일부 지역 농촌 노인의 철분 영양상태에 관한 연구 (A Study on Nutritional Status of Iron in the Rural Elderly)

  • The purpose of this study was to examine nutritional status of iron in 27 rural elderly subjects. The daily intake, urinary excretion and serum level of iron were determined by 24-hr food collection method, and 24-hr urine and serum collection for 3 days. The results were summarized as follows. 1. The mean age, height, weight, and blood pressure were 67.7 years, 163.2cm, 55.9kg, and 121.1/80. 0mmHg in men and 69.9 years, 146.5cm, 47.6kg, and 108.9/71.1mmHg in women, respectively 2. The daily intake of energy, protein, vitamin A, vitamin B$_1$, vitamin B$_2$, niacin, vitamin C, and iron were lower than Korean recommended dietary allowances. 3. The daily iron intake was 7.82mg. The proportion of heme iron and nonheme iron to the total iron intake were 8.05% and 91.94%, respectively Major iron sources of the rural elderly were cooked rice, Ko Chu Jang, beef blood, anchovy, soybean paste, and leafy radish. 4. The hemoglobin, hematocrit, serum iron, and total iron binding capacity were 14.3g/㎗, 42.9%, 79.4 $\mu\textrm{g}$/㎗, and 268.4 $\mu\textrm{g}$/㎗ in men and 12.9g/㎗, 38.8%,92.4 $\mu\textrm{g}$/㎗, and 277.9$\mu\textrm{g}$/㎗ in women, respectively. 5. There was a significant positive correlation between dietary intake and urinary excretion of iron.

Cross-Sectional Study on Iron Status of Asan Residents and Regional Comparison

  • Iron deficiency and anemia are severe nutrition problems in most of Korea. Iron intake, especially iron with better bioavailability is insufficient over a total age group. Recent changes in diet and life style of Koreans have been repeatedly suggested problems caused by excess nutrient intake rather than under intake. Despite the changes in diet patterns, iron deficient anemia is still prevalent in many parts of Korea. Eight hundred and fifty subjects (323 male and 527 female subjects) in Asan were recruited from farming, factory and urban area. Each subject was interviewed to assess nutrients intakes according to a 24hr-recall method. Twelve hour fasting blood samples were collected to vacutainer with EDTA for hemoglobin (Hb) and separate the tubes for serum iron (SI) and total iron binding capacity (TIBC). The mean serum iron value of female subjects in the factory area was significantly higher (p < 0.05) than that of the female subjects in the urban area although subjects in urban area showed significantly higher the dietary iron intake for both the men and woman (p < 0.05). Dietary iron intake for the younger women was lowest in the farming area and those in the urban area showed the highest dietary iron intake (p < 0.05). When the dietary iron intake was compared by different the age groups, dietary iron intake of the older women from animal sources was less than that of younger women in the urban area (p < 0.05). Dietary iron intake of Asan residents was not sufficient regardless of age, sex and regions and intake of heme iron was especially lower than nonheme iron. (J Community Nutrition 5(1) : 37∼43, 2003)

폐경기 이후 여성의 철분영양상태 및 철분이용율에 관한 연구 (A Study on Iron Nutritional Status and Dietary Iron Bioavailability of Postmenopausal Women in Jeon-Ju Area)

