Preservation of Fried Fish Meat Paste by Irradiation (감마선 조사에 의한 튀김어묵의 품질보존)

  • Radurization effects on fried fish meat paste with Co-60 gamma irradiation at 0-5 kGy and physicochemical aspects of the stored samples at low ($3{\pm}1^{\circ}C$, LT) and room ($10-20^{\circ}C$, RT) temperatures were investigated. The initial microbial loads of the samples were $2.2{\times}10^3/g$ in total bacterial count, $2.8{\times}10^2/g$ in yeasts & molds, and $1.0{\times}10^2/g$ in coliform group, respectively. An irradiation dose of more than 3 kGy was shown to be effective for the radurization of stored samples and there is no apparent difference between air and vacuum packaging groups. The chemical components related to the quality underwent similar changes in the nonirradiated and irradiated groups; however, as the storage time was prolonged the quality of nonirradiated samples rapidly deteriorated. Textural parameters of the samples were little affected by the applied doses, and sensory evaluations showed that 3 kGy irradiation was the optimum dose level to extend the shelf-life of fried fish meat paste up to 2 times at RT and 3 to 4 times at LT, respectively compared with the nonirradiated control.

High Hydrostatic Pressure Sterilization of Putrefactive Bacteria in Salted and Fermented Shrimp with Different Salt Content (염농도가 다른 새우젓에 존재하는 유해가능 세균의 초고압 살균)

  • This study was conducted to enhance the storage stability and the wholesomeness of salted and fermented shrimp manufactured with different salt levels by high hydrostatic pressure sterilization. The effects of high hydrostatic pressure treatment on the putrefactive bacteria in the fermented shrimps were investigated and the sterilization kinetics was analyzed. The initial microbial counts of the fermented shrimp with 8%, 18% salt aged for 6 weeks at $20^{circ}C$ were $1.6{\times}10^3,\;1.4{\times}10^4$ CFU/g for bacteria grown on Vibrio selective media, $9.3{\times}10^3,\;1.7{\times}10^5$ CFU/g for bacteria grown on Staphylococcus selective media, respectively, and null for bacteria grown on Salmonella selective media. The degree of the sterilization increased with the magnitude of the pressure and the treatment time. The fermented shrimp pressurized at 6,500 atm for 10 min had no detectable bacteria grown on Vibrio and Staphylococcus selective media at $10^2$ CFU/g detecting limit. High hydrostatic pressure sterilization could be analyzed by first order reaction kinetics. The $D_P$ values of the bacteria grown on Vibrio selective media of the fermented shrimp at 18% salt were higher than those at 8% salt, while those of the bacteria grown on Staphylococcus selective media showed an inverse trend. The $z_p$ values of 8% salt fermented shrimp were higher than those of 18% salt for both bacteria grown on Vibrio selective media and Staphylococcus selective media. High hydrostatic pressure treatment could be applied for the sterilization of the fermented shrimp, and the optimum high pressure sterilization condition was 10 min treatment at 6,500 atm.

Direct Growth of CNT on Cu Foils for Conductivity Enhancement and Their Field Emission Property Characterization (전도성 향상을 위한 구리호일 위 CNT의 직접성장 및 전계방출 특성 평가)

  • Carbon nanotubes (CNT) have been attracted much attention since they have been expected to be used in various areas by virtue of their outstanding physical, electrical, and chemical properties. In order to make full use of their prominent electric conductivity in some areas such as electron emission sources, device interconnects, and electrodes in energy storage devices, direct growth of CNT with vertical alignment is definitely beneficial issue because they can maintain mechanical stability and high conductivity at the interface between substrates. Here, we report direct growth of vertically aligned CNT (VCNT) on Cu foils using thermal chemical vapor deposition and characterize the field emission property of the VCNT. The VCNT's height was controlled by changing the growth temperature, growth time, and catalytic layer thickness. Optimum growth condition was found to be $800^{\circ}C$ for 20 min with acetylene and hydrogen mixtures on Fe catalytic layer of 1 nm thick. The diameter of VCNT grown was smaller than that of usual multi walled CNT. Based on the result of field emission characterization, we concluded that the VCNT on Cu foils can be useful in various potential applications where high conductivity through the interface between CNT and substrate is required.

  • Generally, the design capacity of the rainwater harvesting unit is determined by trial and error method that is repeatedly calculating various analysis scenarios with capacity, reliability, and rainwater utilization ratio, etc. This method not only takes a lot of time to analyze but also involves a lot of calculations, so analysis errors may occur. In order to solve the problem, this study suggested a way to directly determine the minimum capacity to meet arbitrary target reliabilities using the global optimization method. The method was implemented by simulation model with particle swarm optimization (PSO) algorithms using Python language. The pyswarm that is provided as an open-source of python was used as optimization method, that can explore global optimum, and consider constraints. In this study, the developed program was applied to the design data for the rainwater harvesting constructed in Cheongna district 1 in Incheon to verify the efficiency, stability, and accuracy of the analysis. The method of determining the capacity of the rainwater harvesting presented in this study is considered to be of practical value because it can improve the current level of analytical technology.

