To evaluate the seasonal differences of nutrient intake and serum biochemical indices (total cholesterol, HDL-, LDL- cholesterol, TG, MDA : malondialdehyde, TAS : total antioxidant status, folate) in Korean college women with a mean age of 20.15y, this study was conducted twice: once in winter and a second time in summer. Anthropometric assessment was also measured in the two seasons. As a result body fat mass (p<0.05), body fat% (p<0.05), and abdominal fat% (p < 0.01) in the summer were significantly lower than those in winter. Intake of fat (p < 0.05), polyunsaturated fatty acid (p < 0.01), zinc (p < 0.05), and vitamin E (p < 0.05) were at significantly higher levels in the summer period compared with the winter period. In addition, nutrients with an intake level less than 75% RI of KDRIs were folate in winter and calcium, and folate in the summer. Total cholesterol (p < 0.05) and HDL-cholesterol in summer, according to lipid profiles, were significantly lower than those in winter. Although MDA, one of the products of lipid peroxidation, remained unchanged, TAS was significantly higher in summer than in winter. The level of folate in summer showed significantly lower than that in winter. The present study suggests that nutrient intake of college women women differs according to the seasons and anthropometric indices and serum biochemical indexes were associated with seasons. Thus nutritional education programs on the basis of season are needed for college women.
This survey was carried out to obtain the information concerning nutritional status, including factors of food intake and health condition of elderly women living in Ulsan city. Main results were as follows. 1) Dietary intake data showed the average daily intake of energy, protein, vitamin A, riboflavin and ascorbic acid were lower than Korean recommended dietary allowances (RDA). According to the percentage of RDA, Vitamin A was the nutrient found to be least sufficient. 2) Among the various influencial factors, pocket money, meal-mate, skip meal and health concern influenced on nutrient intake considerably. A meal condition score based on influencial factors, showed significant correlations with all nutrient intake(P<0.001). A health score based n the subjects complains about health condition, showed significant correlations with intake of energy, carbohydrate, thiamin, and niacin(P<0.05). 3) Average hight was below Korea reference, while average body weight of subjects was close to Korean reference. Average body mass index was 23.0. 4) The average systolic and diastolic blood pressure was 140mmHg/88mmHg, the proportion of hypertension was 32.4 percent. The average hemglobin concentration was 12.7g/dl, only 6.7 percent of subjects were anemic. Serum cholesterol concentration was normal range(140~220mg/dl) in all subjects.
This study was conducted to assess the effect of nutrition counseling for postoperative female breast cancer patients (N = 38). In baseline survey, we investigated the nutrition parameters by measuring anthropometric and biochemical blood index and assessing nutrient intake using recall method. Individual nutrition counseling was performed 3 times with 2 - 3 weeks intervals. Patients were offered nutrition information related to breast cancer and desirable life style after cancer operation. The effects of counseling program were assessed 2 month later. Of biochemical parameters, serum total cholesterol level was significantly reduced after nutrition counseling program. Nutrient intakes of postoperative breast cancer patients were generally below the RDA level at the baseline survey. After nutrition counseling, mean daily intake of total energy, protein, calcium were significantly elevated. Of dietary habit, meal regularity and control of portion size were improved and fruits and vegetables intake were significantly increased after nutrition counseling. Control of fatty food intake and alcohol drinking were significantly improved after nutrition counseling program. Score of general nutrition knowledge and knowledge about breast cancer, were significantly increased after nutrition counseling from 2.1 to 3.2 and from 2.3 to 3.8, respectively. It can be postulated that the dietary habit and nutrients intake of postoperative breast cancer patients can be improved by individual nutrition counseling program. In further study, the systematic group nutrition counseling program is needed.
The purpose of this study was to investigate the relations between HbA1c level and health risk factor. For analysis, 330 elderly women aged 65 years and over were recruited in Jeonla province, Korea. The subjects were classified into two groups according to their HbA1c level; the diabetic group (HbA1c level${\geq}6.5%$, n=68, 20.6%) and control group (HbA1c level<6.5%, n=262, 79.4%). Demographic characteristics were collected, as well as information on physical measurements, blood tests for biochemical indicators, a health status and health-related life style, dietary behavior, favorite food groups, consumption frequency of food groups and nutrient intake. Educational level of the diabetic group was significantly lower than that of the control group. The height of the diabetic group was shorter, and percentage fat of the diabetic group was higher than those of the control group. In the diabetic group, the higher concentrations of creatinine and activity of alkaline phosphatase were found to be significantly unfavorable factors. Therefore, the diabetic group was assumed to be at risk of decreased liver and renal function. The self-rated health level of the diabetic group has a declining tendency, while the medicine intake was significantly higher than that of the control group, but there are no significant differences in visiting frequency of hospital and community health center. The distribution of physical activity showed a significant difference between the groups. Although there are no significant differences in nutrient intake, the diabetic group had relatively inferior nutrient intake of diet, especially vitamin C, as contrasted with the control group. In conclusion, the weight control and increasing physical activity may be effective in the prevention of the diabetes and continuous education and intervention by specialized nutritionists will be needed for diabetic patients. These results could be useful to plan effective strategies to increase the health-life expectancy and the prevention of the diabetes of Korean elderly people living in rural areas.
