Purpose: This research was to understand the consumer awareness and consumption of natural carbonated drinks in Korea. Methods: A survey was conducted enrolling adults over the age of 20, residing in Seoul and its metropolitan area, and who consumed natural carbonated drinks. Data analysis of 544 valid samples was performed using SPSS 17.0. Results: The study showed that consumers mostly purchased natural carbonated water the most, primarily as a water substitute. However, many other usages that the consumer selected showed a possibility for a more versatile usages of natural carbonated drinks. As for the reason of purchase, 'interest in a new product' showed the highest mean value. The factor 'interest in a new product', 'interest in its effectiveness on skin care and diet', 'lower-calorie products', 'health benefits from the usage of natural flavoring and coloring' and 'recommendation from acquaintances' showed statistically significant higher values for women than men. The most frequent and preferred location for purchase were large discount stores, and the most preferred, major informants were in the order 'tasting events at marts and department stores', 'TV/radio advertisement' and 'recommendations from family/friends'. Analysis of the purchase intent showed high interest for non-alcoholic natural carbonated drinks. Conclusion: The study results can be used as baseline data to establish marketing strategies in the emerging natural carbonated beverage market.

Acid dairy drinks(ADD) are a worldwide product existing in many variations: fruit milk drinks, yogurt drinks, soy milk, butter milk, whey drinks and kefir etc. These drinks are marketed with different shelf lives depending on processing: -Short shelf life(maximum 3 weeks, cold storage) - Long shelf life(2 to 9 months, pasteurized, sterilized or retorted) Acidic protein drinks tend to a separation or destabilization process in the absence of stabilizing system during the shelf life of the ADD. A phase separation results in sedimentation of large particles at the bottom of the package and/or the formation of a serum layer at the top(whey off). These beverages are usually composed of an acid dairy phase (fermented base)or a natural base(milk, soymilk etc.)with an acidic medium (fruit phase: pulp, fruit concentrate etc.) which can be flavored. Sugar and stabilizers are added. It has been proved since the late 1950's that adding high methoxy pectin (HM pectin)to acid milk drinks is the best way to prevent the formation of a sediment and/or the whey off. In this presentation, we explain about stabilization mechanism of ADD induced by pectin. Applications and market trend of ADD in Asia and Europe are explained.

Objectives: This study was conducted to investigate the awareness of energy drinks, energy drink consumption behaviors, and associated factors among college students. Methods: A total of 536 students from three universities in Cheongju completed a self-administered questionnaire regarding awareness and consumption of energy drinks as well as general characteristics, health-related characteristics, and eating habits. Results: Approximately half of the respondents reported they knew what energy drinks were, while 45.7% had heard of energy drinks but did not know what they were. However, 76.9% had experience in using energy drinks. The main reason for using energy drinks was to stay awake, and the main place that they were used was on campus or at the library. More than 70% of energy drink users did not read the caffeine contents of energy drinks. After consuming energy drinks, 31.3% experienced adverse effects, the most serious being sleep disturbance. Approximately 33% of students consumed energy drinks once a month or more frequently, and men consumed energy drinks more frequently than females. Energy drink users who consumed at least one drink each month were more likely to be natural science major or drink more milk for male students, and to have more allowances or consume less meat for female students, compared with non-users. Conclusions: Our study showed that 33% of students consumed at least one energy drink each month, and there were a small number of students consumed energy drinks almost every day or energy drinks mixed with alcohol. Accordingly, college students should be taught potential health hazards of energy drinks mixed with alcohol as well as energy drinks alone. In addition, reading labels about caffeine and sugar contents in energy drinks is encouraged.