  • The purpose of this study was to assess the iron nutritional status and dietary iron availability of postmenopausal women residing in Jeonju area. The anthropometric parameters, nutrient intake and biochemical status of iron were measured from 57 postmenopausal women aged 50∼74 years old. Mean values of hemoglobin(Hb), hematocrit(Hct), serum iron(Fe), total iron binding capacity(TIBC) and serum ferritin(Ferritin) concentration were 12.82${\pm}$1.03g/dl, 37.68${\pm}$2.99%, 92.60${\pm}$46.66ug/dl, 353.0${\pm}$54.48ug/dl, 86.86${\pm}$100.7ug/ιrespectively. Prevalence of iron deficiency greatly varied by indices from 14.04% when judged by Ferritin(<20ug/ι) to 40.4% by TIBC(>360${\mu}$g/dl. The anemic subjects assessed with Hct percent(36%) represented 22.8%, whereas 21.1% of the subjects possessed less than 12g/dl of Hb. Ferritin concentration showed a significantly negative correlation with TIBC(r=-0.343, p<0.01) and a positive correlation with MCHC(r=0.361, p<0.01). The mean daily intake of iron was 10.62mg and intake of heme iron was 5.3%(0.56mg) of total iron intake. Total absorbable iron caculated by the method of Monsen was 0.49mg anti bioavailability of dietary iron was 4.61%. Ferritin Concentration was positively associated with total iron intake(r=0.264, p<0.05), dietary nonheme iron(r=0.286, p<0.05) and iron of animal food (r=0.364, p<0.01). But Ferritin concentration was not correlated dietary heme iron(r=-0.137, p>0.05). Major food groups of iron intake were vegetables(20.15%), cereals(19.59%) and fishes(12.34%) in postmenopausal women. Intake of eggs was positively associated with Ferritin(r=0.473, p<0.01).

어육의 배소에 의한 지질산화에 관한 연구 III. 적색육어의 배소 및 재가열에 의한 heme 화합물의 변화 (Lipid Oxidation in Roasted fish Meat III. Changes in Heme Compounds in Roasted and/or Reheated Dark Muscled Fish)

  • 고등어와 꽁치를 온도와 시간을 달리하여 배소한 것과 배소한 시료를 저온 ($5\pm2^{\circ}C$)에서 저장한 후 단계적으로 가열처리했을 때 발생하는 지질산화에 heme 화합물이 미치는 영향을 알아보았다. Heme 화합물 중 myoglobin 함량은 고등어나 꽁치모두 $180^{\circ}C$에서 20분간 어피 제거육의 상태로 배소한 것이 가장 감소폭이 컸으며 가열. 재가열에 의해서도 지속적으로 감소하였다. 특히 $180^{\circ}C$에서 어피 제거육의 상태로 20분간 배소한 것은 생시료에 비해 myoglobin 함량이 약 $62\%$ 정도 감소하였다 Myoglobin의 감소에 의한 metmyoglobin 함량은 고등어와 꽁치 모두 점차증가하는 경향이였으며, 배소온도가 낮을수록 그리고 어피를 제거한 경우가 metmyoglobin의 생성이 가장 많았다. 총철 함량은 배소온도와 시간을 달리하여 처리하여도 두 어종 모두 생시료와는 함량 차이가 거의 없었다. 비heme 철은 고등어의 경우 총철 함량에 비해 약 $28\%$의 비heme 철이 함유되어 있었으며. $180^{\circ}C$에서 20분간 어피 제거육의 상태로 배소했을 경우 생시료에 비해 약 $96\%$ 정도 비heme 철 함량이 증가하였다. 꽁치는 생시료에는 건물당으로 약 1.6mg/100g 함유되어 있었으며, $220^{\circ}C$에서 10분 배소시에는 총철 함량에 대해 약$40\%$. $200^{\circ}C$에서 15분 배소시에는 $41\~43\%$ 그리고 $180^{\circ}C$에서 20분 배소시에는 약 $48\%$의 비heme 철이 생성되었다. Heme 철 함량은 고등어와 꽁치 모두 비heme철의 증가에 반비례해서 감소하는 경향이였으며 또한 배소시간이 길수록 그리고 어피 잔존육보다는 어피 제거육의 감소폭이 더 컸다.