This study was undertaken to investigate the dietary behavior and sugar intake of korean school children. The subject were 131 school lunch program children and 149 non school lunch program children lived in Soung Nam city. Sugar intake, food intake, dietary behavior and anthropometric measurement were studied through personal interview using 24-hour recall dietary data and records. Total daily energy and nutrient intake of children were higher than RDAs except for intake of Calcium and vitamin A. The nutrients intake of school lunch program children were significantly higher than that of non school lunch program children (p<0.05). The range of daily sugar intake was 10 g to 220 g and the total daily sugar intake was $63.0{\pm}37.4\;g$. Sugar intake of school lunch program children ($51.4{\pm}25.7\;g$) was significantly lower than non school lunch program children ($73.1{\pm}42.9\;g$) (p<0.0001). The more sugar intake increase more intake of Energy, Fat and Carbohydrate. The result of stepwise multiple regression analysis using the sugar intake of children as dependent variable, energy, vitamin $B_2$, protein, niacin, calcium school lunch program, education of fathers are significant explanatory variables, explaining 44.8% of variation. Result of this study suggest that school lunch program is desirable for good dietary behavior and decreation of sugar intake of school children.
This study assessed the nutrient intake for Korean adolescents using the estimated usual intake. The usual intake of 1,763 adolescents aged 12-17 years old was estimated from one-day 24-hour recall data in the 2010-2012 Korean National Health and Nutrition Survey. The nutrient intakes of four groups according to sex (male and female) and age (12-14 and 15-17 years old) were then assessed in reference to the 2015 Dietary Reference Intakes for Koreans. For macronutrients, the proportions of subjects below and above the Acceptable Macronutrient Distribution Ranges (AMDR) were calculated. The Estimated Average Requirement (EAR) cut-point method was used to assess insufficient intakes of protein, vitamin C, thiamin, riboflavin, niacin, calcium, phosphorus, and iron; the full probability approach was used to assess the insufficient intake for iron among females. The proportions of subjects over the Tolerable Upper Intake Levels for vitamin C, niacin, calcium, phosphorus, and iron and the proportions over the Intake Goal for sodium were calculated to assess excessive intake. The proportions of subjects above AMDR for carbohydrates ranged from 22.5% to 38.0% by group. The proportions of subjects by group with insufficient intake for vitamin C, riboflavin, calcium, phosphorus, and iron ranged 29.1-39.7%, 22.5-34.3%, 73.1-89.3%, 14.3-43.6%, and 23.2-55.5%, respectively. The proportions of subjects by group with excessive intake for sodium ranged from 91.5% to 99.3%. The results of this study represent important basic information to establish nutritional standards for school lunches as well as to decide on relevant nutrition policies for adolescents.
Purpose: This study aimed to investigate the association between steamed food intake and risk of metabolic syndrome (MetS) in Korean females. Methods: Using Ansan/Ansung data of Korean Genome and Epidemiology Study, general characteristics, nutritional intake and biochemical and anthropometric markers of a total of 4,056 females aged 40 to 69 years were analyzed. MetS was defined following National Cholesterol Education Program Adult Treatment Panel III with some minor modifications. Logistic regression models were established to present the association between steamed food intake and the risk of MetS. Levels of food and nutrient intake by the frequency of steamed food intake and MetS phenotype were analyzed using general linear models. Results: A total of 38.4% of females had MetS. Among them, 24.9% of females with MetS had steamed food more than 1-3 times per week, which reduced the risk for MetS by about 25% (95% confidence interval [CI], 0.650-0.865). However, such association was not evident when various lifestyle factors were considered in statistical models. In rural residents, the benefit of having more steamed food was observed (adjusted odds ratio: 0.747; 95% CI, 0.583-0.958). The frequency of steamed food intake was associated with various food and nutritional intakes. However, trends in those did not differ by MetS phenotype. Conclusion: Having steamed food more than 1-3 times per week may reduce the risk of MetS compared to those who had less steamed food in Korean females. This protective effect of steamed food intake may differ by lifestyle and environmental factors. Although a clear difference in food and nutritional intake was not observed in this study, steaming could be an effective cooking method for a healthy diet for disease prevention and management.

