamicin ointment, and single and double doses of 0.9 mL OEO ointment twice a day for three days, respectively. After the treatments, physical udder conditions were greatly improved in GEN and OEO groups. In CON group, somatic cell counts (SCCs), number of white blood cells (WBC) and bacteria were increased. However, in OEO groups, SCCs and number of WBC were significantly decreased and S. aureus and E. coli were not detected in milk as compared with those before the treatments as well as GEN group. These results suggest that OEO may be a useful alternative to antibiotics for the control of subclinical bovine mastitis caused by S. aureus and/or E. coli.

Antioxidant Enzyme Activity and Meat Quality of Meat Type Ducks Fed with Dried Oregano (Origanum vulgare L.) Powder

  • One-day-old Cherry valley meat-strain ducks were used to investigate the effect of supplemental dried oregano powder (DOP) in feed on the productivity, antioxidant enzyme activity, and breast meat quality. One hundred sixty five ducks were assigned to 5 dietary treatments for 42 days. The dietary treatment groups were control group (CON; no antibiotic, no DOP), antibiotic group (ANT; CON+0.1% Patrol), 0.1% DOP (CON+0.1% DOP), 0.5% DOP (CON+0.5% DOP), and 1.0% DOP (CON+1.0% DOP). Upon feeding, 1,1-diphenyl-2-picryl-hydrazyl (DPPH) radical scavenging activity of oregano extracts was higher than that of tocopherol, although it was less than that of ascorbic acid. As a result of in vivo study, DOP in the diet showed no effects on final body weight, feed intake, or feed conversion ratio. However, dietary 0.5% and 1% DOP supplementation caused a significant increase in the serum enzyme activity of superoxide dismutase (SOD) compared with CON and ANT, while glutathione peroxidase (GPx) in tissue was increased as compared to ANT (p<0.05). Cooking loss from ducks fed with DOP decreased compared with the control ducks. Thiobarbituric acid reactive substance (TBARS) values of duck breast meat at 5 d post slaughter was found to be significantly reduced in ducks whose diets were supplemented with 0.5% and 1% DOP (p<0.05). These results suggest that diets containing 0.5% and 1% DOP may beneficially affect antioxidant enzyme activity of GPx and SOD, improve meat cooking loss, and reduce TBARS values in breast meat at 5 d of storage in ducks.

향신료가 식중독세균의 증식에 미치는 영향 (Effect of Spices on the Growth of Pathogenic Bacteria)

  • 4종류의 향신료(allspice, clove, oregano, thyme)를 액체배지에 0~2%(w/v) 첨가하여 멸균한 후 6종류의 식중독세균(Aeromonas hydraphila, Escherichia coli O157:H7, Listeria monocytogenes, Staphylococcus aureus 196E, Salmonella typhimurium, Vibrio parahaemolyticus)을 $10^{5}$~$10^{6}$ cells/$m\ell$되게 접종하여 35$^{\circ}C$에서 24시간 배양하였다. 향신료의 종류와 농도에 따른 각 식중독세균에 대한 항균활성은 배양액의 생균수 변화로서 조사하였으며, 향신료의 농도가 증가할수록 식중독세균의 증식은 억제되었다. 액체배지에 첨가한 향신료의 농도 2% 범위내에서 Gram 양성균이 V. parahaemolyticus를 제외한 Gram 음성균에 비하여 증식이 크게 억제되었다. 향신료 중에서는 시험한 6종류의 식중독세균에 대하여 clove의 항균활성이 가장 우수하였으며, 다음으로는 allspice와 oregano가 우수하였다. 액체배지에 0.3%의 clove첨가로서 시험한 모든 식중독세균의 증식이 억제되었다. Kanagawa 반응 양성세균인 V. parahaernolyicus는 clove와 allspice를 첨가했을 때 시험한 타 균쥬에 비하여 증식이 가장 두드러지게 억제되었다. Thyme은 시험한 대부분의 세균에 대하여 가장 항균활성이 낮았던 반면에 clove는 1%를 첨가하였을 때 시험한 모든세균을 사멸시켰다.다.

