우리나라 성인의 나트륨 섭취량 추정을 위한 음식섭취빈도조사지의 개발과 타당성 검증에 관한 연구 (Development and Evaluation of Validity of Short Dish Frequency Questionnaire (DFQ) for Estimation of Habitual Sodium Intake for Korean Adults)

  • The aim of this study was to develop various types of a dish frequency questionnaire (DFQ) for estimating the habitual sodium intake and to evaluate the validity of a 125 item dish frequency questionnaire (DFQ 125) with the DFQ 70, DFQ 36 and DFQ 15. For the DFQ 125, one hundred and twenty five dish items were selected based on the information of sodium content of a one serving size, consumption frequency and dish items that contributed most to the variation of sodium intake. Frequency of consumption was determined through nine categories ranging from more than 3 times a day to almost never to indicate how often the specified amount of each food item was consumed during the past 6 months. The sodium intake estimated with DFQ 125 was $5775.0{\pm}3636.3mg$, 12.6% higher than that estimated with a 24 hr urine analysis ($5009.7{\pm}1541.9mg$) and significant correlation was observed between them (r=0.3315, p<0.001). When sodium content in broth leftover was subtracted from the total intake, the actual sodium intakes was decreased to $5309.6{\pm}3076.6mg$, which was 3.2% higher than that with a 24-hr urine analysis. Overall, 56% of subjects in the lowest quintile of sodium intake computed with DFQ 125 were also in the lowest of adjacent quintile while categorization into the opposite quintile were 4.9%. DFQ 70 was developed from DFQ 125 by omitting the food items not frequently consumed, selecting the dish items that showed higher sodium content per one portion size and higher consumption frequency. The sodium intake estimated with DFQ 70 ($5026.6{\pm}3107.1mg$) showed only 0.2% difference from that estimated with a 24-hr urine analysis, significant correlation with it (r=0.3199, p<0.001) and higher proportion of subjects to be classified into the same or adjacent quintile. The sodium intake estimated with DFQ 36 or DFQ 15 was also significancy correlated with that estimated with a 24-hr urine analysis (r=0.3441, p<0.001; r=0.321, p<0.001 respectively) and more. The proportion of subjects was classified into the same or adjacent quintile. However, the actual sodium intake estimated with DFQ 36 or DFQ 15 were $3534.0{\pm}1804.6mg\;and\;2508.0{\pm}1261.5mg$, respectively, 31.3% or 51.3% less than that estimated with a 24-hr urine analysis. It seems the DFQ 125 with subtraction of sodium content in broth leftover or DFQ 70 can be used quantitatively to estimate sodium intake of adults. DFQ 36 or DFQ 15 can be used as a screening tool or to assess the changes of sodium intake after nutrition education.

한국형 단백질 바 개발을 위한 탐색적 연구 -한국과 미국의 시판 단백질 바의 라벨 분석을 중심으로- (An Exploratory Research for Development of Korean Protein Bar -Analysis on Labeling of Commercial Protein Bars in Korea and USA-)

  • 본 연구는 한국인에게 적합한 단백질 바를 개발하기 위하여 한국과 미국의 시판되고 있는 단백질 바의 라벨 분석을 하였다. 또한 조사한 단백질 바의 단백질 함량과 일일단백질섭취량, 단백질 권장섭취량(DRI), 그리고 단백질 에너지섭취분율(AMDR)과 비교 분석하였다. 단백질 바는 두 나라의 오프라인과 온라인 마켓을 통해 한국의 17개 제품과 미국의 113개 제품을 수집하였고, 영양소 함량과 원재료를 조사하였다. 그 결과, 미국의 단백질 바가 한국의 것에 비해 1회 제공량이 더 많기 때문에 전체적인 영양소의 함량도 높았는데, 특히 100g으로 환산하였을 때 단백질과 나트륨의 함량은 큰 차이로 높았다. 원재료를 통한 단백질 소재를 분석하였을 때, 한국은 분리대두단백(SPI)이, 미국은 분리유청단백(WPI)이 가장 많이 이용되었다. 이는 나라별 식품의 선호와 친숙함에 영향을 받은 것으로 보인다. 결론적으로, 두 나라의 식습관과 단백질 급원에 대한 섭취 및 선호가 다르기 때문에 한국인에게 적합한 단백질 바의 개발이 필요할 것으로 사료되며, 본 연구의 결과는 소비자들이 단백질 바를 선택하는 데 도움을 줄 것이다.

