Effects of an In-package Oxygen Scavenger on the Stability of Deep-fried Instant Noodle (인스탄트 라면의 안정성(安定性)에 대한 탈산소제(脫酸素劑)의 효과(效果))

  • Deep-fried instant noodle was prepared on a laboratory scale (150 units). A part of the noodle was packed in gas-proof laminated film bags with a small package of an oxygen scavenger made from Fe-powder and a 150 ml of air in each bag(Sample 1). Another part was packed in ordinary laminated film bags (Control), and the rest was vacuum-packed (74 mmHg) in the gas-proof film bags (Sample 2). All samples were placed in an incubator kept at $45.0{\pm}0.5^{\circ}C$ for 45 days. Oxygen-removing power of the scavenger, and peroxide and thiobarbituric acid values of the samples were determined regulary. The results of the study are as follows: 1. The residual oxygen concentration of the bags in Sample 1 decreased from the original 21% to less than 0. 5% after 48 hr. 2. POVs of Control, Samples 1 and 2 after 45 days were $12.4{\pm}0.4$, $5.7{\pm}0.2$ and $6.8{\pm}0.1\;meq/㎏$ fat respectively. It was noteworthy that the POV of Sample 1 did not change significantly during the storage period. The scavenger seemed very effective in retarding the POV development of Sample 1. 3. TBA values of Control, Sample 1 and 2 after 45 days were $1.31{\pm}0.04$, $0.60{\pm}0.04$, and $0.72{\pm}0.07$. As in the case of POVs, the samples packed with the scavengers exhibited consistently smaller TBA values than the vacuum-packed samples in later stages of the storage period.

Evaluation of Gamma Irradiation for Extending the Shelf Life of Kimchi (김치의 저장성 연장을 위한 Gamma선 조사)

  • To improve the storage method of Kimchi, optimum ripening Kimchi for an irradiation treatment(the time of around 0.3% in total acidity of Kimchi) was irradiated by doses of 1, 2, 3 kGy with Co-60 ${\gamma}-radiation$ and stored at $10^{\circ}C$. Total aerobic bacteria increased in the beginning of storage and then decrease slowly as the number of total lactic acid bacteria increased. Total lactic acid bacteria initially loaded by $10^8\;cells/ml$ in Kimchi shortly after irradiation reduced to $10^4-10^6\;cells/ml$ with 1-3 kGy doses and decreased gradually through the whole storage period. The initial load of yeast, $10^3\;cells/ml$, increased steadily during Kimchi storage and led to more than $10^4\;cells/ml$ after 30 days of storage. While it maintained tha the load in 2-3 kGy irradiated groups after 30 days of storage was less than that at the beginning of storage. pH, acidity and volatile acid in the nonirradiated group were 4.0, 0.7% and 0.06%, respectively at the 15th day after storage, but at the 30th day after storage, 2-3 kGy irradiated groups showed different values, 4.1, 0.58-0.63%, and 0.04-0.05%, respectively. The texture(firmness) of Kimchi reduced along with storage time, and 2 kGy irradiated group proved most favourable in its texture during storage. In the sensory evaluation of Kimchi, nonirradiated group was inedible after 15 days of storage, whereas 2-3 kGy irradiated groups could proling the storage-life of Kimchi over 2 times compared with the nonirradiated Kimchi, showing the good sensory quality even after 30 days of storage.

Influence of Dry Roasting on Rumen Protein Degradation Characteristics of Whole Faba Bean (Vicia faba) in Dairy Cows

