식품 영양 연구, 정책, 산업의 기반이 되는 국가표준식품성분표의 활용 (National Standard Food Composition Tables Provide the Infrastructure for Food and Nutrition Research According to Policy and Industry)

  • The National Standard Food Composition Table published by the Rural Development Administration (RDA) provides the foundations in research, nutrition monitoring, policy and dietary practices in Korea. This databases consists of several sets of data including food descriptions, nutrients, portion weights, and source of data. The National Standard Food Composition Table have been published since 1970 and, recently, new version (8th edition) of Food Composition Table which has quantitative and qualitative nutrient data is released in 2011. In addition, the User-friendly Food Composition Table is divided into adult, children, and elderly categories depending on the subjects because we need different nutrients according to various ages. The Tables of Food Functional Composition is firstly edited in 2009. RDA published the minerals and fatty acids composition table, tables of amino acid, fat-soluble vitamin composition table, and the cholesterol table. The resulting database will be widely used. The users of the databases are from diverse fields, includeing federal agencies, the food industry, health professionals, restaurants, software application developers, academia and research organizations, international organizations, and foreign governments ect. Therefore, consistent improvements of the database is important, so that people can better address such health challenges by providing reliable and accurate data.

  • This review was conducted to evaluate the 'Korean Food Composition Table' and establish it as an internationally accepted database by examining its contents and evolution over time. The food composition table has been published by National Rural Living Science Institute, every 5 years, listing the nutrient content for each food, as both the raw agricultural product and processed foods, since the 1$^{st}$ edition in 1979 by RDA (Rural Development Administration). This is the basic data applied to the evaluation of the nutritional value of foods in Korea. The data is used as a useful tool in many fields, not only for the establishment of the National Food Supply Plan but also for nutritional research, the draft of National Food Policy, and in clinical and epidemiological research. The database is also utilized by food service providers and food processors, etc. Consumers and the international society have been interested in the quality and safety of foods and raw agricultural products. As these data expand in volume, the type of foods included in the composition table is expanded to cover new additions for the convenience of users of the 'Nutrient Data Base' as judged by the publishers. The form of these reports varies, according to the current information, from a simple booklet to CD-ROM and to the Web service. We expect to continue to make improvements in the National Standard Table for food composition through expanding both the quantity and quality of data in an orderly manner. This effort can help food composition data to be comprehensively developed systematically and gradually at the national level.l.

Classification Model of Food Groups in Food Exchange Table Using Decision Tree-based Machine Learning

  • 본 논문에서 우리는 기존 식품과 웹 크롤링으로 찾은 식품 데이터에 대해 기계학습으로 식품군을 분류하여 식품교환표를 갱신하기 위한 의사결정트리 기반의 기계학습 모델을 제안한다. 식품교환표는 영양 관리가 필요한 환자의 식이요법이나 다이어트 식단을 편성할 때 식품 교환 섭취에 사용된다. 식단의 기준이 되는 식품교환표는 국민건강영양조사를 통한 개정과정에서 많은 인력과 시간이 소요되어 새로운 식품이나 트렌드에 따른 식품 변화를 신속하게 반영하기 어렵다. 제안 기법은 기존의 식품군을 바탕으로 새롭게 추가되는 식품을 분류하기 때문에 식품의 트렌드를 반영한 식품교환표 구성이 가능하다. 연구에서 제안 모델로 식품을 분류한 결과, 식품교환표의 식품군에 대한 정확도가 97.45%로 나타났으며, 본 식품 분류 모델은 병원, 요양원 등에서 식단 구성에 활용도가 높을 것으로 전망된다.

