닭폐기 부산물 Silage와 소맥피 혼합 및 오븐건조에 따른 일반성분과 미생물 총균수 변화 (Proximate Composition and Microbial Content Change of Broiler Waste Silage by Mixing with Wheat Bran and Oven-drying)

  • 닭 가공부산물의 재활용 가능성을 조사하기 위하여 부산물에 산을 첨가하여 자가분해(autolysis)시켰다. 자가분해 중 일어나는 pH와 지방산 조성변화 그리고 자가분해산물(autolysate)과 소피맥의 혼합과 혼합물 건조에 따른 일반성분과 미생물 총균수 변화를 조사하였다. 마쇄한 부산물의 초기 pH 6.52는 산 첨가 직후(5분 내) 2.75로 급격히 내려갔다가 자가분해 중 약간 증가해서 $3.06{\sim}2.92$를 유지하였다. 일반성분과 지방산 조성은 자가분해에 따른 영향을 크게 받지 않았으나 미생물 총균수와 진균수의 log CFU/g은 각각 7.45와 7.11에서 자가분해 후 3.39와 2.03으로 크게 줄어들었다. 자가분해는 닭 가공부산물의 사료자원화 가능성을 보여주었다.

어류폐기물의 탄화처리시 효율적 탄화조건에 관한 연구 (Study on Efficient Carbonizing Conditions When Carbonizing Fish Offal)

  • 어판장에서 발생되는 생선 손질 폐기물의 자원화를 목적으로 탄화실험을 실시하였다. 어류폐기물의 원소조성을 살펴본 결과 탄소함량과 수소함량이 각각 51.1%와 7.6%, 산소함량이 30.5%로 나타났다. 특히 질소와 황의 함량이 각각 9.8%와 1.0%로 높아 악취문제 등이 심각할 수 있다는 것을 알 수 있었다. 어류폐기물의 원소조성을 다른 폐기물과 비교해볼 때 탄소 및 수소의 함량이 상당히 높은 것으로 나타나 생선폐기물의 최종처리는 열적처리가 적합한 것으로 나타났다. 고등어, 갈치, 조기를 대상으로 내장이나 몸통, 개별 생선이나 이들을 혼합한 시료 모두에 대하여 탄화실험을 실시한 결과 탄화되는 패턴은 시료 종류에 관계없이 유사한 경향을 나타내었다. 탄화시간에 따른 수율변화는 탄화시간 5분, 10분일 때 탄화온도 변화에 따른 수율 변화가 크게 나타났고, 탄화시간 15분 이후에는 탄화온도 변화에 따른 수율 변화가 미미한 것으로 나타났다. 또한 탄화시간 30분 이상부터는 각 온도별로 시간변화에 따른 수율 변화가 미미한 것으로 나타나 탄화시간에 따른 수율변화는 30분 이상부터는 큰 영향을 미치지 않는 것으로 나타났다. 탄화온도에 따른 차이는 탄화온도 $400^{\circ}C$에서는 1차 휘발이 미미하여 2차 휘발이 일어난 $500^{\circ}C$와의 수율차가 크게 나타났다. 또한 탄화온도를 $600^{\circ}C$, $700^{\circ}C$로 하여 10분 이상 탄화시킨 결과 수율차는 미미한 것으로 나타났다.

