Physicochemical Quality Changes in Chinese Cabbage with Storage Period and Temperature: A Review

  • Background: Recent inquiries into high-quality foods have discussed the importance of the functional aspects of foods, in addition to traditional quality indicators such as color, firmness, weight, trimming loss, respiration rate, texture, and soluble solid content. Recently, functional Chinese cabbage, which makes up a large portion of the vegetables consumed in Korea, has been identified as an anticancer treatment. However, the investigation of practical issues, such as the effects of storage conditions on quality indicators (including functional compounds), is still limited. Purpose: We reviewed various studies on variations in the quality indicators and functional compounds of Chinese cabbage in response to different storage environments, focusing on storage temperature and storage period. In particular, we emphasized the effect of storage temperature and storage period on glucosinolate (GSL) levels, in order to provide guidelines for optimizing storage environments to maximize GSLs. Additionally, we used response surface methodology to propose experimental designs for future studies exploring the optimal storage conditions for enhancing GSL contents. Review: Large variations in quality indicators were observed depending on the cultivar, the type of storage, the storage conditions, and the harvest time. In particular, GSL content varied with storage conditions, indicating that either low temperatures or adequate air composition by controlled atmospheric storage may preserve GSL levels, as well as prolonging shelf life. Even though genetic and biochemical approaches are preferred for developing functional Chinese cabbage, it is important to establish a practical method for preserving quality for marketability; a prospective study into optimal storage conditions for preserving functional compounds (which can be applied in farms), is required. This may be achievable with the comprehensive meta-analysis of currently published data introduced in this review, or by conducting newly designed experiments investigating the relationship between storage conditions and the levels of functional compounds.

Growth and Fresh Bulb Weight Model in Harvest Time of Southern Type Garlic Var. 'Namdo' based on Temperature (온도에 따른 난지형 마늘 '남도'의 생육과 수확기 구생체중 모델 개발)

  • This study was conducted to investigate optimal temperature of garlic and develop bulb weight model in harvest time. Day and night temperature in chambers was set to $11/7^{\circ}C$, $14/10^{\circ}C$, $17/12^{\circ}C$, $20/15^{\circ}C$, $23/18^{\circ}C$, $28/23^{\circ}C$(16/8h). Bulb fresh and dry weight was heaviest on $20/15^{\circ}C$. In $11/7^{\circ}C$ and $14/10^{\circ}C$, leaf number and total leaf area increased slowly. But in the harvest, leaf number and total leaf area were not significant, except $28/23^{\circ}C$. Models were developed with fresh bulb weight. As a result of analyzing the model, $18{\sim}20^{\circ}C$ certified optimal mean temperature. And the growing degree day base temperature estimated $7.1^{\circ}C$, upper temperature threshold estimated $31.7^{\circ}C$. To verify the model, mean temperature on temperature gradient tunnel applied to the growth rate model. Lineal function model, quadric model, and logistic distribution model showed 79.0~95.0%, 77.2~92.3% and 85.0~95.8% accuracy, respectively. Logistic distribution model has the highest accuracy and good for explaining moderate temperature, growing degree day base temperature and upper temperature threshold.

Growth of the Scallop, Patinopecten yessoensis in Suspended Culture in the East Coast of Korea (동해안 참가리비, Patinopecten yessoensis의 성장)