권장식사패턴의 수정안 고안 및 적용 - 중학교 2학년 남녀 학생의 식단계획 작성 및 평가 - (Revision and Application of the Target Pattern in Food Guidance System - Administered to 2nd grade middle school students -)

  • Objectives: The objective of this study was to revise the target pattern in food guidance system for adolescents' balanced menu planning. Methods: The food groups in the target pattern were divided into detailed food items, and intake number were assigned to each food items based on the revised standard food composition table. The validity of revised target pattern was examined. Menu planning according to the revised target pattern was made available to 305 male and female middle school students and the nutritional assessment of the menu plan were carried out using SPSS WIN 12.0. Results: The energy contents, energy contribution ratios of carbohydrate, fat, and protein, and 4 minerals' and 6 vitamins' contents of the revised target pattern were adequate. The average energy contents of the menu planned according to revised target pattern were 400~500 kcal higher than that of the revised target pattern when the revised standard food composition was applied. The energy contribution ratios of fat were 28.9%, close to maximum of acceptable macronutrient distribution range (AMDR) (30%), and that of carbohydrate were 54.5%, lower than minimum of AMDR (55%). The nutrient adequacy ratios (NARs) of calcium and vitamin C were less than 1.0. According to index of nutritional quality (INQ) of food items, kimchi, milk dairy products, and soybean curd were energy efficient source for calcium, kimchi, fruit, vegetable and seaweed were energy efficient source for vitamin C, with INQ of food items were higher or close to 2.0. Kimchi was the best energy efficient source of calcium and vitamin C. Conclusions: Revised target pattern based on the adolescent's foods intake was not good enough for balanced menu planning by adolescents, because what they ate and what they wanted to eat were very much different. Detailed guidance for food selection is necessary in each food items.

국가표준식품성분 데이터베이스 대표시료 선정을 위한 표본설계 (A study on collecting representative food samples for the 10th Korean standard foods composition table)

  • 농촌진흥청에서는 식품산업진흥법 제19조 제1항에 의거하여 국가표준식품성분표를 5년 주기로 발표하고 있다. 본 논문에서는 2021년 국가표준식품성분표 제10개정판 발간을 앞두고 우리나라 국민들이 많이 소비하고 있는 식품으로 선정된 182개 식품의 대표시료를 합리적이고 과학적으로 추출하기 위한 방안을 제안하였다. 농수산물을 포함한 식품을 판매하는 식료품점을 유통형태에 따라 대형마트와 전통시장으로 구분한 후 NFNAP에서 제안한 층화다단추출법을 각각 적용하여 8개 표본을 추출하였다. NFNAP는 미국인들이 소비하고 있는 식료품의 성분표에 대한 신뢰성 있는 추정을 담보하기 위해 미국 농무성과 국립보건원이 1977년에 협약을 맺고 공동 연구로 개발한 국가식품 영양분석 프로그램이다. 대형마트에 기초한 표본추출에서는 이마트 가양점, 홈플러스 시흥점, 롯데마트 동두천점, 이마트 수원점, 롯데마트 둔산점, 롯데마트 여수점, 이마트 울산점, 하나로클럽 울산점이 표본으로 추출되었고, 전통시장에 기초한 표본추출에서는 서울시 금천구 독산동우시장과 송파구 풍납시장, 고양시 일산서구 일산시장, 광주광역시 북구 운암시장, 대전광역시 대덕구 법동시장, 부산광역시 영도구 봉래시장과 해운대구 좌동재래시장, 창원시 진해구 중앙시장이 표본으로 추출되었다.

국가표준식품성분표 개정을 위한 국내산 돈육의 부위별 비타민 B12 함량 분석 (Analysis of vitamin B12 in fresh cuts of Korean pork for update of national standard food composition table)

