인도네시아인의 식생활 양상 및 선호음식 분석 (Diet- Related Behaviors and Food Preference of Indonesian)

  • As Korea is moving toward multicultural society, the number of Muslim, whose religion has a great influence on diet-related behaviors, is increasing in Korea. Since the number of immigrants from Indonesia ranks within top ten in Korea and Indonesia is one of the most representative Islamic countries in Asia, understanding the diet-related behaviors and food preferences of Indonesians is needed. This study was conducted to investigate diet-related behaviors, factors affecting the diet-related perceptions, and food preferences of the Indonesians. The subjects included 500 Indonesians dwelling in Jakarta, Indonesia. About ninety % of the subjects in this study were Muslims. They did not eat pork and dog meat for religious reason and they practiced fasting during Ramadan period. Indonesians avoided pineapple, durian, and hot foods during pregnancy and usually ate vegetables and fruits after birth, which seemed to be due to sociocultural influence. Among the subjects, 21.5% were obese and major health problems reported were hypertension and hyperlipidemia. Their preference for fried food items might have contributed to health problems. Subjects had meals mostly at home (2.3 times/day) and dined out occasionally (1.2 times/week) at Indonesian restaurants (56.6%) or family restaurants (21.0%). In conclusion, Indonesians had home-based and native food-oriented dietary life with strong religious and sociocultural influence on food choices. Further research on specific nutrient intake analysis is needed to better understand and to improve dietary life of Indonesians in Korea.

Centella asiatica extract prevents visual impairment by promoting the production of rhodopsin in the retina

  • BACKGROUND/OBJECTIVE: Centella asiatica, also known as Gotu kola, is a tropical medicinal plant native to Madagascar, Southeast Asia, and South Africa. It is well known to have biological activities, including wound healing, anti-inflammatory, antidiabetic, cytotoxic, and antioxidant effects. The purpose of this study was to determine the efficacy of extracts of C. asiatica against age-related eye degeneration and to examine their physiological activities. MATERIALS/METHODS: To determine the effects of CA-HE50 (C. asiatica 50% EtOH extract) on retinal pigment cells, we assessed the cytotoxicity of CoCl2 and oxidized-A2E in ARPE-19 cells and observed the protective effects of CA-HE50 against N-methyl-N-nitrosourea (MNU)-induced retinal damage in C57BL/6 mice. In particular, we measured factors related to apoptosis and anti-oxidation and the protein levels of rhodopsin/opsin. We also measured glucose uptake to characterize glucose metabolism, a major factor in cell protection. RESULTS: Induction of cytotoxicity with CoCl2 and oxidized-A2E inhibited decreases in the viability of ARPE-19 cells when CA-HE50 was administered, and promoted glucose uptake under normal conditions (P < 0.05). In addition, CA-HE50 inhibited degeneration/apoptosis of the retina in the context of MNU-induced toxicity (P < 0.05). In particular, CA-HE50 at 200 mg/kg inhibited the cleavage of pro-caspase-3 and pro-poly (ADP-ribose)-polymerase and maintained the expressions of nuclear factor erythroid 2-related factor 2 and heme oxygenase-1 similar to normal control levels. Rhodopsin/opsin expression was maintained at a higher level than in normal controls. CONCLUSION: A series of experiments confirmed that CA-HE50 was effective for inhibiting or preventing age-related eye damage/degeneration. Based on these results, we believe it is worthwhile to develop drugs or functional foods related to age-related eye degeneration using CA-HE50.

비파열매 분말을 첨가한 쉬폰 케이크의 품질 특성 (Quality Characteristics of Chiffon Cake Made with Loquat Fruits (Eriobotrya japonica) Powder)

  • The loquat (Eriobotrya japonica) is a plant belonging to the Rosaceae family, native to south-central China. It is cultivated in relatively warm areas such as Spain, Japan and South Korea. It is used commercially as an ornamental plant and for its yellow fruit, which contains much carotenoid, sugar and a little organic acid. In this study, chiffon cakes were prepared with the addition of 3%, 6%, 9% and 12% loquat fruit powder (LFP) in order to invest the mixing conditions. When more LFP was added to the dough, the pH level of the dough became lower. Specific gravity and viscosity of the dough significantly increased as higher amounts of LFP were added. In baked cakes, the weight and baking loss rate of LFP were not significantly different between samples, and the height of the risen test samples were lower than that of the controls. Moisture content was 33.58% in the 12% LFP sample (12% LFPS), which was the highest of all the samples. With respect to crust color, lightness, redness and, yellowness, these significantly decreased as the amount of LFP was increased, the 12% LFP being the lowest of all the samples. Lightness and yellowness of crumbs significantly decreased as the amount of LFP was increased, whereas redness showed the reverse effect. When looking at hardness and adhesiveness, the 12% LFPS was the highest of all the samples, nevertheless a difference in resilience was not significant among the samples. According to consumer perception, bitterness was significantly increased as amounts of LFP increased, however a difference in salty, astringency and oily tastes were not significant among the samples. The 12% LFPS showed the lowest score with respect to softness and overall acceptability. In conclusion, LFP could be considered a functional material, with the optimum amount of LFP for a chiffon cake of 3~9%.

