  • The aim of this study was to investigate the relation of sensory quality traits of cooked beef to fresh meat quality and histochemical characteristics, especially muscle bundle traits, in the longissimus thoracis muscle of Hanwoo steers. Cooking loss negatively correlated with softness, initial tenderness, chewiness, rate of breakdown (RB), and amount of perceptible residue (AR) after chewing (p<0.05), and drip loss showed negative correlation with RB and AR (p<0.05). All the attributes of tenderness exhibited negative correlation with the Warner-Bratzler shear force value (p<0.05). Marbling score and the intramuscular fat (IMF) content showed positive correlation with all the organoleptic characteristics, including tenderness attributes, juiciness, and flavor (p<0.05). Regarding histochemical characteristics, muscle fiber size did not have a significant correlation with all the sensory quality traits, although the area percentage of type I fiber was related with softness, initial tenderness, and chewiness (p<0.05). On the contrary, the characteristics of muscle bundle were related to all the sensory tenderness attributes (p<0.05), and the sensory tenderness increased with smaller muscle bundle size (p<0.05). These results suggest that the IMF content and bundle characteristics can be used as indicators for explaining the variations in sensory tenderness in well-marbled beef.

  • PURPOSE: This study analyzed the correlation between the plantar pressure and body alignment according to the dominant hand of elementary school baseball players. METHODS: The subjects consisted of 32 elementary school baseball players. The 32 players were classified in the right-hand dominant group (Rt. Group, n = 22) and left-hand dominant group (Lt. group, n = 10). The plantar pressure was measured using a pedoscan to determine the maximum pressure and pressure distribution. The body alignment was measured using a fometric 4D to measure the trunk imbalance angle (TI), pelvic tilt angle (PTi), pelvic torsion angle (PTo), pelvis rotation angle (PR), kyphotic angle (Ky), lordotic angle (Lo), and trunk torsion angle (TT). RESULTS: Participants showed correlations in the Rt. group, according to the left maximum pressure, Lo (r = .592, p < .05), and TT (r = .514, p < .05); according to the right maximum pressure, PR (r = .539, p < .05), and Lo (r = .503, p < .05). In the left pressure distribution, the PR (r = -.521, p < .05) showed a negative correlation. In the Lt. group, the PT (r = -.591, p < .05) showed a negative correlation in the left pressure distribution. CONCLUSION: These results can be used as basic data for a body analysis study of elementary school baseball players in the future.

  • Background: Prognostication of breast cancer using clinico-pathologic variables, although useful, remains imperfect. Recent research has focused on finding new markers of prognosis using gene expression profiling. Panels of proteins assessed by immunohistochemistry might also be useful in this regard. This study focused on Bcl-2 protein expression in triple-negative (TNBC) and non- triple-negative breast cancer (non-TNBC) with correlation to clinico-pathologic variables. Materials and methods: We analyzed Bcl-2 expression in 77 women with primary breast carcinoma divided into two groups; triple-negative and non- triple-negative according to expression of estrogen (ER), progesterone (PR) and human epidermal growth factor receptors (Her2/neu). Bcl-2 expression was assessed in relation to age, histo-pathological subtype, grade, nodal status and tumor size. Results: Bcl-2 was expressed in 74% of triple-negative breast cancers and 70% of non- triple-negative cancers. In TNBC, expression was significantly correlated with invasive ductal subtype, while in non-TNBC it was significantly correlated with age and negative nodal status. In both groups higher Bcl-2 expression associated with favourable prognostic factors in breast cancer, but no significant statistical correlations were found. Conclusions: Frequency of Bcl-2 expression does not differ between TNBC and non-TNBC, but different prognostic factors correlate with Bcl-2 in the two cases.

