In order to investigate regional variation of food component in the top shells, Omphalius pfeifferi capenteri, caught from Jeju, Sogwipo, Hallim and Songsan, Jeju island, Republic of Korea, food sanitary (heavy metal and volatile basic nitrogen), nutritional (mineral, total amino acid contents, fatty acid composition), taste (extractive nitrogen) components and sensory evaluation (color, texture and taste) were measured. From the result of the contents of heavy metal and volatile basic nitrogen, the top shell might not invoke health risk in using food source, The extractive nitrogen contents of top shell were $343.0\~385.4\;mg/100\;g$. The amounts of total amino acids were $12.5\~13.2\;g/100\;g$, and the major compound among them were glutamic acid, proline and aspartic acid. The major compound among mineral were sodium, calcium, potassium and magnesium. In fatty acid composition, polyenes with essential component or healthy functionality such as 20:4n-6, 20: 5n-3 and 22: 5n-3 were the major components. But, lipid content was extremely small. Judging from the results of chemical and sensory evaluation described a above, food components were not different among top shells caught from various area.
Uncoupling protein-1 (UCP-1) plays a major role in thermogenesis at brown adipose tissues and has been implicated in the pathogenesis of obesity and metabolic disorders. The purpose of this study was to estimate the effects of A-3826G polymorphism in 117 Korean prepubertal children aged 8-11 years olds. Anthropometry by bioelectrical impedance analysis method, plasma lipid profiles by auto-biochemical analyzer and UCP-1 genotyping by PCR-RFLP were done. The frequencies of UCP-1 genotypes were AA; 17.7%, AG; 57.8%, GG; 26.6%. The frequencies of each G allele (55.5%) was similar to Japanese's (49%) and higher than Caucacian's (25%). No correlation UCP-1 polymorphism and BMI (kg/$m^2$) or the degree of obesity described by the relative percentiles of the standard weight according to height in prepubertal children. However, plasma total- and LDL-cholesterol were significantly increased in G allele when sex, age and weight were adjusted. Our results suggested that G allele of UCP-1 gene was stronger risk factors in hyperLDLcholesterolemia than A allele. This impact might be progressed as the precaution against the revalence of obesity based-metabolic disease.

Dietary lipids are rapidly hydrolysed and biohydrogenated in the rumen resulting in meat and milk characterised by a high content of saturated fatty acids and low polyunsaturated fatty acids (PUFA), which contributes to increases in the risk of diseases including cardiovascular disease and cancer. There has been considerable interest in altering the fatty acid composition of ruminant products with the overall aim of improving the long-term health of consumers. Metabolism of dietary lipids in the rumen (lipolysis and biohydrogenation) is a major critical control point in determining the fatty acid composition of ruminant lipids. Our understanding of the pathways involved and metabolically important intermediates has advanced considerably in recent years. Advances in molecular microbial technology based on 16S rRNA genes have helped to further advance our knowledge of the key organisms responsible for ruminal lipid transformation. Attention has focused on ruminal biohydrogenation of lipids in forages, plant oils and oilseeds, fish oil, marine algae and fat supplements as important dietary strategies which impact on fatty acid composition of ruminant lipids. Forages, such as grass and legumes, are rich in omega-3 PUFA and are a useful natural strategy in improving nutritional value of ruminant products. Specifically this review targets two key areas in relation to forages: i) what is the fate of the lipid-rich plant chloroplast in the rumen and ii) the role of the enzyme polyphenol oxidase in red clover as a natural plant-based protection mechanism of dietary lipids in the rumen. The review also addresses major pathways and micro-organisms involved in lipolysis and biohydrogenation.
The objectives of this research is to examine: 1) how the rates of adolescents' BMI change over time in terms of the state level; and 2) development difference in the state level of BMI in terms of children's obesogenic behaviors from 1999 to 2011. Data were drawn from the 1999-2011 Youth Risk Behavior Survey in the United States (N=260, 293, grades 9-12, and 27 states). Ordinary least squares regression and hierarchical linear modeling were utilized to capture a longitudinal time effect of school-aged adolescents' obesity rates across the states, controlling for demographics and nutrition- and physical activity-related behaviors. The state's level of children's BMI percentile was significantly associated with longitudinal time. Longitudinal time effect across the states appears to play an important factor associated with children's decrease of BMI percentile. Therefore the states' implementation of physical activity and nutritional policies seems to be effective for preventing and reducing childhood obesity during last decade. More attention should focus on enforcing the policy and overcoming current barriers in order to minimize children's obesogenic factor.
