음식모형을 활용한 어린이 식생활 교육 매체 개발 (Development of Food Replicas as Dietary Education Materials for Children)

  • The purpose of this study was to develop children-friendly education materials based on food replicas for the dietary education of lower grade elementary students. Through a literature review on current dietary problems and dietary education for children, five education themes were chosen: balanced diet, seasonal food, traditional food, noodle culture, and making instant noodles. A total of 304 key food items for food replicas were selected based on the themes: six basic food groups (113 items), balanced meals (37 items), dietary habits (74 items), spring foods (13 items), summer foods (17 items), autumn foods (16 items), winter foods (11 items), Korean traditional foods (52 items), Korean native noodles (18 items), noodles from foreign countries (19 items), and making instant noodles (46 items). Next, a food replica database was developed consisting of name of the food, picture, size, ingredient, recipe, reference, and attached code. Powerpoint slides and teaching plans for all education themes were developed utilizing the food replicas in order to raise interest and understanding of serving size and intake amount. This research provides a basis for the development of food replicas as effective dietary education materials for elementary students and their use in extra-curricular activities, after school programs, community health centers, or food companies.

In vitro Digestibility of Cooked Noodle Products

  • The in vitro digestive properties of 6 domestic noodle products (spaghetti, somyeon, ramyeon, dangmyeon, naengmyeon, and jjolmyeon) were compared after cooking under the manufacture's recommended cooking conditions. The kinetic constant (k), representing the rate of hydrolysis at the initial digestion stage, was highest in the somyeon noodles (0.1151), followed by naengmyeon (0.0954), and was lowest in the spaghetti (0.0421). However, the concentration of starch ($C_{\infty}$) hydrolyzed over 2 hr was not different between the spaghetti (96.22) and the somyeon (96.40), indicating that different digestion behaviors occurred in each type of noodle, even though the amounts of digested starch were similar. The ramyeon, dangmyeon, and naengmyeon noodles showed relatively lower $C_{\infty}$ values than the spaghetti and the somyeon noodles. The spaghetti had the highest amount of slowly digestible starch (SDS, 43%) and the lowest glycemic index (GI, 87.8), whereas the somyeon had the lowest SDS value (9.6%) and the highest or (93.0). The digestibility differences among the noodles were attributed to differences in their flour compositions and manufacturing processes.

자동판매기에서 판매되는 율무차와 우동의 저장기간에 따른 품질평가(II) (The Quality Control of Adlay Tea and Wheat Noodles Served from the Vending Machines Based on the Periods of Storage)

  • The purpose of this study was to serve a standard of the good quality control and shelf-life of food and beverage served from the vending machines. So it was performed to examine the temperature (internal & external environmental, food itself), pH, Aw, POV and microbiological quality of Adlay tea and Wheat noodles served from the vending machines based on storage time in the machines. They were assessed to find the critical control point(CCP) during each of the production, delivery, purchasing phases from the vending machines. The result of this study can be summarized as follows: 1. The temperature of foods inside the vending machines was ranged from 4$0^{\circ}C$ to 45$^{\circ}C$. It was in the range of dangerous zone. The average temperature of food showed 71$^{\circ}C$ for Adlay tea and 74$^{\circ}C$ for Wheat noodles. As a result of measuring pH and Aw, they had potential danger. 2. Even though POV was low, it increased as the time passed. 3. As a result of microbial analysis, it showed that the amount of total plate count and coliforms were increased ten times after 1 day respectively. Wheat noodles' coliform and total plate counts exceeded standard value in 1 day. As a result of food poisoning bacteria, it was negative in sample against Vibrio parahaemolyticus, Salmonella, Staphylococcus aureus.

