채식을 하는 여승과 비채식 성인여성의 혈중 지질수준, 혈당, 혈압에 관한 연구(II) -짠맛에 대한 기호를 중심으로- (A Study of Serum Lipid Levels, Blood Sugar, Blood Pressure of Vegetarian Buddhist Nuns and Non-Vegetarian Female Adults (II) - Based on Favored Salty Taste -)

  • 우리나라에도 심혈관질환으로 인한 사망률이 점차 증가하고 있다. 이에 본 연구에서는 채식과 짠맛에 대한 기호와 혈청 지질 수준 및 혈당, 혈압과의 관계를 규명하기 위한 연구의 일환으로 채식을 하는 비구니스님을 대상으로 하여 연구한 결과를 요약하면 조사대상자의 평균나이는 채식인 44.2세, 비채식인 40.5세, 채식인의 평균 채식기간은 13.2년이었으며, 채식인은 주로 매운맛, 단맛, 신맛의 순으로 비채식인은 단맛, 신맛, 매운맛의 순서로 좋아하였다. 채식 기간별로는 10년 이하인 군과 20년 이상인 군에서는 매운맛, 단맛, 신맛, 쓴맛, 짠맛, 느끼하고 기름진 맛의 순으로 좋하는 것으로 나타났으며 10~20년 사이인 군에서는 매운맛, 쓴맛, 신맛, 단맛, 짠맛, 기르지고 느끼한 맛의 순으로 좋아하는 맛이 바뀌었는데 이는 건강지식과 건강에 대한 관심도의 차이 때문인 것으로 생각된다. 조사대상자중 ‘식사시에 짜게 먹는 편이다’라고 답한 사람은 채식인 38.8%, 비채식인 52.8%로 비채식인이 짜게 먹는 것으로 나타났다. ‘보통이다.’고 한 사람이 채식인 33.9%, 비채식인 33.6%로 거의 비슷하였으며, ‘싱겁게 먹는다’고 한사람은 채식인 27.3%, 비채식인 13.6%로 채식인이 싱겁게 먹는 것으로 나타났다. 식습관 점수는 채식인은 25.1, 비채식인은 23.1로 채식인의 식습관 점수가 유의적으로 높았으며(p<0.05), 또한 채식기간별로는 채식기간이 10년 미만인 군에 비해 10년 이상인 군의 식습관 점수가 유의적으로 높게 나타났다. 총 콜레스테롤, LDL-cholesterol, 동맥경화지수는 두 군 모두 싱겁게 먹는다고 한 군에 비해 짜게 먹는다고 한 군에 비해 짜게 먹는다고 한 군이 유의적으로 높았다. 혈압은 두 군 모두 짠맛에 대한 기호와는 유의적인 차이를 보이지 않았으나 높아지는 경향을 보였다. 중성지방, HDL-cholesterol, 혈당은 두군 모두 짠맛에 대한 기호와 유의한 상관을 보이지 않았다. 이상의 결과에서 볼 때 본 연구와 동일인을 대상으로 한 연구 I에서 본 바와 같이 채식군은 비채식군에 비해 BMI, RBW, WHR, %BF가 유의적으로 높았음(p<0.05)에도 심혈관 질환 관련인자인 총 콜레스테롤, LDL-cholesterol, AI, 수축기 혈압 및 혈당이 비채식군에 비해 유의적으로 낮았을 뿐만 아니라 (p<0.01) 짠맛에 대한 기호는 혈중 콜레스테롤 LDL-cholesterol, AI에 영향을 미치는 것으로 나타났으나 채식인은 비채식인에 비하여 식사시에 싱겁게 먹고 식습관도 좋은 것으로 나타났다. 앞으로 더 많은 연구가 이루어져야 할 것이지만 채식을 하면 심혈관 질환 위험인자의 수준을 낮추어 심혈관 질환의 예방 치료에 도움이 될 것으로 사료된다.

