자취하는 남녀 고등학생의 영양 지식과 식생활 관리 및 식사 실태 (A study on Nutrition Knowledge, Meal Management and Dietary Intake of Self-boarding Highschool Students)

  • The purpose of this study was to investigate the knowledge on nutrition, meal management and dietary intake of self-boarding highschool students. Total of 354 self-boarding students living in Ku-mi and Kim-chon, 182 males and 172 females, who cooks foods for oneself participated in this study. The data were collected through questionnaires and the results were summarized as follows: 1. Most subjects had adapted the lifestyle of self-boarding from the 1st grade of highschool, and half of them lived alone. About two-thirds of subjects visited their home once a week or more, and most of their boarding rooms were located at near the highschool they attended. 2. Their nutrition knowledge score was rather high with average 13.95 point out of possible 20. Female students got more points than male students. 3. In meal management, foods purchasing and sanitary control were managed quite well but meal planning and cooking were not managed well enough. In general, meal management score of female students were higher than those of male students. 4. About the dietary intake, female students took more various foods than male students as judged by foods intake frequency score. Two-thirds of subjects often skipped meals and only half of them always took boxed lunch. Also they depended too much upon processed and instant foods. 5. Meal management score showed significantly positive correlations with nutrition knowledge score and with foods intake frequency score. But the correlation between nutrition knowledge score and foods intake frequency score was not significant.

대학생의 영양지식, 식태도 및 식행동에 대한 영양교육의 효과 (Effects of Nutrition Education on Nutrition Knowledge, Dietary Attitudes, and Food Behavior of College Students)

  • The purpose of this study was to investigate the effects of nutrition education on nutrition knowledge, dietary attitudes, and food behavior of college students. The subjects of this study were 350 college students attending a university. The education group students received nutrition education three hours per week during a 4-week period offered in a 'Home Economics' course. A total of 150 students in the education group and 200 students in the non-education group completed pre-test questionaires examining nutrition knowledge, dietary attitudes, and food behaviors. Major findings were as follows : nutrition knowledge, and food behavior of the education group were improved compared to the non-education group. But significant changes were not observed in dietary attitudes in the education group. There were higher correlations between nutrition knowledge and dietary attitudes score, and between dietary attitudes and food behavior score at the posttest than those at the pretest. These results suggest that nutrition education for college students can effectively improve their nutrition knowledge and food behaviors.

경기지역 일부 고등학생의 식습관, 생활스트레스 및 영양지식과의 관계 (Relationship between Dietary Habits, Life Stress and Nutrition Knowledge of High School Students in Gyeonggi Area)

  • Objectives: This study was performed to examine dietary habits, life stress, and nutrition knowledge among high school students in Gyeonggi area. Methods: A total of 431 high school students (210 males, 221 females) in Gyeonggi area participated in this study from November to December of 2011. The study was a questionnaire-based survey that included dietary habits, dietary attitudes, life stress, and nutrition knowledge. Results: Body weight, height, and body mass index were all higher in male students than in female students (P < 0.001, respectively). For dietary habits, the average score (P < 0.01) and scores for considering combination of food groups (P < 0.05), eating green and orange vegetables (P < 0.05), eating meat, fish, eggs, or beans everyday (P < 0.05), drinking milk (P < 0.001), and eating seaweed (P < 0.01) were higher in male students than in female students. For dietary attitudes, the average score (P < 0.05) and scores for the five items were significantly different between male and female students. Male students showed a significantly lower nutrition knowledge score than female students (P < 0.05). Life stress score of students largely was attributable to academic factors, and female students showed higher stress score for academic, personal, and surrounding environmental (P < 0.05, respectively) factors than male students. Dietary habit score (P < 0.01) and nutrition knowledge score (P < 0.05) in female students as well as dietary attitude score (P < 0.05) in male students were negatively correlated with life stress score. Dietary habit scores in male and female students were positively correlated with dietary attitude score (P < 0.01, respectively). Need for nutrition education was significantly higher in female students than in male students (P < 0.05). Conclusions: This study provides basic information on dietary habits, dietary attitudes, life stress, and nutrition knowledge according to sex and suggests gender-specific practical nutrition education programs to address undesirable dietary habits and attitudes in students with higher stress levels.