자색 고구마 분말 첨가 생면의 품질 특성 (Quality Characteristics of Wet Noodles Added with Purple Sweet Potato Powder)

  • This research investigated the quality characteristics and anthocyanin content of wet noodles according to the amount of freeze-dried purple sweet potato powder. For viscosity, initial pasting temperature tended to increase compared to the control group, whereas peak viscosity, peak viscosity time and final viscosity steadily decreased. As the amount of purple sweet potato powder increased, breakdown value of viscosity and set back value significantly decreased. For chromaticity, as the amount of purple sweet potato powder increased, L-value decreased gradually, whereas a-value gradually increased and b-value significantly decreased compared to the control group. Anthocyanin content significantly increased in the addidtive group (91.79) compared to the control group (70.20). Measurement of texture characteristics found that hardness was highest in the control group, but it decreased as the amount of purple sweet potato powder increased. Springiness, gumminess and chewiness were highest in the control group. In the sensory evaluation, color, odor, chewiness, and overall acceptance were high in the 6% addictive group. In this study, by investigating the anthocyanin contents, quality characteristics and sensory attributes of wet noodles with freeze-dried purple sweet potato powder, we found that the 6% additive group is the best. Our results provide basic information for the development of noodles with purple sweet potato powder.

세균수에 의한 국수의 저장성 예측 (Prediction of Shelf-life of Noodles by Bacterial Count)

  • 비살균 제품인 생면(칼국수)과 숙민(우동, 냉면, 쫄면)을 대상으로 $5^{\circ},\;15^{\circ}$$25^{\circ}C$에서 일정한 세균수에 도달하는 시기는 생면의 경우 저장온도에 관계없이 이취의 발생시기와 비슷하였으나, 숙면의 경우 이취와 곰팡이 발생시기는 모들 시료에서 세균수에 의한 저장기간보다 늦었다. 국수의 저장수명은 저장온도가 $10^{\circ}C$씩 낮아짐에 따라 약 2배 정도 증가하였다.

도시 청소년들의 패스트 푸드의 이용실태 및 의식구조 (Utilization State of Fast-foods Among Korean Youth in Big Cities)

  • This study was to investigate utilization state of various fast-foods among Korean youth in big cities in order to provide basic knowledge for nutrition education of Korean youth. Total 29 questions were asked to 1680 middle, high school and college students in Seoul. Pusan and Taejon. General information of the subjects were analyzed according to variables such as utilization state of fast foods(hamburger, pizza, chicken, noodles & mandoo, ice cream), preference, concenpts regarding price, fullness, choice factors and influences on food habits. All statistical data analysis were conducted using the SPSS/PC+. The results obtained are summarized as follows: 1) Fast-food eaten most frequently was noodles & mandoo where the least frequently eaten was pizza. 2) The area used fast-feeds the least frequently was in Pusan where hamburger was used by 51.1% of the subjects, pizza by 26.5% 64.1%, 38.9% of the subjects in Seoul and 64.7%, 31.3% in Taejon ate hamburger & pizza, respectively. 3) 38.5%, 34.2%, 32.8% and 17.5% of chicken, pizza, noodles & mondoo and hamburger eaters commented on saltiness. Also 82.2% of ice cream eaters suggested ice creams taste too sweet. 4) 94.2%, 72%, 69.5%, 38.5% and 23.8% of pizza, chicken, hamburger, ice cream, noodles & mandoo eaters suggested the price of these fast-foods too expensive. 5) 39.6% of the subjects wished to developed Korean traditional food items into fast-food styles.

연잎 분말 첨가가 국수의 품질특성에 미치는 영향 (Quality Characteristics of Dried Noodle Added with Lotus Leaf Powder)

  • The principal objective of this study was to evaluate quality characteristics of dried noodles when different concentrations of lotus leaf powder (LLP) were added to the wheat flour, thereby determining which noodle recipe was preferred. The cooking quality, mechanical texture properties, and viscosity were measured, and then a sensory evaluation was conducted with the prepared noodles. The gelatinization points of the composite LLP-wheat flours were shown to have an increased, viscosity at $95^{\circ}C$ after 15 minutes. As measured via amylograph, the maximum viscosity values of those samples were decreased as the LLP content was increased. As well, when increased amounts of LLP were added, both the L and a values were reduced, whereas the b value was increased. The color values, weight and volume of the cooked noodle increased, as did the turbidity of the soup. With regard to the textural characteristics, the LLP additive increased hardness and cohesiveness, and reduced adhesiveness and springiness. Overall, according to the results of our sensory evaluation, the noodles prepared with 5% LLP were preferred over the other noodles.