  • 본 연구는 국민 영양평가 및 정책 수립에 근간이 되는 국가표준식품성분표 개정을 위해 농촌진흥청과 국립축산과학원이 공동으로 국산 돈육의 대표 시료를 선정하고 부위별로 신뢰성이 확보된 vitamin $B_{12}$ 함량 데이터 구축을 위해 분석법 검증과 분석품질관리를 수행한 연구이다. Immunoaffinity-HPLC 분석법을 특이성, 직선성, 검출한계 및 정량한계, 정확성, 정밀성 등의 분석수행특성 지표를 이용하여 평가한 결과 모든 항목에서 AOAC 가이드라인 수용기준에 충족되는 것을 확인하였다. 또한 모든 시료 분석 시 in-house QC sample을 분석한 결과 QC chart의 관리한 계선 안에 포함이 되어 본 연구 기간 동안 수행된 모든 시료 분석이 관리하에 정확성과 정밀성을 나타내는 분석값임을 확인할 수 있었다. 총 7개 primal cut과 이들로부터 세분화된 22개 retail cut의 vitamin $B_{12}$ 함량 분석 결과 주요 부위(평균 $0.42-0.69{\mu}g/100g$) 뿐 만 아니라 같은 부위 안에서도 세부 부위에 따라 vitamin $B_{12}$ 함량에서 차이가 나타났다. 특히, 삼겹살과 목심 부위에서 vitamin $B_{12}$ 함량이 높게 나타났으며 세부 부위에서는 삼겹살 부위의 토시살이 $0.98{\mu}g/100g$로 최고값을 보였고, 등심 부위의 알등심살과 뒷다리 부위의 홍두깨살이 $0.33{\mu}g/100g$으로 가장 낮은 수준을 나타냈다. Vitamin $B_{12}$ 함량은 돈육의 부위별 단백질 함량과는 유의적인 차이를 보였으나 지방 및 수분 함량과는 유의적인 차이를 보이지 않았다. 본 연구에서 생산된 국내산 돈육의 부위별 vitamin $B_{12}$ 함량 데이터는 분석법 검증과 분석품질관리를 통하여 신뢰성이 확보된 데이터로 국가표준식품성분표 개정에 활용될 수 있을 것으로 기대된다.

  • Numerous studies on the ablactation have been reported since Jundell’s report in 1924. This paper deals with the comparison in nutritional values, composition, economical sense and recommended dietary allowances to Korean infants of the weaning foods sold in Seoul, Jeonju and Gunsan together with the analysis of nutritional compositions of the most recommendable weaning food among those investigated. The results obtained from this study were; 1. Among ten kinds of the weaning foods produced in Korea, only nine sorts could be purchased in Seoul, seven in Jeonju and five in Gunsan. 2. It was difficult to compare directly the compositions of the weaning foods each other because of the differences of the unit indicated. 3. Not only the price of the same product in the same area was differentiated by 10 to 100 won but also the standard of nutritional composition was not identically indicated by the company produced. 4. Since the amount of directed dietary intake was much more than the actual nutritional requirements of Korean infants, waste of money was considered, if used according to the directions. 5. The nutritional compositions of the most recommendable weaning food among those investigated were indicated in Table. 6. More nutritious and economical weaning food adequate to Korean infants must be developed through further scientific, in vivo experiments.

농식품자원의 비타민 D 함량 조사 (A Study on Contents of Vitamin D in Agricultural Products and Foods)

  • Vitamin D contents in agricultural products and foods were quantified by high performance liquid chromomatography (HPLC) with a UV/Vis detector, using external standard methods. The results were confirmed with liquid chromatography tandem mass spectrometry (LC-MS/MS). After homogenization, samples were hydrolyzed by direct alkali saponification. Thereafter, fat-soluble components were extracted with n-hexane containing 0.01% butylated hydroxytoluene (BHT). Vitamin D contents in cereals were found to be in the range of $1.882{\sim}4.856{\mu}g/100g$. Juda's ear and oak mushroom contained high amounts of vitamin D, at 363.85 and $199.42{\mu}g/100g$ of edible portion, respectively.