  • 본 연구에서는 생선폐기물의 혐기성 소화처리를 위한 생선폐기물의 혐기성 생분해 특성을 평가하기 위해 serum bottle을 이용한 BMP(Biochemical Methane Potential) test를 수행하였다. 어판장에서 배출되는 생선폐기물 중 고등어 손질 시 발생되는 폐기물 중 내장을 제외한 부분과 갈치손질 시 발생되는 폐기물 중 내장을 제외한 부분, 생선손질 시 발생되는 내장류 3개 군을 실험대상 기질로 선정하여 사용하였다. 각각의 생선폐기물들을 분쇄 후 serum bottle에 11 50 ml, 100 ml, 150 ml씩 혐기적으로 넣은 다음 BMP test를 실시하였으며 실험의 정확도를 위하여 동일 시료에 대하여 3개씩 중복으로 조제하여 실험하였다. 배양시간에 따른 누적 메탄가스 생성량과 메탄생성속도를 평가하였다. 이들 값들은 기질의 특성에 따라 다르기는 하나 통상 휘발성 고형물 (Volatiles Solids: VS) 1 kg당 420-470 ml의 메탄가스를 생성하는 것으로 나타났다. 기질 종류별로 볼 경우 갈치와 고등어군에 비하여 내장 군이 고형물 단위 중량당 메탄발생량과 분해속도 측면에서 모두 높은 것으로 나타났다. 대상 시료에 대해 원소분석을 실시한 결과, C/N비는 5.2로 나타났다. 원소분석 자료를 근거로 계산한 이론적인 최종 메탄생성량은 $522ml{\cdot}CH_4/g{\cdot}VS$로 나타났다. 이를 본 실험에서 구한 실제 최종 메탄생성량과 비교해 볼 때 생분해도는 0.847로 평가되었다.

Genotypic characterization of fluoroquinolone-resistant Escherichia coli isolates from edible offal

  • Edible offal is easily contaminated by Escherichia coli (E. coli) and fluoroquinolone (FQ)-resistant E. coli is considered a serious public health problem, thus, this study investigated the genetic characteristics of FQ-resistant E. coli from edible offal. A total of 22 FQ-resistant E. coli isolates were tested. A double mutation in each gyrA and parC led the highest MIC. Four (18.2%) isolates carried plasmid-mediated quinolone resistance genes. The fimH, eaeA, escV, astA, and iucC genes were confirmed. Seventeen isolates (77.3%) were positive for plasmid replicons. The isolates showed high genetic heterogeneity based on pulsed-field gel electrophoresis patterns.

INFLUENCE OF DIETARY ENERGY AND POSTMORTEM ELECTRICAL STIMULATION ON MEAT QUALITY AND COLLAGEN CHARACTERISTICS OF LAMB CARCASSES

  • Sixty ram lambs, weighting 23.5 kg, were randomly assigned in a $2{\times}3$ factorial arrangement of two dietary energy (high; 11.7 and low; 9.0 MJ ME/kg DM) and three levels of poultry offal meal supplementation (0, 5 and 10%). Lambs were fed ad libitum for 120-day before slaughter. At slaughter, half the lambs in each dietary treatment group were randomly selected for electrical stimulation of their undressed carcasses. The M. Biceps femoris pH and temperatures were monitored at 1, 3, 5, 8 and 24 h postmortem. At 24 h postmortem, the M. biceps femoris was removed from the fight side of each carcass and steaks were obtained for determination of Warner-Bratzler shear force, collagen content and collagen solubility. The results showed that temperature and pH values during the 24-h postmortem were consistently higher (p < .01) and lover (p < .01), respectively, for M. biceps femoris from lambs fed high energy diets than for those fed on low energy diets. Muscles from high energy fed lambs had lower (p < .01) shear force values and higher (p < .01) percent soluble collagen than for low energy fed lambs; total collagen content was not significantly influenced by dietary energy level. Increased the level of poultry offal meal supplementation in the diet to 10% was associated with concomitant increases (p < .01) in muscle tenderness and percent soluble collagen. Electrical stimulation (ES) of carcasses resulted in a lower shear force values for the M. biceps femoris than in non-stimulated carcasses (Non-ES); total collagen content and percent soluble collagen were not significantly affected by ES treatment.

