  • The purpose of this study was to investigate the association between dietary behavior and temperament & character in preschool children, and to offer basic data that can be applied for nutrition education and counseling. A total of 211 parents of preschool children aged 3~5 years performed the Korean version of Preschool Temperament and Character Inventory (K-psTCI), a questionnaire based on Cloninger's seven-factor model of personality, along with a questionnaire about the dietary behaviors of their children. K-psTCI represented seven factors such as harm avoidance (HA), novelty seeking (NS), reward dependence (RD), persistence (P), self-directedness (SD), cooperativeness (CO), and self-transcendence (ST). The subjects were divided into either the high rank group or low rank group based on the mean score of each factor. The high rank group of HA showed significantly less physical activity and less appetite than the low rank group of HA. The children in the high rank of NS were more likely to have picky eating and a late night snack. The children in the low rank of SD or CO were more likely to have undesirable dietary behaviors, such as picky eating, too much snacking, and lower appetite than those in the high rank of SD or CO. In conclusion, individual temperament & character in preschool children may be associated with their dietary behavior, and understanding temperament & character in children may be important facts to screen and to develop an effective nutrition education program for children.

  • To study the importance of family meals in adolescents, 251 middle school students were surveyed through a questionnaire on their family meal patterns, dietary behaviors, food intake, and life satisfaction. The family meals were defined as "meals with all family members living together" by 62.2% of the students. For the frequency of family meals, 42.2% of the students replied having family meals "More than once a day". A common reason for the difficulty in having a family meal was a "lack of time" (73.3% of the students). Students tended to respond that they would be most fond in having meals with entire family members with traditional Korean food. Having more frequent family meals was found to benefit both individual and familial dietary behavior. In terms of food intake according to the frequency of family meals, the group having frequent family meals consumed significantly more rice, tofu, legumes, meats, fishes, eggs, green vegetables, seaweeds, fruits, milk, and milk products. This indicates that students can achieve a balanced diet through family meals. In terms of emotional status, the group having more frequent family meals showed a higher satisfaction with their daily life, health, nutritional status, and care from their relatives. In terms of personal mental status, the group having more frequent family meals was also found to be more effective at controlling undesirable emotions such as loneliness, indignation, and lethargy. As a result of this study, students in the group having more frequent family meals were found to have a positive dietary behavior, a balanced nutrition, a higher life satisfaction, and a more stable mental status. This result is useful as nutritional and educational information in schools to impress upon the public the importance of family meals for adolescents.

  • This study was designed to investigate dietary life related to sodium of participants in hypertension and diabetes preventive education at the public health center located in Incheon Metropolitan City. Subjects were comprised of 301 adults (males: 102, female: 199) of age 50 years and above. The questionnaire for dietary life and salty taste assessment were performed on the subjects. Data were analyzed using SPSS package (ver. 18.0). According to the result of questionnaire for dietary behavior, 70% of the subjects were in the low salt intake group (p<0.001). In the result of questionnaire for dietary frequency, all ages groups were in the low salt intake group (p<0.01). The data of questionnaire for dietary behavior showed that the subjects of age above 75 years preferred salted seafood, soup, and kimchi (p<0.01). The data of questionnaire for dietary frequency showed that the subjects of age between 65 and 74, least chose fried kimchi, noodle, and soybean paste soup with clams (p<0.05), and the healthy adult groups chose kimchi stew, ssam and ssamjang (p<0.05). The score for dietary behavior in male subjects was higher than female subjects (p<0.01). In particular, the score for dietary frequency was the lowest in the subjects of age between 65 and 74 (p<0.01). The mean value of salty taste assessment in the subjects was 0.41% which is higher than the ideal value of 0.3% (p<0.01). • Purpose: The theory of planned behavior (TPB) was used to investigate how the psychological constructs of attitude, subjective norms, and perceived behavioral control (PBC) affect the individual intention of behaviors in adults. Social support is also important in enabling the stability of healthy eating. This study examined the relationship between three major constructs of TPB as well as social support and the intention of healthy dietary behaviors in adults residing in Beijing, China using the extended TPB. Methods: The study questionnaire was based on previously validated items and an online survey was conducted from October to November 2020. Using a total of 244 Chinese adults in Beijing, multiple linear regression analysis was used to test the relationships between three major constructs of TPB as well as the social support and intention of healthy eating. Results: Among the three major constructs of TPB, subjective norms (p = 0.044) and PBC (p = 0.000) were significantly related to the behavioral intention of healthy eating (p = 0.000), and the model explained 76.6% of the variance of the behavioral intention from the three constructs of TPB included in the multiple linear regression model. The additional inclusion of social support to the model did not increase the explanatory power of the model to describe the behavioral intention of healthy eating. The subjective norms (p = 0.040) and PBC (p = 0.000) were still significant where social support did not explain the variance of the behavioral intention adequately. Conclusion: The subjective norms and PBC may be potential determinants of the behavioral intention of healthy eating in adults residing in Beijing, China. These study results can be used to promote healthy eating in Chinese adults living in urban areas. Large-scale intervention studies will be needed to determine if social norms and PBC predict the actual behaviors of healthy eating in Chinese adults.