전라북도 익산 지역 대학교 기숙사 학생의 식습관 및 기숙사 급식 만족도 조사 (Studies on Dietary Habits and Residence Students' Satisfaction with University Dormitory Foodservice in Jeollabuk-do Iksan Area)

  • The purpose of this study was to investigate eating habits and dormitory foodservices' satisfaction in university students using dormitory foodservice in the Jeollabuk-do Iksan area. Self-administered questionnaires were completed by 195 students (86 male, 109 female). Many students (58.5%) ate less than two meals per day and spent around 30 min eating meals. The results show that snack and midnight meals were the main reasons (37.9%) for unhealthy eating habits. Main source of nutritional knowledge and information were TV and the Internet (58.5%), followed by friends and people (25.1%), nutrition books (10.3%), elective courses (4.6%), and newspapers and magazines (1.5%). Men had significantly higher satisfaction scores for nutrition, taste, diversity of menu, as well as hygiene of dormitory food court compared to women (p<0.05). Salty taste was the most important factor in evaluation of taste satisfaction, whereas sour taste was opposite. The reason for taste dissatisfaction in the dormitory food court was not salty enough, and it may be related with their eating habits. The results show that students need education for adequate knowledge and information about the relationship between health and nutrition.

도시지역 미취학 어린이의 Na 섭취 및 배설에 관한 연구 (Soldium Intake & Excretion of Preschool Children in Urban)

  • This study was designed to estimate the sodium intake of preschool children . To determine the sodium intake & excretion of preschool children in Korea, dietary behaviors, anthropometry, intakes of dietary nutrients, urinary sodium excretion and preference for salty foods were measured in 42 preschool children (male 26 , female 16, average6.5 years old) and their mothers. The results are summarized as follows. Mean daily urinary sodium excretion was 52.7 mEq(1,212.1mg). This value did not show remarkable change compared with the other studied that were accomplished in the similarage group for about the last ten years. And the subjects showed lower preference for salty taste than those of elementary school children and adults. Mean daily lower preference for salty taste than those of elementary school children and adults. Mean daily urinary sodium excretion were significantly correlated with the frequency of eating out (p<0.01), potassium intake(p<0.001) and urinary sodium to potassium excretion ratio(p<0.001). But there weren't any correlations with mean daily sodium intake, blood pressure, dietary nutrients intake and the preference for salty taste.

단백질 가수분해물을 이용한 식품 내 소금 저감화 (Salt reduction in foods using protein hydrolysates)

  • As excessive intake of salt is regarded as a reason for health problems, the tendency of people to attempt to reduce intake of salt in their everyday lives is on the rise. In Korea, where many people have a higher intake of salt compared to those in other countries, there have been diverse efforts to improve on this eating habit. Protein hydrolysates are chemically, physically hydrolyzed protein that have been widely utilized as a material for not only regular food but health functional food due to have diverse biological effects such as anti-oxidation, anti-inflammation, prevention of diabetes, and regulation of blood pressure. Various amino acids such as glutamic acid, arginine and arginine dipeptides, which exist in the components of protein hydrolysates, have also been recently recognized as being helpful in decreasing the use of salt in foods as they can greatly enhance salty taste when used concurrently with salt due to having both salty and palatable flavors. In the case of protein hydrolysates that decompose soy protein or fish protein such as anchovy, they could reduce consumption of salt by as much as 50% without affecting people's food preferences when applied to food as they boost salty taste by approximately 10% to 70%. Although there are only a few studies on protein hydrolysates as a salty taste enhancer or salt substitute, the results of several studies are indicative of the potential of protein hydrolysates as a salty taste enhancing ingredient.

Preference and intake frequency of high sodium foods and dishes and their correlations with anthropometric measurements among Malaysian subjects

  • This study investigated the preference and intake frequency of a list of 15 commonly available high sodium Malaysian foods/dishes, dis cretionary salt use, and their possible association with demographics, blood pressures and anthropometric measurements among 300 Malaysian university students (114 males, 186 females; 259 ethnic Chinese, 41 Indians; 220 lean, 80 overweight). French fries and instant soup noodle were found to be the most preferred and most frequently consumed salty food, respectively, while salted fish was least preferred and least frequently consumed. Males had a significantly higher intake frequency of at least 6 of the salty foods, but the preference of most salty foods was not significantly different between genders. Ethnic Chinese significantly preferred more and took more frequently traditional and conventional Malaysian foods like asam laksa (a Malaysian salty-sour-spicy noodle in fish stock), salted biscuits and salted vegetable, while Indians have more affinity and frequency towards eating salty Western foods. Body Mass Index was significantly negatively correlated with the intake frequency of canned/packet soup and salted fish while waist circumference was significantly positively correlated with the preference of instant noodle. Also, an increased preference of potato chips and intake frequency of salted biscuits seemed to lead to a decreased WHR. Other than these, all the other overweight/obesity indicators did not seem to fully correlate with the salty food preference and intake frequency. Nevertheless, the preference and intake frequency of asam laksa seemed to be significant negative predictors for blood pressures. Finally, increased preference and intake frequency of high sodium shrimp paste (belacan)-based foods like asam laksa and belacan fried rice seemed to discourage discretionary salt use. In conclusion, the preference and intake frequency of the high sodium belacan-based dish asam laksa seems to be a good predictor for ethnic difference, discretionary salt use and blood pressures.