  • To stabilize the lantern cage culture system of Patinopecten yessoensis(Jay) in the eastern coast of Korean peninsula, optimum conditions such as time of transplantation, rearing density and depth, and time of harvest were identified. During the period from January 1991 to December 1998, the water temperature ranged from 4.7 to 21.4$^{\circ}C$ at 15-30 m depth and 4.9 to 25.7$^{\circ}C$ at the surface; these thermal ranges were within the optimal ranges (5-23$^{\circ}C$) prevailing at 15-30 m depth at surface water. Annual thermal changes indicated that the prevailing temperature during the years 1993 and 1996 was near optimum, but higher during the years 1994, 1997 and 1998, when mass mortality and growth retardation occurred. Salinity (32.0- 34.4$\textperthousand$) and dissolved oxygen (4.14 -8.11 $\mu\textrm{g}$/l) at 15 m depth were well within the optimum ranges. The chlorophyll concentrations (0.06 - 2.73$\mu\textrm{g}$/l) indicated that the study area was oligotrophic, although mass mortality did occur, when chlorophyll concentrations were high, especially in summer. Hence water temperatures and chlorophyll concentration are major factors related to survival and growth of the scallop. In terms of the shell height maximum growth occurred during spring (March-May; 8 - l3$^{\circ}C$) and fall (October-December; 11-l7$^{\circ}C$) in the lantern cage culture. Slow growth was recorded during late winter January-february; less than 7$^{\circ}C$) and mid-summer (August- September; more than 18$^{\circ}C$). Daily growth of shell height and total weight were 0.02∼0.24 mm and -0.07∼0.90 g at the rearing density of 12 individuals per net. Optimal .earing density in the lantern cage (ø50${\times}$20 cm) was 10∼15 individuals with the shell height of 5∼6 cm. The fastest growth rates were observed at 15∼20 m depth; however, it is recommended that 20∼30 m would be optimal. The scallops require 22 months to attain the commercial size of 10 cm shell height and 140 g total weigh, and are best harvested and sold during March-April.

Comparative Analysis of Functional Compounds in Perilla frutescens at Different Stages and Growth Times (들깨의 생육단계와 부위별 기능성화합물 함량 비교 분석)

  • The Perilla frutescens var. japonica HARA is widely cultivated in Korea for vegetable leaves and oil seeds. Perilla species have been used for food and medicine and are known to contain many functional compounds. In this study, we investigated the functional compound contents of Perilla during its growth stages to analyze the optimal harvest time and conditions. The contents of the Perilla sprouts were analyzed according to culture environment and days of growth. Sprouts grown in soil under natural light conditions showed high rosmarinic acid (23.19±0.16 mg/g) and GABA (0.55±0.05 mg/g) content. Therefore, the results suggest that 6 to 8 days after sowing in soil under natural light conditions was the optimum harvest condition for sprouts. Also, the functional compounds of Perilla were analyzed according to growth stage and plant part. As a result, caffeic acid and rosmarinic acid exhibited the highest content in the stage from vegetative growth to reproductive growth (0.28±0.03 ~ 0.30±0.07 mg/g rosmarinic acid and 20.60±7.02 ~ 19.37±3.18 mg/g caffeic acid), and luteolin and GABA showed the highest content in the reproductive growth stage and in the early stages of vegetative growth, respectively (31.11±2.98 ~ 22.35±1.64 ㎍/g luteolin and 0.42±0.09 ~ 0.37±0.04 mg/g GABA). It was confirmed that the content of caffeic acid (0.34±0.03 mg/g), rosmarinic acid (55.22±9.33 mg/g) and luteolin (1,044.89±6.72 ㎍/g) was the highest during the bolting stage. Overall, we identified the timing of the highest level of functional compounds in the sprouts and mature leaves of Perilla. These results suggest a suitable harvest time and conditions for sprouts and leaves for the use of Perilla as a functional material.

Effect of harvesting time and night temperature on tuber production of calla (Zantedeschia) (수확시기와 야간온도가 유색칼라(Zantedeschia)의 구근생산에 미치는 영향)

  • This experiment was carried out to determine optimal culture conditions for the production of tubers of Calla (Zantedeschia elliottiana 'Golden Affair' and 'Black Magic') in Korea highland. In vitro produced plantlets and tuberlets of Calla 'Golden Affair' and 'Black Magic' were planted plastic film greenhouse and grown for 100, 120, 140 days, with different night temperature treatments ($0{\sim}10^{\circ}C$ : no heating, 10, $15^{\circ}C$). In both cultivars, tuber size(tuber diameter, tuber height) and tuber weight increased with increasing cultivation period when the night temperature was maintained at $10^{\circ}C$. The largest tuber diameter in vitro produced plantlets was 5.8cm in 'Black Magic' and 3.2cm in 'Golden Affair', and daily tuber growth rate was 1.110g in 'Black Magic' and 0.092g in 'Golden Affair' under the culture conditions. Consequently we think that tuber harvest date was Oct. 30 and night temperature was $10^{\circ}C$ and no heating that was proper method of tuber production. However we had selection of $10^{\circ}C$ treatment for tuber production because it appeared freezing damage occasionally in highland late in October.