  • Recently elevated plasma homocysteine concentration is considered an independent risk factor for atherosclerosis and thrombosis with coronary artery disease. Folate and vitamin $B_{12}$ are cofactors and closely related with metabolism of homocysteine. The purpose of this study is to evaluate the correlation between homocysteine and folate and vitamin $B_{12}$ in patients with ischemic heart disease. Twenty-six patients, in whom coronary angiographic finding revealed more than $50\%$ of stenosis at least in one coronary vessel were enrolled as the patient group, and thirty subjects, in whom angiographic finding revealed in not significant stenosis, but complained of chest pain, were selected as the control group. Fasting venous blood was obtained and measured the concentration of plasma total homocysteine, folate and vitamin $B_{12}$ by high performance liquid chromatography and fluorescence detection method. We examined the correlation between homocysteine and folate and/or vitamin $B_{12}$ in the control group and the patient group, respectively. Compared with the control group, the patient group had relatively higher plasma total homocysteine concentration ($10.7\pm4.2\;vs\;9.6\pm3.5$ umol/L), but showed no significant difference. Folate and vitamin $B_{12}$ concentration are low in the patient group, but showed no significant difference between patient and control group. Plasma total homocysteine concentration showed negative correlation with folate and vitamin $B_{12}$ in both the control group and the patient group, and showed significantly negative correlation in patient group {r = -0.550 (p < 0.01) vs r = -0.609 (p < 0.01)}. We knew that the plasma total homocysteine concentration were relatively elevated in patient group compared with the control group. Because plasma total homocysteine concentrations are closely negative correlated with folate and vitamin $B_{12}$ in the patient group, folate and vitamin $B_{12}$ supplement can lower the mortality and morbidity of ischemic heart disease. • The purpose of this study is to find out the difference of sense of self-efficacy and stress encountering strategy of university students under the stress situation depending on the smart-phone user group (addiction group, general user group). For this purpose, the study issues are established as follows. First, it has analyzed what is the correlation of smart-phone addiction, sense of self-efficacy, and stress encountering strategy. Second, it has studied if there is any difference of sense of self-efficacy and stress encountering strategy for the smart-phone user group. In order to verify such study issues, For 1,670 university students in the Chungcheong area, smart-phone addiction scale, sense of self-efficacy scale, and stress encountering method scale were administered. Looking into the study result, first, as a result of the relativity analysis, it displayed the correlation of preference of test difficulty, self-control efficacy and important negative from the smart-phone addiction and sense of self-efficacy. In addition, all sub-variables of smart-phone addiction and avoidance orientation from the stress encountering strategy displayed the important positive correlation, and from the smart-phone addiction, the virtual world orientation and pursuit of social-support displayed the important negative correlations, and all sub-variables (interference with ordinary living, virtual world striving direction, withdrawal, resistance) of smart-phone addiction and problem solving-orientation displayed the negative correlation. Second, as a result of verification for the difference of the smart-phone addiction group and general use group following the sense of self-efficacy, the general use group is shown to have higher self-control efficacy sense than the addiction group. And third, as a result of verifying the difference of stress encountering following the smart-phone addiction group and general use group, the addiction group is shown to be lower than the general use group in terms of social support pursuit and problem solution orientation with the avoidance orientation shown to be higher. This type of result is expected to provide the base data when developing the smart-phone addiction preventive education program by finding out in details for the characteristics of smart-phone addiction group for university students.

  • Aims: To identify the psychosocial adjustment of Turkish patients with breast cancer and the effects of perceived social support on their adjustment. Materials and Methods: The sample comprised 100 volunteering patients diagnosed with breast cancer in the last six months reporting to the Outpatient Chemotherapy Unit at the Medical Faculty Hospital in northern Turkey. The data for the study were collected through the Descriptive Information Form, the Psychosocial Adjustment to Illness Scale-Self-reflection (PAIS-SR) and the Cancer-Specific Social Support Scale and analyzed via SPSS 16.0 for Windows. Descriptive statistics, Chi square test, ANOVA and correlation were used to evaluate data. Results: There was a negative significant correlation between mean scores in the sub-scales of the social support scale and the ones in the sub-scales of the psychosocial adjustment to illness scale (p<0.05). Similarly, there was a negative significant correlation between confidence support and health care orientation as well as adjustment to social environment. Likewise, emotional support was in a negative significant correlation with health care orientation, adjustment to domestic environment, extended family relationships and adjustment to social environment. Conclusions: It was concluded that social support for patients with breast cancer had an influence on their psychosocial adjustment to illness. Holistic care should be given to breast cancer patients by oncology nurses especially in the first six months of treatment. It could be concluded that patients should be accompanied by their family/relatives in treatment and care following their diagnosis with breast cancer, that their family should be made more aware of the fact that the patient should be physically and psychologically supported, that patients with breast cancer should be provided with domiciliary care, and that they should be encouraged to participate in social support groups.