Effects of Lifestyles, Dietary Habits, Food Preferences and Nutrient Intakes on Sensitivity to and Preference for Salty Tastes of Korean Women

  • This study was performed to investigate factors affecting sensitivity and preference for salty tastes of Korean adult females. Sensitivity and preference for salty tastes were determined as detection threshold concentration of NaCl solution and the optimally-preferred NaCl concentration of the bean sprout soup, respectively. A self-administered questionnaire was used to obtain the information regarding general characteristics, self diagnosis of stress, health-related lifestyle practices, dietary habits and food preferences. Dietary intake using 24-hours recall and blood pressure were measured. Salty taste detection thresholds and optimally-preferred NaCl concentrations were 0.0197% and 0.357%, respectively. There was a significant positive correlation between the optimally-preferred salt concentration and age, despite no significant correlation between either sensitivity or preference for salty taste and sodium intake, which was 3,605mg/day. Those who had bread or cereal with milk as breakfast instead of a traditional Korean meal and those who preferred jjigae to soup had significantly higher NaCl preferences for bean sprout soup. Going to bed after midnight and skipping meals (${\geq}3/week$) decreased salty taste sensitivity without reaching statistical significance. Self awareness of one's own health, recent weight changes, family history of hypertension, sleep quality, getting-up time, rate of eating and other food preferences did not affect either perception. Stress level, TV watching, BMI and sodium intake did not have significant correlation to sensitivity or preference. Further research including a large number of well-controlled subjects and more accurate measurement of sodium intake should be directed to find other factors affecting salt preference and sensitivity in order to decrease Na intake and related diseases.

충남 일부지역 초등학생의 김치에 대한 기호도 및 식행동 조사 (Preference and Dietary Behavior for Kimchi among Elementary School Students in Chungnam)

  • The purpose of this study was to estimate the preference, intake frequency and eating behavior for kimchi as well as analyze the differences by gender among fourth to sixth grade students (n=410) in a Chungnam region. Approximately 64% of the students liked the spicy taste of kimchi, 75.9% liked the saltiness, and 48.5% liked well-fermented kimchi. The disliking factors of kimchi were its sour taste (38.5%), strong scent (20.1%), and salty taste (15.4%). The most preferred type of kimchi was Baechukimchi, followed by Kkakduki, Yeolmukimchi, and Chonggakkimchi. Further, the most frequently consumed type of kimchi was Baechukimchi, followed by Kkakduki, Chonggakkimchi and Yeolmukimchi. Oisobaki, welsh onion kimchi, sesame leaf kimchi, Gatkimchi, Nabakkimchi and Baekkimchi were rarely consumed. About 34% of the students consumed 5 to 7 pieces of kimchi per meal, and 84.1% enjoyed eating kimchi, mostly because of its good taste (61.3%). The reason for not eating kimchi was because other side dishes are more delicious (30.2%). About 80% of the students responded that they prepared kimchi at home. Moreover, 74.3% of the students eat kimchi much more at home than at school. Improvements to be made for kimchi at school were as follows: less salty (34.9%), less spicy (27.6%), and sweet (22.5%). In conclusion, students enjoyed eating kimchi because of its good taste. Further, they showed preference for Baechukimchi, Kkakduki, and Yeolmukimchi and consumed them frequently. Because kimchi appears to be more preferred and more frequently consumed, it is necessary to develop a menu using kimchi along with the proper eating guidance for helping students consume various types of kimchi at school or at home.

