향토음식의 기호도 및 속성에 대한 차이 연구 - 부산지역 대학생을 중심으로 - (A Study on the Difference in Preference and Property of Native Local Foods - Focusing on University Students in Busan Area -)

  • The purpose of this study was to analyze the difference in preference and property of native local foods among students living in Busan. It concentrated on the students who were majored in food service in five universities in Busan. From September 1st to 30th, 2007, 300 copies of questionnaire were distributed and 260 returned were included in the statistics. The statistics was conducted by frequency analysis, T-test(average deviation verification), technical analysis and one way ANOVA for an accurate result of the study. As a result, it was found that Gayamilmyeon(M=4.42) showed the most preference for 25 native local foods of Busan(sansungmakgeoli, dongraepajeon, steamed carp, catfish soup, corbicula soup, roasted eel, gijang raw hairtail, dongrae mugwort cake, sansung roasted goat, gijangkkomjangeo, steamed frogfish, duck dish, guponoodles, gayamilmyeon, sliced raw fish, molsim hot-pepper fish stew, hairtail stew, anchovy stew, miyeoksulchi, gompi salted dish, salted raw anchovy dish, roasted kkomjaneo, salted sliced persimmon dish, salted bean leave dish, kkasiri soup). On the other hand, it was found that Miyeoksulchi(M=2.66) showed the least preference among them. As a result of the analysis of the difference in demographic characteristics and property of native local foods, it was presented that there was no difference in the statistical analysis by sex but significant difference in taste, quantity, service, price, freshness, sanitation, packing condition and originality, etc by age, department, academic year, type of residence, family member, living period in Busan and monthly spending. It was considered to conduct a more in-depth study to promote native local foods and interest in the food of Busan in university students.

전주지역 향토음식의 메뉴평가에 관한 연구 (Menu Evaluation for Native Foods in Jeonju Area)

  • This study evaluated the menus of native foods menu in the Jeonju city area in order to present possible improvements. The study examined twenty native food restaurants that target the visitors to the Jeonju city area from July 20 to August 12, 2005. These restaurants specialize in Jeonjubibimbap, Kongnamulgukbap, Hanjeongsik, and Dolsotbibimbap, which are all native foods of Jeonju. Restaurant patrons were randomly selected on leaving the study aim was explained, and questionnaires were distributed. of 200 papers, only 109 were suitable for statistical analysis. First, four factors of menu evaluation were drawn out: inner shape factor of food, outer shape factor of food, sanitation factor, and service factor. Second, the analysis showed statistically significant difference at the 5% significance level in age, job, and monthly income. Third, regression analysis between the factors on menu evaluation and the variables on their intention to visit the restaurant again, indicated that the inner shape factor of food influenced the intention to visit again. It is expected that these study results will assist the employees, restaurant managers, and chefs in making the best practical use of the basic ingredients to promote food quality and increase sales, which will lead to the further development of Jeonju city.

남원 향토음식에 대한 관광객의 인지도 및 만족도 (Tourist Perception and Satisfaction with Native Local Foods of Namwon)

  • This study was conducted to develop the unique native local foods of Namwon and to provide basic data needed to reinvigoratethe tourist industry and local economy. Perception and satisfaction with native local foods of Namwon were surveyed in 483 tourists (246 men and 237 women 53% visiting Namwon for the first time). Of the participants, 41.2% did not stay or eat in Namwon. Most tourists visited with other family members and spent approximately 20,000 won per capita on food. Of the foods sampled for the first time, preferred foods were (in order of preference and intention to order again) Chueo-tang, Hanjeongsik, wild edible greens-jeongsik, and black pork. The degree of food satisfaction was relatively favorable (3.54${\pm}$0.08 points on a 5-point satisfaction scale), with taste being the most important factor affecting the degree of satisfaction for 92.9% of the subjects. However, willingness to revisit Namwon on the basis of the local foods was not as high as the degree of satisfaction with the foods. Insufficient information and publicity concerning Namwon local foods were cited as impediments, and suggested improvements included taste, sanitation and food-based tourism. The degree of satisfaction was higher in men than in women. Age, residence, and occupation were not related to the degree of satisfaction. But, the willingness to revisit Namwon to sample local foods was related with gender (men more willing) and occupation (public service personnel, business owners, salaried employees, professionals, and housewives more willing, in order). Women in general and housewives in particular were most critical in food assessment.

