경기도지역 어린이집과 유치원 급식의 소금함량 및 유아 식사준비자의 나트륨 섭취관련 식태도 조사 (A Survey on the Salt Content of Kindergarten Lunch Meals and Meal Providers' Dietary Attitude to Sodium Intake in Gyeonggi-do Area)

  • Dietary habit of excess sodium consumption is formed mainly by excessive salt intake from the younger age and this may lead to hypertension, stroke, and stomach cancer. This study was performed to estimate the salt content in kindergarten meals and provide basic data on meal providers' dietary attitude to sodium intake for nutrition education. We collected data on161 food items from 16 institutions in Gyeonggi-do and salt content was calculated from salinity and weight of individual food items. The average salt content from lunch meals was 2.2 g, which was about daily adequate intake of sodium for children aged 3 to 5 years old. Greatest contributor to the salt content in a meal was soup and stew (47.8%). The most salty dishes were sauces and kimchi followed by stir-fried food, deep-fried food, braised food, and grilled food. The salt content was higher in soup and stew despite of low salinity, due to the large quantity per serving. The salt contents of soups and kimchi were 40.6% and 14.3%, respectively of the total salt content in dish groups. Staff members and caregivers at home who prepared food for the child showed preference for one-dish rice meal, dried fish and salted mackerel, and broth when eating soup, stew, and noodles. Caregivers showed higher sodium index score and had higher preference for processed food such as Ramen, canned food, and ham compared with staff members (p < 0.05). These results suggested that monitoring salt content of kindergarten meals and nutrition education for those prepare meals for children are needed to lower sodium intake in childhood.

경기 일부지역 농촌주민의 체질량지수에 따른 영양상태와 영양교육의 효과분석 (The Effect of Nutrition Education for Middle Aged Rural by Difference of BMI in Kyungki Province)

  • The purpose of this study was to assess the effect of nutrition education by the difference of BMI(Body Mass Index) group for adults at rural area. Eighty four adults (mean age : 55.9$\pm$11.8) participated in nutrition education program. Data collection includes measured physical status and serum collections for health status. The impact of nutrition KAP (knowledge attitude and practice) and retention was examined among participants who were assessed at program entry, 3 times of education and 1 month of follow-up. The results were as follows: The participants were composed 14 persons of under 20kg/$m^2$ of BMI, 40 persons of 20-25 and 27 persons over 25 of BMI , female 60 persons but male 23 only. Serum albumin and calcium content of female(3.5$\pm$1.2g/㎗, 7.5$\pm$3.9mg/㎗) were significantly lower than males(4.7$\pm$0.9g/㎗, 11.2$\pm$4.6mg/㎗) but there was not significantly different with BMI groups. Serum TG and cholesterol contents of over 25kg/$m^2$ of BMI group(157$\pm$87mg/㎗, 249$\pm$16mg/㎗) were higher than other groups, but significantly different in cholesterol contents only. Via the 10 questions of nutrition attitude, the participants improved significantly between pre and post education(the score of pre, post and after 1 month, 6.5$\pm$1.8, 7.2$\pm$1.5, 7.2$\pm$1.9), and were also attributed to better personal feeling health by modified CMI test, but dietary food habit was not significantly improved. As the differences of BMI groups were compared, 20-25kg/$m^2$ group had better the effect of nutrition education score than other groups, and female had better nutrition attitude and practice score than male.

유치원 교사들의 영양지식 및 간식 급식에 대한 태도 조사 연구 (Nutrition Knowledge and Snack Serving Attitude of Kindergarten Teachers)

  • The purpose of this study was to investigate the nutrition knowledge of kindergarten teachers and their attitude toward kindergarten lunch and snack service programs. Self-administered questionnaires were completed by 293 kindergarten teachers from January to February 1995. The results were as follows : 77.8% of the kindergarten teachers were taking part in the school meal service program. Most teachers were interested in the special training in child nutrition management, however, only 34.0% of the respondents had taken the nutrition related courses. The average score of nutrition knowledge of kindergarten teachers was 15.9$\pm$2.9 out of possible 28 points. They had better knowledge on such subjects as nutritional physiology and food choices for children, but had lower scores on practical subjects as calorie and nutrient value of food, cooking and nutrition management for children. When they chose snack items for children, teachers highly considered the nutritional value of snacks. Milk, cornflakes & milk, steamed potato, boiled egg, orange, apple and gimbap were their favorite choices for children's snacks. Other factors to be considered included children's preference, convenience in food service, and price of snack.