The purpose of this study was to confirm that regular physical exercise habit and calcium intake play a role reducing the risk of cardiovascular diseae, particularly to confrim that regular exercise is important in reducing serum lipid levels. Subjects were classified into regular exercise group(more than 3 times/wk, more than 30 min per exercise) and non-regular exercise group. A convenient frequency method was used to assess the nutritional intake of subjects. Anthropometric measurement such as bodyweight and hight, and blood pressure were measured. There was no significant difference between nonexercisers and exerciser in energy intake, calcium intake and blood lipid levels. The strength of frequency of exercise may not by adequate to modify lipid profiles in premenopausal woman with normal lipid level, Although we found no significant difference in blood lipid levels, this result does not imply there are no benefits of exercise subjects. There were no signigicant correlations between age or weight with blood lipids in regular exercise group, while there were significant positive correlations between age of weight with blood lipids in non-regular exercise group. The levels of serum cholesterol, and triglyceride, blood pressure and atherogenic index increased with age in nonexercise women, Especially, atherogenic index was lower in regular exercise group. The blood pressure in nonexercise group was significantly higher than that in regular exercise group There was a highly significant negative correlation between calcium intake and blood pressure in nonexercise women, There was a highly significant negative correlation between calcium intake and blood pressure in nonexercise women. The results suggest that increased habitual physical activity and calcium intake may have desirable effects on serum lipid levels and blood pressure in premenopausal women.(Korean J Nutrition 34(1):62-68, 2001)
The purpose of this study was to confirm that regular physical exercise habit and calcium intake play a role in reducing the risk of cardiovascular disease, particularly to confirm that regular exercise is important in reducing serum lipid levels in postmenopausal women. Subjects were classified into regular exercise group(more than 3 times/wk, more than 30 min per exercise) and non-regular exercise group. A convenient frequency method was used to assess the nutritional intake of subjects. Anthropometric measurement such as body weight and height, and blood pressure were measured. There was no significant difference between non-regular exercise group and regular exercise group in energy intake and calcium intake. The total cholesterol and LDL-cholesterol concentrations in non-regular exercise group were significantly higher than those in regular exercise group. There were no significant correlations between age or weight with blood lipids and blood pressure in regular exercise group, while there were significant positive correlations between age or weight with blood lipids and blood pressure in non-regular exercise group. The levels of serum cholesterol, triglyceride, blood pressure and atherogenic index increased with age in non-regular exercise women. The blood pressure in low total Ca intake/plant Ca intake ratio group was significantly higher than that in high total Ca intake/plant Ca intake ratio group. There was a highly significant positive correlation between Ca intake and HDL-cholesterol in non-regular exercise women. And, there was a highly significant negative correlation between Ca intake and blood pressure in regular exercise women. The results suggest that increased habitual physical activity and calcium intake should be recommended by way of decreasing blood lipids and blood pressure in postmenopausal women. Previous studies have shown that plant-based vegetarian diets, which typically contain a variety of antioxidants and dietary fiber, help reduce the risk of heart disease, diabetes, obesity, and cancer. However, some studies have reported that vegetarian diets can lead to deficiencies in protein and trace minerals compared to non-vegetarian diets. This study was conducted to compare anthropometric measurements, blood parameters, dietary intake, and hair mineral status in long-term vegetarians (MV; moderate vegan, LV; lacto-ovo vegetarian) and non-vegetarians (NV). Thirty MV (12 males, 18 females; mean age, $50.58{\pm}5.05$ years), 15 LV (11 males, four females; mean age, $49.45{\pm}4.97$ years), and 30 NV (15 males, 15 females; mean age, $48.90{\pm}3.62$ years) participated. No significant differences were observed for age, height, weight, or body mass index, but body fat was significant lower in MV and LV males than that in NV males. White blood cell counts of MV, LV, and NV male subjects were significantly different. Dietary intake data showed that plant protein and plant iron intake were significantly higher in MV and LV than those in NV. Animal protein, animal fat, and animal iron intake were significantly higher in NV than those in MV and LV. A hair mineral analysis showed that calcium and iron were higher in the hair of MV and LV than those in NV. Zinc concentration in hair was not significantly different among the groups. The results suggest that vegetarian diets are adequate to sustain mineral status to at least the same degree as that of non-vegetarian diets.