대전지역 대학생의 식품섭취빈도에 영향을 미치는 요인 연구 (Study on the Factors Influencing Food Consumption by Food Frequency Qustionnaire of University Students in Taejon)

  • The purpose of this study is to analyze the foods which 424(male 171, female 253) university students surveyed consumed frequently and to evaluate and the factors affecting their food consumption patterns. The survey was conducted at the beginning of nutrition courses each semester, March and September, 1998, with the questionnaire composed of general information, food, drinking and smoking habits, nutrition knowledge/attitude and food frequency questionnaire. The rates of alcohol drinking in male and female students were 89.2% and 78.1% respectively, and the rates of smoking were 68.1% and 1.6% in males and female. The nutrition knowledge score was higher in females than in males, but the nutrition attitude score was not significantly different between the male and female groups. The foods frequently consumed among students were cooked rice(14.3/week), kimchi(11.1/week), coffee(5.7/week), vegetables in soup, jjigae and jorim(3.5/week), carbonated beverages(3.3/week), cooked mixed rice(3.2/week). Ramyun and chocolate·candies·biscuits were frequently consumed, too. There were several factors influencing food consumption patterns. These were gender, regularity of mealtimes, the status of alcohol drinking and smoking, residence type and the levels of nutrition knowledge and attitude. Males ate more frequently cooked rice, coffee, carbonated beverages, ramyun, functional beverages and ham·sausage, while females ate more frequently cooked mixed rice and fruits. Those who had the habits of irregular mealtimes seemed to eat more soft drinks, instant foods and snacks. These trends were also found in the alcohol drinking and smoking groups. High level groups for nutrition knowledge of attitude score chose raw yellow green and green vegetables, cooked mixed rice, soybeans and seaweeds more frequently than the other groups. On the other hand, low level groups for nutrition knowledge or attitude score were apt to eat carbonated beverages and ramyun more frequently. Therefore, more attention should be taken to males, having habits of irregular mealtimes, alcohol drinking and smoking, and low level groups for nutrition knowledge or attitude score so as to improve their health.

유치원 아동을 둔 어머니들의 영양교육 프로그램의 효과 평가 (Effect-Evaluation of Nutrition Education Program for the Mothers of Preschool Children in Kindergarten)

  • This study was designed to develop the nutrition education program for the mothers of preschool children in kindergarten and evaluate its educational effects. Nutrition education program was developed on the basis of the concept which consisted of nutrition, nutrients, menu planning, cooking, recognition of nutrition education, food selection and menu planning, will of nutrition improvement. Subjects consisted of 41 mothers. All the subjects completed a pretest and a posttest. The nutrition knowledge score of pretest was 33.77$\pm$12.53 and that of posttest was 55.25$\pm$16.32 and the difference was significant(p<0.001). The Food attitude score of pretest was 66.40$\pm$6.26 and that of posttest was 70.76$\pm$6.05 and the difference was significant(p<0.001). Food attitude score of high score-group of nutrition knowledge was higher than that of low score-group of nutrition knowledge significantly, in pretest(p<0.001) and posttest(p<0.01) respectively. Nutrition knowledge score and food attitude score of children of educated parents of nutrition program was higher than that of children of uneducated parents of nutrition program but the difference was not significant. The nutrition densities of vitamin A(p<0.001), vitamin B$_1$(p<0.05), vitamin B$_2$(p<0.001), folic acid(p<0.05), Ca(p<0.001), p(p<0.001), calculated using the INQ(Index of Nutritional Quality), was significantly improved by nutrition consult and education program. The MAR(Mean Adequacy Ratio) of pretest was 0.79$\pm$0.23 and that of posttest was 0.91$\pm$0.16 and the difference was significant(p<0.05). (Korean J Nutrition 34(2) : 230-240, 2001)

충남지역 고등학생의 성별에 따른 영양지식, 식행동 및 식습관 연구 (A Study on the Nutrition Knowledge, Dietary Behaviors, and Dietary Habits according to the Gender in High School Students in Chungnam Area)

  • Aim of this study is to investigate the nutrition knowledge, dietary behaviors, and dietary habits by the gender in high school students in Chungnam province. Girls students had a higher score than boys students for nutritional knowledge, not in the significant difference. However, boys students had a higher score for dietary behaviors than girls students. Dietary habits showed a significant difference in the unbalanced food habit and eating speed by the gender, and the eating speed of boys students was faster than that of girls students. For boys students, the nutritional knowledge and dietary behaviors did not have the significant correlation. Otherwise, girls students had the positive correlation between the nutritional knowledge and dietary behaviors, and had the characteristics of behaviors that the higher the nutritional knowledge score, the better eating habit. In addition, the boys and girls students had the positive correlation between the score of nutritional knowledge and the frequency of breakfast, and the score of nutritional knowledge and the frequency/regularity of breakfast, respectively. Because some dietary habits/behaviors are related closely to their nutritional knowledge, the high school students need the systematic and steady nutritional education to apply their known nutritional knowledge to actual life.

  • The purpose of this study was to present the basic data for the education of nutrition to female teachers by surveying the degree of nutritional knowledge, the attitute toward nutrition and eating habits of the female teachers, and analyzing the present dietary food. 1. The average score of their nutritional knowledge was 17.53 (the highest mark was 25) and the percentage of the right answers was 73.6. 2. The nutritional knowledge was related to their ages, and whether or not they majored in domestic science. Younger and domestic science majors scores of nutitional knowledge were shown to be higher. 3. They had dinner more regularly than breakfast or lunch and the score of nutritional knowledge was higher in proportion to the regularity of their breakfasts. As nutritional knowledge was reflected in their daily lives and bread was used as a substitute of their meals, the degree of their nutritional knowledge was higher. 4. For self evaluation of nutritional knowledge, the higher the score of their nutritional knowledge was, the more they thought they knew and those with high scores seemed to get information about nutrition through specialized books and cookbooks.