Objectives: The aim of this investigation was to give insights into the impact of carbohydrate-electrolyte drinks on the likely capacity of enamel surface dissolution and the influence of human saliva exposure as a biological protective factor. Materials and Methods: The pH, titratable acidity (TA) to pH 7.0, and buffer capacity (${\beta}$) of common beverages ingested by patients under physical activity were analyzed. Then, we randomly distributed 50 specimens of human enamel into 5 groups. Processed and natural coconut water served as controls for testing three carbohydrate-electrolyte drinks. In all specimens, we measured surface microhardness (Knoop hardness numbers) and enamel loss (profilometry, ${\mu}m$) for baseline and after simulated intake cycling exposure model. We also prepared areas of specimens to be exposed to human saliva overnight prior to the simulated intake cycling exposure. The cycles were performed by alternated immersions in beverages and artificial saliva. ANOVA two-way and Tukey HDS tests were used. Results: The range of pH, TA, and ${\beta}$ were 2.85 - 4.81, 8.33 - 46.66 mM/L and 3.48 - $10.25mM/L{\times}pH$, respectively. The highest capacity of enamel surface dissolution was found for commercially available sports drinks for all variables. Single time human saliva exposure failed to significantly promote protective effect for the acidic attack of beverages. Conclusions: In this study, carbohydrate-electrolyte drinks usually consumed during endurance training may have a greater capacity of dissolution of enamel surface depending on their physicochemical proprieties associated with pH and titratable acidity.
This study was carried out to improve the method of tapping sap from Betula platyphylla Sukatschev, Betula costata Trautv., Betula schmidtii Regel, Betula davurica Pallas, Betula ermanii Cham, Acer mono Maxim and Acer pseudo-sieboldianum Kom and to use it to natural drinks. The mal or results are as follows: 1. It is no difference of the amount of sap by tapping methods and species of trees. The larger D.B.H. is, the more amount of sap can be gotten. So we thought that the best tapping method is hole-drilling to prevent trees from damage. 2. Sap contains sugars and mineral materials. Birches have glucose and fructose, much more mineral materials than maples. Sugar of maples is mainly sucrose. 3. We assume that mineral materials of birches are effective to urination, to make a stong dody and sucrose of maples is effective to recover from one's fatigue by controlling the blood sugar. 4. In vacuum packing after sterilizing the sap in low temperature, it could be stored more 1 year. So, it is possible that sap will be commercialized.
Sikhe a general Korean traditional drink, is a sweet drink fermented with malt powder rice(or glutinous rice). To investigate the perception and use behavior of Sikhe, 35.2% of the male and 64.8% of the female adults in Daegu and Kyungbuk area were surveyed. The methods frequency, percentage, chi-square test and one-way ANOVA were used to analyze the data. The main results were as follows : 36.1% of the participants usually preferred the traditional drinks and 94.7% of them had experienced Sikhe among the traditional drinks. Most respondents liked Sikhe owing to its good taste. In addition, the responses to 7 questions about the Sikhe were also measured on a 5-point likert scale. The statement 'Sikhe is a traditional food' and 'Sikhe is a natural food' received high positive responses and adults in their 50's had a generally better knowledge of Sikhe than the counterparts. furthermore, 54.8% sometimes purchased commercial Sikhe, but 40.7% didn't buy it at all due to bad taste. Therefore, to increase the intake of commercial Sikhe, the taste needs to be improved, and 59.8% of adults suggested that 'Add other ingredients and the taste can be improved', while 58.8% replied 'maintenance' prospects for Sikhe consumption.
A fiber optic pH sensor has been fabricated using nile blue entrapped in an ammonia catalyzed silica sol-gel film coated on glass substrate by dip-coating. The sensor was fixed on the end of an optical fiber. The sensor showed pH sensitivity when dipped into liquids at different pHs. Linear and reproducible responses were obtained in standard buffer solutions in the pH range $6.0{\sim}8.5$, which encompasses the clinically-relevant range. The effects of interferences on the determination of pH were also investigated. The sensors were successfully applied to the determination of pH in different commercial ionic drinks.
A survey was conducted to investigate the intake pattern of health supplements and health foods by using questionnaire. The data were collected from 395 adults over middle age and analyzed with SAS program. The natural foods were most frequently taken among health supplements and health foods for health. There was no difference in pattern of health supplements or health foods intake between male and female. The item taken over 20% of subjects was health drinks, green tea, ginseng product, dietary fiber drink, honey, general tea, tonic medicine from natural foods, vitamin B, vitamin C from nutrition supplements, and Lactobacillus product from health supplements. As the main reason for taking health supplements or health foods, the male indicated recovery of fatigue and improvement of health, but the female indicated recovery of fatigue and protection or treatment on disease(p<0.001). The frequency of taking health supplements or health foods was once a day. About the effect of health foods 70.1%, of subjects answered not bad and 25% responded very helpful for their health. Twenty percent of subjects experienced side effects such as diarrhea. The results showed that the proper education program should be developed for consumer to choose suitable health supplements or health foods according to their dietary life and health condition.

The purpose of this study was to estimate beverage consumption frequency and determine related problems of elementary school students in Chungnam. The survey was conducted with 488 students(boys=230, girls=258) using a questionnaire. The average age of the students was 10.1 years old, thir average height and weight were 145.1 cm and 39.5 kg, respectively and the obesity index was -1.3%. The frequencies for breakfast, lunch and dinner were 5.8 times/week, 6.7 times/week and 6.4 times/week, respectively. Regarding the frequency of snacks, high response rates for 'once/day'(38.3%) and 'none' (30.5%) were observed. Nutrition label on beverages were identified rarely(39.1%), nearly never(19.7%), and never(12.9%). The choice factors in selecting beverage were taste, nutrition, and price. For the type of snack most often consumed, fruit or juice was 25.8%, snack items were 25.2%, bread was 24.8%, dairy products were 7.6%, beverages were 7.0%, noddles were 6.2%, and rice cakes were 3.5%. The kinds of favorite beverages were carbonated drinks(30.3%), functional drinks (24.4%) and milk and yoghurt(23.8%), and main reason for the choice of beverage was "it tastes good". For the point of time that students wanted to drink a beverage, "when I feel thirsty" appeared most often for dairy products and beverages and the next most frequent answer was "after exercise". Therefore it may be necessary to administer systematic nutritional education on perception on nutrition fact label of beverage. And it is thought that plan for proper beverage consumption in elementary school students may be established.

Lately public interest in tree saps of maple and birch trees has been increased for sap drink as a natural medical beverage. To ensure tree sap drink for commercial production, species which are available in resources, their ecological regeneration characteristics in the natural forest stand, and tree sap resources should be investigated. Species for the collecting tree saps and their distribution were surveyed in the areas of Mt.Sobaek, Tanyang-gun, Chungcheongbuk-do. Mt.Sobaek area was selected to the proper place to survey as the feasible area for tapping tree saps for the natural beverage. Feasible tree species of this area are Betula costata, Betula schmidtii, Comus controversa, Acer mono, and Acer pseudosieboldianum based on the estimated tree sap amounts. Average and maximum species diversities of surveyed area were 4.2 and 5.39, respectively. Its evenness 0.78 referred that there are actively progressing ecological regeneration among diverse tree species. Tree saps are mainly harvested at the areas of upper and lower Wonmanteo. In terms of species, the most high sap amounts were from birch sap, next Comus controversa, the 3rd Acer mono. Many measures were suggested ecologically and technically, for commercial or practical production of tree sap drinks, though Mt.Sobaek area was evaluated as improper place because of geographical and transportational limitation.
