  • This study was done to compare the nutritional status of antioxidant vitamins between college women smokers and nonsmokers. Dietary intakes and serum levels of antioxidant vitamins were determined in 33 smokers and 42 nonsmokers residing in the Seoul area. Dietary intakes of vitamin A and C were determined by a quick and convenient dietary intake method. Serum vitamin C level was measured by 2, 4-dinitrophenylhydrazine method and serum levels of vitamin A and E were measured by HPLC. The mean A intake of nonsmokers and smokers was 504.3$\mu$gR.E./day and 450. 4$\mu$gR.E./day and the mean vitamic C intake of nonsmokers and smokers was 51.6mg/day and 50.2mg/day, reapectively. There was no difference in the dietary intakes of antioxidant vitamins between smokers and nonsmokers. The serum vitamin A level, 0.71mg/1 in nonsmokers was not significantly different from that of 0.74mg/1 in smokers. However, the serum vitamin C level, 7.94mg/1 in smokers was 15% lower(p$\ll$0.05) than that of 9.30mg/1 in nonsmokers. The serum vitamin E level, 18.15mg/1 in smoders was also 34% lower(p$\ll$0.05) than that of 27.58mg/1 in nonsmokers. There was no significant correlation between dietary intakes and serum levels of vitamin A and C for both smokers and nonsmokers. These results suggest that cigarette smokers need more dietary intakes of vitamin C and E than do nonsmokers to reach the same serum level.

  • BACKGOUND/OBJECTIVES: This study investigated nutritional status of the elderly with dementia in a care facility with the aim of improving the meal quality of the facility. SUBJECTS/METHODS: Data were collected from 30 dementia patients aged more than 65 years in a long-term care facility in Hongseong. The data were obtained from questionnaires and medical records. The food intake data was obtained using food photographs and the nutrient intakes were calculated using the CAN-Pro 5.0. The data were compared with the dietary reference intakes for Koreans (KDRIs). The nutrient density, diet quality such as nutrient adequacy ratio (NAR), mean adequacy ratio (MAR), and index of nutritional quality (INQ), as well as dietary diversity score (DDS) were evaluated. The data were analyzed using SPSS statistical programs. RESULTS: The average daily energy intakes for men and women were much lower than the estimated energy requirements of the KDRIs. The average intakes of energy and most nutrients in the general diet group were significantly higher than those of the other two groups. Significant differences in diet quality and diet diversity were observed according to the meal type groups. The NARs of some minerals (calcium, iron, and zinc) and vitamins (vitamin $B_6$ and folic acid) were less than 0.5 in all study groups. The NARs of protein, iron and MAR of the general diet group were significantly higher than those of the liquid diet group. The DDS scores of meats, fruits and diary food group were very low in all meal type groups, meaning that the diet qualities of the study subjects were not appropriate in all meal type groups. CONCLUSIONS: The food intakes of the study groups showed some limitations by a direct comparison with KDRIs because of the very low physical activities of the study subjects. The diet quality and diet diversity indices suggest the need for improvements in the nutritional quality in all types of diet. Overall, new intervention strategies targeting facility residents with dementia in Korea are needed as soon as possible.

  • This survey of 180 6th-grade students was focused owl the differences of nutritional and anthropometric status according to calorie Intakes. The results were summarized as followed : 1) All nutrient intakes of boys were higher than those of girls, and both groups had lower calcium and iron intakes compared with RDA. But all the nutrient Intakes were showed significantly different among three groups divided by percentile of calorie intake(lower 25%, 25∼75% and upper 25%), therefore it suggested that subjects had a large individual variance. 2) Mean height, weight, TSK, and blood pressure of boys were 145.5cm, 40.6kg, 19.3mm, and 114.5/68.4mmHg respectively, and girls were 148.4cm, 38.9kg, 16.7mm, 112.3/67.0mmHg. The differences in anthropometric status according calorie and calcium intake were not found. This study showed protein intake had influence on height and weight of boys.

  • The purpose of this study is to analyze the factors associated with health and diet by nutritional status. The subjects were the children aged 2 to 6. Physicians and nurses measured children's anthropometries and examined their blood and urine. Interviewers questioned children's food habits to their mothers. 24 hour recall was done for children with their mother. The nutritional status was classified to 'underweight', 'normal weight' and 'overweight' by weight for height(median±1 S.D.) of the reference population. The number of subjects in each group(under, normal, over) was 25, 130 and 49. Factors including anthropometry and hemoglobin concentration were not significantly dif ferent by the nutritional status. The birth weight of children was correlated positively to mothers' BMI. Z scores of weight for height were related to the birth weight positively by the analysis of variance. The children of the underweight group used nutritional supplements more frequently than those of normal and overweight group. The nutrient intakes of normal weight group were higher than those of low and overweight group. Particularly, the intakes of energy, carbohydrate and calcium were significantly high among the groups. In terms of number of foods, food groups and dishes consumed per day, the children of the normal weight group ate more diversely than other groups but the differences were not significant. In conclusion, the children of normal weight group had similar characteristics with other groups but had more desirable dietary intakes than other groups in this study. Because the diet of children may be different by the nutritional status, nutrition education for children should be conducted according to the characteristics of each group's diet.