  • Whole faba beans (WFB) were dry roasted at different temperatures (110, 130, $150^{\circ}C$) for 15, 30, 45 minutes to determine the optimal heating conditions of time and temperature to increase nutritional value. Ruminant degradation characteristics of crude protein (CP) of WFB were determined by the nylon bag incubation technique in dairy cows fed 60% hay and 40% concentrate. Measured characteristics of crude protein (CP) were soluble (washable) fraction (S), undegradable fraction (U), lag time (T0), potentially degradable fraction (D) and the rate of degradation (Kd) of insoluble but degradable fraction. Based on measured characteristics, percentage bypass crude protein (%BCP) and bypass crude protein (BCP in g/kg) were calculated. Degradability of CP was reduced by dry roasting (p < 0.01). S was reduced rapidly with increasing time and temperature, from 49.0% in the raw WFB (RWFB) to 26.3% in $150^{\circ}C/45$ min. D varied from 50.7% in RWFB to 73.7% in $150^{\circ}C/45^{\prime}$. U varied from 0% in $130^{\circ}C/45^{\prime}$, $150^{\circ}/30^{\prime}$ and $150^{\circ}/45^{\prime}$ to 0.66% in $110^{\circ}/45^{\prime}$ (0.24% for the RWFB). Lag time (T0) varied from 1.58 h in $130^{\circ}C/30^{\prime}$ to 2.40 h in $150^{\circ}C/45^{\prime}$ (1.87 h for RWFB). Kd varied from 24.2% in the $110^{\circ}C/30^{\prime}$ to 4.3% in $150^{\circ}C/45^{\prime}$ (21.4% for the RWFB). Kd was significantly reduced with time and temperature. All these effects resulted in increasing % BCP from 8.9% in the $110^{\circ}C/45^{\prime}$, 11.3% in the RWFB to 43.1% in the $150^{\circ}C/45$. Therefore BCP increased from 31.3 and 39.9 to 148.4 g/kg respectively. Both %BCP and BCP at $150^{\circ}C/45$ increased nearly 4 times over the raw faba beans. The effects of dry roasting temperature and time on %BCP and BCP seemed to be linear up to the highest values tested. Therefore no optimal dry roasting conditions of time and temperature could be determined at this stage. It was concluded that dry roasting was effective in shifting crude protein degradation from rumen to intestine to reduce unnecessary nitrogen (N) loss in the rumen. To determine the optimal treatment, the digestibility of each treatment should be measured in the next trial using mobile bags technique.

Site Characteristics and Carbon Dynamics of the Gwangneung Deciduous Natural Forest in Korea

  • The study area, Kwangneung Experiment Forest (KEF) is located on the west-central portion of Korean peninsula and belongs to a cool-temperate broadleaved forest zone. At the old-growth deciduous forest near Soribong-peak (533.1m) in KEF, we have established a permanent plot and a flux tower, and the site was registered as a KLTER site and also a KoFlux site. In this study, we aimed to present basic ecological characteristics and synthetic data of carbon budgets and flows, and some monitoring data which are essential for providing important parameters and validation data for the forest dynamics models or biogeochemical dynamics models to predict or interpolate spatially the changes in forest ecosystem structure and function. We made a stemmap of trees in 1 ha plot and analyzed forest stand structure and physical and chemical soil characteristics, and estimated carbon budgets by forest components (tree biomass, soils, litter and so on). Dominant tree species were Quercus serrata and Carpinus laxiflora, and accompanied by Q. aliena, Carpinus cordata, and so on. As a result of a field survey of the plot, density of the trees larger than 2cm in DBH was 1,473 trees per ha, total biomass 261.2 tons/ha, and basal area 28.0 m2/ha. Parent rock type is granite gneiss. Soil type is brown forest soil (alfisols in USDA system), and the depth is from 38 to 66cm. Soil texture is loam or sandy loam, and its pH was from 4.2 to 5.0 in the surface layer, and from 4.8 to 5.2 in the subsurface layer. Seasonal changes in LAI were measured by hemispherical photography at the l.2m height, and the maximum was 3.65. And the spatial distributions of volumetric soil moisture contents and LAIs of the plot were measured. Litterfall was collected in circular littertraps (collecting area: 0.25m2) and mass loss rates and nutrient release patterns in decomposing litter were estimated using the litterbag technique employing 30cm30cm nylon bags with l.5mm mesh size. Total annual litterfall was 5,627 kg/ha/year and leaf litter accounted for 61% of the litterfall. The leaf litter quantity was highest in Quercus serrata, followed by Carpinus laxiflora and C. cordata, etc. Mass loss from decomposing leaf litter was more rapid in C. laxiflora and C. cordata than in Q. serrata litter. About 77% of C. laxiflora and 84% of C. cordata litter disappeared, while about 48% in Q. serrata litter lost over two years. The carbon pool in living tree biomass including below ground biomass was 136 tons C/ha, and 5.6 tons C/ha is stored in the litter layer, and about 92.0 tons C/ha in the soil to the 30cm in depth. Totally more than about 233.6 tons C/ha was stored in DK site. And then we have drawn a schematic diagram of carbon budgets and flows in each compartment of the KEF site.