서울과 경기지역 남녀 중학생의 영양지식에 따른 영양태도, 식행동 및 영양섭취 상태에 관한 연구 (A Study on Nutritional Attitude, Food Behavior and Nutritional Status according to Nutrition Knowledge of Korean Middle School Students)

  • The purpose of this study was to investigate nutrient intake and food behavior according to the nutrition knowledge of middle school students residing in Seoul and Kyunggi-do, Korea. Anthropometric measurements and questionnaires, including 24-hr recall of dietary intake, were collected from 543 male and female middle school students. They were assigned to one of five groups according to their nutrition knowledge : very high group (VHG ; 90 - 100 score), high group (HG ; 80 - 90 score), normal group (NG ; 70 - 80 score), low group (LG ; 60 - 70 score) and very low group (VLG ; < 60 score), and comparisons were made. The mean age of the subjects was 13.7 years old. The mean height, weight, and BMI of male and female students were 161.9 cm, 52.6 kg and 20.2 kg/$m^2$, 157.0 cm, 50.4 kg, and 20.4 kg/$m^2$ respectively. Female students skip breakfast and dinner more frequently than male students do. Male students skipp lunch and eat fast foods more frequently than females do. Protein, calcium, vitamin B$_1$, vitamin B$_2$, niacin, vitamin C, fat, and animal protein intakes in females are shown to be related to their nutrition knowledge. Calcium, protein, animal protein, vitamin B$_2$and niacin intakes are significantly lower in the VLG than in the others. However, vitamin B$_1$and vitamin C intakes are significantly lower both in VHG and VLG. Fat intake in VHG is lowest. Nutrition knowledge of male students is correlated with mothers knowledge, nutrition attitude and nutritional status. On the other hand, in female students, nutrient consumption was lowest in subjects whose nutrition knowledge was highest and lowest. Therefore, nutrient consumption is affected by nutrition knowledge. However, in female students, possibly due to wrong information on diet or prejudice and outlook, nutrient consumption was low even when they scored high in nutrition knowledge. In conclusion, nutrition knowledge of male students is affected by the mothers nutritional knowledge and attitude. Therefore, nutrition education for mothers is very important. In male students, as their nutrition knowledge is low, their nutrient consumption is affect. These results indicate nutrition education and correct information for body image, balanced diet, regularity of meals and food selection for middle school students are required at both school and home.

식품영양학 전공 여대생과 비전공 여대생의 외식산업식품에 대한 식생활 태도 조사 (A Study of Dietary Attitude on the Product of Food Service Industry in Nutrition Major and Non-Major College Women)

  • This survey was carried out to investigate the effects of dietary attitude on the nutrition knowledge, food habits and the intake of instant food, convenience food and fast food between two groups of college women, a nutrition major group and nutrition non-major one. Questionnaires were completed by 214 nutrition majors and also by 145 non-majors. Nutrition majors showed better average in meal time regularities per week than nutrition non-majors. And nutrition non-majors had a higher frequency rate in taking of instant food and fast food than nutrition majors. In the case of both college women, those who take a meal regularly at each meal times have a higher score in food habits. The women who ate instant foods more frequently got a lower score in food habits, bot the frequency of the intake of instant foods did not affect the score of nutrition knowledge On the other hand, the women who had fast foods more frequently got a higher score in food habits and lower score in nutrition knowledge. When college women have a little of nutrition knowledge, they have a tendency to keep their meal time regularity and right dietary attitude pattern. In the dining-out pattern, the college women liked to eat flour foods and they preferred western foods than Korean foods. The motivation of food selection was for convenience and for time saving which were the reason for satisfaction to the products of food service industry. The products of food service industry were found to be unsatisfactory in nutrition and sanitation. Therefore, we must be mute aware of preventing the disappearance of Korean traditional foods and for developing dietary culture successively, the products of food service industry which are more suitable for Korean should be developed.

경남지역 학교급식 영양사의 영양지식 및 식생활 태도 (Nutrition Knowledge and Dietary Attitudes of the School Foodservice Dietitians Working in Kyungnam Area)

  • This survey was conducted in February 24, 1999, in order to investigate the nutritional knowledge and dietary attitude of the school dietitians working in Kyungnam area. Subjects consisted of 305 school dietitians of which 163 married and 141 unmarried. The results obtained are summarized as follows : The average nutritional knowledge score was 10.50 out of possible 15 points, and dietary attitude score was 69.36 out of 100 points. Most of the subjects belonged to "Fair" group in terms of nutritional knowledge and dietary attitude level. Married dietitians scored significantly higher on dietary attitudes than unmarried dietitians (p<0.05). The correlation between nutritional knowledge score and dietary attitude score was not statistically significant(r=0.107)