  • The experiment was tested with fruit of 5 astringent cultivars (Chungdo-Bansi, Sagoksi, Euisung-Bolbansi and Gyungsan-bansi) and was carried out to investigate effects of harvest time of fruit and fruit sizes on the removal of astringency and the practical utilization with Chungdo-Bansi was conducted. 1. Soluble tannin content was decreased in all cultivars as fruit was ripening and soluble tannin content at last harvest time was reduced about one half, as contrasted it's content at first harvest time and it showed that the times required of the removal of astringency was gradually shortened. 2. In soluble tannin contents was small fruit size was significantly higher than that of large fruit size. The times for the removal of astringency was required longer small fruit size than large fruit size. 3. In the changes of hardness according to fruit sizes, hardness of large fruit size was decreased rapider than that of small fruit size. This tendency became similar during and after the removal of astringency. 4. According to fruit sizes, sugar content of large fruit size was more amount than that of small fruit size During and after the removal of astringency, reduction of sugar content showed more rapidly large fruit size than small fruit size. 5. Results of the practical utilization in Chungdo-Bansi showed the promising market-ability and persimmons treated by carbon dioxide was increased more income than that treated by $CaC_2$.

Preparation and Characterization of ClO2 Self-Releasing Smart Sachet (이산화염소 자체 방출 스마트 샤쉐의 제조 및 특성 연구)

  • Chlorine dioxide (ClO2) is widely used for post-harvest sterilization treatment. However, there are limitations in the retail application of ClO2 due to difficulties in handling, expensive facilities, and safety concerns. Therefore, it is necessary to develop a ClO2 technology that can be easily applied and continuously released for a long period. In this study, a series of ClO2 self-releasing sachets were developed. First, poly(ether-block-amide) (PEBAX) and polyethylene-glycol (PEG) composite films containing different ratios of citric acid (CA) were prepared using the solution casting method. The as-prepared PEBAX/PEG-CA composite films were evaluated using FT-IR, DSC, and TGA to confirm chemical structure and thermal properties. Subsequently, PEBAX/PEG-CA composite films were designed in the form of a sachet and NaClO2 powder was transferred into the sachet to achieve a ClO2 self-releasing system. The ClO2-releasing behavior of the sachet was investigated by measuring the release amount of the gas using UV-vis. The release amount of ClO2 increased with increasing CA contents owing to the existence of higher protons (trigger) in the polymer matrix. Further, ClO2 gas was released for a longer time. Therefore, the as-prepared smart sachet can be tuned according to applications and packaging sizes to serve an optimal sterilization effect.

Assessment on Yield Decrease of Kimchi Cabbage by Extreme Weather Conditions using Physiological Parameters (생리적 요인 활용 이상기상에 의한 배추의 수량저하 평가)

  • This study evaluated the effects of high air temperature and waterlogging duration on growth and yield of Kimchi cabbage. Air temperature treatments were applied with ventilation; optimal (set $20^{\circ}C$) and delayed ($30^{\circ}C$) in the greenhouses. The waterlogging treatment levels were implicated 0, 12, 24, 48, and 72 hours, respectively. The growth of Kimchi cabbage was significantly affected by waterlogging duration. The head weight decreased by combining severe waterlogging and high air temperature. Net photosynthetic rate under the combination of non-waterlogging and optimal air temperature was $22.6{\mu}mol\;CO_2{\cdot}m^{-2}{\cdot}s^{-1}$, which was the greatest, while that of 72 hours-waterlogging was rapidly decreased. The percentage of formality with 0, 12, and 24 hours-waterlogging was over 88%, however, those of 72 hours-waterlogging with optimal and delayed ventilation were 64 and 68%, respectively, which were dramatically reduced. The yields were more affected by waterlogging duration than air temperature treatment because of deducting as increased waterlogging periods. These results indicate that waterlogging treatment reduced the yield and quality of Kimchi cabbage, thus it will be feasible to enhance the harvest time when severe waterlogging in the field.