  • This study investigated the spatial characteristics of warming trends and the dipole-like pattern of temperature field in the Antarctic Peninsula using surface air temperature (SAT) of 10 stations in the vicinity of the Antarctic Peninsula. SAT data for the 1962-2001 period at 6 stations (Rothera, Faraday/Vernadsky, Bellingshausen, Orcadas, Esperanza, Halley) revealed in general the larger warming trends in autumn and winter except for Halley. The largest warming was shown for August in the west side of the Peninsula (more than $0.9^{\circ}C/decade$). On the other hand, the recent 14-year SAT data showed the strong warming trends at 9 stations except for Halley in the earlier period (April-June) than August for the 1962-2001 period. The largest warming appeared in May at Esperanza and Butler Island. SAT of the two sides showed significant positive correlations over most of the period except for the mid- and the late 1970s, in which significant negative correlations were found. In the correlation analysis between SAT and sea surface temperature (SST) anomalies in the NINO 3.4 region, strong negative correlation was found in the west side of the Peninsula. Details of the correlation analysis exhibited that the negative correlation was significantly strong from the early 1980s to the mid-1990s. However, it was difficult to find significant correlations of ENSO with SAT in the east side of the Peninsula. So, in this study it failed to find out clearly the out-of-phase relationship of SAT across the Antarctic Peninsula.

  • Purpose: This study aimed to analyze the contribution of emotional labor (surface acting, deep acting) and organizational commitment (affective commitment, continuance commitment) to turnover intention and customer orientation of school foodservice dietitian. Methods: Our survey was administered to 393 school foodservice dietitian in the Busan area on February 11, 2014. Results: For verification of mean differences, the mean scores for surface acting, deep acting, affective commitment, and continuance commitment were found to be 2.53/5.00, 3.71, 2.88, and 3.57, respectively. The mean surface acting score was significantly different according to age (p<0.001), total length of career as a dietitian (p<0.01), school type (p<0.001), and employment status (p<0.05). The mean deep acting and turnover intention scores were significantly different according to age (p<0.001), total length of career as a dietitian (p<0.001), school type (p<0.001), employment status (p<0.001), and no. of meals served (p<0.001). The mean customer orientation score was significantly different according to age (p<0.05), employment status (p<0.01), and number of work hour (p<0.05). There was a positive correlation (p<0.01) between turnover intention and surface acting and continuance commitment, but a negative correlation (p<0.01) with deep acting and affective commitment. Also, there was a positive correlation (p<0.01) between customer orientation and deep acting, affective commitment, but a negative correlation (p<0.01) with surface acting. Affective commitment had a negative influence on turnover intention (${\beta}=-0.444$, p<0.001), but surface acting had a positive influence on turnover intention (${\beta}=0.110$, p<0.05). Conclusion: These results suggest that management of affective commitment is essential for decreasing turnover intention. Therefore, emotional labor and organizational commitment of school foodservice dietitians should be managed from the school foodservice organizational viewpoint of The Ministry of Education.

  • The purpose of the study was to explore the relationship among personality characteristics, hope and quality of life(QOL) of breast cancer patients. The subjects of the study were the 113 breast cancer patients treated at 3 university hospitals in Daegu and Busan from June 1 to Sep. 30, 2003. Personality characteristics was measured by using Personality Inventory(NEO-PI), hope measured by using Nowotny's Hope Scale, and QOL by using a questionnaire developed by Ro(1988). Data were analyzed with SPSS program by frequency, range, t-test, ANOVA, and Pearson correlation coefficients. The findings of this survey indicate 1) The mean personality characteristics item score was 2.64, hope was 2.78, and QOL was 3.19. It appeared that there was a slightly negative tendency about personality characteristics, hope and QOL of breast cancer patients. 2) There was a significant difference between personality characteristics, hope and QOL according to demographic factor. 3) There was a positive correlation between personality characteristics and hope(r=.49), hope and QOL(r=.377). Among subitem of hope and QOL especially confident, possibility of future, active participation, inner motivation and self esteem were positively correlated with personality characteristics especially extroversion, openness and conscientiousness. 4) There was a negative correlation between neuroticism and relation with neighbor(r=-.452), neuroticism and relation with family(r=-.344). It was found that personality characteristics, hope and QOL were essential concept for qualitive care of breast cancer patients and there were negative correlation with neuroticism toward relation with neighbor and relation with family. This study suggests that there would be further study to find out the importance and relationship among personality characteristics, hope and QOL of breast cancer patients.
