Increased oxidative stress contributes to the progression of atherosclerosis. We measured serum antioxidant mineral concentrations, capacities of serum antioxidant enzymes and fasting lipid profile in 97 male patients with coronary artery disease (CAD) and 21 male controls. Nutrient intake was assessed by the semi-quantitative food frequency method. CAD patients were divided into single-vessel disease (SVD, n=66) and multi-vessel disease (MVD, n = 31) groups on the coronary angiography. The ratio of serum LDL- to HDL-cholesterol elevated with an increasing number of diseased vessels compared to the control (control < SVD < MVD, p < 0.05). Patients with SVD and MVD had higher levels of serum lipoprotein (a) than the control (p < 0.05). The mean intake of carbohydrate, protein and cholesterol was higher in MVD patients and the intakes of vitamins C and E were lower in MVD and SVD patients than in the control (p < 0.05). Serum copper (Cu) and zinc (Zn) levels were higher in MVD and SVD patients than in the control (Cu: control $75.8{\pm}5.07$, SVD $99.2{\pm}2.90$, MVD $100.1{\pm}2.32{\mu}g/dL$, p<0.01; Zn: $76.8{\pm}5.36$, $119.0{\pm}5.95$, $129.1{\pm}2.70{\mu}g/dL$, p < 0.01). And the ratio of Zn to Cu was higher in SVD and MVD patients than in the control (control $0.78{\pm}0.06$, SVD $0.88{\pm}0.05$, MVD $0.99{\pm}0.04$, P < 0.05). The activity of glutathione peroxidase (GSH-Px) was lower in MVD than in SVD and the control (control $35.13{\pm}1.34$, SVD $35.30{\pm}1.01$, MVD $31.00{\pm}1.04 U/mg$ protein, p < 0.05). The ratio of the activities of superoxide dismutase (SOD) to GSH-Px was higher in MVD than in control and SVD (p < 0.05). In groups with CAD, serum Cu and Zn concentrations and their ratio were changed compared to the control. GSH-Px activity was decreased and the ratio of SOD to GSH-Px was increased in the patients with MVD. The balances between the activities of SOD and GSH-Px should also be considered a risk factor in CAD patients.

Objectives: This study was performed to assess the effects of nutrition support for the elderly in rural communities. Methods: The data for this study were obtained from 148 aged over 65 years in G district(70 intervention group and 78 control group). General characteristics, physical health status, food intake, dietary habits, knowledge of nutrition and nutrition risk factors of the subjects were examined by individual interview. The participants were divided into two groups through the first questionnaire of nutrition: nutritional intervention group(nutritional intervention and education of nutrition) and control group(education of nutrition alone). Results: Nutritional intervention group showed significant increase of energy intake to 87.4% from 71.0% and of most nutrients except vitamin A and niacin after intervention. After nutritional intervention program, depression index was significantly decreased and changes of food habits, self-efficacy and conviction indices were significantly increased. Conclusions: This study showed that the nutritional intervention serving foods for short-term intervention period was very effective in improving the nutritional status. In addition, it suggested that it was not enough for nutritional improvement of the elderly to provide public health education or counseling alone, therefore, for achieving its goals, it should be needed proper nutritional supply to them.

Gamma-aminobutyric acid (GABA) is a non-protein amino acid widely present in organisms, which has shown several important physiological functions such as neurotransmission, hypotension induction, as well as diuretic and tranquilizer effects. They have also been extensively used in food industry. GABA contents in the grain and brown rice are about 1~4 mg/100 g and 4~8 mg/100 g, respectively but it is difficult to expect physiological activity from such low amounts of natural food intake. We investigate the effects of GABA-coated rice on the secretion of melatonin and serotonin which both have been used as sleep inductive compounds. As a result, the secretion of melatonin and serotonin from mice were found to be $3.578{\pm}0.158pg/mL$, $5.918{\pm}0.169ng/mL$ respectively. The melatonin and serotonin in mice increased significantly up to the 8.7 and 22.8 times respectively, when compared to that of the rice, but there was no cumulative effects. Due to the continuous intake of GABA-coated rice, which was developed as a functional food nutrient, inductive effects of melatonin and serotonin from general rice could be achieved and also the similar effect as taking up directly 25 mg/mL of GABA could be obtained.