가정환경이 청소년기 식사의 질에 미치는 영향에 관한 연구 (A Study on the Effect of Family Environment on the Dietary Quality of Adolescence)

  • This study was attempted to investigate the effect of family environment on the dietary quality of adolescence. The subjected were 390 girls aged from 13 to 19 and their mothers in Chung-Nam province area. The survey was conducted from Febril 6 to 16, 1985. The results can be summarized as follows ; 1) The mean dietary score of nutrient adequacy of subjects was 11.85 out of possible 17, which showed that all nutrients intake might be lower than the R.D.A. 2) According to resident place, dietary quality was tended to be better in order of rural place, small city and medium city 9P<0.01). 3) In smaller numbers of family members, dietary quality was tended to be better (P<0.01). 4) Family pattern did not affect the dietary quality. 5) According to socioeconomic status, dietary quality was tended to be better at the upper class(P<0.05). 6) Dietary quality was tended to be better according to the increase of PCEF(per capita expenditure for food). 7) Mother's employment was likely to improve the dietary quality (P<0.01). 8) Dietary quality was tended to be better according to mother's favored attitude toward nutrition(P<0.01). 9) Mother's attitude toward taste affected the dietary quality, but this effect was not constant(P<0.01). 10) Mother's attitude toward family's food preference affected the dietary quality adversely (P<0.01). 11) Mother's score of nutrition knowledge was likely to affect the dietary quality. 12) Dietary quality was positively correlated to health status of subjects. And there was a significantly negative correlation between dietary quality and menarcheal age (P<0.01).

Beliefs, benefits, barriers, attitude, intake and knowledge about peanuts and tree nuts among WIC participants in eastern North Carolina

  • The objective of this study was to assess beliefs (e.g. advantages, disadvantages, benefits, barriers) and knowledge about eating peanuts and tree nuts. Personal interviews based on the Theory of Planned Behavior were conducted to elicit beliefs about eating nuts. Then, a cross-sectional survey was administered to WIC participants from one county in North Carolina. One-hundred-twenty-four WIC participants (mean (SD) age=28.39 (8.09) completed the study. Most were Caucasian (51.6%) females (96%). About one third believed that eating nuts may help to lower cholesterol level. However, only about one forth believed that nuts can lower a risk of a heart attack or diabetes. More than one third believed that eating nuts will cause weight gain. The knowledge of respondents' about nutrient content of nuts was low with correct answers to most questions about 20% or below. The mean (SD) positive attitude, negative attitude, benefits and barriers scores, based on a range from 1 to 5, were 2.53 (0.91), 3.25 (0.89), 2.97 (0.85) and 2.90 (0.76), respectively. WIC participants' beliefs regarding the health effects of nuts are inconsistent with the most recent research findings. They are in a need to education about benefits of eating nuts.

A Comparison of Food Frequency, Food Attitude, and Eating Habits between Korean -American and Korean Children

  • Food frequency, food attitude, eating habits and physical activities of Korean-American children and Korean children were compared. Two hundred and sixty two Korean-American children living in New Jersey and New York in the United States of America(KcUS group) and three hundred and thirty one Korean children living in Seoul, Korea (KcK group) between the ages of 9 and 12 were included. There were significant differences in food frequency between these groups. The KcUS group ate more western food, more food at meal time and more snack than the KcK group. In addition, KcUS group slept longer hours and exercised less than KcK group. In this study, we learned that higher rate of obesity in Korean-American children could be partially explained by the difference in food intake, food attitude, eating habit, and physical activities between the two groups. It is suggested that a different approach will be useful in developing nutrition education programs against childhood obesity for the Korean-American children and Korean children.