Dyeing effects of natural pigment from marine bacterium, Microbulbifer sp. PPB12 (해양세균 Microbulbifer sp. PPB12 생성 천연색소의 섬유 염색 효과)

  • As the clothing industry has advanced, dyeing technologies using various dyes have been developed. In recent years, interest in natural pigments has been increasing because of the negative impact of synthetic pigment on human health; therefore, development and application of microbial pigments is demanded. In this study, the dyeing effects on multifiber fabrics and biological activity were assessed using violet natural pigment from the marine bacterium, Microbulbifer sp. PPB12. The violet pigment produced by cultivation of Microbulbifer sp. PPB12 using Marine broth 2216 for 3 days was extracted using ethanol. Once dissolved in 20% ethanol, the violet pigment could be used to dye bleached cotton, diacetate, and especially polyamide. The optimal temperature, time, pH, and bath ratio under the dyeing conditions were $80^{\circ}C-90^{\circ}C$, more than 1 hour, pH 4-6, and 1:25, respectively. The mordant treatment was more suitable for color expression when $Na_2SO_4$ was used after 10 minutes of dyeing, but no significant difference was observed from untreated samples. The violet pigment also showed antibacterial activity against B. subtilis. The results of the present study indicate that the marine bacterial pigment could be an alternative for textile dyeing as a natural dye with antibacterial activity.

Analysis of Quartz Content and Particle Size Distribution of Airborne Dust from Selected Foundry Operations (주물사업장 주공정별 발생하는 분진의 석영함유량 및 크기분포 연구)

  • This study was performed to estimate quartz contents in the both bulk and airborne dust samples and to determine particle size distribution of airborne dust from the selected foundry operations. Total dust samples were collected by a 37mm cassette and respirable by a 10 mm nylon cyclone. Particle size distributions were determined by a Marple's 8-stage cascade impactor at the melting, molding, shakeout and finishing operations. The presence of elements in the dust samples were confirmed by the scanning electron microscopy equipped with the energy dispersive x-ray spectrometry. The quartz contents were estimated using the intensity of the absorption peak of quartz at 799 cm-l by the Fourie Transformed Infrared Spectroscopy (FTIR). The results were as follows: 1. The analysis of data from cascade Impactor showed bimodal distributions of particle size at the melting, molding and shakeout operations. Mass median aerodynamic diameters for the distributions determined by histogram were $0.48-1.65{\mu}m$ for small and $13.43-19.58{\mu}m$ for large modes. In the dust samples collected at the finishing operations, however, only a large mode of $18.89{\mu}m$ was found. 2. The percentages of total to respirable dust concentration calculated from the impactor data ranged from 42 % to 66 %. The average concentrations of respirable dust by cyclone were $0.85-1.28mg/m^3$ collected from the workers, and were $0.23-0.56mg/m^3$ from the areas surveyed. Dust concentrations of personal samples were statistically significantly higher than those of area samples. The highest dust concentration was obtained from the personal samples of the finishing operation. 3. The mean percentages of silicon and oxygen estimated by SEM-EDXA in the bulk samples ranged from 35.83 % to 36.02 % and from 39.93 %-41.64 %, respectively. 4. The average quartz contents estimated by FTIR in the respirable dust from personal samples ranged from 4.32 % to 5.36 % and 4.54 % to 4.70 % in the bulk samples. No statistical difference of quartz content was found between foundry operations. In this study, quartz content was quantified by FTIR. Although no statistically significant difference in quartz content between airborne and bulk, samples and between different foundry operations was found, it is recommended that quartz content in the individual sample of respirable dust be analyzed and the results be used either to select an applicable quartz limits or to calculate the exposure limit. Further studies, however, are needed to compare the results by FTIR and XRD since it is reported that the quartz content determined by FTIR is different from that by XRD.

Studies on the Substance of Migration for Retort Pouch Packaging Materials for Various Condition (레토르트 파우치 포장재의 사용조건에 따른 이행물질의 조사)

  • The effect of microwave heat to retort pouches and microwavable packages was examined. 186 products were collected, but packages were consisted of five package materials such as PET, Aluminum foil, Nylon, EVOH, and polypropylene. The results showed that all packages did not exceed the limits of current packaging regulation on consumption weight of $KMnO_4$, TDI(Toluene diisocyanate), and Caprolactam. Safety control on heat resistant packages considered satisfactory, but investigation on new substances should be continued for preventing any possible migration problems of packaged foods.