Anti-aging Potential of Extracts Prepared from Fruits and Medicinal Herbs Cultivated in the Gyeongnam Area of Korea

  • Many recent studies have focused on maintaining a healthy life by preventing and/or postponing the aging process. Numerous studies have reported that continuous exposure to reactive oxygen species can stimulate skin aging and that excessive accumulation of fat can cause an impaired skin barrier and tissue structure alterations. Thus, the maintenance of antioxidant homeostasis and the suppression of adipose accumulation are important strategies for skin anti-aging. Here, we prepared three types of extracts [whole juice, acetone-perchloric acid (PCA), and ethanol] from 20 fruits and medicinal herbs native to the Gyeongnam area of Korea. The total phenolic content of each extract was analyzed, and we observed higher total phenolic contents in the medicinal herbs. Consistent with this, the results of the oxygen radical absorbance activity capacity assay indicated that the in vitro antioxidant activities of the medicinal herb extracts were stronger than those of the fruit extracts. The fruits and medicinal herbs had strong effects on cell-based systems, including $H_2O_2$-induced oxidative stress in human keratinocytes and 3T3-L1 lipid accumulation. Nishimura Wase persimmon, Taishu persimmon, wrinkled giant hyssop, sweet wormwood, Chinese cedar, red perilla, tan shen, hiyodori-jogo, and cramp bark may be natural anti-aging materials with effective antioxidant and anti-adipogenic activities. Taken together, our findings may provide scientific evidence supporting the development of functional foods and nutraceuticals from fruits and medicinal herbs.

  • 본 리뷰에서는 대한민국에서 자생하고 있는 소나무와 잣나무들로부터 분리·추출되는 생리활성 물질의 종류, 그리고 그 효과성에 대한 연구 현황 및 산업적 활용에 대해 조사하였다. 소나무와 잣나무에는 정유, 폴리페놀, 레진, 스틸벤 유도체를 비롯한 다양한 생리활성 물질들이 함유되어 있다. 최근 국내 연구진들은 소나무와 잣나무의 추출물들로부터 항산화, 항염증, 항균, 백내장 예방, 신경보호 등의 생리활성을 규명하였다. 그 추출물들은 식품, 건강기능식품, 화장품, 생활용품 등의 다양한 산업 분야에서 활용되고 있으나, 산업적으로 높은 비중을 차지하고 있는 것은 외래종을 원료로 한 것이다. 그러므로 과학적으로 규명되고 있는 효과에 비해 생리활성을 실제 제품에 응용한 사례들이 부족하여 산업적 활용성에 대한 다양한 연구가 필요하다.

유용곰팡이 균주에 의한 발효 누에분말의 이화학적 특성 및 생리활성 (Biological Activity and Chemical Characteristics of Fermented Silkworm Powder by Mold)