  • The purpose of this study was to compare the anthropometry, serum lipid levels, dietary behavior and health-related behaviors of shipbuilding workers. The education level was significantly higher in office workers than laborers, while age, monthly income and working years were not significantly different between both groups. The serum triglyceride, glucose concentration and AI were significantly higher in office workers than in laborers, but the serum LDL-cholesterol and HDL-cholesterol concentrations were significantly higher in laborers than in office workers. The frequency of breakfast and coffee intake was significantly higher in office workers than in laborers. In the office workers, age was positively correlated with systolic blood pressure but was negatively correlated with hemoglobin and hematocrit concentration In the laborers, working year was negatively correlated with hemoglobin, total cholesterol and serum LDL-cholesterol concentrations. Exercise was negatively correlated with total cholesterol concentration, triglyceride and LDL-cholesterol concentration and AI in the office workers. The results of this study showed that office workers are more prone to related chronic degenerative diseases. Therefore, nutritional education for the provention of chronic degenerative diseases of shipbuilding workers needs to be more focused on improving the health status of office workers.

  • The purpose of this study was to determine if Theory of Planned Behavior (TPB) variables predict soy milk intake in a sample of WIC participants in 2 Illinois counties (n = 380). A cross-sectional survey was used, which examined soy foods intake, behavioral beliefs, subjective norms, motivation, and intention. Soy product intake was low at both sites, and many participants (40%) did not know that soy milk was WIC approved. Most (> 70%) wanted to comply with their health care providers, but didn't know their opinions about soy milk (50-66%). Intention was significantly correlated with intake (0.507, P ${\leq}$ 0.01; 0.308, P ${\leq}$ 0.05). Environmental beliefs (0.282 and 0.410, P ${\leq}$ 0.01) and expectancy beliefs (0.490 and 0.636, P ${\leq}$ 0.01) were correlated with intention. At site 1, 30% of the variance in intention to consume soy milk was explained by expectancy beliefs and subjective norm beliefs (P < 0.0001); at site 2, 40% of the variance in intention was explained by expectancy beliefs. The TPB variables of expectancy beliefs predicted intention to consume soy milk in WIC participants. Therefore, knowing more about the health benefits of soy and how to cook with soy milk would increase WIC participants' intention to consume soy milk. Positive messages about soy milk from health care providers could influence intake.

  • The principal objective of this study was to evaluate the consumption behavior and perceptions of environment-friendly agricultural products(EAPs) by university students in the Chonbuk area, Korea. Self-administered questionnaires were collected from 309 university students(male 33.0%, female 67.0%). Descriptive and comparative statistical analyses was completed using SPSS v. 12.0. The percentage of subjects who purchased EAPs was 70.9%. Of those, 87.2% had EAPs purchased by their mothers. The most purchased EAPs were vegetables, the primary reason for which was the perception of 'good for health'(73.1%). The main information source about EAPs was 'familes/freinds'. The average scores of 'attitude toward EAPs', 'knowledge toward EAPs', 'concern toward EAPs' were $3.76{\pm}0.57$, $2.91{\pm}0.61$ and $3.29{\pm}0.43$, respectively. With regards to 'attitude toward EAPs', the scores were significantly affected by 'self-reported health status'(p<0.05). With regard to 'knowledge toward EAPs' and 'concern toward EAPs', the scores were significantly affected by 'supplements for health' (p<0.05; p<0.001). For university students' right choices of EAPs, information and consumer education wthin the university curriculum on these products are necessary.