Cooked broiler meat quality affected by different Mediterranean medicinal plants in the diet

  • Objective: This study was conducted to investigate the effects of adding oregano (Origanum syriacum L.) and germander (Teucrium polium L.) to poultry diets individually and/or in combination: i) on cooked chicken meat quality and storage stability, ii) to compare this effect with those of the synthetic antioxidant butylated hydroxyanisole (BHA) and with the normal basic diet (Control: without supplements). Methods: Broilers (140 birds) were raised for 21 days and then equally divided into five different treatment groups of 28 birds each. The dietary treatments were as follows: i) control; ii) germander (GER, 1.5%); iii) oregano (ORE, 2.5%); iv) combination of GER and ORE (CM, 1.5%, and 2.5%); v) BHA (0.02%). Meat patties from the five treatments were prepared, cooked, and stored at 4℃ prior to analysis. During storage, samples were measured for thiobarbituric acid-reactive substances (TBARS) and total carbonyl levels at 0, 4, and 7 days. In addition, cooked thigh meat was prepared separately to evaluate cooking loss and sensory attributes. Results: The CM dietary treatment showed the highest antioxidant effect, with decreasing TBARS values (breast and thigh meat) throughout the storage time (4 to 7 days). Furthermore, ORE showed a higher antioxidant effect, decreasing the rancidity development (TBARS values), compared to the GER during the storage period (days 0 to 7). The anti-carbonyl effect of the CM supplement was the highest among all treatments from day 0 to 7. Generally, the antioxidant effect of GER was lower compared to that of ORE and BHA alone. The CM treatment most significantly decreased off-odor and rancidity development, with the lowest oxidation odor scores. Conclusion: The results indicate that the combination of oregano and germander in the diet of boilers improves meat quality and prolongs shelf life.

오레가노 초임계추출물의 황색포도상구균 바이오필름 형성 억제능을 이용한 기능성 화장품 소재의 개발 (Anti-Biofilm Activity of Origanum Vulgare Supercritical Fluid Extracts and Cosmetic Active Ingredients Development)

  • 본 연구에서는 오레가노를 초임계유체추출법과 열수추출법으로 추출하여 항균, 항산화 in vitro 실험을 수행하였다. 항균실험인 Disc diffusion method 결과, 초임계추출물에 대해서만 clear zone이 나타났다. S. aureus에 대한MIC는 초임계추출물에서만 관찰되었으며, 1000 ㎍/mL로 확인되었다. 열수추출물은 C. acnes에 대한 MIC가 125 ㎍/mL로 여드름균에 대한 항균력이 뛰어났다. 나아가 우리는 Biofilm inhibition assay를 통해 오레가노 초임계추출물이 125 ㎍/mL의 저농도에서도 S. aureus의 바이오필름을 70%이상 억제한다는 것을 발견하였다. DPPH radical 소거능, ABTS+ radical 소거능, SOD 유사활성능과 총 폴리페놀 함량 측정에서 열수추출물의 항산화력이 초임계추출물보다 우수하게 측정되었다. 나아가, 앞서 확인된 오레가노 초임계추출물의 S. aureus 바이오필름 억제능을 활용하여 아토피 피부에 적합한 소재를 개발하고자 하였다. 오레가노 초임계추출물의 낮은 용해도를 극복하고 안정성을 증가시키기 위하여 리포좀을 이용하였다.

산란말기 사료 내 Bacillus subtilis와 오레가노 오일 첨가가 산란계의 계란 생산성, 계란품질 및 장의 형태학적 특성에 미치는 영향 (Effects of Dietary Bacillus subtilis and Oregano Oil Supplementation on Performance, Egg Quality, and Intestinal Morphology in Late-Phase Laying Hens)