비트 건근 첨가에 따른 국수의 품질 특성 (Quality Characteristics of Noodles Supplemented with Dried Beta vulgaris L. Root Powder)

  • 본 연구에서는 비트 건근 분말을 새로운 식품소재로 활용하고자 하는 연구의 일환으로 밀가루에 비트 건근 분말 첨가량을 달리하여 국수를 제조한 후 품질 특성을 분석하였다. 비트 첨가량이 증가할수록 색도의 L 값과 b 값은 감소하였으며, a 값은 증가하였다. 조리 특성에 있어서 무게와 부피가 감소하였으나 국물의 탁도가 증가하여 조리 중 고형분의 손실량이 증가함을 알 수 있었다. 조직감은 탄성, 씹힘성 및 검성이 증가하는 결과를 보였다. 관능검사 결과 외관, 색, 맛, 풍미 및 조직감 모두 비트 건근 분말을 첨가했을 때 더 좋은 점수를 나타내었으며, 맛, 조직감 및 종합적 기호도에서 비트 건근 분말을 1%를 첨가할 경우 유의적으로 가장 높은 점수를 나타내었다. 이상의 관능검사 결과를 종합하면 국수 제조 시 적정한 비트 건근 분말의 첨가량은 1%가 가장 적당한 것으로 판단된다.

클로렐라 추출물 첨가 국수의 품질 특성 (Quality Characteristics of Noodle Added with Chlorella Extract)

  • 생리적 활성이 높은 클로렐라 추출물을 효율적으로 활용하기 위한 방안으로 클로렐라 추출물 분말을 0.5%, 1.0%, 1.5%, 2.0% 수준으로 첨가하여 제조한 생국수의 품질 특성에 관하여 조사하였다. 클로렐라 추출물 분말을 첨가한 국수는 조리시의 중량, 부피, 함수율, 고형분 용출량이 대조구보다 높게 나타났다. 색도는 클로렐라 추출물 분말 첨가량이 증가할수록 L값과 a값은 감소되었고 b값은 증가하였으며 조리하였을 때 L, a, b값이 모두 감소하는 경향을 보였다. 클로렐라 추출물을 첨가한 국수의 조리 후 텍스쳐에서 경도, 응집성, 탄성, 점성, 씹힘성은 대조구에 비해 낮은 값을 나타내었다. 관능 검사 결과 클로렐라 추출물 1.5% 첨가구에서 맛, 텍스쳐, 후미, 전체적인 기호도가 가장 좋게 평가되었고, 색깔과 향은 대조구와 유의적인 차이를 나타내지 않았다. 이상의 결과를 보면 클로렐라 추출물 분말을 1.5%첨가함으로써 품질과 관능성이 향상된 생국수 제조가 가능함을 알 수 있었다.

작두콩분말 첨가에 따른 생면의 품질 특성 (Quality Characteristics of Wet Noodles added with Sword Bean Powder)

  • This study evaluated the quality characteristics of wet noodles added with sword bean powder(0, 5, 10, 15%) to determine the most preferred noodle recipe for consumer's desire. The proximate composition of the sword bean powder was as follows: Moisture contents were $13.4{\pm}0.08%$, protein $30.2{\pm}0.12%$, fat $0.3{\pm}0.09%$, protein $1.0{\pm}0.11%$ and carbohydrates $55.1{\pm}0.12%$, respectively. Total amino acid content of sword bean powder was measured 23,054.266 mg/100 g, especially in the order of histidine, glutamic acid and aspartic acid. The flavonoid content of sword bean powder was 17.9750 mg%. Water-binding capacity increased as the level of sword bean powder increased. When viscosity of wheat flours containing sword bean powder was measured by amylograph, the gelatinization point increased significantly as the level of sword bean powder increased, but peak viscosity decreased. As the level of sword bean powder increased, L value decreased, whereas a and b values increased. Weight, water absorption and volume of cooked noodles prepared with wheat flours containing sword bean powder decreased, whereas turbidity of soup increased. For textural properties, addition of sword bean powder increased hardness, springiness, chewiness of cooked noodles, whereas adhesiveness decreased. According to sensory evaluation such as appearance, color, flavor, taste, texture, overall preference, it was revealed noodles with 10% sword bean powder was the most preferred. According to the results, the addition of sword bean powder positively affects the overall sensory evaluation of wet noodle, and 10% is the optimal level for addition.