24시간 회상법으로 조사한 한국 농촌성인의 섭취영양별 주요 급원식품 및 변이식품 (Contribution of Specific Foods to Absolute Intake and between-Person Variation of Nutrient Consumption in Korean Adults Living in Rural Area)

  • This study was conducted to examine contribution of specific foods to absolute intake and between-person variation in nutrients consumed by 2037 adults living in Korean rural area using one day 24-hour recall method. To measure contribution of food to absolute nutrient intake, all foods consumed were ranked by percentages calculated as the sum of the nutrient intake contributed by a given food divided by the total nutrient intake from al categories. To assess between-person variability in nutrient intake, stepwise multiple regression analysis was used with total nutrient intake from al foods as the dependent variable and the nutrient amount from each of all foods as independent variables. The kind and the number of foods necessary to account for the variation in nutrient intake among persons varied significantly depending on the nutrient. The nutrients contributing more than 80% of total intake with a few number of food items were ${\beta}$-carotene(ll), vitamin C(15) and vitamin A(16). Foods sometimes overlooked as important sources were found in some instances to be quantitatively important to population intake. Even though rice and Korean cabbage kimchi do not contain much nutrients in quantity, they made a major contribution to most nutrient intake of subjects because of large serving size and high frequency of intake. The food items and contributing order for between person variance was different from those of absolute intake. A large fraction of the variability of nutrient intake in this population was explained by a small number of foods. Fewer foods were required to explain a given proportion of the between-person variance in intake than to account for the same proportion of the popylation\`s total intake. 대전 지역 일부 재래 시장과 대형 마트에서 시판되는 반찬류의 나트륨 및 칼륨 함량 비교 (Analysis of Sodium(Na) and Potassium(K) Content of Side Dishes Purchased from Traditional and Super Market in Daejeon Area)

  • This study was performed to evaluate the sodium and potassium content of the 19 kinds of side dish purchased from traditional market and super market in Daejeon area. The results are summarized as follows. Sodium content(mg/100 g) among samples was the highest in the Jangachies. The sodium contents of Yeongeun jorim, Bellflower saengchae, Kkaetip jangachies, Chonggak kimchi, Changranjut in super market were significantly higher than those of the traditional market (p<0.05). On the other hand, the sodium contents of the other side dishes in traditional market were significantly higher those in super market. These results suggested that the sodium content of side dishes in the traditional market were higher than those in the super market. Sodium intake from Kimchi and Jangachies per one serving size is estimated significantly highest among samples. Also, potassium content of side dishes were low detected compare to sodium content and potassium content of side dishes in the traditional market were higher than those in the super market. From these results, it was suggested that food labeling (Na content) on the package of side dishes is to be required for lowering Na intake, and standard cooking methods is to be established.

학령 전 비만 아동의 식습관과 어머니의 식습관에 대한 연구 (The Characteristics of Obese Preschoolers and Their Mother's Dietary Habits)

  • The principal objective of this study was to identify the dietary and physical activity patterns of obese preschoolers, and to determine the association between child obesity and mother's' dietary habits or thoughts regarding dieting/weight. This is a cross-sectional, community based study, and 305 preschoolers who attended kindergarten in Seoul and its surrounding area were selected. The measurements of dietary habits both in preschoolers and their mothers, physical activities of preschoolers, and daily servings of foods were based on parents' self report. Weight and height were used to calculate WLI (weight length index) in preschoolers and BMI (body mass index) in their mothers. The subjects were divided into two groups 245 normal weight preschoolers (including underweight 15.1% and normal weight 65.6%) and 59 obese subjects (overweight 14.4% and obese 4.9%). With regard to dietary habits in normal and obese preschoolers, we noted significant differences in 5 questions, such as mostly eating heavy meals, one serving size, eating speed, overeating, and obsession about eating. No differences in daily servings of major foods and snacks, except fruits and potatoes, were noted between normal and obese children. Among 13 questions regarding mothers' dietary habits, only 3 questions-"preferred to instant foods", "finish meals within 15 minutes", "use nutritional information for selecting foods" were significantly different between normal and obese subjects. The total scores of mothers' dietary habits was significantly and negatively correlated with number of mother's dieting experiences or mother's BMI, but was not correlated with preschooler's obesity.

