The results were as follows. Total plate count, filamentous fungi, coliform, and Staphylocuccus aureus were detected from children's hands just before band washing education. According to the two-week hand washing education, such education was found effective in keeping the children's hands clean and safe. • The purpose of this study was to identify the relationship between the levels of foodservice management activities and job satisfaction of the dietitians in elementary schools. Out of 130 questionnaires distributed to elementary school dietitians in Incheon, 127 were returned and analyzed ($98\%$ response rate). The questionnaire included two multiple-item scales for measuring foodservice management activities and job satisfaction, respectively. All the items in the scales were coded 1 to 5 for 'certainly no', 'no', 'neutral', 'yes', and 'certainly yes' and grouped by using factor analyses. Most of the responding dietitians were working for schools in urban areas and have independently managed on-site kitchens. The 19 items on food service management activities were grouped into 6 factors and the mean scores of the levels of Personnel Hygiene Management, Education & Training, Sanitation & Safety Management, Menu Quality Management, Service Management, and Environment Management were 4.76, 4.26, 4.24,4. 05, 3.61 and 3.39, respectively. The 23 items on job satisfaction were grouped into 4 factors and the mean scores of the satisfaction levels of Systematic Environment, Job Duty, Job Condition, and Physical Environment were 3.38, 2.83, 2.53, and 2.08, respectively. Overall, the levels of food service management activities and job satisfaction were positively associated with a correlation coefficient of 0.254 (p > 0.01). In particular, satisfaction levels on job duty itself and systematic environment were positively associated with the levels of overall management activities. The results suggest that improving dietitians' job satisfaction could increase the levels of management activities of school foodservice dietitians, resulting in quality improvement of school food service.

On the other hand, some negative changes were found in newly introduced chocolates in comparison to previous ones. Overall, policy implementation on foods seemed to induce changes in nutrient contents of adult's favorite foods. In particular, nutrition education is reported to have a positive impact on adult's frequency and preference for processed foods, and more systematic and continuous nutrition education measures should be devised to help adult as consumers selectively purchase healthy foods. This research is meaningful in that it is the first study to analyze the quality changes of adult's favorite foods since the high-calorie and low-nutrient food management policy.

  • The objective of the current study was to examine associations of whole grain consumption with socio-demographic (i.e.: sex, age, household income, education, marriage status) and certain eating behavior factors (i.e.: dish source, eating place, meal type) among a generally healthy Korean population. Using twenty-four hour recall data from the 2007-2008 National Health and Nutrition Examination Surveys, whole grain intake (g/day) was calculated for a total of 8,836 generally healthy Koreans aged 6 years and higher. The study subjects had very low whole grain intake. Specifically approximately 60% of the subjects reported no whole grain consumption on the survey day, and mean daily intake ranged from 8.0 g to 15.1 g in different gender and age groups. Living with a spouse was found to be a positive environment factor for whole grain consumption, especially among men. As household income levels increased, whole grain consumption status also improved. The proportion of non-consumer was lowest in a 6-19 year group, and mean intake amount was highest in middle-aged adults. Major dish sources for whole grain consumption included boiled rice with mixed grains, corn, boiled rice with brown rice, cereal products, and other types of boiled rice. It was found that whole grain consumption was highly affected by eating places rather than meal types. The best contributing eating place was home in each age and gender group. The study findings may be useful in planning nutrition education strategy and formulating dietary behavior guidelines for whole grain consumption improvement.

A total of 453 collected questionnaires were used for analysis. SPSS v.21.0 Statistical Package Program was used for the statistical process. For the results regarding interpersonal relationship type of dieticians, open-type (73.3%) was the highest, followed by self-assertive-type (23.0%), isolated-type (2.6%), and careful-type (1.1%). Regarding overall job satisfaction, 'human relation' was the highest, followed by 'job itself', 'working environment', and 'personal rating & welfare system', in that order. According to interpersonal relationship type, in the case of 'open-type' or 'careful-type', job satisfaction was relatively high. Regarding overall job stress, 'job demand' was the highest, followed by 'lack of reward', 'organizational system', 'interpersonal conflict', 'occupational climate', 'job insecurity', and 'insufficient job control', in that order. In accordance with interpersonal relationship type, overall job stress index was high in terms of 'self-assertive-type' or 'careful-type'. For the results of analyzing the correlation between job satisfaction and job stress index, all areas showed statistically significant negative correlations. Multiple regression analysis was performed to study the effects of job stress on job satisfaction mediating interpersonal relationship type. Job stress had different effects on job satisfaction in terms of 'open-type' and 'self-assertive type'.