  • 본 연구는 생균제인 Bacillus subtilis(BS) 및 Oregano essential oil(OEO)이 산란말기 산란계의 계란 생산성, 계란 품질, 그리고 회장 내 융모의 조직학적 특성에 미치는 영향을 조사하였다. 산란말기(69주령) 산란계 총 150마리를 공시하였으며, 시험 전 산란율 차이에 따라 산란율 100%(H), 평균(A, 88%~89%) 총 두 그룹으로 나눈 다음, 각 그룹별로 BS 또는 OEO을 처리하였다. 산란율 차이에 따른 두 그룹에서 각각 대조군(CON)은 상업용 시판사료를 급여하였으며, BS군은 대조군 사료에 3 × 108 CFU/kg Bacillus subtilis를 첨가하였고, OEO은 대조군 사료에 사료용 Oregano essential oil 0.3 g/kg을 첨가하였다. 총 6처리로 하여 처리당 5반복, 반복당 5수를 완전 임의 배치하여 5주간 사양 시험을 수행하였다. 시험 종료 후 계란 생산성, 계란 품질, 그리고 회장내융모의 조직학적 특성을 조사하였다. 산란율 평균인 처리구에서 BS(91.69%) 및 OEO(91.94%)에서 CON(86.80%)과 비교하여 유의적으로 증가하였다. 혈구 및 혈청 생화학 분석 결과, 산란말기 산란율 및 BS과 OEO 첨가 급여에 따른 유의적인 차이는 나타나지 않았다. 난각강도는 OEO(3.31~3.49 kg/cm2)에서 CON(2.96~3.17 kg/cm2)과 비교하여 유의적으로 개선되었다(P<0.05). 장 건강지표인 융모높이(villi height; VH)와 장샘깊이(crypt depth: CD)에 대한 분석결과, CON보다 BS와 OEO를 급여한 처리구에서 높은 VH/CD의 비율을 나타내었다(P<0.05). 본 연구 결과는 산란말기 산란계 사료에 Bacillus subtilis와 Oregano essential oil을 첨가 급여하는 것이 산란율, 계란품질 및 장 건강을 향상시키는 사료 첨가제로서 활용될 수 있을 것으로 사료된다.

마죠람과 오레가노의 생육 및 장유함량에 미치는 양액농도의 효과 (Effects of Strength of Nutrient Solution on the Growth and Essential Oil Content of Marjouram(Origanum majoraana) and Oregano(Origanum vulgare))

  • 본 실험은 수경재배시 마죠람과 오레가노의 알맞은 배양액 농도를 구명하기 위하여 실시했다. 배양액은 유럽채소연구센터 허브액을 사용했다. 처리농도는 0.5, 1.0, 2.0, 3.0배액 등 4수준이었고 재배기간은 40일이었다. 마죠람은 지상부 생육, 지하부 생육, 비타민 C,총 정유생산량은 0.5배액에서 가정 조았다. 그러나 무기물함량은 20.배액에서, 정유함량은 3배액에서 좋았으며 엽록소 함량은 고농도에서 감소하였다. 오래가노의 생육 0.5배야ㅐㄱ에서 조았으며, 3.0배액에서는 고사하였다. 엽록소 함량은 2.0배액에서 낮았으나 비타민 C는 이온농도에 영향을 받지 않았다. 무기물과 정유함량은 1.0배액에서 높았으나, 정유생산량은 0.5배액에서 높았다. 이사의 결과로 볼 때 마죠람과 오레가노 수경재배시 적절한 배양액 농도는 허브 배야액 0.5배인 것으로 생각된다.

The Effect of Oregano and Cinnamon Essential Oils on Fermentation Quality and Aerobic Stability of Field Pea Silages

  • This study was performed to determine the effect of field pea silages which were the organic acid (OA) alternative of oregano and cinnamon essential oils on fermentation quality and aerobic stability. Whole crop pea was harvested at full pod stage and wilted in the laboratory at the 48 h. The chopped pea was mixed and divided into equal portions allocated to five groups: CON (non-treated), distilled water, denoted as control group; OA group, a mixture of 60% formic acid, 20% sodium formate and 20% water applied at a rate of 5 g/kg fresh forage (Silofarm Liquid, Farmavet); origanum (ORE) group, Origanum onites essential oil at 400 mg/kg fresh forage; cinnamon (CIN) group, cinnamon essential oil at 400 mg/kg fresh forage; origanum+cinnamon (ORECIN) group, a mixture of ORE and CIN applied at an equal rate of 400 mg/kg fresh forage. Cinnamon decreased acetic acid (AA), ammonia nitrogen ($NH_3-N$) and weight loss (WL) at the end of 60 days silage. Crude protein (CP) and dry matter (DM) increased by cinnamon essential oil. Yeasts were not detected in any treatments, including the control, after 7 days of air exposure. The $CO_2$ amount decreased and the formation mold was inhibited in the aerobic period by the addition of cinnamon oil. Oregano did not show a similar effect, but when it was used with cinnamon, it showed synergic effect on AA and during aerobic period, it showed antagonistic effect on mold formation and DM losses. It was found in this study that cinnamon can be an alternative to organic acids.