Nutrition factors play an important role in the pathogenesis of osteoporosis. The purpose of this study is to investigate the relationship between nutritional status and bone mineral density of elderly women. Three hundred thirty five elderly women (over 65 years) in Asan were divided into three age groups (group 1, less than 70 y ; group 2, from 70 to 75 y ; group 3, 75 y or more). Total alkaline phosphatase and serum calcium (Ca) were analyzed using spectrophotometric procedure. Data for food and nutrient intakes were obtained by a 24-hour recall method. Bone density was measured by broadband ultrasound attenuation (BUA) using QUS-2. Age differences were tested with the X 2 test for categorical variables and with ANOVA and Tukey's test for continuous variables. Correlation was conducted to test the association between bone density and nutrient intake. The subjects in age groups 1,2 and 3 were $36.7\%$, $32.8\%$ and $30.4\%$, respectively. Height and body weight of the subjects were significantly decreased with age. Average bone density of the subjects in group 3 was lower than the other age groups. Osteoporosis determined by t-score is $17.9\%$ for group 1, $24.5\%$ for group 2 and $55.9\%$ for group 3 (p < 0.001). The serum Ca level of the subjects in group 2 was significantly lower than that of group 1 although mean values in all age groups are within the normal range. Dietary Ca intake, nutrient adequacy ratio (NAR) and index of nutrient quality (INQ) were decreased with age. Bone density was negatively correlated with age (p < 0.001), while body mass index (p < 0.01) was positively related with bone density. Although partial correlation did not reveal the significant correlation of BMD and dietary calcium after controlling for age, since calcium intake was very poor compared to sodium and phosphorous intakes, recommendation of more calcium intake for elderly women especially those over 75 years must be continuously emphasized.
Since 1982, female agricultural workers are populous than male in Korea. Previous study was suggested that female workers are more sensitive to the agricultural medicine poisoning than male. This study was conducted with the aim of evaluating the impact on plasma components and nutrient intakes in female agricultural workers by the use of pesticides. Data were obtained from 44 females residing in Wonjoo, Kangwon-do area. Analysis for the general characteristics, nutrient intakes, and plasma components of the subjects were performed by physical examination, 24-hour recall method and venous blood sampling. They were divided into 3 groups according to the degree of the pesticide use: 8 in none(Non-expose group), 14 in low(<4/yr)(Low-expose group), and 22 in high$({\geq}4/yr)$(High-expose group). The results are summarized as follows. Serum glucose, SGOT, SGPT, triglyceride, HDL-cholesterol did not correlated with pesticide use and were not different among the groups. But serum total cholesterol was higher in pesticide use group. With increasing the number of pesticide use times, leukocyte count was tended to increased. Eighty two percent of the subjects were hemoglobin less than or equal to 12g/dl. Hematocrit, MCV, MCH, MCHC, serum Fe, Serum ferritin belonged to normal range and did not correlated with pesticide use. Intake of energy, Fe, vitamin $B_2$ were lower than RDA. Fe, K, and vitamin A intake were higher in don't use group than the other groups. There are not many differences according to using the pesticide in anthropometric measurements, nutrient intakes, and blood components, except for serum total cholesterol level and some nutrients intake. But these results suggest the need the systemic researches about the effects the pesticide using on nutritional status in Korean agricultural workers.
The purpose of this nutritional survey on the actual conditions of group feeding is to be of value for promoting the health of the blue collar workers through consice understanding of food intake trends in businesses as well as realizing our desirable target. The results of the survey are summarized as follow. 1, Status of food economics 1) The average feeding cost amounts to 453 won per day per person. 2) The average school years of food buyers were 12.3 years, cookers were 12.0 years and dieticians were 14.5 years. 3) Kerosene(57.6%), gas(24.2%), electric(12. 1%) and cool briguette(6.1%) were used for fuel. 2. Status of food intake The average food intake per person per day in surveyed businesses was 1193.4g. The total intake of food was consisted of 42% grains, 40.4% vegetables, 4.7% legumes, 4.5% fish and shellfish, 4.0% potatoes, 1.6% meats, 1.0% seasonings. 0.8% eggs, 0.5% sea weeds, 0.3% oil and fats, 0.1% sugar. These findings led us to the conclusion that workers in the surveyed businesses retied heavily on plant foods. 3. Status of nutrient intakes 1) The average intake of calorie was 2752.6 kcal per day, which was slightly higher than 2,700 kcal of RDA. Though the quantity was above the level of RDA, it was largely from plant foods. 2) The average intake of protein was 84.7g per day, which was slightly higher than 80g of RDA. 3) The average intake of fat was 26g per day, which was much lower than 36g of RDA. 4) The averse intake of calcium was 532.3mg per day, which was lower than 600mg of RDA. 5) The average iron intake was 9.8mg per day, which was much lower than 10mg of RDA and 18mg of HDA for women. 6) Intakes of vitamin group were high. Especially, intake of vitamin A was 2-3 times higher than RDA and intake of vitamin C and niacin were 2 times higher than RDA.
