Effects of $H_2O_2$ and Papain Treatments, and Acylation on Chemical and Functional Properties of Defatted Sesame Oil Cake Protein (과산화수소, Papain처리 및 Acyl화가 분리참깨박 단백의 품질 및 기능적 성질에 미치는 영향)

  • In this study, the treatment of $H_2O_2$, papain and acylation on the protein isolate obtained from defatted sesame oil cake for the changes in amino acids composition, color, digestibility and some functional characteristics of this protein were investigated. The results showed that $H_2O_2$, papain and papain $H_2O_2$ treatment increased the rates of the protein extraction and content of protein in protein isolates when those values were compared to the alkali treatment. Also amino acid composition of the protein isolates were comparatively good, and color, and functional properties and pepsin digestibility were markedly improved. The amount of lysine, the first limiting amino acid of this protein was increased. The solubility, bulk density, water absorption, fat absorption and emulsifying properties were remarkably improved while foaming properties and digestibility was slighly decreased.

Effects of organic fertilizers mixed with dehydrated food waste powder on agronomic performance of leafy vegetables

  • Castor oil cake is widely used as a raw material for organic fertilizers (OF) in Korea. Compared to other fertilizer raw materials, it is highly dependent on imports. In terms of replacing raw materials, dehydrated food waste powder (FDP) and castor oil cake have similar nutritional content, and if 30% is replaced, about 20% of the raw material cost can be saved. However, few studies on the effects on crop growth and soil properties when organic fertilizer and dry food waste powder are mixed and applied to the soil have been reported. The effects of an organic fertilizer made by mixing the commercial available organic fertilizer with dehydrated food waste (OF + FDP) on soil properties and the growth of two types of leafy vegetables (lettuce and young radish) were evaluated and compared with the performance of OF. The fresh weights of lettuce and young radish were the highest with OF amendment and stood at 114.3 and 119.0 g·plant-1, respectively. These were followed by OF + FDP amendment, which produced 103.1 and 109.6 g·plant-1, respectively. Compared to the control, OF and OF + FDP increased the lettuce fresh weights by about 69% and 52%, respectively, while the fresh weights of the radish were increased by about 223% and 207%, respectively. The soil pH, EC, total carbon content, and organic matter content in OF and OF + FDP increased. The mixture of dehydrated food waste powder and organic fertilizers is expected to improve soil quality and facilitate stable production of crops and contribute to the substitution of imported organic fertilizer raw materials.

  • Inspite of Korea's being major consuming country of sesame, the most of its supply depends on import. Furthermore, the researches of sesame have been conducted since 1973. So far total 121 academic papers have been published and their main subjects are the analysis of constituent and composition of sesame, breeding and cultivation of sesame and detection of alterated sesame oil. Though the flavor is very important at the time of eating, its study has been done only in the difference of the kinds of sesame, the condition of roasting, extraction, filtration. Thus the more detailed studies of them and sensorytest are required. Also it is found that the studies such as the improvement yield at sesame oil mill and the utilization of oil cake are nearly absent.

Nutrient Intake and Digestibility of Fresh, Ensiled and Pelleted Oil Palm (Elaeis guineensis) Frond by Goats

  • Oil palm frond (OPF) is a new non-conventional fibrous feed for ruminants. Evaluation on the nutritive values and digestibility of OPF was carried out using goats. In a completely randomised design, 20 local male goats were assigned to evaluate fresh and different types of processed OPF. A 60 day feeding trial was done to determine the digestible nutrient intake of fresh, ensiled and pelleted OPF and its response on live weight gain of goat. The pelleting of OPF increased (p<0.05) intake compared to fresh or ensiled OPF. The OPF based mixed pellet (50% OPF with 15% palm kernel cake, 6% rice bran, 6% soybean hull, 15% molasses, 2% fishmeal, 4% urea, 1.5% mineral mixture and 0.5% common salt) increased (p<0.05) nutrient intake, digestibility and reduced feed refusals. The mixed pellet also increased digestible dry matter intake (DDMI) and digestible organic matter intake (DOMI) at 80% and 63% level respectively than the fresh OPF. The increased digestible nutrient intake on the OPF based mixed pellet, resulted in increased live weight gain of goats. Furthermore, OPF has a good potential as a roughage source when it is used with concentrate supplement. OPF based formulated feed in a pelleted form could be used as a complete feed for intensive production of goat and other ruminants.