가압열처리한 도계부산물의 화학적 조성과 닭에 대한 생물학적 사료가치 (Chemical Composition and Biological Feed Value of Autoclaved Poultry By-products for Poultry)

  • 도계부산물을 사료화하는데 필요한 기초자료를 얻기 위하여 머리, 다리, 내장, 혈액, 우모 등 단일 부산물들의 수율과 화학적 조성 및 생물학적 이용성을 조사하였다. 생체중에 대한 머리, 다리, 내장, 혈액 및 우모의 생산비율은 각각 2.93%, 4.78%, 10.98%, 3.91%, 4.83% 였으며 도체율은 72.51%였다. 조단백질 함량은 우모와 혈액이 86.71%와 82.99%로 내장, 다리 및 머리의 64 67%, 58.76% 및 49. 51% 보다 높았으며, 조지방함량은 반대로 머리, 내장 및 다리가 각각 26.19%, 23.96% 및 13.73%로 혈액과 우모콰 6. 96%와 2.96%보다 높았고, 조회분 함량은 다리와 머리가 21. 69%와 20. 38%로 내장, 혈액 및 우모의 8.62%, 3.56% 및 0.96%보다 높았다. Ca, P, K, Na 및 Mg함량은 머리와 다리가 다른 부산물보다 높았고, Fe 함량은 혈액이 가장 높았으며 , 다른 광물질 함량은 큰차이는 없었다. 17개 아미노산의 총량은 단백질함량이 높은 순서로 나타났으나, 높은 단백질 수준에 비해 우모는 특히 Iysine이 부족하였고 serine, glycine 및 cystine을 제외한 기타 아미노산들도 높지 않았다. 아미노산 이용율도 우모가 가장 낮았다. ME 함량은 전반적으로 내장이 가장 높았고 머리, 혈액, 우모, 다리의 순서로 낮았다.

Effect of insect protein and protease on growth performance, blood profiles, fecal microflora and gas emission in growing pig

  • Two experiments were conducted to determine the effect of Hermetia illucens larvae (HIL) as protein and protease on growth performance, blood profiles, fecal microflora, and gas emission in growing pig. In experiment 1, the seventy-two crossbred growing pigs ([Landrace × Yorkshire] × Duroc) with an initial body weight (BW) of 27.98 ± 2.95 kg were randomly allotted to one of four dietary treatments (3 pigs per pen and 6 replicates pen per treatments). The experimental design was a 2 × 2 factorial arrangement of treatments evaluating two diets (Poultry offal diets and HIL diets) without or with supplementing protease. The poultry offal in basal diet has been replaced by HIL. In experiment 2, the four crossbred growing pigs ([Landrace × Yorkshire] × Duroc) with an initial BW of 28.2 ± 0.1 kg were individually accepted in stainless steel metabolism cages. The dietary treatments included: 1) PO- (PO-; poultry offal diet), 2) PO+ (PO- + 0.05% protease), 3) HIL- (3% PO of PO- diet was replacement 3% HIL), 4) HIL+ (HIL- + 0.05% protease). In experiment 1, From weeks 0 to 2, average daily gain (ADG) and feed efficiency (G:F) were significantly increased in the PO diet group compared with the HIL group. From weeks 2 to 4, ADG and G:F were higher for protease group than for non-protease group. At weeks 2 and 4, the PO diet group had lower blood urea nitrogen (BUN) levels than HIL diet group. In experiment 2, crude protein (CP) and nitrogen (N) retention were decreased by HIL diet at weeks 2 and 4. The fecal microflora and gas emission were not affected by HIL and protease. The HIL diet showed lower CP digestibility than PO diet and total essential amino acids digestibility tended to higher in PO diet than HIL diet. In summary, the present study revealed that replacement of the PO protein with the HIL protein and the additive of protease in growing pig diets during the overall experimental period had no negative effect.