국가표준식품성분표 개정을 위한 동물성 식품 비타민 B12 분석 및 검증 (Analysis and verification of vitamin B12 in animal foods for update of national standard food composition table)

  • 본 연구는 국내에서 소비되는 총 41종의 동물성 식품 중의 비타민 B12 함량을 immunoaffinity-HPLC방법을 이용하여 분석하였으며, 이를 국가표준식품영양성분표로 활용하기 위한 분석데이터 신뢰성 확보를 위하여 분석법 검증 및 분석품질관리를 수행하였다. 동물성 식품 총 41종의 비타민 B12 함량은 0.00-12.45 ㎍/100 g으로 식품군과 조리 및 가공방법에 따라 다양하게 나타났다. 햄류에서는 살코기 햄이 가장 높은 함량을 나타냈으며 그중 구운 살코기 햄(0.65 ㎍/100 g)이 데친 살코기 햄(0.48 ㎍/100 g)보다 높은 함량을 나타냈다. 난류에서는 메추리알, 달걀, 오리알 중 메추리알이 0.37-12.45 ㎍/100 g으로 가장 높은 비타민 B12 함량을 나타냈으며 난황이 난백보다 최대 100배까지 높은 함량을 나타냈다. 식용곤충에서는 쌍별귀뚜라미 성충이 6.70 ㎍/100 g으로 가장 높은 함량을 보여 비타민 B12 섭취의 좋은 급원이 될 수 있을 것으로 보였으나 누에 번데기와 장수풍뎅이 유충에서는 비타민 B12가 검출되지 않았다. 수산식품류에서는 조개젓(26.80 ㎍/100 g)이 가장 높은 함량을 나타냈으며 이 외 수산식품에서는 0.87-10.37 ㎍/100 g의 범위를 보였다. 본 연구에서 사용된 비타민 B12 분석에 대한 분석법의 검출한계, 정량한계, 직선성, 정확성 및 정밀성을 분석한 결과 모든 지표에서 분석법 검증 가이드라인 기준에 충족하였으며, 분석품질관리를 통하여 전체 분석 기간 동안 모든 분석이 신뢰성 있게 진행되었음이 확인되어 본 연구에서 생산된 동물성 식품류의 비타민 B12 데이터는 국가표준식품성분표 개정을 위한 데이터로 활용될 수 있을 것이라 평가된다.

육군 사관생도의 에너지소비량 및 영양섭취량에 관한 연구 (The Weekly and Daily Energy Expenditure and Nutrition Survey on the Republic of Bores Army Cadets)

  • Determination of weekly and daily energy expenditure was made on 62 Republic of Korea Army cadets who were selected at random in order to estimate the weekly and daily ealorie expenditure. Basal metabolic rate (B.M.R.), and energy cost of various military and daily activities were measured by indirect calorimetry using open circuit method. Time-motion studies were also carried on using a stop-watch. The total weekly energy expenditure was calculated by summation of data using energy cost per minute, and the time spent on each activity. Determination of daily energy expenditure was deduced from each data of weekly energy expenditure. Food survey was also carried on for a week, and daily calorie intake was determined by a weekly average discounting loss in cooking. All measurements were determined from the Standard Table of Food Composition published by the Ministry of National Defense (1961). Following data were observed. 1. Physical status of cadets are as follows. Please note that the height and weight averages are 1-2cm and 4-5kg respectively over that of the Seoul National University students. First year Height 167.92 cm $(S.D.{\pm}4.09)$ Weight 61.72 kg $(S.D.{\pm}4.53)$ Second year Height 167.89 cm $(S.D.{\pm}3.46)$ Weight 63.01 kg $(S.D.{\pm}4.61)$ Third year Height 168.15 cm $(S.D.{\pm}4.24)$ Weight 43.48 kg $(S.D.{\pm}5.03)$ Fourth year Height 168.10 cm $(S.D.{\pm}3.70)$ Weight 64.02kg $(S.D.{\pm}5.10)$ 2. The B.M.R. of cadets averaged $36.57\;Cal./m^2/hr.(S.D.{\pm}3.63\;Cal./m^2/hr.)$ is almost equal with data on the same ages of civilians and the Japanese, but a lower average of $5.1\;Cal./m^2/hr.$ than that of a common soldier. 3. The energy expenditure during various military activities is close agreement with Consolazio. Passmore and Durnin, and Japanese reports.