일부 폐경 전 , 후 중년 여성의 철분 영양상태에 관한 연구 - 강릉지역을 중심으로 (Nutritional Iron Status in Pre - and Postmenopause Middle - Aged Women in Kangnung Area)

  • The purpose of this study were to assess iron status and obesity in 82 middle aged women living in Kangnung area. Anthropometric measurements were taken for body weight, height, percentage of body fat and circumferences of waist and hip. Venous blood samples were drawn from subjects for measurement of hemoglobin(Hb), hematocrit(Hct), serum iron(Fe), total iron binding capacity(TIBC), transferrin saturation(TS) and serum ferritin. Dietary intakes of iron(heme iron and nonheme iron), the amounts of MPF(meat, poultry and fish) and ascorbic acid were assessed by modified 24-hr recall method. The results obtained are summarized as follows : Postmenopausal women had more body fat than premenopausal women. That is, postmenopausal women tend to be obeser than premenopausal women. There was no difference in Hb, Hct, Fe, TIBC and TS between pre- and postmenopausal women. But the serum ferritin concentration of postmenopausal women(83.7$\pm$42.1ng/ml) was significantly (p<0.05) higher than premenopausal women(56.4$\pm$41.0ng/ml). Prevalences of iron deficiency (20%, 20.0% and 17.1% respectively) of postmenopausal women. The mean daily intakes of total iron in pre- and postmenopausal women were 17.5$\pm$9.3mg and 15.6$\pm$6.9mg, respectively. Bioavailabilities of dietary iron were 6.5% and 4.5% in pre- and post-groups. These results indicate that individual dietary guidelines should be used to educate middle-aged women different in status of menopause. For example, premenopausal women should increase nutritional iron status and postmenopausal women should try to prevent obesity.

울산시 여고생의 철분영양상태와 빈혈에 관한 연구 (A Study of Iron Status and Anemia in Female High School Students in Ulsan)

  • This study was designed to assess the iron nutritional status and anemia of high school students. 383 female subjects in Ulsan Metropolitan city were evaluated using a questionnaire, and a measurement of hematological indices. The average height and weight of the respondents were 161.24$\pm$4.90 cm and 53.12$\pm$6.37kg, repectively. The average BMI(body mass index) was 20.43$\pm$2.26 which was in the normal ramge. The average hemoglobin(Hb) concentration of the subjects was 13.14$\pm$0.97g/dl, and the average hematocrit(Hct) level was 40.84$\pm$17.40%. Transferrin saturation{TS(%)} was 20.86$\pm$10.32%, and the ferritin by Hct(<36%), 27.2%by TS(<14%),26.6% by ferritin(<12 ng/ml). As for clinical symptoms, the greatest number of respondents reported that they experienced ‘decreased ability to concectrate’. Mean daily intakes of iron were 14.89$\pm$4.48 mg and heme iron intakes were 5.04$\pm$2.13 mg, which was 29.6% of total iron intake. The total iron binding capacity(TIBC) was negatively correlated with Hb concentration(r= -0.222, p<0.01). Serum ferritin was positively correlated with Hb concentration(r= - 0.323, p<0.05) and negatively correlated with TIBC(r= -0.367, p<0.01). TS(%) was positively correlated with Hb concentration(r= 0.402, p<0.01) and positively correlated with serum ferritin(r=0.413, p<0.01). As for the correlation between blood biochemistry and clinical symptoms related to anemia, the Hb concentration was negatively correlated with ‘shortening of breath when going upstairs(p>0.05)’ and ‘cold hands and feet’ significantly(r= -0.109, p<0.05). The level of Mean corpuscular volume(MCV) was negatively correlated with ‘feel dizzy when standing up’,‘tired out easily’, and ‘decrease ability to concentrate’ significantly(p<0.05). In particular, the level of Fe was negatively correlated with ‘shortening of breath when going upstairs’ and ‘feeling blue’ significantly(p<0.01). These results suggest That the prevalence of iron deficiency of female high school students is very high, therefore guidelines for diet supports and nutrition education to improve their iron status should be provided.

Orotic acid 투여 흰쥐의 조직 과산화지질 농도에 미치는 capsaicin의 영향 (Effort of Capsaicin on the Lipid Peroxidation in Tissues of Rats Fed Orotic Acid.)

