A Nutrition Survey of Children Attending a Model Elementary School of Rural Type School Lunch Programs (경기도 용인군 농촌형 급식시범국민학교 아동의 영양실태 조사)

  • A nutrition survey of 209 children, 6 to 13 years old, in the namgok elemetnary school at Namsamyun, Yongin-gun, Kyonggi province, was undertaken in July of 1987, to investigate dietary and nutritional status. Mean value of hight was 98% of the Korean standard established by the Korean Standards Research Institute. However, in these terms, 7.7% of the subjects were proven to be short, mean value of weight was 94.5 of the Korean standard. However, in these terms, 9.3% of the subjects were proven to be moderatly underweight ; whereas 10.4% of the subjects were proven to be over weight. By the WHO criterion, 18.4% of the subjects showed lower figures of hemoglobin than anemic level of 12gm%/이. Mean urinary urea nitogen/creatinine ratio was 9.1$\pm$5.0 Carbohyudrate provided 68% of total energy intake ; protein accunted for 13% ; fat provided 19%. Energy intake was divided among breakfast, lunch, dinner and snacks in a percentage ratio of 22 : 44 : 24 : 13. The survey clarified that the elementary school feeding largely supplemented the inadequate intake of these chidren at home.

Effect of Repeated Blood Collection on the Amount of Vitamin E in Serum and Liver of the Rats Fed Standard Diet (반복된 채혈이 일반식이 흰쥐의 간, 혈청, Vitamin E 함량에 미치는 영향)

  • This study was conducted to investigate the effect of repeated blood collection on the amount of vitamin E in serum and liver of the rats fed standard diet. Rats (Sprague Dawley strain) were fed standard were fed standard diet for several weeks. Blood was collected with on improved cardiac puncture method at regular intervals . The amount of vitamin E analogs were measured by the HPLC. 1) The growth curve of all groups was normal, but bodyweight gains of group II were significantly decreased in case of 7 week- rats whose blood was collected at intervals of two weeks. 2) The amount of vitamin E analogs in serum of rats during growth increased, but continuos blood collection could not affect on the amount of vitamin E in serum. Especially, in the group I serum vitamin E equivalent were significantly higher in case of 7 weeks than first week. 3) The amount of liver vitamin E analogs were changed irregularly, and especially, $\alpha$-Tocopherol equivalent were significantly higher in group II then other groups.

Lactulose Contents in Market Milks (시판 우유중의 Lactulose 함량)

  • The lactulose contents in market milks were analyzed by gas chromatographic method. The method is evaluated for accurac and reproducibility using phenyl-$\beta$-D-glucoside as an internal standard. The response factor(RF) of lactulose of standard mixture was 1.15 the recoveries were 97.4-101.3% and the reproducibility was determined on the coefficeitns of variation 24.8% for pasteurized milk and 4.6-4.9% for UHT milk The lactulose contents of 16 brands of the market milks determined were 5.3-59.7mg/100ml in UHT milk and 1.3-1.8mg/100ml in pasteurized milk.

Effect of Tungstate Supplemented Diet on the Toluene Metabolism in Rats

  • To evaluate an effect of oxygen free radical on the toluence metabolism, the rats were fed on a tungstate sup-plemented diet(0.75g of tungstate included in 1kg of standard diet) or a standard diet. To the present xanthine oxidase deficient animal model, toluene(0.15ml/100g of body weight) was injected and then the animals were sacrificed after 24 hrs to determine the toluene metabolizing enzyme activities and toluene metabolite, hippuric acid concentration. The increasing rate of urinary hippuric acid concentration was significantly(p<0.01) higher in tungstate fed animals than in standard diet fed ones. Hepatic cytochrome P_450 contents were significantly higher(p<0.01) in tungstate fed animals than in standard diet fed ones. And tungstate fed animals showed a ten-dency of higher activities of benzylalcohol dehydrogenase while a significantly higher activites of benzaldehyde dehydrogenase (p<0.01) than standard diet fed animals. In conclusion, the more possibly reduced oxygen free radical in toluene-treated rats fed with a tungstate supplemented diet than in those fed with a standard diet would be responsible for the enhancement of toluene metabolism.

A Comparative Study on the Knowledge, Attitude and Behavior of Community regarding Irradiated Foods in Incheon Area (방사선조사식품의 지식, 태도, 행위에 관한 비교 연구)

  • This paper presents basic supporting data necessary for planning an educational intervention strategy as part of a communication strategy that would form an extensive national consensus on and enhance national understanding of irradiated foods. A survey was conducted to collect data on the knowledge, attitude, and behavior with regard to irradiated foods among community. It appeared 133 male (36.5%) and 231 women persons (63.5%). After irradiated food were analyzed, whole knowledge, attitude, and behavior standard to the irradiated food is 2.32, 11.90, and 12.92 scores respectively. The knowledge, attitude, behavior of irradiated foods according to person characteristics were analyzed. The knowledge on irradiated food was statistical difference by gender, age, education standard and occupation (p<0.05), whereas no statistical difference marriage (p>0.05). The attitude on irradiated food was statistical difference by age, education standard and occupation (p<0.05), whereas no statistical difference gender (p>0.05). The behavior on irradiated food was statistical difference by age, education standard and occupation (p<0.05), whereas no statistical difference gender and marriage (p>0.05). The coefficient of correlation of knowledge and attitude in irradiated food showed positive correlation of r=0.324 (p<0.01). The coefficient of correlation of knowledge and behavior in irradiated food showed negative correlation of r=-0.118 (p<0.05). The coefficient of correlation of attitude and behavior in irradiated food showed negative correlation of r=-0.316 (p<0.01).