Silicon Nitride Layer Deposited at Low Temperature for Multicrystalline Solar Cell Application

  • Plasma enhanced chemical vapor deposition (PECVD) of silicon nitride (SiN) is a proven technique for obtaining layers that meet the needs of surface passivation and anti-reflection coating. In addition, the deposition process appears to provoke bulk passivation as well due to diffusion of atomic hydrogen. This bulk passivation is an important advantage of PECVD deposition when compared to the conventional CVD techniques. A further advantage of PECVD is that the process takes place at a relatively low temperature of 300t, keeping the total thermal budget of the cell processing to a minimum. In this work SiN deposition was performed using a horizontal PECVD reactor system consisting of a long horizontal quartz tube that was radiantly heated. Special and long rectangular graphite plates served as both the electrodes to establish the plasma and holders of the wafers. The electrode configuration was designed to provide a uniform plasma environment for each wafer and to ensure the film uniformity. These horizontally oriented graphite electrodes were stacked parallel to one another, side by side, with alternating plates serving as power and ground electrodes for the RF power supply. The plasma was formed in the space between each pair of plates. Also this paper deals with the fabrication of multicrystalline silicon solar cells with PECVD SiN layers combined with high-throughput screen printing and RTP firing. Using this sequence we were able to obtain solar cells with an efficiency of 14% for polished multi crystalline Si wafers of size 125 m square.

한국 음식문화를 기반으로 한 한식 식사패턴 지수의 개발과 검증 (The Development and Validation of the Korean Dietary Pattern Score (KDPS))

  • The aim of this study was to develop a KDPS (Korean dietary pattern score) to assess dietary patterns and diet quality of Koreans from a food culture perspective. The KDPS was applied to dietary data collected during the Korean National Health and Nutrition Examination Survey of 2007, and the validity and reliability of the KDPS were evaluated. The targets of the study included 2,278 Korean adults aged 20n89 years. The KDPS was developed using the sum of the scores of 13 components. Each component scored up to 10 points and there was a total of 130 points. The first seven components were for the KSMS (Korean-style meal score) and assessed the dietary balance based on the 3-Chup Bansang daily basic table setting. The components numbered 8 to 13 were for the FGS (food group score), which measured the degree of compliance with the six major food groups based on the Korean recommendation for one serving size of grains, meats, vegetables, fruits, milk, and oils. This KDPS was verified through content validity, concurrent-criterion validity, principal components analysis, and a reliability analysis. The results showed that content validity and construct validity were high. The KDPS developed in this study adhered to the Korean dietary pattern and a healthy diet intake. Furthermore, this study presented an integrated index by scoring the Korean style table setting in addition to evaluating meals from a nutrition perspective. This study can be extended to develop a score for assessing.

나트륨 섭취량 추정을 위한 음식섭취빈도조사지와 Na Index를 이용한 간이음식섭취빈도조사지의 개발 및 타당성 검증에 관한 연구 (Development and Evaluation of Validity of Dish Frequency Questionnaire (DFQ) and Short DFQ Using Na Index for Estimation of Habitual Sodium Intake)

  • The assessment of sodium intake is complex because of the variety and nature of dietary sodium. This study intended to develop a dish frequency questionnaire (DFQ) for estimating the habitual sodium intake and a short DFQ for screening subjects with high or low sodium intake. For DFQ112, one hundred and twelve dish items were selected based on the information of sodium content of the one serving size and consumption frequency. Frequency of consumption was determined through nine categories ranging from more than 3 times a day to almost never to indicate how often the specified amount of each food item was consumed during the past 6 months. One hundred seventy one adults (male: 78, female: 93) who visited hypertension or health examination clinic participated in the validation study. DFQ55 was developed from DFQ112 by omitting the food items not frequently consumed, selecting the dish items that showed higher sodium content per one portion size and higher consumption frequency. To develop a short DFQs for classifying subjects with low or high sodium intakes, the weighed score according to the sodium content of one protion size was given to each dish item of DFQ25 or DFQ14 and multiplied with the consumption frequency score. A sum index of all the dish items was formed and called sodium index (Na index). For validation study the DFQ112, 2-day diet record and one 24-hour urine collection were analyzed to estimate sodium intakes. The sodium intakes estimated with DFQ112 and 24-h urine analysis showed $65\%$ agreement to be classified into the same quartile and showed significant correlation (r=0.563 p<0.05). However, the actual amount of sodium intake estimated with DFQ112 (male: 6221.9mg, female: 6127.6mg) showed substantial difference with that of 24-h urine analysis (male: 4556.9mg, female: 5107.4mg). The sodium intake estimated with DFQ55 (male: 4848.5mg, female: 4884.3mg) showed small difference from that estimated with 24-h urine analysis, higher proportion to be classfied into the same quartile and higher correlation with the sodium intakes estimated with 24-h urine analysis and systolic blood pressure. It seems DFQ55 can be used as a tool for quantitative estimation of sodium intake. Na index25 or Na index14 showed $39\~50\%$ agreement to be classified into the same quartile, substantial correlations with the sodium intake estimated with DFQ55 and significant correlations with the sodium intake estimated with 24-h urine analysis. When point 119 for Na index25 was used as a criterion of low sodium intake, sensitivity, specificity and positive predictive value was $62.5\%,\;81.8\%\;and\;53.2\%$, respectively. When point 102 for Na index14 was used as a criterion of high sodium intake, sensitivity, specificity and positive predictive value were $73.8\%,\;84.0\%,\;62.0\%$, respectively. It seems the short DFQs using Na index 14 or Na index25 are simple, easy and proper instruments to classify the low or high sodium intake group.