  • Orotic acid 및 capsaicin (0.02 and 0.04%)을 단독 또는 병합 투여한 상태에서 흰쥐의 각 조직 중에 과산화지질 농도를 thiobarbituric acid reactive substances (TBARS) 측정법으로 검토하였다. 체중 증가량, 식이섭취량, 식이효율 및 뇌, 신장, 심장, 비장, 고환의 상대무게는 각 실험군간에 유의적인 차이가 없었다. 간의 상대적 무게는 정상군과 비교해서 OA군에서는 유의적으로 증가하였고, 0.02% 및 0.04% Cap군에서는 차이를 보이지 않았으나 OA+0.02% Cap군 및 OA+0.04% Cap군에서는 감소하는 경향을 보였다. 간 조직의 과산화지질 농도는 정상군에 비해 OA군에서 유의적으로 증가하였고, 이러한 증가는 0.04% capsaicin 병합투여에 의해 더욱 증가하는 것으로 나타났다. 그러나, 간 조직의 과산화지 질 농도는 정상군보다 0.02% Cap군에서는 유의적인 차이가 없었으나, 0.04% Cap군에서는 유의적으로 증가하여 농도별 차이를 보여주었다. 신장 조직의 과산화지질 농도는 정상군에 비해 OA군에서 증가하였고, OA를 함유한 OA+0.02% Cap군 및 OA+0.04% Cap군에서도 증가하였다. 그러나, 0.02% Cap군 및 0.04% Cap군에서는 오히려 감소하였다. 간의 비헴철 함량은 정상군에 비해 OA군과 capsaicin을 병합 투여한 OA +0.02% Cap군 및 OA+0.04% Cap군에서 유의적으로 증가하였다. 한편, 뇌, 심장, 비장 및 고환 조직의 과산화지질 농도는 각 실험군간에 유의한 차이가 없는 것으로 나타났다. 이상의 결과에서 OA투여 흰쥐의 간 조직에서 과산화지질 농도 증가와 동시에 비헴철 함량이 증가하였고, 이러한 증가는 0.04% capsaicin 병합투여에 의해 더욱 증가하는 것으로 나타났다.

느릅나무 추출물의 항산화 효과 및 아질산염 소거능 (Antioxidative Activities and Nitrite Scavenging Abilities of Extracts from Ulmus devidiana)

  • Oil emulsion에 느릅나무 근피(한국산, 중국산), 수피(한국산) 각 추출물 0.05% 첨가에 의한 항산화 작용의 실험 결과는 다음과 같다. 활성 산소종, 금속이온 참가에 따른 지방 산화 억제능은 근피, 수피 각 용매 추출물의 $H_2O_2,-OH,\;KO_2$에 대한 포집능은 모두 우수하여 높은 항산화 효과를 나타내었으며, 각 추출물과 $Fe^{2+}$ ion과 $Cu^{2+}$ ion도 강한 활성 유리 라디칼 포집능으로 우수한 항산화 효과를 보였다. 지방 산화를 촉진하는 nonheme iron 함량에서 $Fe^{2+}$ 함량과 total iron 함량은 근피(중국산) 에탄올, 메탄올 추출물이 가장 높은 함량을 나타내었고, 한국산 근피, 수피의 에탄올, 메탄올 그리고 부탄올 추출물군에서 80% 이상의 높은 활성을 보였고, 물 추출물군의 경우 20~55%의 범위로 낮은 효과를 보였다. SOD 유사활성은 근피(중국산) 부탄올 추출물, 수피(한국산) 물 추출물에서 가장 높은 활성능을 보였다. 아질산염 소거능의 경우도 근피, 수피 에탄올, 메탄올 그리고 부탄올 추출물군 모두 우수한 소거능을 보였고, 특히 pH 1.2에서는 가장 높은 아질산염 소거능을 보였으며, pH 6.0으로 갈수록 급격히 감소하였다.