Nontyphoid Salmonella Prevalence, Serovar Distribution and Antimicrobial Resistance in Slaughter Sheep

  • This study aimed to determine the current prevalence, serovar distribution and antimicrobial resistance rate and patterns of nontyphoid Salmonella (NTS) in slaughter sheep and their edible offal. While filling the gap of up to date related information in Turkey, data presented is also of significance since contamination of ovine meat, its products and offal with this pathogen is threat to public health due to their considerably high consumption rates in our country. Current NTS carriage in 200 apparently healthy slaughter sheep by ISO 6579:2002, 6579:2002/A1:2007 standard bacteriology (ISO) was 5% (10/200) (4 fecal content - 2%, 3 mesenterial lymph node - 1.5%, 3 kidney - 1.5%) out of 1,400 samples (0.7%), with no isolation from carcass, liver, gallbladder, spleen. Real-time PCR was in substantial agreement to ISO in confirming Salmonella-suspect isolates (Relative Trueness: 93.6%). S. Newport (40%) was the predominant serovar, followed by the second prevalent serovars as S. Typhimurium and S. Kentucky (20%), and by S. Umbilo and S. Corvallis (10%). Four and 6 out of 10 NTS isolates were susceptible (40%) and resistant (60%) to 18 antimicrobials, respectively. S. Typhimurium isolates were multidrug resistant (MDR) to tigecycline and sulphamethoxazole/trimethoprim, with one also resistant to cefepime. S. Corvallis was MDR to ampicillin, ciprofloxacin, norfloxacin and pefloxacin. The predominance of S. Newport and first isolation of S. Corvallis in sheep in the world; first time isolations of Newport, Kentucky, Corvallis, Umbilo serovars from sheep in Turkey; and high antimicrobial resistance rates obtained in majority of the isolates highlights study findings.

Supplementation of Dry Brewer's Grain to Lower Quality Forage Diet for Growing Lambs in Southeast Nigeria

  • Twenty yearling lambs of Southeast Nigeria dwarf, liveweight ($18{\pm}1.9 kg$) were grouped into 5 treatments. Dry brewer's grain was substituted for maize offal in the experiment diets namely A to E at 0%, 15%, 30%, 45% and 60% respectively, as supplement to low quality, dry season cassava leaf top and Andropogan gayanus hay at 1:1 ratio that lasted for 56 days. After which 5 of the lambs (average bodyweight=$24.3{\pm}1.5kg$) were transferred to metabolism crates to determine the digestibility and nitrogen/protein balance studies. While the mean group intakes were (945.9, 996.1, 1,040.5, 1,148.5 and 1,037.7 g conc. DM/day), the growth rates were (115.1, 124.1, 152.5, 168.5 and 123.1 g liveweight gain/day), respectively. There was a recorded decline in both intake (p>0.05) and growth rate (p<0.05) as the level of dry brewer's grain was increased beyond 45% of the supplement. Similar trend was observed on the protein and organic matter efficiency ratios (p>0.05) together with the organic matter intake. The urine nitrogen output was also significant (p>0.05). The work further revealed that, at a certain critical level of intake, dry brewer's grain is able to support growth rates measurable to or better than those noted when feeding maize offal to lambs, and went on to prove dry brewer's grain as an attractive supplementary feed for the drier months of the year, in the Southeast of Nigeria.

Age-related Changes in the Percentage Content of Edible and Non-edible Components in Broiler Chickens

  • The objective of this study was to determine age-related changes in the percentage content of edible and non-edible components in broiler chickens. The experimental materials comprised 240 Ross 308 chicks (sex ratio 1:1) raised to 10 weeks of age and fed standard diets ad libitum. Starting from the first week of rearing, every 7 days 10 males and 10 females were selected randomly for slaughter and post-slaughter analysis. The data obtained were verified statistically. The percentage content of edible components increased and the percentage content of non-edible parts decreased as the chicks grew older. In broilers aged 1 week and 10 weeks, edible components accounted for 47.0% and 66.4% total body weight, respectively. The share of muscle tissue increased considerably over this period, from 30.9% total body weight in week 1 to 52.4% in week 10. An increase in the percentage of skin and subcutaneous fat was observed for the first three weeks only, while the percentage content of giblets (in contrast to the remaining edible parts) decreased with age. For non-edible parts, the share of bones diminished by 2.5% and the proportion of slaughter offal reduced by 13.8%. A rising tendency was noted with respect to feathers and abdominal fat, while the content of the remaining offal decreased.