For the EXP 1, the objective of this study was to determine the effect of MSM (methyl sulfonyl methane) supplementation on growth performance and nutrient digestibility in pigs. Sixty crossbred (Landrace × Yorkshire × Duroc) pigs (48.15±0.15㎏ average initial body weight) were used in a 35 days growth assay. Dietary treatments included 1) Control (basal diet), 2) T1 (basal diet+0.01% MSM) and 3) T2 (basal diet+0.02% MSM). For overall period, average daily gain, average daily feed intake and feed efficiency were not significantly different among the treatments (p&gt;0.05). Digestibilies of DM, N, Ca and P were not significant defferences (p&gt;0.05). For the EXP 2, the objective of this study was to determine the effect of MSM and antibiotic supplementation on growth performance and nutrient digestibility in pigs. One hundred crossbred (Landrace × Yorkshire × Duroc) pigs (33.85±0.15㎏ average initial body weight) were used in a 42 days growth assay. Dietary treatments included 1) Control (basal diet), 2) T1 (basal diet+0.05% neomycin sulfate, 0.055% oxytetracycline), 3) T2 (Con diet+0.01% MSM) and T3 (T1+0.01% MSM). For overall period, average daily gain and average daily feed intake of pigs fed T3, T2 diets were higher than those of CON diet (p&lt;0.05). Average daily gain was not significantly different between T2 and T3. However, food efficiency of pigs fed CON was the highest among the treatments (p&lt;0.05). Pigs fed T3 diet increased nutrient digestibility compared to other treatments (p&lt;0.05). In conclusion, the results suggest that the dietary addition of MSM and antibiotics into diets for pigs affect growth performance and nutrient digestibility.

This study was intended to collect the baseline information on health status, nutrient intakes and dietary self-efficacy according to the obesity levels of male workers. Nutrient intakes of 224 male workers were assessed by 24 hr recall method; also, dietary attitude and dietary self-efficacy were investigated by self-administerd questionnaires. Biochemical characteristics such as blood pressure (SBP, DBP), total cholesterol(TC), hemoglobin (Hb), blood glucose (BG), SGOT, SGPT and ${\gamma}-GTP$ were assessed. Subjects were divided into normal, overweight and obese groups by body mass index (BMI). The health status was analyzed as normal group, health concerned group and disease suspected group. Weight, percent ideal body weight (PIBW), BMI and body circumference (waist, hip) and waist-hip ratio were high in the order of obese group, overweight group and normal group. Body fat mass was high also in the order of obese, overweight and normal group. Blood pressure (SBP, DBP) was the highest in obese group. SGOT, SGPT, ${\gamma}-GTP$ were higher in the obese group than normal and overweight groups. It was Proven that the percentage of those evaluated as low nutrient intakes were 71% for Ca, 50.9% for Zn, 70.5% for vitamin B2, 56.3% for vitamin C and 81.3% for folic acid. The dietary attitude scores were high according to the dietary self-efficacy. The age was positively correlated with dietary attitude, and the dietary attitude was positively correlated with dietary self-efficacy and total energy intakes. Dietary attitude showed the greatest total causal effect in relation to dietary self-efficacy. The results of this study showed some health problems and nutritional problems, indicating the need for nutritional management for male workers.
This study investigated the daily physical activity level, energy expenditure, energy balance, and body composition and their relationship with university students. The participants were 130 male students ($19.5{\pm}0.5$ yrs) and 139 female students ($19.5{\pm}0.3$ yrs) at a university in Chungnam province. Physical activity level was evaluated by an equation based on 24 hr-activity record and dietary nutrient intake was evaluated using the food record method during a three-day period consisting of two week days and one weekend. Body composition was measured using Inbody 430 (Biospace Co., Cheonan, Korea). As a result, mean body mass index (BMI) of subjects indicated that they had normal weight, however mean body fat ratio was $19.1{\pm}5.4%$ for males and $28.4{\pm}5.0%$ for females, indicating that they had higher than normal weight. Daily mean physical activity level was 1.55 for males and 1.47 for females, which was regarded as 'low active', respectively. Females had more light activity than males (p<0.01). Daily mean energy expenditure was $2,803.5{\pm}788.9$ kcal/d for males and $1,915.4{\pm}510.2$ kcal/d for females (p<0.001). Daily mean dietary energy intake was $2,327.0{\pm}562.5$ kcal/d for males and $1,802.1{\pm}523.6/d$ for females (p<0.001), and daily mean energy balance was $-476.5{\pm}955.9$ kcal/d for males and $-113.3{\pm}728.1$ kcal/d for females (p<0.01). Daily mean dietary intake of protein, vitamins, and minerals, except Ca, satisfied recommended nutrient intake. Daily energy expenditure was positively related to body weight (p<0.01), BMI (p<0.01), and fat free mass ratio (p<0.05), but was negatively related to body fat ratio (p<0.01). In conclusion, subjects had a negative energy balance and low physical activity. They had a normal weight by BMI but had a more fat than normal weight by body fat ratio. This appears to be related to their low physical activity. Thus, nutrition education should be provided for university students in order to increase their physical activity for maintenance of normal weight by body composition and health promotion.
