  • This study was made to provide basic materials required to develop the program for desirable change of eating behavior which might be regarded as the aim of nutrition education. In this study, the relationship between the factors known to be affecting eating behavior like nutrition knowledge and dietary self efficacy was examined with high grade elementary students in Gangwon Province. The results are as follows; First, positive relationship was observed with significant difference(p<0.001) in the relationships between eating behavior and dietary self efficacy(r=0.465), between nutrition knowledge level and eating behavior(r=0.216) and between nutrition knowledge level and dietary self efficacy(r=0.312). Second, the ratio explaining the effect of dietary self efficacy and nutrition knowledge on eating behavior was 22.3%, and it affected in the order of significance level such that dietary self efficacy(p<0.001) and nutrition knowledge level(p<0.05). Third, the level of desirable eating behavior was consistent with the level of nutrition knowledge. And the scores of nutrition knowledge were $28.97{\pm}4.66$ for 'poor' group, $30.01{\pm}3.85$ for 'normal' group, $31.13{\pm}3.94$ for 'good' group and $31.75{\pm}4.10$ for 'excellent' group. When the scores of eating behavior was considered in accordance with the level of nutrition knowledge, there was difference between the groups with poor and normal scores and the groups with good and excellent scores(p<0.001), however, there was no difference between poor and normal group, and between good and excellent group. Fourth, it was found that dietary self efficacy affected the eating behavior level by level. The eating behavior score was $23.82{\pm}5.25$ for the poor dietary self efficacy group, $26.88{\pm}4.00$ for the normal group, $30.27{\pm}3.66$ for the good group and $32.81{\pm}3.79$ for the excellent group. • We aimed to evaluate the effect of nutrition education program on nutrition knowledge, dietary behavior, dietary intakes and anthropometric parameters in primary school children. Eighty five 4th grade children (boys = 43, girls = 42) were enrolled in the intervention program for 5 months. The subjects were asked to fill out a questionnaire about nutrition knowledge and dietary behavior two times, at the baseline and after completion of the program. Dietary intake information was collected from participants using a 3-day food record and their anthropometric parameters were measured. Upon completion of the intervention program, both nutrition knowledge and dietary behavior scores were significantly improved in all subjects. Energy intake was increased from 1,571.9 kcal to 1,734.1 kcal with significant improvements in nutrient density for protein, Ca, P, K, vitamin A and niacin. While subjects' height, weight, lean body mass and soft lean mass were significantly increased during the program, significant decreases were observed in the rohrer index, percent body fat, waist-hip ratio and body fat mass. The changes in nutrition knowledge scores were positively correlated with the changes in dietary behavior scores, micronutrient intakes and anthropometric parameters. These results indicate that enhancement of nutrition knowledge through well-planned long-term nutrition education program is effective not only for the improvement of dietary behaviors and dietary intakes but also for the positive changes in anthropometric parameters among primary school children.

  • With recent increases in demand for women's social participation, children have tended to favor western-style foods and dislike vegetables (Veg.). The objective of this study was to evaluate dietary behavior and Veg. intake in 612 elementary school children (339 boys; 273 girls) in Gyeonggi-do. 66.5% of the subjects reported that they liked Veg. The most frequent reason given for this preference in Veg. liking group was that vegetables were 'delicious' (35.6%), followed by 'nutritious' and 'frequent intake'. The most frequent reason given for disliking Veg. in the Veg. disliking group was that vegetables are 'not delicious' (94.6%). Approximately half of the subjects had correct knowledge about vegetables. The total score of general nutrition knowledge was 7.7 points (a perfect score is 10 points) and the majority of students generally had good dietary behaviors. The Veg. liking group scored higher on knowledge about Veg., general nutritional knowledge, dietary behavior, and Veg. preference than did the members of the Veg. disliking group (p<0.001). The 'active' group had the highest score for dietary behavior (p<0.001), and the scores for dietary behavior and Veg. preference increased with increasing self-rated health status (p<0.001). The score of normal BMI group for nutritional knowledge about Veg. was higher than that of the underweight group (p<0.05). The higher self-rated academic score group showed higher on knowledge about Veg., general nutrition knowledge, dietary behavior (p<0.001) and Veg. preference (p<0.05). Dietary behavior and preference of Veg. were positively correlated with nutritional knowledge. To improve health by increasing Veg. intake, education about the nutritional importance of Veg. should be needed, and continuous nutritional education is recommended to foster good food habits and Veg. preferences in children.