지역 축제와 연계한 향토 음식 개발 방안 - 함평 "나비축제"를 중심으로 - (Development of Native Local Foods Associated with Regional Festival - Focused on Hampyeong "Butterfly Festival" -)

  • This study was conducted to provide the information necessary for the development of native local foods associated with the "2008 World Insect Festival in Hampyeong" and to contribute to the efforts to market the festival as tourist attraction and increase the income of the local community. To assess the local foods and restaurants, we investigated the principal products, inclination for sightseeing and recognition of the "Butterfly festival" by distributing questionnaires to local restaurant operators, employees and general tourists. The result was as follows: 1. The general tourists chose scenery as the most important factor in a sightseeing tour, followed by food, lodging, and transportation. 2. The tourists enjoyed eating native local foods, and they indicated that the taste was important. 3. Regarding the cost of food, 53.6% of the respondents answer that 10 to 20 thousand won was a resonable price, and they also reported wanting to eat seafood in Hampyeong. Thus the Menu of seafood to be served at the Hampyeong festival needs to be developed first followed by that of the healthy food. This result showed that individuals prefer fish to meat and healthy food to high-calorie foods.

경북 향토음식에 대한 인식도 조사 (A Study Perception of Kyung-Book Local Foods by Characteristics)

  • This study aimed to obtain basic data toward fostering understanding and interest in local foods, to the overall end of enhancing development and popularization of such foods. It also gives direction toward promotion of local food by researching attitudes toward local foods and viewpoints on requirements for improvement of such, among university students living in the Daegu-Kyungbuk area. The results of analyzing perceptional scores for native local foods in Kyungbuk by characteristics t showed statistically significant differences according to sex and duration of residence in Kyungbuk. Obstacles to the promotion of local foods include lack of marketing, lack of specialized restaurants, lack of knowledge, lack of menus, lack of generalization, and high price. The results of analyzing viewpoints on requirements for improved perception of local foods, there were statistically significant differences in active advertisement and marketing, diversity of local foods, and duration of dwelling.

경상도 지역과 전라도 지역 초등학생의 향토음식에 대한 인식 비교(I) -인지도와 선호도를 중심으로- (Comparative Study on Perception of Native Local Foods in Elementary School Students in Gyeongsang-do and Jeolla-do (I) -Focus on Recognition and Preference-)