숟가락 크기의 감소가 여대생의 식사속도, 음식섭취량과 포만도에 미치는 영향 (Influence of the Size of the Spoon on the Eating rate, Energy Intake and the Satiety Levels of Female College Students)

  • Objectives: This study examined the influence of different sizes of spoons (normal spoon, 8.3 cc vs small spoon, 4 cc) on eating rate, energy intake and the satiety levels of female college students. Methods: Twenty four healthy female college students participated in this study once a week for 2 weeks. Two hundred ten grams of cooked rice and 250 g of beef shank soup with a normal spoon and same amount of rice and soup with a small size spoon were served to the same participants over two consecutive weeks. After each lunch, the eating rate, energy intake, and the satiety levels were measured. Results: Results showed that the subjects who were using a small spoon ate less beef shank soup (149.0 kcal) (p < 0.01) and had lower total energy intake (423.3 kcal) (p < 0.05) than using a normal spoon (178.7 and 461.1 kcal, respectively). Also, the meal time (15.7 min) (p < 0.01), a serving per one spoon (8.6 g) (p < 0.001), and eating rate (27.9 g/min) (p < 0.001) of those who used a small spoon were significantly different than that of those who used a normal spoon (13.6 min, 12.5 g and 35.7 g/min, respectively). However, despite consuming less energy at lunch, the level of satiety after eating from the small spoon was not significantly different from the normal spoon immediately after, 1 hour after and 2 hour after lunch. Conclusions: Our results revealed that students were able to control their eating rate by using a small spoon and they could feel full enough even though they eat less. In conclusion, eating rate decrease by using a small spoon may play an important role in food intake.

서울지역 제과.제빵점에서 판매되는 빵류와 과자류의 나트륨 및 당 함량 조사 (Survey on Contents of Sugars and Sodium in Bakery Products Sold at Bakeshops Located in Seoul Area)

  • 영양성분 의무표기 사항 제도를 적용받지 않는 서울지역 소규모 제과 제빵점에서 판매되는 빵류 102건과 과자류 27건에 대하여 당과 나트륨 함량을 HPLC-ELSD 시스템과 ICP-OES를 이용하여 분석하였다. 과당, 포도당, 자당, 유당 및 맥아당 등 5종류의 단당류와 이당류를 분석한 결과, 빵류와 과자류 모두 자당이 100 g 당 6.24 g, 30.03 g 으로 가장 높게 검출되었으며 다음으로 과당, 포도당, 맥아당 순으로 많이 검출되었다. 총 당함량에서 빵류는 100 g 당 11.19g의 당을 포함하였으며, 과자류는 100 g 당 30.38 g의 당을 함유하였다. 빵류 중에서는 제품 100 g 당 단팔빵이 16.25 g, 케이크류 15.19 g, 패스츄리 7.91 g, 식빵류 5.39 g 순으로 당함량이 높았다. 나트륨 함량은 빵류에서 100 g 당 120.71 mg 이었으며, 과자류는 70.76 mg으로 분석되었다. 빵류 제품 중에서는 패스츄리, 식빵류, 단팔빵류 및 케이크류 순으로 나트륨 함량이 높았으며 제품 100 g 당 55.0~185.27 mg의 범위를 나타내었다. 1회 제공기준량 70 g 당 단팔빵류와 케이크류의 당함량은 11.4 g과 10.6 g 이었으며, 이는 WHO 당 섭취권고기준인 하루 50 g의 22.7%와 21.3%에 해당하였다. 과자류는 1회 제공기준량 30 g 당 9.1 g의 당을 함유하였다. 나트륨의 경우 1회 제공기준량으로 환산하면 WHO 일일 권장 섭취 기준인 2000 mg의 1.1~6.5%에 해당되는 것으로 파악되었다. 청소년들의 빵류 섭취가 증가하는 추세에 따라 학부모 및 아이들도 쉽게 영양성분 표기를 보고 올바른 식품을 선택할 수 있도록 영양성분 신호등표시제를 실시하고 어린이 기호식품에 대한 영양성분 기준을 강화하여야 할 것이다.