A Study on the Fire Risk of Car Interior Materials (자동차 내장재의 화재위험성에 관한 연구)

  • In this study, we have performed several tests for composite plastic materials to be applied on interior materials of a vehicle to identify their combustion characteristics using cone calorimeter, smoke density chamber and toxicity index chamber. We have prepared a total of 12 samples for 4 major parts of a vehicle wherein each major part has 3 different materials. The results of cone calorimeter test showed ignition time of PVC sheet and PVC leather were 2s. The 8 samples showed under less than 10s of ignition time. The sample comprising Nylon and PE had the biggest maximum heat release rate of 635 $kW/m^2$. The sample comprising Rubber showed the smallest maximum heat release rate but with the biggest total heat release. The results of smoke density chamber test showed the sample that is made up with Rubber had the biggest specific optical smoke density. The sample comprising PVC leather and PUR showed the biggest VOF4 which enables the initial smoke production. The results of toxicity index test showed that all samples contained carbon dioxide content exceeding its lethal concentration. The sample comprising PVC showed high content of hydrogen chloride and hydrogen bromide. The PVC sheet showed the biggest toxicity index calculated by using lethal concentration and test results. Toxicity index of all sample wes over 1.

Studies on the Adaptability of Home Made Retort Pouch for Food Packaging (국산(國産) Retort Pouch의 식품포장적성(食品包裝適性)에 관한 조사 연구)

  • In order to ascertain the practical possibility of home made retort pouches for production of retort pouch foods in factory, two kinds of retortable pouches, i. e. 3 ply film (polyester film/Al. foil/casting polypropylene) and 4 ply film(polyester film/Al. foil/nylon/casting poll·propylene) were developed in Korea, and then, their physical properties, such as physical strength, heat resistance during thermal processing and preservability of foods and sanitary safety, were tested and compared with the foreign made pouches. The results obtained were summarized as follows. a. The physical strength of home made retort pouches in processing model foods(soybean oil 5 %, acetic acid 2%, starch 5 % and water to 100 %) was equal to that of foreign made pouches at accelerated examination condition($38^{\circ}C$, 98 % RH). But the lamination strength of home made products was a little bit superior to that of foreign made products. b. Home made retort pouches(SAMA-4 ply and SAMA-3 ply pouch) packed with rice or curry was possible to bear the thermal processing at $135^{\circ}C$ and shelf-life was one year or more at ambient temperature($20^{\circ}C$). c. Sanitary safety test showed that these home made retort pouches were acceptable comparing to the regulation recommended by the Ministry of Health and Social Affairs.

Fistula Formation Between the Disc and Dura after Percutaneous Endoscopic Lumbar Discectomy - A Case Report - (경피적 내시경 요추 추간판 절제술 후 발생한 추간판과 경막 사이의 누공 형성 - 증례 보고 -)

  • Study Design: Case report Objectives: To document fistula formation between the disc and dura by an unrecognized dural tear after percutaneous endoscopic lumbar discectomy (PELD). Summary of Literature Review: The risk of durotomy is relatively low with PELD, but cases of unrecognized durotomies have been reported. An effective diagnostic tool for such situations has not yet been identified. Materials and Methods: A patient twice underwent transforaminal PELD under the diagnosis of a herniated lumbar disc at L4-5. She still complained of intractable pain and motor weakness around the left lower extremity at 6 months postoperatively. Magnetic resonance imaging showed no specific findings suggestive of violation of the nerve root. However, L5 and S1 nerve root injury was noted on electromyography. An exploratory operation was planned to characterize damage to the neural structures. Results: In the exploration, a dural tear was found at the previous operative site, along with a fistula between the disc and dura was also found at the dural tear site. The durotomy site was located on the ventrolateral side of the dura and measured approximately 5 mm. The durotomy site was repaired with Nylon 5-0 and adhesive sealants. The patient's preoperative symptoms diminished considerably. Conclusions: Fistula formation between the disc and dura can be caused by an unrecognized dural tear after PELD. Discography is a reliable diagnostic tool for fistulas formed by an unrecognized durotomy.