  • 미생물 발효에 의한 누에분말의 생리활성 작용 및 물질을 개발하기 위한 기초 자료를 얻을 목적으로 Mucor racemosus forma racemosus KCCM 12352, Rhizopus oryzae KCCM 11273, A. oryzae KCCM 11372, A. kawachii KCCM 32819 및 Monascus purpureus KCCM 12002 5종의 곰팡이 균주를 본 실험에 사용하였으며, 이들에 의한 발효 누에분말의 미네랄 함량, 지방산 조성, 단백질 함량, 단백질 패턴, 항산화 활성 및 혈전용해 활성을 비교 검토하였다. 발효 동결 및 열풍건조 누에분말의 주요 미네랄 함량은 각각 칼륨 72.0~76.3 및 77.1~78.9 ppm, 마그네슘 29.6~49.7 및 44.3~58.7 ppm, 칼슘 1.9~14.9 및 9.8~21.6 ppm 및 아연 0.64~0.70 및 4.17~4.52 ppm이였으며, 주요지방산 조성은 linolenic acid, oleic acid 및 palmitic acid 이였다. 발효 동결 및 열풍건조 누에 분말의 단백질을 Native-PAGE로 비교분석 한 결과 발효 동결누에 분말에서 많은 종류의 밴드가 관찰되었으며, SDS-PAGE상의 단백질 패턴 분석에서는 97~66 kDa 중간 정도 크기의 단백질 밴드가 발효에 의해 분해되어 거의 관찰되지 않았다. 발효 동결 및 열풍건조 발효누에 분말의 항산화 활성은 발효전보다 증가하였으나 균주 종류별로는 큰 차이가 없었고, 시판 항산화제 BHT 처리구의 90% 이상의 높은 항산화 활성보다는 낮았다. 혈전용해 활성은 동결 및 열풍건조 누에분말 모두 없었으나, 열풍건조 누에분말의 A. kawachii 및 Monascus purpureus에 의한 발효누에에서 혈전용해 활성이 나타났다. 이상의 실험결과에서 곰팡이 균주에 의한 누에분말의 생리활성 효과 및 이화학적 특성이 발효전 누에 분말보다 강화됨으로써 건강기능식품의 소재로서의 이용 가능성이 높다고 할 수 있다.

결혼이주여성의 가정생활문화 이해 및 적응에 관한 사례 연구 -서울지역 어린이집 어머니를 대상으로- (The Case Study on Understanding and Adjustment about the Family Living Culture in Marriage Emigration Females - Focused on Mothers in a Day- Care Center in Seoul -)

  • The purpose of this study was to investigate how marriage migration females understand and adjust to the culture of family life in Korea. The study was the conducted by extensively interviewing one member from each of a total of 16 women's multicultural families at a daycare center area in Seoul between June 16, 2010 and July 28, 2010. The results can be summarized as follows: All interviewees were marriage migration females, in the range 20 to 50 years of age, and with middle educational backgrounds. They all had middle-level incomes. Through the content analysis of the informants' responses, three major factors were found to influence the understanding and adjustment of to the culture of family living: personal factors, familial support, and sociocultural support systems. Among the personal factors, the intimacy of the married couples was trouble major factor. An issue that tended to arise was that Korean husbands' traditional culture in terms of their way of thinking was often different from that of the wife's culture. However, husbands supported their wives' outside activities and friendships in order to help them adjust to the culture of family living. The husbands made an effort to understand their wives' original culture and national food, often visiting restaurants that served their wives' national cuisine. In terms of familial support, the most important factors affecting marriage migration females were orienting the education of children to the mother's native language, cooking their national foods, and visiting the mother's nation with the children. Marriage migration females had the following requires: The teacher in the daycare center needed to be interested in children from multicultural families and encourage self-pride in the marriage migration females' children. In terms of sociocultural support systems, marriage migration females are conscious of the indisposition and lack of consideration in Korean life. However, the Korean government and local provinces are concentrating attention on education for marriage migration females in terms of language, because learning the language can help these women to become accustomed to the rituals of Korean life. Marriage migration females make an effort to understand and adjust to Korean family living culture that involves the food culture for ceremonial occasions, folk plays, and places of historic interest. A matter of importance is Korean people's effort to understand and adjust to multicultural family with their distinctive cultures. Welfare policy related to multicultural families involves adopting supportive laws and actions.

그라비올라 잎 추출물의 이화학적 특성 및 항산화 활성 (Antioxidative Effects and Chemical Characteristics of Annona muricata Leaf Extracts)

  • 그라비올라(Annona muricata) 잎으로부터 정제수, 에탄올, 메탄올로 추출하여 수율, 총 페놀성 화합물과 이에 속하는 flavonoid 함량, 미네랄 함량을 측정하고 DPPH free radical scavenging 활성, Cu/Fe 환원력, 간 조직의 microsome 생체막의 지질과산화 억제능 및 linoleic acid를 이용한 지질과산화, ${\beta}$-Carotene 탈색화 정도를 비교검토하였다. 그라비올라 잎의 수율은 수용성 추출물이 가장 높았으며(1.76%), 총 페놀성 화합물 함량은 그라비올라의 메탄올 추출물에서 가장높았으나 페놀성 화합물에 속하는 폴리페놀 함량은 에탄올 추출물에서 가장 높은 결과를 나타내었고, 미네랄 함량은 Ca, K, Mg, Na, Mn의 순으로 높게 측정되었다. DPPH를 이용한 radical 소거능을 측정한 결과, 그라비올라 잎의 에탄올과 메탄올 추출물에서 대조구인 BHT 0.05%와 가장 근접한 활성을 나타내었다. Fe와 Cu의 환원력은 모든 군에서 농도 의존적으로 증가하였고, 그 중 에탄올과 메탄올 추출물에서 Cu/Fe 환원력 활성이 매우 강하였다. 그러나 간 조직을 이용하여 측정하는 지질과산화 억제활성과 TBA법으로 지질과산화를 측정한 결과, 그라비올라 잎의 에탄올 추출물에서 지질과산화 억제능을 보였다. ${\beta}$-Carotene bleaching에서 높은 lipid peroxyl 라디칼 소거 활성이 있음을 확인할 수 있었다. 따라서, 그라비올라 잎은 기능성 식품의 개발을 위한 천연 항산화제 소재로서 활용 될 수 있을 것으로 판단되어진다.