서울지역 중학생의 체질량지수에 따른 식행동 분석 (The Study of Dietary Patterns According to Body Mass Index in Middle School Students in Seoul Area)

  • This study was carried out to investigate the information concerning dietary patterns in middle school students. The subjects of this study were 420(underweight 140, normalweight 140, overweight 140) middle school students. We investigated eating habits, life habits, food attitude. Data were collected by questionnaire and analyzed with the SAS program(Version 8.1). The results of investigation are summarized and concluded as follows ; The average BMI of underweight was 18.3kg/$m^2$ , normalweight was 22.2kg/$m^2$ , overweight was 26.6kg/$m^2$ . In the case of eating habit, the overweight group shows that low frequency of meal and high of skipping meal than the others group. Also in Life habit, the overweight group shows longer of watching TV and using computer. The score of food attitude was also high in over weight group. This study can´t represent the whole middle school students in Seoul. So the survey for the whole students should be followed. We can expect to offer basic data for effective nutrition education by studying.

대전지역 유치원 종일반, 반일반 유아와 이들 어머니의 식생활 비교 (The Dietary Life of Full- and Half-day Program Children and Their Mothers of Kindergarten in Daejeon)

  • The purpose of this study was to provide basic information need to promote early childhood's growth with balanced diet and preferable dietary attitude by observing the provision of food service management in kindergarten in Daejeon. We researched the dietary life of full- and half-day program children and their mothers. A questionnaire survey was conducted with 392 children attending kindergarten and their mothers. The questionnaire items examined general characteristics, dietary life, dietary behavior, frequency food intake etc. The results of the survey were as follows. The frequency of breakfast intake of the half-day program children and their mothers was higher than that of the full-day program children and their mothers. Most of the children had an unbalanced diet about soybean, kimchi, and vegetables, whereas their mothers had an unbalanced diet about processed food In general, the half-day program children showed higher scores than full-day children for the items of the dietary behavior of kindergarten. The dietary attitude and nutrition attitude scores of the half-day program children and their mothers were higher than those of the full-day program children and their mothers.

전공 여부에 따른 대학생의 유전자재조합식품의 인식, 지식 및 구매 태도에 관한 비교 연구 (A Study on the Genetically Modified Foods Recognition, Knowledge and Purchase Attitude of University Students according to Their Majors)

  • This study was analyzed to provide fundamental data of food safety education way on the recognition, knowledge and purchase attitude of GMO foods. Data was collected from 270 University students in the Gyeong-gi region through a self-administered questionnaire. According to the results of the reliability and factor analysis, the knowledge and purchase attitude of GMO foods showed 0.742 and 0.832 in Cronbach alpha coefficient, 0.791 and 0.831 in KMO. There were significant differences in the recognition and intake possibility and purchase will, safety and absorption to a GMO foods between the specialty person and non-specialist (p<0.05). By the kind of GMO foods it appeared highly by the order corn (70.0%), tomato (67.5%), beans (63.3%) and potato (51.3%). There were significant differences in the general knowledge of GMO foods (p<0.05), whereas no significant differences in question 'There were no genes in ordinary beans' by a presence of a specialty (p>0.05). After the purchase attitude difference to the GMO foods was analyzed by a presence of a specialty, I appeared most highly in the question to which I say 'I think a GMO foods is ethical.' by a negative question and 'I think a GMO foods is mass-produced, and it's possible to make a food problem decrease.' by an affirmative question. Therefore, the purchase attitude of GMO foods showed a significant differences of University students according to their major (p<0.05). Based on this study, it is considered that provision of detailed and continuous education must be accomplished by raising the recognition of GMO foods and its acceptance level, allowing a proper understanding of GMO foods to be conveyed and assisting subjects from receiving the information they desire effectively by various education mediums.