Recognition and Buying Practices of Street-vended Foods among College Students (대학생의 길거리 음식에 대한 인식 및 이용실태)

  • The purpose of this study was to investigate recognition and buying practices of street-vended foods among college students in Chungbuk Area. A general dietary practices including snacks, related factors of buying street-vended foods were analyzed. The results showed that many students had irregular dietary habit, especially more than eighty percent of them skipped breakfast. More than sixty percent of students had frequent snacks. It was investigated that college students ate street-vended foods two or three times per week. The order of frequent choice of street-vended foods was rice cake with pasted red pepper(51.9%), sweet and sour pork(19.7%), sundae(5.7%). In microbiological examination, MPN of Coliform and CFU of standard plate count was over a standard value respectively, and acid value of frying oil revealed over value for maximum limitation point. Therefore, food and equipment in street-vended food store was evaluated as poor sanitation status. Most of college students have opinion that street-vended food store must be kept the line. In conclusion, nutrition education for college students should be required to protect them from unsafe street-vended foods.

Evaluation of the health status of preschool children stratified based on the weight-length index (WLI)

  • This study was conducted to prepare basic materials and offer advice regarding dietary habits to prevent and cure childhood obesity by comparing and analyzing dietary habit, nutritional status, blood factors, and mineral contents of hair. All subjects were stratified by their weight-length index (WLI). According to the standard WLI values, 64.9% of children were within the normal value, 13.5% of children were underweight, and 21.6% of children were overweight and obese (WLI ${\geq}$ 110%). Overall, the score assessed dietary habit for all children was $21.32{\pm}2.55$ point (921 subjects), with 5.1% of children having excellent dietary habits and 3.1% having poor dietary habits. Additionally, 37.9% of underweight children, 37.6% of normal weight children, and 43.2% of overweight and obese children consumed higher amounts of protein than underweight children did (meat, fish, eggs, and soy products) (P < 0.05). Overweight and obese children consumed more fried foods than underweight or normal weight children (P < 0.05). Moreover, 38.0% of the children had hemoglobin levels of 12 g/dl, while 7.6% were anemic (11.1 g/dl). When a hematocrit level of 33% was taken as the standard, 11.0% of children were anemic. The plasma transferrin content was $263.76{\pm}54.52$ mg/dl in overweight and obese children. The mean values of Fe, Cu, Ca, Cr, Mn, Se, Na, K, Li, V, Co, and Mo were within the reference values, but the Zn concentrations of underweight, normal weight, and overweight and obese children were $67.97{\pm}28.51$ ppm, $70.09{\pm}30.81$ ppm, and $73.99{\pm}30.36$ ppm, respectively. The Zn concentration of overweight and obese children ($73.99{\pm}30.36$ ppm) was lower than that of the standard value (180~220 ppm). Therefore, a nutritional education program and new guidance for dietary pattern should be developed to reduce the number of underweight and overweight and obese children.

National Standard Food Composition Tables Provide the Infrastructure for Food and Nutrition Research According to Policy and Industry (식품 영양 연구, 정책, 산업의 기반이 되는 국가표준식품성분표의 활용)

  • The National Standard Food Composition Table published by the Rural Development Administration (RDA) provides the foundations in research, nutrition monitoring, policy and dietary practices in Korea. This databases consists of several sets of data including food descriptions, nutrients, portion weights, and source of data. The National Standard Food Composition Table have been published since 1970 and, recently, new version (8th edition) of Food Composition Table which has quantitative and qualitative nutrient data is released in 2011. In addition, the User-friendly Food Composition Table is divided into adult, children, and elderly categories depending on the subjects because we need different nutrients according to various ages. The Tables of Food Functional Composition is firstly edited in 2009. RDA published the minerals and fatty acids composition table, tables of amino acid, fat-soluble vitamin composition table, and the cholesterol table. The resulting database will be widely used. The users of the databases are from diverse fields, includeing federal agencies, the food industry, health professionals, restaurants, software application developers, academia and research organizations, international organizations, and foreign governments ect. Therefore, consistent improvements of the database is important, so that people can better address such health challenges by providing reliable and accurate data.

Microbiological Hazard Analysis and Preparation of Standard Recipe for Bellflower Roots with Seasonings Served in a University Foodservice Operation (대학급식에서 제공되는 통도라지 무침의 미생물학적 위해분석과 표준레시피 작성)

  • This study was intended to suggest HACCP-based standard recipe for bellflower roots, classified as no thermal cooking process, served in a university foodservice operation. The time-temperature and microbial contamination level in each cooking step were analyzed. The temperatures of bellflower root, peeled garlic and green onion at receiving were at 13.8$\pm$2.8, 12.6$\pm$2.9 and 13.7$\pm$$0.8^\circC$ respectively, which were above the temperature limit. The time consumed for pre-preparation was up to 90 min at room temperature having high microbial growth potential. The levels of total plate counts (TPC) of bellflower root and garlic were over the limit of $10^6$ CFU/g as were the numbers of coliforms in bellflower roots. There were no microbial reductions in pre-preparation and cooking, which resulted in over $10^5$- $10^6$ CFU/g of TPC at service step. Two CCPs identified were washing/sanitation at pre-preparation and service steps. The control measures were washing/sanitation and temperature control. It was verified that CCPs for no cooking process developed in preceding studies were applicable for the microbiological food safety of this menu item. The HACCP-based standard recipe was developed to produce a quantity for 100 servings by observing the critical limits established for CCPs. These results suggest that the selection of proper provider is imperative to control the microbial contamination of raw materials at purchasing step. Also, the sanitary education program should be developed for the employees to understand and comply the HACCP plan and standard recipe.