  • 본 연구는 초등학생을 대상으로 향토음식에 대한 인지도와 선호도를 조사하여 조사대상의 거주 지역별(경상도 지역, 전라도 지역) 차이를 분석하고 동시에 지역별 향토음식(경상도 향토음식, 전라도 향토음식)의 차이를 분석하고자 하였다. 전라도 지역 일부 소재 초등학생 261명과 경상도 지역 일부 소재 초등학생 254명을 대상으로 설문조사를 실시하였으며 본 연구의 주요 연구 결과는 다음과 같다. 첫째, 전체 표본 학생들의 전체 향토음식에 대한 인지도는 9.28점(20점 만점 기준)이었으며, 전체 향토음식에 대한 인지도에서 경상도 지역 학생(9.43)과 전라도 지역 학생(9.13) 간의 유의적인 차이는 없었다. 전체 표본 학생들의 경상도 향토음식에 대한 인지도는 4.88점(10점 만점 기준), 전라도 향토음식에 대한 인지도는 4.40점(10점 만점 기준)으로 경상도 향토음식에 대한 인지도가 전라도 향토음식에 대한 인지도보다 유의적으로 높았다(P<0.001). 전라도 지역 초등학생은 두 지역 향토음식의 인지도에서 유의적인 차이를 나타내지 않았으나, 경상도 지역 초등학생은 전라도 향토음식보다 경상도 향토음식을 유의적으로 높게 인지하고 있었다(P<0.001). 경상도 향토음식의 경우 경상도 지역 학생(5.17점)이 전라도 지역 학생(4.60점)보다 유의적으로 더 높게 인지하고 있었고(P<0.05), 전라도 향토음식에서는 경상도 지역 학생(4.26점)과 전라도 지역 학생(4.53점) 간에 유의한 차이는 없었다. 둘째, 전체 표본 학생들의 전체 향토음식에 대한 선호도는 2.82점(5점 척도 기준)으로 조사되었으며, 경상도 지역 초등학생 2.90점, 전라도 지역 초등학생 2.74점으로 경상도 지역 학생의 향토음식에 대한 선호도가 전라도 지역 초등학생에 비해 유의적으로 더 높았다(P<0.01). 전체 표본 학생들의 지역별 향토음식에 대한 선호도 차이 분석 결과, 경상도 향토음식에 대한 선호도는 2.91점, 전라도 향토음식에 대한 선호도는 2.72점으로 경상도 향토음식에 대한 선호도가 전라도 향토음식보다 유의적으로 높았다(P<0.001). 전라도 지역 학생(P<0.001)과 경상도 지역 학생(P<0.001) 모두 전라도 향토음식보다 경상도 향토음식에 유의적으로 높은 선호도를 가지는 것으로 나타났다. 경상도 향토음식의 선호도의 경우 경상도 지역 학생(3.03점)이 전라도 지역 학생(2.80점)보다 유의적으로 더 높은 수준이었으며(P<0.001), 전라도 향토음식의 선호도의 경우 경상도 지역 학생(2.77점)과 전라도 지역 학생(2.67점) 간에 유의한 차이는 없는 것으로 나타났다. 본 연구에 의하면 경상도 지역 학생과 전라도 지역 학생 간에 향토음식의 인지도와 선호도에 차이를 보여 지역별 차이가 있음을 알 수 있었다. 특히 경상도 지역 학생의 경우 경상도 지역 향토음식에 대한 인지도가 전라도 지역 학생보다 높게 나타나 초등학생임에도 불구하고 지방색이 존재하고 있음을 알 수 있었다. 따라서 향후 경상도 지역 학생들에게 다양한 지방의 향토음식을 경험할 수 있는 기회를 제공하는 것이 필요하겠다. 그리고 경상도 지역 학생과 전라도 지역 학생 모두에서 경상도 향토음식에 대한 선호도가 전라도 향토음식에 대한 선호도보다 높게 나타났으므로 향후 전라도 지역 향토음식에 대한 선호도를 높일 수 있도록 꾸준한 교육과 홍보가 필요하다.

울산지역 향토음식에 대한 식행동과 기호도에 관한 연구 (A Study on the Dietary Attitude and Preference of Native Local Foods in Ulsan Area)

  • This study was performed by questionnaire to investigate the dietary attitude and preference of native local foods for Ulsan citizens. The subjects were consisted of 500 citizens living in Ulsan area. The results of the survey are summarized as follows: On frequency of eating of local foods, 'one time per year' scored high as 40.8%. 'Labor-intensive' scored high as 35.6% in cooking methods. 'Rarely' scored high as 43.2% in frequency of cooking at home. A criteria of selection of Ulsan local foods was 57.2% in taste. The recognition score of native local foods was 'healthful food' (3.96 points), 'should be handed down to next generation' (3.94 points), and 'a lot of natural food ingredients' (3.88 points) and 'nutritious food' (3.87 points) in the order. The preferred native local foods of Ulsan area was 'Ulsa pear' (3.97 points), 'Eonyang, Bonggye Hanoobulgogi' (3.86 pionts), 'Raw Fish', 'Haemuljeongol', ‘Gangodeungojjim', 'Suknamsa SanchaeBibimbab' 'Gangdon Natural Brown Seaweed' in that other. On the other hand, the preference for 'Myeoljang', 'Whale Meat', 'Oksamju', 'Meonggejeon', 'Jepyipjangajji' and 'Kimchigam' was very low. Males liked 'Whale Meat', 'Raw Fish', Oksamju' and 'Dombaegi(Shark Meat)', while females liked 'Gandong Naural Brown Seaweed'. The most effectual food for developing tourism merchandising of Ulsan local foods was 'Eonyang, Bonggye hanoobulgogi' and the next is 'Eonyang Dropwort', 'Gangdong Natural Brown Seaweed', 'Myeoljang', 'Ulsan Pear', and 'Oksamju' in the order.