Eating habits and eating behaviors by family dinner frequency in the lower-grade elementary school students

  • BACKGROUND/OBJECTIVES: Recently, there has been an increased interest in the importance of family meals on children's health and nutrition. This study aims to examine if the eating habits and eating behaviors of children are different according to the frequency of family dinners. SUBJECTS/METHODS: The subjects were third-grade students from 70 elementary schools in 17 cities nationwide. A two-stage stratified cluster sampling was employed. The survey questionnaire was composed of items that examined the general characteristics, family meals, eating habits, eating behaviors, and environmental influence on children's eating. The subjects responded to a self-reported questionnaire. Excluding the incomplete responses, the data (n = 3,435) were analyzed using ${\chi}^2$-test or t-test. RESULTS: The group that had more frequent family dinners (${\geq}$ 5 days/week, 63.4%), compared to those that had less (${\leq}$ 4 days/week, 36.6%), showed better eating habits, such as eating meals regularly, performing desirable behaviors during meals, having breakfast frequently, having breakfast with family members (P < 0.001), and not eating only what he or she likes (P < 0.05). Those who had more frequent family dinners also consumed healthy foods with more frequency, including protein foods, dairy products, grains, vegetables, seaweeds (P < 0.001), and fruits (P < 0.01). However, unhealthy eating behaviors (e.g., eating fatty foods, salty foods, sweets, etc.) were not significantly different by the frequency of family dinners. CONCLUSIONS: Having dinner frequently with family members was associated with more desirable eating habits and with healthy eating behaviors in young children. Thus nutrition education might be planned to promote family dinners, by emphasizing the benefits of having family meals on children's health and nutrition and making more opportunities for family meals.

울산시민의 건강실천을 위한 식생활 행태 (Dietary Behaviors of Adults for Health in Ulsan City)

  • This paper is an effort to describe dietary behaviors to keep them healthy among adults. A probability sample was drawn from residents aged between 15 and 60 living in Ulsan City area through a multi-staged cluster sampling method. The data collected by face-to-face interview includes 1,232 respondents. Both univariate and bivariate analyses were employed to describe the dietary behaviors. The dietary behaviors in this study includes preference of taking fat-part of meat, fried food, salty food, hot-taste food, drinking coffee and milk, and taking supplementary medicine. About half of the respondents reported to take fat removed when eating meat, and more than 68% of them preferred not to take any kinds of fried food. With respect to preference of salty and hot-taste food, 39.6% of the respondents take medium-salty and 39.4% do hot-taste food. A third of the respondents drink two-four cups of coffee a day. Those who reported not to drink milk at all were prevalent(37.4% of the respondents) than expected. However, less than 20% of the respondents reported to have any kinds of supplementary health food in a year. These dietary behaviors were examined by sociodemographic characteristics for bivariate analyses.

군산시 중년여성의 체지방률에 의한 비만도 분류에 따른 체중조절 행동, 식습관 및 건강관련 생활습관에 관한 연구 (A Study on Weight Control Behaviour, Eating Habits and Health-related Life Habits according to Obesity Degree by Body Fat Percentage among Middle-aged Women in Gunsan City)

  • The purpose of this study was to compare weight control behaviour, eating habits and health-related life habits according to the obesity degree by body fat percentage (%Fat) among middle-aged women. The subjects were 170 middle-aged women who lived Gunsan City, and they were assigned to one of the following groups based on their %Fat; normal weight group (18% - < 28%), overweight group (28% - < 33%) and obesity group (over 33%). The height, body weight, %Fat, the circumference of waist and hip of them were measured. Eating habits and health-related life habits were evaluated based on questionnaires. The results were as follows. Their weight, %Fat, body mass index (BMI), relative body weight (RBW), waist, hip, and waist-hip ratio (WHR) were significantly higher in the obesity subjects when compared to the normal and overweight subjects. Self-perception for weight (p < 0.001), desire for weight control (p < 0.01), and reasons of weight control (p < 0.05) were different among three groups. The main skipped meal was breakfast (67.9%), reasons of skipping meals were different among three groups (p < 0.05), and main reasons were "lose one's appetite" and "have not enough time". Food habits score for each food was not significantly different among three groups, but eating the meal on thinking with food combination in normal group was higher than overweight and obesity group (p < 0.01). Correlation coefficients of food habits score and anthropometric measurements were that salty of food was negative and food habits scores were positive correlation for anthropometric measurements and obesity index (p < 0.05 - p < 0.001). Frequency of exercise and fitting exercise for body were different among three groups (p < 0.05). Obesity group was lower frequency of exercise than the other groups. Regular diet was positive correlation with food combination (p < 0.01), taking fish (p < 0.05), taking vegetables (p < 0.01), taking bean products (p < 0.01) and food habits score (p < 0.01), frequency of eating out and snacks were negative correlation with taking fruits and fishes. Therefore, proper nutritional education for middle-aged women in obesity group is recommended regular diet, good food habits and exercise. The middle-aged women must decrease the frequency of eating out, snack and the salty foods, and increase the fruits and vegetables. They must have healthy life styles for exercise, smoking, and drinking.