  • This study was done to evaluate the nutritional status and the desirable time and period for making dietary records in male high school Taekwondo athletes. Nutrient and flood intake was investigated using dietary record method during usual training (UT, for 29 days) and special training (ST, for 17 days) periods in nine Taekwondo athletes. Nutrient intake by 7-d and 3-d dietary record were compared to the standard nutrient intake, which was computed from dietary record during total period of UT or ST. Total mean energy intake was 2278 kcal, 84% of RDA, and mean intakes of riboflavin, Ca and Fe were less than 77% of RDA. Mean intakes of energy, carbohydrate, protein, fat, cholesterol, thiamin, riboflavin, and P decreased during ST (p < 0.05 or p < 0.01). Mean intakes of vegetables and grains ware the highest in the two periods and following were beverages and instant floods in UT, and meats and fruits in ST. During ST, mean intakes of mushrooms, meats and their products, and instant floods decreased, and sugars and sweets increased (p < 0.05 or p < 0.01). The contribution of grains and their products, instant floods, and meats and their products to mean intakes of energy, carbohydrate, protein and fat were high. In snacks, the contribution of instant floods, breads and confections and beverages was high. During UT, cholesterol intake at weeks 1 and 3, and intakes of protein, fat, thiamin, riboflavin and niacin at week 4 by 7-d dietary record were different from their standard intakes (p < 0.05 or p < 0.01). Intakes of VA, Ca and Fe at week 1, and intakes of carbohydrates, cholesterol rind crude fiber at week 4 by 3-d dietary record were different from their standard intakes (p < 0.05 or p < 0.01). During ST, VC intake at week 5, and energy intake from carbohydrate and cholesterol intake at week 6 by 7-d dietary record were different from their standard intakes (p < 0.05 or p < 0.01). Cholesterol intake at week 7, and energy intake from carbohydrates and fat, and intakes of protein, fat, cholesterol and riboflavin by 3-d dietary record were different from their standard intakes (p < 0.05 o. p < 0.01). In conclusion, empty-calorie floods can be a main source of diet and snacks for Taekwondo athletes, and education about desirable nutrients and floods intakes is needed to help them control their weight. When investigating the nutritional status of Taekwondo athletes in the future, the 7-day or 3-day dietary record is desirable provided they are conducted in the milddle of each period artier distinguishing UT from ST period.

  • This study investigated whether social and psychological factors were related to nutritional status of the elderly. Food habits, social contacts and psychological the test score were collected from 86 institutionalized elderly women aged 65-96 in Chon-buk area. Social health status was measured by score of social contacts with others. Depression, self-esteem and locus of control were measured to evaluate psychological health status by using Zung DSI(Depression Status Intentory), Rosenberg SES(Self-esteem scale) and Rotter's vs external control, respectively. Social contacts of the total subjects were lowered, and in the group of over 85, contacts with relatives were significantly decreased compare to under 85 years of age groups. Psychological health status such as depression and self-esteem were also lowered, but locus of control showed internal control that indicates positive attitude to eating behavior. Most of the nutrients intake were positively correlated to self-esteem scores(p<0.05), but not to nutritional risk index score. Intake of vitamin C was related to social health status as well as psychological health status. Increasing the number of contact with relatives, intakes of carbohydrates, fiber, vit B1, vit C, Ca and P were elevated(p<0.05). As the score of self-esteem increased, intakes of fiber, Fe, vit B1, niacin, vit C, and vit A were increased. It is suggested that social activity and health education programs will be needed to improve the nutritional status of the institutionalized elderly.

  • The association between nutrient intake and nutritional status was investigated with anthropometric measurements, body composition and blood biochemical indices in 56 healthy young men fed balanced diet for two years. Compared with Korean recommended dietary allowances (Korean RDA), all nutrient intakes were adequate. Height and body weight were significantly (p < .01 - p < .05) positively correlated to the intakes of energy, protein, sodium, potassium vitamin A and vitamin $B_1$. The lean weight was significantly (p < .001 - p < .05) correlated to the intake of energy, protein, sodium, potassium, vitamin A, vitamin B$_1$. niacin and vitamin C. The skinfold thickness of triceps and suprailiac was significantly (p < .01 - p < .05) correlated to the intake of energy, sodium, potassium, but that of thigh was not correlated. The significant correlations neither between nutrient intake and blood biochemical indices nor between nutrient intake and blood pressure were shown. These results suggest that nutritional status as anthropometric indices and body composition is associated with nutrient intake in young healthy adults on balanced diet, however, the nutritional status as blood biochemical indices of active people is neither endangered nor improved in comparison with less active ones.