Evaluation of Various Packaging Systems on the Activity of Antioxidant Enzyme, and Oxidation and Color Stabilities in Sliced Hanwoo (Korean Cattle) Beef Loin during Chill Storage

  • The effects of various packaging systems, vacuum packaging (VACP), medium oxygen-modified atmosphere packaging (50% $O_2/20%$ $CO_2/30%$ $N_2$, MOMAP), MOMAP combined with vacuum skin packaging (VSP-MOMAP), high oxygen-MAP (80% $O_2/20%$ $CO_2/30%$ $N_2$, HOMAP), and HOMAP combined with VSP (VSP-HOMAP), on the activity of antioxidant enzyme, and oxidation and color stabilities in sliced Hanwoo (Korean cattle) beef loin were investigated at $4^{\circ}C$ for 14 d. Higher (p<0.05) superoxide dismutase activity and total reducing ability were maintained in VSP-MOMAP beef than in HOMAP beef. Lipid oxidation (2-thiobarbituric acid reactive substances, TBARS) was significantly (p<0.05) retarded in MOMAP, VSP-MOMAP, and VSP-HOMAP beef compared with HOMAP beef. Production of nonheme iron content was lower (p<0.05) in VSP-MOMAP beef than in HOMAP beef. Red color ($a^*$) was kept higher (p<0.05) in VSP-MOMAP beef compared with MOMAP, HOMAP, and VSP-HOMAP beef. However, VACP beef was found to have the most positive effects on the antioxidant activity, oxidation and red color stabilities among the various packaged beef. These findings suggested that VSP-MOMAP was second to VACP in improving oxidation and color stabilities in sliced beef loin during chill storage.

고지방급여 흰쥐의 혈청과 간의 지질 농도 및 조직 과산화지질 농도에 미치는 홍삼분말의 영향 (Effect of Korean Red Ginseng Powder on the Lipid Concentrations and Tissue Lipid Peroxidation in the Rats Fed High Fat Diet)

  • 생리활성 물질을 함유하고 있는 홍삼분말의 섭취수준에 따른 고지방식 급여 흰쥐의 지질 농도 및 과산화지질 농도에 미치는 영향을 검토하기 위하여 200 mg/rat및 400 mg/rat 수준으로 홍삼분말을 첨가하여 3주간 자유 섭취시켰다. 혈청 총 콜레스테롤 농도는 대조군에 비해 KRG I군과 KRG II군에서 유의적으로 감소(p<0.05)경향을 나타내었다. 혈청 HDL-cholesterol 농도는 대조군에 비해 KRG I군 및 KRG II군에서 각각 69.75% 및 39.l5% 증가하였고, 동시에 동맥경화 지수는 각각 74.76% 및 37.3n% 감소하였다 혈청 중성지질 농도는 대조군에 비해 KRG II군에서만 유의적으로 감소(p<0.05)하였다. 혈청 지질의 과산화물 생성지표인 TBARS는 대조군에 비해 KRG I군과 KGB II군에서 유의적으로 감소(p<0.05)하였다. 과산화지질 촉매물질로 작용하는 혈중 비헴철 함량을 측정한 결과, 대조군에 비해 홍삼분말 첨가군에서 유의성 있게 감소하여 혈청 과산화지질 농도와 상관관계를 나타내었다. 간장에서의 MDA 함량은 대조군에 비해 KRG I군 및 KRG II군에서 유의적으로 감소(p<0.05)하였다. 간장으로부터 분획한 microsome의 세포막 과산화지질 농도는 대조구에 비해KRG I군 및 KRG II군에서 유의적으로 감소(p<0.05)하고, nitochondria 분획에서는 효과가 없었다. 홍삼분말을 0, 2, 4, 및 6 mg/mL농도로 간장 세포 분획의 반응액에 첨가하여 MDA 함량을 측정하였을 때, homogenate 및 microsome 분획에서는 6 mg/mL 농도에서만 유의적으로 감소(p<0.05)하고, mitochondria 획분에서는 2, 4 및 6 mg/mL 첨가구에서 모두 유의적으로 감소(p<0.05)하였다. 이상의 실험에서 고지방 식이를 급여한 흰쥐에서 홍삼분말 첨가는 혈중의 콜레스테롤 농도와 과산화지질 농도를 낮추는 효과를 나타내었다.