향토음식에 대한 인식이 향토음식전문점 방문빈도에 미치는 영향 연구 - 경상도지역 주민을 중심으로 - (The Impact of Recognition for Local Food on the Frequency of Visiting for Local Food Restaurants - Focusing on Residents in Kyungsangdo Areas -)

  • To analyse the impact of recognition for local food on frequency of visiting for local food restaurants, we surveyed 333 residents in the Kyungsangdo areas. The findings are summarized as follows. On interest of native foods, 'much' scored 40.6% and 'taste' scored 32.9%, in requirement of development. The criteria of selection of local foods was 62.3% in 'taste'. 'Institute(municipal government)' scored 31.3% as the main responsible body for the succession of local foods. The most significant criterion for tourism product of local foods was 'taste'(34.5%). The most effective way to popularize the local foods was to 'hold various kinds of cultural events'(27.5%). The necessity score on tourism product of local foods was 3.55 points. The highest recognition on native local foods was 'succession to next generation'(3.96 points). The most influential variable affecting the visit frequency toward local food restaurants was 'health factor'.

경주지역 향토음식의 성인의 연령별 이용실태 분석 (Analysis of Current Use of Local Food of Adults in Gyeongju Classified by Age)

  • This study was performed by questionnaire to investigate current use of native local foods of adults in Gyeongju classified by age. The subjects were consisted of 421 citizens(217 males and 204 females) living in Gyeongju. The findings are summarized as follows: 'Institute' scored high as 30.6% in the main responsible body for the succession of local foods. The most emphasized points to popularize the local foods was to 'taste'(36.4%). a point to be considered to develop tourism product of the local foods was to 'development of recipes acceptable to the people of today'(24.6%). The recognition rate score of native local foods of Gyeonngju area was 'Hwangnamppang', 'Hanjeongsik', 'Ssambap', 'Haejangguk', 'Hoe(Gampo)', 'Memilmukmuchim', 'Gyodongbeopju', and 'Yugoa' in the order. On the other hand, the recognition rate score for 'Ssukgulrei', 'Borisudan', 'Dalraikkakdugi', 'Hwanggeumju', 'Baesuk', 'Gyeojachae', 'Gungjungjeongol' was very low. The preferred and intake native local foods of Gyeongju area was 'Hanjeongsik', 'Ssambap', 'Hoe(Gampo)', 'Haejangguk', 'memilmukmuchim' in that other. On the other hand, the preference for 'Ssukgulrei' 'Borisudan', 'Hwanggeumju', 'Baesuk' and 'Dalraikkakdugi' was very low.

기장 향토음식의 조리표준화(제1보) - 멸치찌개, 갈치찌개, 매집찜 - (Recipe Standardization of Native Local Foods in Gijang Region(The First Report) - Myeolchijjigae, Galchijjigae, Maejipjjim -)

  • The purpose of this study was to contribute to merchandising of native local foods. This study was designed to standardize the recipes and to analyze the nutrients of native local foods in Gijang region such as 'Myeolchijjigae', 'Galchijjigae' and 'Maejipjjim'. The test recipe for each food was prepared according to the information obtained from the personal interview of Gijang natives and then supplied for the sensory evaluation. After that, CAN Pro 2.0 was used for the nutritional evaluation. The results are as follows : Myeolchijjigae was preferred when radishes and traditional soybean paste were added. Galchijjigae was more liked when young pumpkins, mixed soy sauce and soybean paste were added. Maejipjjim was preferred with Aeji(Codium adhaerens), Warty sea squirt(Styela clava), soybean paste and powdered perilla seed(Perilla frutescens var. japonica) added. The analysis of nutrient composition revealed that in general energy content was low whereas protein content was as high as recommended requirement in Myeolchijjigae and Maejipjjim. Calcium and phosphorus were high in Myeol-chijjigae, vitamin A in Galchijjigae, and vitamin A, B_6$, folic acid, phosphorus and iron in Maejipjjim.