Effects of variety, region and season on near infrared reflectance spectroscopic analysis of quality parameters in red wine grapes

  • The wine industry requires practical methods for objectively measuring the composition of both red wine grapes on the vine to determine optimal harvest time; and of freshly harvested grapes for efficient allocation to vinery process streams for particular red wine products, and to determine payment of contract grapegrowers. To be practical for industry application these methods must be rapid, inexpensive and accurate. In most cases this restricts the analyses available to measurement of TSS (total soluble solids, predominantly sugars) by refractometry and pH by electropotentiometry. These two parameters, however, do not provide a comprehensive compositional characterization for the purpose of winemaking. The concentration of anthocyanin pigment in red wine grapes is an accepted indicator of potential wine quality and price. However, routine analysis for total anthocyanins is not considered as a practical option by the wider wine industry because of the high cost and slow turnaround time of this multi-step wet chemical laboratory analysis. Recent work by this ${group}^{l,2}$ has established the capability of near infrared (NIR) spectroscopy to provide rapid, accurate and simultaneous measurement of total anthocyanins, TSS and pH in red wine grapes. The analyses may be carried out equally well using either research grade scanning spectrometers or much simpler reduced spectral range portable diode-array based instrumentation. We have recently expanded on this work by collecting thousands of red wine grape samples in Australia. The sample set spans two vintages (1999 and 2000), five distinct geographical winegrowing regions and three main red wine grape varieties used in Australia (Cabernet Sauvignon, Shiraz and Merlot). Homogenized grape samples were scanned in diffuse reflectance mode on a FOSE NIR Systems6500 spectrometer and subject to laboratory analysis by the traditional methods for total anthocyanins, TSS and pH. We report here an analysis of the correlations between the NIR spectra and the laboratory data using standard chemometric algorithms within The Unscrambler software package. In particular, various subsets of the total data set are considered in turn to elucidate the effects of vintage, geographical area and grape variety on the measurement of grape composition by NIR spectroscopy. The relative ability of discrete calibrations to predict within and across these differences is considered. The results are then used to propose an optimal calibration strategy for red wine grape analysis.

Effects of Cutting Condition on Quality of Nursery Plant and Fruit Yield in 'Sulhyang' Strawberry (삽목 조건이 '설향' 딸기의 묘소질 및 과실 수량에 미치는 영향)

  • This study was conducted to investigate optimal conditions for cutting propagation of the strawberry cultivar "Sulhyang" through the collection methods of cuttings (runners tips), leaf number of cuttings, and cutting time. Cuttings were collected from the mother plant in the nursery bed (MP) and plants after fruit harvest (HP); the leaf number of cuttings was 0, 1, and 2, and the cutting time was at one-week intervals from June 4 to July 9. The survival rates for MP and HP cuttings were notably high, reaching 99.5% and 98.7%, respectively, but no significant difference was found. The number of roots were higher in MP cuttings, and there was no significant difference in crown and leaf growth. The fruit yields were 419.2 and 428.4 g, for MP and HP cuttings, respectively. The survival rates according to leaf number of cuttings were 98.1% and 98.3% for 1 and 2 remaining leaves, respectively, and remarkably lower at 25.3% for no remaining leaves. The root numbers were 26.0 and 26.3 for 1 and 2 remaining leaves, respectively, compared with 23.5 for no remaining leaves, with no significant differences in crown and leaf growth. The fruit yields were 424.4 and 421.5 g for 1 and 2 remaining leaves, respectively, and 396.7 g for no remaining leaves. The survival rates according to cutting time was over 97.2% in all cutting time without any difference in each treatment. The root, shoot, and crown of the nursery plant before planting showed the best growth in the cuttings on June 4 and 11, resulting in the highest fruit yields of 433.3 and 426.4 g, respectively, with the lowest yields at 384.5 g for cutting time on July 9. Both MP and HP materials proved suitable for strawberry cuttings. The optimal leaf number for cuttings was at least 1, and the optimal cutting time in Gyeongnam area was evaluated as around June 4-11.