  • This study was performed to investigate the effect of breakfast regularity on eating habits, nutritional and health status in adult men and women. Also, eating habites and nutritional status expressed as percentage of recommended energy intake in IB(Irregular Breakfast group) were studied. Proportions of IB in men and women was 23.7% and 31.1%, respectively. In men, IB had irregular mealtime, overeating tendency. Also, they consumed high-fat meat and alcohol more frequently than RB (Regular Breakfast group). Total energy intake showed no significant difference between which two groups. Energy intakes from dinner and alcohol were higher in IB than in RB. Nutrient and food intakes were lower in IB than in RB. Percent body fat of IB was higher than that of RB. Weight, triglyceride and prevalence of fatty liver were higher in IB than in RB. In women, IB had irregular mealtime, and overeating tendency. Also, they had more frequent eating out and alcohol consumption. Total energy intake was lower in IB than in RB. In men, nutrient and food intakes were lower in IB than in RB. But health status showed no significant differences between two groups. In men, energy intakes from alchol and dinner were higher in +RDA group(percentage to recommended energy > 125%) than in other groups of IB. But energy intake from carbohydrate was lower in +RDA group. -RDA group (percentage to recommended energy < 75%) had Ca and vitamin A intake less than RDA. In women, +RDA group had overeating tendency. Also, they had more frequent eating out, high-fat meat, and alcohol consumption than other groups of IB. Energy intakes from dinner, snack and fat were higher in +RDA group. But -RDA group had protein and vitamin A intake less than RDA. From our study, it seemed that breakfast irregularity led to undesirable eating habits and had relation with increase of percent body fat. Breakfast regularity seemed to be very important to maintain a nutritional balance.

  • This study was conducted to assess nutritional status of the elderly from low-income urban area and to investigate environmental and health risk factors that may influence to nutrient intakes. One hindered eighty three(males 53, females 130) healthy homestaying subjects aged over 65 years in Seoul were assessed with anthropometric measurements and dietary intake in August, 1994. HT and BW for females were decreased with aging. The proportion of hypertension was 36% with indite of $SBP{\;}(SBP{\;}{\gg}{\;}160mmHg)$ and 52% with indice of DBP $(DBP{\;}\gg{\;}97mmHg)$. Distribution of BMI, OR and PIBW indicated that BMI was more sensitive for identifying underweight whereas PIBW was more sensitive for identifying overweight. for group aged over 75, males had significantly lower intake of energy, protein, fat, calcium, iron, vitamin A and $\beta$ carotene compared to the group aged 67~74, while females had lower intake of calcium and vitamin A. Elderly group with smoking, less familly size and living alone had lower nutrient intakes. Blood pressure in the elderly subjects did not influence to nutrient intakes, except elderly with normal blood pressure were taking increased amount of thiamin and niacin.

  • A survey was undertaken to investigate relationship between nutritional status and physical growth and behavior of school children. Dietary intakes, environmental factors, physical growth, personality, and cognitive development were measured in 323 children of 4 th and 6th grader in the urban and rural arcas. The results are summarized as follows : 1) The average intakes of the food groups and nutrients except ascorbic acid were lower in rural children. Comparing the intakes of the rural children with RDA of the Korean children, 64.0% of them in protein, 99.3% in calcium, 84.6% in iron, and 73.5% in riboflavin consumed less than 75% of RDA. Environmental factors were significantly related to the nutrient intakes 2) Height, weight, and head circumference were significantly related to the nutrient intakes. Retarded growth due to malnutrition was supposed in the $rural^{1)}$ area. 3) Some domains of personality were significantly related to nutrient intakes. 4) Environmental factors, physical growth, and nutrient intakes made independent contribution to variation in cognitive performance and their relative importance depended on the particular cognitive domain when stepwise multiple regression analyses were undertaken. Environmental stimulation was largely associated with verbal usage, and economic status and nutrient intakes with numerical reasoning. Above findings support that nutritional deprivation retards brain growth and performance on various cognitive dimensions of children. Therefore, amelioration of the several adverse social, economical, environmental influences as well as the improvement of dietary intake is required to bring about a substantial enhancement of the physical growth and the mental development of children.