Effects of Optimized Co-treatment Conditions with Ultrasound and Low-temperature Blanching Using the Response Surface Methodology on the Browning and Quality of Fresh-cut Lettuce (반응표면분석법으로 최적화한 초음파와 저온 블랜칭의 병용처리 조건이 신선편이 양상추의 갈변과 품질에 미치는 영향)

  • Enzymatic action and microbial growth degrade the quality of fresh-cut lettuce. Browning, a bad smell, and softening during storage are the major forms of quality deterioration. Health-oriented consumers tend to avoid foods treated with chemicals to maintain their freshness. This study was conducted to evaluate the change in the quality of fresh-cut lettuce with combined low-temperature blanching (LB) and ultrasonication (US). The optimum condition was selected using the response surface methodology (RSM), through a regression analysis with the following independent variables; the ultrasonication time (X1), blanching temperature (X2), blanching time (X3), and dependent variable; ${\Delta}E$ value (y). It was found that the condition with the lowest ${\Delta}E$ value occurred with combined 90s US and $45^{\circ}C$ 90s LB (US+LB). The combined treatment group (US+LB) was stored at $10^{\circ}C$ for 9 days with the control group and each single-treatment group, with low-temperature blanching and ultrasonication. Overall, the US+LB group had a significantly high $L^*$ value, which indicates significantly low $a^*$, $b^*$, ${\Delta}E$, browning index, PPO, and POD activity values, and a low total bacteria count (p < 0.05). The US+LB group also had the highest sensory score (except for aroma and texture; p > 0.05).

Effects of Some Environmental Factors on the Germination of Seeds in Ambrosia artemisiifolia var. elatior (몇가지 환경요인이 돼지풀의 종자발아에 미치는 영향)

  • In order to analyze the life cycle of A. artemisiifolia var. elatior dormancy and some environmental factors inducing germination of the seeds were examined. The results were as follows : Dormancy of fertile seeds was broken in part within a month after seed collection in case of adequate moisture and alternating temperature was also effective in breaking dormancy. The temperature range, which allow germination was $12^{\circ}C{\sim}32^{\circ}C$. Optimum temperature for germination was $24^{\circ}C$. The seed of A. artemisiifolia var. elatior was light-independent. The difference of storage period appeared to have no particular effect on the viability of seeds at any time during the 9-month storage period. In the increasing temperature(IT) regime, A. artemisiifolia var. elatior seeds started to germinate at $16^{\circ}C$, showing the higher temperature the greater germination rate : the final germination percentage was 99.34%. On the other hand, in the decresing temperature(DT) regime, seeds began to germinate at $20^{\circ}C$ with the 1.34% germination. An induced dormancy occurred at $12^{\circ}C$ making the 5.34% final germination in the DT regime. Low temperature was more effective to break dormancy than higher temperature. Seeds of A. artemisiifolia var. elatior seems to be germinated in mid to late autumn or germination delayed until following spring. The above results suggest these variation of germination response in diverse environmental factors seems to be a physiological strategy to maintain their existence and to reproduce in the extreme thermal variation.

Effects of Temperature and Fluctuation Range on Microbial Growth and Quality of Foods Stored in Domestic Refrigerator (냉장실의 온도 정온화가 냉장 식품의 품질과 미생물의 생육에 미치는 영향)

  • Effects of refrigeration temperature and its fluctuation range on the growth of psychrotrophic microorganisms and the quality of refrigerated foods such as apple, fish and oyster were evaluated to find optimum storage conditions for a domestic refrigerator. Refrigeration temperature was $2^{\circ}C$ or $4^{\circ}C$, and fluctuation ranges were varied: ${\pm}0.3,\;{\pm}1.0,\;{\pm}1.2,\;or\;{\pm}4.0^{\circ}C$. Changes in hardness of apples stored at $2{\pm}0.3^{\circ}C$ were much slower than those of apples stored at $4{\pm}1.2^{\circ}C$. Freshness of fish and oyster also lasted much longer at low temperature such as $2{\pm}0.3^{\circ}C$. The growth of Listeria monocytogenes inoculated on sliced ham was inhibited for 1 month at $2{\pm}0.3^{\circ}C$, but the cells at $4{\pm}1.2^{\circ}C$ began to grows as time elapsed. Therefore, it was expected that shelf-life of certain food stored in a domestic refrigerator could be extended by lowering temperature to $2^{\circ}C$ and by reducing fluctuation range of refrigerator.

Effects of Additives on the Improvement of Frozen Dough Quality (첨가물이 냉동반죽의 품질향상에 미치는 영향)

  • This study was carried out to reduce the loss of frozen dough quality during frozen storage. Using response surface method, ascorbic acid 160.4 ppm, L-cysteine 63.1 ppm, and SSL 0.6% were found to be optimum, with xanthan gum 0.3% (formula A) and Ultra tex-3 5% (formula B) added as cryoprotectants. During frozen storage at $-20^{\circ}C$, control rapidly deteriorated after 4 weeks, while formulas A and B showed slight deterioration with immutable quality after 10 weeks.