락토페린 유전자도입 piggyBac 벡터에 의한 누에 형질전환 (Germ Line Transformation of the Silkworm, Bombyx mori L. with a piggyBac Vector Harboring the Human Lactoferrin Gene)

  • 락토페린 cDNA 유전자를 도입시킨 누에 형질전환 실험을 수행한 결과, 다음과 같은 결과를 얻을 수 있었다. 1. 사람 GI-101 세포주의 mRNA로부터 클로닝 된 락토페린 cDNA 유전자의 개시코돈 ATG와 종결코돈 TAA를 포함하는 open reading frame(2,136 bp) 영역을 확인하였다. 2. Sf9 배양세포의 조추출물 시료에 의한 Western blot 분석 결과, 락토페린으로 추정되는 약 80kDa의 단백질 발현을 확인하였다. 3. 누에 형질전환에 높은 전이효율과 활성을 나타내는 트랜스포존을 이용한 전이벡터 pPIGA3GFP를 개조하여 락토페린 cDNA를 삽입시킨 전이벡터 pPT-HLf를 구축하였다. 4. DNA 미량 주사법에 의한 누에 형질전환 개체의 발현 비율은 약 6.7% 정도를 나타냈다. 5. 형질전환 누에(G0) 동일한 세대간 교배 및 처리하지 않은 성충간의 역교배에 의한 차세대(G1) 개체로부터 락토페린 유전자와 동일한 크기의 2.1 kb DNA 단편을 확인 할 수 있었으며, 형질전환 G1 세대의 조추출물 시료에 의한 Western blot 분석 결과, 표준 락토페린 항체와 반응하는 약 80 kDa의 단백질 발현을 확인할 수 있었다.

서브마이크론 입자 형태 커큐민의 생체 흡수율 및 제품 조성에 따른 흡수율 동등성 연구 (Oral Bioavailability for Sub-micron Particle Curcumin (TheracurminCR-033P) and Absorption Rate by Product Composition in Healthy Human Volunteers)

  • 커큐민 분말은 항산화 및 항염증 등의 생리활성을 내세우며, 건강기능식품 및 일반식품의 마케팅 포인트로 광범위하게 사용되고 있다. 커큐민의 낮은 체내 흡수율은 생리적 기능성에도 영향을 미칠것으로 사료되어 리포좀 형태나 인지질 결합 형태로 커큐민의 제형 개발이 활발이 진행되고 있다. 본 연구에서는 커큐민의 체내 흡수율을 높이고, 실제 산업에의 활용도를 높이기 위해 커큐민을 서브마이크론 입자 형태의 제형으로 개발하여, 일반 커큐민 형태와의 흡수율을 비교해보고자 하였다. 본 연구 결과, 일반 커큐민 보다 서브마이크론 입자 형태 커큐민의 체내 흡수율이 남녀 평균 28배 더 높게 나타났다. 서브마이크론 입자 형태 커큐민의 체내 흡수율은 성별에 따라 다르게 나타났으며, 남성의 경우는 22배, 여성의 경우는 35배 흡수율이 높게 나타났다. 편의성을 증진시킨 농축제제와 기존 제제의 흡수율은 $C_{max}$ 값이 각각 166.0과 177.7로 통계적 유의성이 나타나지 않았다. 단회 투여 후 8시간 동안의 AUC 값 역시 약 952와 약 849로 나타나 제제의 동등성에서 유의적인 차이는 없었다. 결론적으로, 본 연구를 통해 일반 커큐민 보다 서브마이크론 입자 형태 커큐민의 체내 흡수율이 남녀 평균 약 28배 증진되는 것으로 확인되었으며, 편의성을 증진시킨 농축제제와 일반 제제의 흡수율이 거의 동일하게 나타났다.