The purpose of this study was to investigate the relationship between body fat and risk factors of chronic diseases in obese children and eventually to contribute to the prevention and treatment of childhood obesity. Anthropometric parameters such as height, weight, skinfold thickness, circumferences, body fat content were measured in 55 obese subjects of age 5-20. Blood pressure, serum components, daily food intakes were also considered. The average age of the subjects was 12.5$\pm$3.3yrs and the mean obesity index was 64.7$\pm$21.3%. The average percentage of body fat was 35.6$\pm$5.4% and the mean weight of lean body mass was 45.3$\pm$13.9kg. Mean total muscle weight of the subjects was estimated to be 34.11$\pm$1.3kg. The mean systolic and diastolic blood pressures of the obese were 134.8$\pm$15.8mmHg and 69.6$\pm$11.6mgHg respectively. The concentrations fo serum triglyceride, total cholersterol, HDL-cholesterol, LDL-cholesterol were estimated to be 246.0$\pm$136.4mg/dl, 257.0$\pm$54.3mg/dl, 48.2$\pm$13.1mg/dl and 158.9$\pm$53.5mg/이 respectively. The concentrations of serum GOT and GPT were 34.6$\pm$17.1U/L and 24.7$\pm$15.3U/L. The mean content of uric acid is serum was 6.2$\pm$1.9mg/dl. Of these 55 children, 82% has hyperlipidemia, 26% was abnormal liver function and 24% was hyperuricemia. One patient was diabetic. Eighty seven% of them have developed more than one complications.
This study investigated the body image, body stress, eating attitude, and dietary quality in middle school girls. Questionnaires were administered to one hundred fifty seven middle school girls in Seoul area. The subjects were categorized into the five groups according to their body mass index (BMI); 1) severely under-weight (BMI < 16.5 $kg/m^2$), 2) under-weight (16.5 $\leq$ BMI < 18.5 $kg/m^2$), 3) normal weight (18.5 $\leq$ BM I < 23.0 $kg/m^2$), 4) overweight (23.0 $\leq$ BMI < 25.0 $kg/m^2$), and 5) obese (BMI $\geq$ 25 $kg/m^2$). 7.0%, 14.6%, 58.9%, 10.2%, and 10.2% of the subjects were classified as severely under-weight, under-weight, normal weight, overweight and obese groups, respectively. Regardless of the BMI, the subjects had disturbed body image, body stress, and poor eating attitude. The actual BMIs of the normal weight, overweight and obese subjects were significantly different from their desired BMI and perceived BMI, representing these subjects dissatisfied their body shape. Almost all subjects tried to lose their body weight even in the severely under-weight and under-weight groups. There were significant correlations of BMI with body image disturbance (p < 0.05), body stress (p < 0.01) and eating attitude (p < 0.05). These results indicated that middle school girls who have higher BMI seemed to have more body image distortion, body stress and risk of eating disorder. However, any significant difference in dietary quality among the five groups was not observed even though their dietary patterns were not balanced. As a conclusion, it is required that middle school girls should correct their distorted body image and body stress. Also, efforts to improve eating attitude, dietary pattern and nutritional status in the middle school girls are needed.
Sodium is a necessary element for the body. Excessive intake of sodium is known as one of the risk factors for chronic diseases. Recently, increasing numbers of people in Korea are suffering from chronic diseases. Major causes of deaths were chronic degenerative disease with the rising aging population. Especially, the population of rural areas is growing older fast. In rural areas, it is known that under nutrition and high sodium intake were major nutritional problems. For sodium intake, there were some studies about contributing food items. They were not enough to show diets relate to sodium intakes. Thus, this study analyzed dishes contributing to sodium intakes of elderly living in rural areas. Dietary intakes using "the 24hour recall method" were used. For the analysis for sodium intakes, "Can-pro3.0" was used. Ranking of dishes by contributions of sodium intakes were Korean cabbage, kimchi (19.6%), seasoned soybean paste (5.3%), soybean paste (4.6%), soybean paste soup dried radish leaves (3.5%), hot pork and kimchi stew (3.4%) in order. Ranking of dish groups by sodium intakes was kimchies (28.3%), soup and hot soups (22.8%), stews and casseroles (9.7%), seasonings (8.2%),and seasoned vegetables (6.0%) in order. One-dish meals among cooked rice, wheat noodles among noodle and mandu, soups using the soybean paste, stews using soybean paste and kimchi, salted fish among grilled foods, stir-fried anchovy among stir-fried foods, seasoned spinach, and Korean cabbage kimchi contributed to sodium intakes. As the nutrition deficiency of the elderly living in rural areas could be a problem, and excessive sodium intakes is threatening to their health, it is needed for the senior citizens to have adequate knowledge for diets containing less sodium. And recipes for healthy food and nutrition education based on their diets are needed.