Early Matured Pear Cultivar 'Supergold' with High Quality and Greenish-white Skin for Overseas Trade (조생종 고품질 녹백색 배 '슈퍼골드')

  • Pear cultivar 'Supergold' (Pyrus pyrifolia var. culta Nakai) was originated from the cross between 'Chuwhangbae' and 'Manpungbae' with the aims of improving the fruit quality of 'Chuwhangbae' cultivar at Pear Research Station of National Institute of Horticultural & Herbal Science, Rural Development Administration in 1994. 'Supergold' was preliminarily selected in 2002 and named in 2008. The tree shows a vigorous growth habit and semi-spread characters like as 'Manpungbae'. Furthermore, it has sufficient flowers and carries abundant pollen grains, so it can also be used as a pollinator. 'Supergold' is highly resistant to black leaf spot (Alternaria kikuchiana) in the field condition. The optimum harvest time is around Sep. 11th, which is ahead of 'Whangkeumbae' about 5 days in the harvest period. The fruit shape is oblate and fruit skin color is greenish-white at harvesting time. The average weight of fruit is 570 g, and the soluble solids content is $13.6\;^{\circ}Brix$. The flesh is very soft and juicy, and renders good eating quality. Shelf life is about 6 months under the cold storage condition. To determine the self-incompatibility (SI) genotype of 'Supergold' pear cultivar, it was crossed with other cultivars of which SI genotypes have already known. The result of cross-pollinations of 'Supergold' with other cultivars showed relatively high rates of fruit set from 64.5% to 91.0%, except for the cross with pollens of 'Nijisseiki' that represented only 28.8% of fruiting rate. Although sometimes the stigma of 'Supergold' crossed with 'Hayatama', 'Chojuro', and 'Nijisseiki' showed malformed pollen tube tips, 'Supergold' is generally supposed to have cross-compatibility with all other pollen donor cultivars. It is considered that the S-allele of 'Supergold' is $S_3S_4$, which is based on the result of PCR-RFLP.

Studies on the Packaging and Preservation of Kimchi (우리나라 김치의 포장과 저장방법에 관한 연구)

  • Studies were carried out to develope the most economical and practical methods of packaging and preservation of kimchi, so commercialization of kimchi manufacture could proceed rapidly. The results obtained may be summarized as following. (1) It is generally established that the acceptable range of lactic acid content of kimchi is between 0.4% and 0.75%. Based on sensory evaluation, kimchi having lactic acid content below 0.4% and above 0.75% was not edible, and the time of optimum taste corresponded to the vicinity of 0.5% of lactic acid content. For the refrigeration storage with or without preservatives, the packaging kimchi in plastic film must be done at the lactic acid content of 0.45%, for lactic acid fermentation will continue slowly after the packaging. However, for the heat sterilized kimchi the packaging should be done at the 0.5% of lactic acid content for the best because lactic acid fermentation is completely stopped after the packaging. (2) Polyethylene, polypropylene, and polycello were chosen as suitable packaging materials. Polyethylene is cheapest among them but kimchi packaged in this film was damaged frequently in handling process and gave off kimchi flavor. On the other hand polypropylene also gave off kimchi flavor, but its higher mechanical strength gave better protection to kimchi and it had superior display effect due to the transparancy. Therefore polypropylene made much better packaging material. Polycello proved to be the best packaging material from the standpoint of physical characteristics but its price is higher than that of other plastic films. To be effective, the thickness of plastic films for packaging kimchi must exceed 0.08mm. (3) Keeping property of kimchi appeared to be excellent by means of freezing. However, by the time the frozen kimchi was thawed out at room temperature, moisture loss due to drip was extensive, rendering the kimchi too stringy. (4) Preservation of kimchi at refrigerated temperatures proved to be the best method and under the refrigerated condition the kimchi remained fresh as long as 3 months. The best results were obtained when kimchi was held at $0^{\circ}C$. (5) In general, preservatives alone were not too elective in preserving kimchi. Among them potassium sorbate appeared to be most effective with the four fold extension of self-life at $20^{\circ}C$ and two fold extension at $30^{\circ}C$. (6) In heat sterilization the thickness of packaged kimchi product had a geat effect upon the rate of heat penetration. When the thickness ranged from 1.5 to 1.8cm, the kimchi in such package could be sterilized at $65^{\circ}C$ for 20 minutes. Kimchi so heat treated could be kept at room temperature as long as one month without apparent changes in quality. (7) Among combination methods, preservation at refrigerated and heat sterilization could be favorably combined. When kimchi was stored at $4^{\circ}C$ after being sterilized at $65^{\circ}C$ for 20 minutes, it was possible to preserve the kimchi for more than 4 months.