This study was due to investigate the dietary intakes, serum lipids and other hematological indices in female adolescent smokers. The subjects were 85 smokers, whose average pack-year(smoking years on the basis of one pack of cigarettes per day) was 1.26 and 87 nonsmokers who were female high school students in Seoul. An anthropometric measreument was performed and % body fat was also analyzed by the Bioelectrical Impedance Fatness Analyzer(GIF-891). Dietary intakes and food habits were examined through questionnaires and nutrient intakes were analyzed by the Computer Aided. Nutritional analysis program for professional(CAN-pro). Serum TG, HDL-cholesterol and total-cholesterol levels were measured with test kits. Serum glucose, albumin, GOT and GPT were measured by automated dry chemistry system, SPOTCHEM 4410. Hemoglobin, hematocrit, RBC, WBC and MCV were determined by Semi Automated Microcell Counter(F-520). All data were statistically analyzed by SAS PC package program. There was no significant difference in the anthropometric measurements between smokers and nonsmokers. The caloric intake in adolescent smokers tended to be higher than that of nonsmokers but the difference was not statistically significant. In addition, there was no significant difference between smokers and nonsmokers in biochemical indices. Analysis of serum lipids showed that the serum levels of total-cholesterol and LDL-cholesterol of nonsmokers were unexpectedly significantly higher(p<0.05) than those of smokers. Overall results indicate that smoking itself with short pack-year in healthy female adolescent did not seem to influence apparent health and nutritional status.
The purpose of this study was to investigate of the dietary life, nutritional status and health condition in 100 elderly living in nursing homes in Pusan area. The quality of meals served in nursing homes base on nutrient contents and the state of preferared foods was evaluated by the questionaire and the nutritional status and health condition of subjects were estimated by the analysis of serum components. The results of this study are summarized as follows: 1 Almost all subjects were aged over 70 years and poor-educated. Mean height and weight of subjects were lower than Korean average standard but Body Mass Index(BMI) of those were normal and body fat contents of females were especially high. 2. Protein, vitamin A, vitamin C and Ca intake of subjects were lower than Korean RDA. Subjects preferred pan-broiled for meats and fishes, muchim for vegetables fruits as food between meals. 3. There were no smoking and drinking in almost all subjects. All subjects have taken nutritional supplements, mainly mineral supplements. Prevalence of disease in subjects were in the following order : cardiovascular, stomach, neuralgia in males. The frequency of neuralgia in females was highest. 4. Serum levels of HDL-cholesterol, total cholesterol, triglyceride, total protein, albumin, globulin, Ca and Mg were lower than those of normal ranges. Therefore, it Is necessary to improve nutritional status of the elderly in nursing homes with by increasing the various side dishes and to develop the standard menu for those.
The purpose of this study was to investigate the relationship between obesity and, erythrocyte SOD (superoxide dismutase) activity and serum antioxidant mineral (Fe, Zn, Cu, Mn and Se) concentrations of adolescents. Subjects were assigned to one of two groups such as obese ($BMI{\geq}25$, 32 boys, 24 girls) and normal group (18.5 < BMI < 23, 27 boys, 30 girls) Subjects were evaluated based on anthropometric measurements, 24-hr dietary recalls and blood analysis. The mean age of the total subjects was 13.8 years. The mean weight (p < 0.001), BMI (p < 0.001) and body fat (p < 0.001) of obese were higher than those of normal group. There was no significant difference in nutrient intake between obese and normal groups. SOD activity of obese group was not significantly different from normal groups, in both males and females. However, in the males, serum Cu concentration of obese were significantly lower than those of normal group. In the females, Serum Mn concentration of obese were significantly lower then those of normal group. In the correlation analysis, BMI of the subjects had significantly negative correlations with serum Cu, Zn and Mn. To summarize the results, increase of obesity may lead to decrease of serum antioxidant minerals such as Cu, Zn and Mn.
This study was designed to investigate the nutritional effect of mugowrt powder supple mentation to rice diets with different protein levels. Thirty female albino rats weighing 39-43g were adopted for the feeding trial for 4 weeks. The different 5 kind of experimental diets were performed . Control diet was commercially available forage for rats, experimental diet (I-C) highly milled rice, (Ⅰ) highly milled rice 95% and mugwort powder 5%, (Ⅱ-C)highly milled rice 95% and milk casein 5%, and (Ⅱ) highly milled rice 90%, milk casein 5 % and mugwort powder 5%. Growth rate was remarkably high in the dietary group fed on highly milled rice supplemented with 5% mugwort powder (protein 8%) (P<0.05), but it showed the tendency to be rather low in the group fed on highly milled rice supplemented with 5% casein and 5% mugwort powder (protein 12%). Food efficiency as well as protein efficiency appeared similar to the growth rate. Hematodcrit level demonstrated the same tendency as growth rate, but hemoglobin content was observed to increase by diets supplemented with increasing amount of mugwort regardless of protein level. Each nutrient intake was increased by adding mugwort powder to diets after a week's feeding, but it was increased by 8% protein diet, and decreased by 12% protein diet in 3 weeks as well as 4 weeks after feeding . The absorption rate of carbohydrate and protein decreased by feeding mugwort supplemented diets regardless of protein level and feeding period, and that of lipid increased with 12% protein diet.