A Study on Quality of Rice-Yackwa (쌀을 이용한 약과의 조리과학적 연구)

  • Yackwa is a Korean traditional fried cake made by went flour, sesame oil and honey. This study was investigated to the Rice-Yackwa for the purpose of the improvement of Yackwa's quality and rice consumption by sensory evaluation and instrumental measurement. It was resulted that taste and flavor of Rice-Yackwas were better than those of Wheat-Yackwa by sensory evaluation. We tested whether the mesh of the rice (80,100,120) and swelling agents (baking power, soju : Korean alcholic beverage) affected the Rice-Yackwa's swelling or not. In result, not by soju but by baking powder Rice-Yackwas were swelled. But Rice-Yackwa was so hard, that the Yackwas were made by the two different compositions of mixed flour (rice : wheat ; 75:25, 50:50) exibited softer than those made by rice. The hardness of 25 g% mixed flour Yackwa was improved. And we examined the softening effect on rice and mixed flour Yackwa by the increasing storage periods (1, 2, 3, 5 days). Rice-Yackwa's hardness was changed more greatly than Wheat-Yackwa's by storage periods. In addition to we inspected the effluence of sesame oil in the pross of frying. Sesame oil (40%) was drown out the Rice-Yackwa.

Optimization of Sweet Rice Muffin Processing Prepared with Oak Mushroom (Lentinus edodes) Powder (표고버섯 첨가 찹쌀머핀의 최적화 및 품질특성)

  • The purpose of this study was to bake sweet rice muffins with oak mushroom ($Lentinus$ $edodes$) powder. The process included substituting sweet rice flour for cake flour and adding oak mushroom powder. This study determined the optimal mixing conditions of oak mushroom muffins by adjusting the amounts of oak mushroom powder, whole eggs, and soybean oil. The mixing conditions for the oak mushroom muffins included 3 categories: oak mushroom powder (X1), whole eggs (X2), and soybean oil (X3) by Central Composite Design (CCD) which was optimized by Response Surface Methodology (RSM). Oak mushroom muffin formulation was optimized using rheology. Yellowness (p<0.001) and redness (p<0.05) displayed a linear model pattern, whereas lightness (p<0.05) was represented by a quadratic model. Among the sensory properties, variables that appeared to show significant values such as appearance (p<0.5), texture (p<0.5), and overall quality (p<0.5) were used to identify optimums. The result of mechanical properties showed significant values in gumminess (p<0.5) and chewiness (p<0.5). The numerical and graphical methods used in this study determined that the optimum formulation for oak mushroom powder sweet rice muffins was 8.75 g of oak mushroom powder, 235.95 g of whole eggs, and 19.93 g of soybean oil.

Mechanical Characteristic of Backsulgi Added with Rich Sources of Phospholipid (인지방질 함유식품 첨가에 따른 백설기의 물성적 특성)

  • The purpose of this study was to select an ingredient acting as a natural emulsifier to retard the retrogradation of rice cake by the measurement of mechanical characteristics of the cakes. For the purpose, Backsulgi, the most basic type of rice cake, was prepared by adding various ingredients having high contents of lecithin such as raw soybean powder, parched soybean powder, soybean oil, egg yolk powder, and the measurements and observations on the chromaticity, swelling power, pore ratio and cross-section were made. In addition, changes in the textural characteristics of Backsulgi samples were determined while storing them at the temperatures of 4$^{\circ}C$ and 20$^{\circ}C$ for 0, 1, 2 and 3 days. The results of the study were as follows: 1. In terms of chromaticity, the Backsulgi samples added with egg yolk powder, raw soybean flour and parched soybean flour were higher in yellowness(b) than the controls. 2. Both swelling power and pore ratio of Backsulgies added with raw soybean flour were higher than those of controls. 3. A cross-sectional observation using an electron microscope indicated that rice flour particles of controls had uneven pores and were conglomerated in a large lump while Backsulgi samples of raw soybean flour or roasted soybean flour had large and even pores and showed loosened bonding to be transformed into a sponge shape. 4. In hardness, Backsulgi samples added with raw soybean flour had less changes in hardness than that of controls, indicating that the effect of retarding retrogradation was higher when the storage time got longer.

  • To analyze daily reception dishes of Choson Dynasty, studied historic book 'Youngjeob Dogam Zabmulsek Euigwae'(1609, 1643 year) described the daily reception dishes for Chinese envoy in Choson Dynasty. The results obtained from this study are as follows. 1. The daily meal consisted of a table for rice gruel(早飯), daily meal(3時飯) and fruit table(茶啖). 2. A table for rice gruel, taken before breakfast was arranged rice gruel(粥) noodles(麵), soup(湯), fish and meat(肝南), cake(餠) and etc. 3. Daily meal was arranged cooked rice(飯), soup(湯), salted fish shrimp and etc(?), jerked meat(佐飯). pickled vegetables(醬?), meat fish and others broiled with seasoning(炙), and etc. 4. Fruit table was arranged noodles(麵), soup(湯), fried cake made of wheat flour, honey and oil(造果), fruits(實果), various fruits preserved in honey(正果), dried fish and meat(切肉), honey water(水正果) and etc.

Food of Maghreb -Algerian food in particular- (마그레브(Maghreb)의 식문화 -알제리아를 중심으로-)

  • Algeria is located at the Mediterranean coast of north Africa, 90% of its population is concentrated in the coastal area which is mainly devoted to agriculture. Highland steppe and vast desert climate have determined its food culture. Long arab domination has influenced food of Algeria which has also undergone certain impact of Spanish, Turkish and French occupation. A variety of agricultural products, vegetables, fruits, spices and herbs have determined cooking method and food combination of Algeria. It use neither pork nor alcohol. Its main food consists of bread made from wheat flour and couscous cooked with semoule, Mechuwi, roast lamb and chorba, mixed soup are also typical foods of this region. For climatic reason lamb and chicken are prefered. Energy efficient method is applied to cooking through using oil for saute and water for boiling. Under european influence, Algerian salad used dressing for leaf vegetables, root and other kind vegetables were boiled. Serving with cake and cookies as dessert may possibly be the influence from the French occupation. The cake and cookie are made of wheat flour or other grain flour and take a specific form to be fried sweet with honey. Herbs and spices are widely used in cooking which are easily cultivated in household: mint, basil, rosemary, bayleaf, thyme, sage, fennel, marjoram, coriander, celery. Garlic, onion, piment, red pepper, cinammon are also widely used in an ordinary cooking. Reasonable food combination and economic cooking method could be subject of Algerian food study.

The Development of the HACCP Plan in Korean Rice Cake Manufacturing Facilities (시판 떡류 생산에서 HACCP Plan 개발을 위한 연구)

  • In this study, a Hazard Analysis Critical Control Point (HACCP) plan was developed for the sanitary mass production of commercial Korean rice cake products (Gaepidduk, Injulmi, and Julpyon). The microbiological properties of manufacturing flow were evaluated in order to develop the HACCP Plan. The moisture contents of the rice cakes ranged between 36.2${\sim}$55.3%, whereas the water activity of all samples ranged between 0.954${\sim}$1.0. Microorganisms testing was conducted during various phases of the product flow of Korean rice cake preparation, and included assessments of food equipment, work environment, and cooking employees on a small scale. During the manufacture of Injulmi, Julpyon and Gaepidduk, CCPs were purchasing & storage, steaming and cooling, molding, and holding in the A and B manufactories. At the critical limit of CCPs, storage was conducted below at $5^{\circ}C$ in soybean powder, oil, and paste with redbeans. The steaming process was conducted above at $99^{\circ}C$ for 40 min. Cooling and holding processes were conducted for 2 hours below at $15^{\circ}C$. The molding process included sanitary education for foodhandlers and training for operators. Thus, certain prerequisite programs had to be implemented prior to the implementation of the HACCP system. High levels of bacterial contamination were detected in the aprons worn to work by some employees. Additionally, periodic sanitary education for foodhandlers and training for operators or managers was required. Cross contamination by materials was expected at the place where materials were processed or stored.
