  • This essay examines how Wallace Thurman envisions throug h Emma Lou a possibility of overcoming self-hatred and moving toward self-acceptance in his novel, The Blacker the Berry. Focusing on Emma Lou's departure from Alva and his deformed son, this essay contends that her "selfish" act is the first step toward self-acceptance. Describing his dark-skinned protagonist's pathetic attempts to belong to light-skinned people, Thurman mercilessly exposes and criticizes Emma Lou's psychological contradictions. Simultaneously, however, Thurman sympathizes with and shows some respect for her endeavors to make a difference in her life. Emma Lou's redemption from her self-hatred can come only when she realizes its detrimental effects on her life and learns to love herself enough to be selfish. By granting Emma Lou an opportunity to conduct a serious self-examination and resolve to sever ties with Alva, Thurman demonstrates a possibility of fighting against the color prejudice found both inside and outside oneself.

  • Purpose: This research aims to provide empirical evidence on the impact of digital literacy on behavioural intention regarding using technology for distribution of higher education. Design, Methodology, and Approach: Quantitative analysis was carried out using Covariance-Based Structural Equation Model with data collected from 901 students who fully experienced 2-year study online at different universities in Vietnam. The structural model was built with digital literacy as the primary indicator and other variables were included based on modified version of Unified Theory of Acceptance and Use of Technology (UTAUT2) by adopting performance expectancy, effort expectancy, social influence, habit, and hedonic motivation variables specifically for education sector. Self-efficacy was added to eliminate possible bias in technology acceptance. Results: From the results of model estimation, digital literacy presented positive impact on the online distribution of higher education in Vietnam. The mediating effects of various indicators such as performance expectancy, effort expectancy, social influence, habit, hedonic motivation, and self-efficacy are significantly determined by research model. Conclusion: The higher level of digital literacy of the students, the more likely that they will use technology in higher education study, especially online learning. Additionally, the mediating effects of indicators from the UTAUT2 theoretical model were also evident to be positively significant.

  • Purpose: We evaluated the psychometric properties of a questionnaire on the acceptance of the quality improvement information system (QIIS) among long-term care workers (mostly nurses). Methods: The questionnaire composes of 21 preliminary questions with 5 domains based on the Technology Acceptance Model and related literature reviews. We developed a prototype web-based comprehensive resident assessment system, and collected data from 126 subjects at 75 long-term care facilities and hospitals, who used the system and responded to the questionnaire. A priori factor structure was developed using an exploratory factor analysis and validated by a confirmatory factor analysis; its reliability was also evaluated. Results: A total of 16 items were yielded, and 5 factors were extracted from the explanatory factor analysis: Usage Intention, Perceived Usefulness, Perceived Ease of Use, Social Influence, and Innovative Characteristics. The five-factor structure model had a good fit (Tucker-Lewis index [TLI]=.976; comparative fit index [CFI]=.969; standardized root mean squared residual [SRMR]=.052; root mean square error of approximation [RMSEA]=.048), and the items were internally consistent(Cronbach's ${\alpha}=.91$). Conclusion: The questionnaire was valid and reliable to measure the technology acceptance of QIIS among long-term care workers, using the prototype.

  • Laver Pyropia sp. is the most exported seafood in Korea and is one of the most consumed edible seaweeds. The export of laver has been centered on seasoned laver products; of note, laver snack products coupled with rice papers or glutinous rice paste are becoming more popular in Western countries. These laver snacks are manufactured using a deep frying process. Therefore, the frying conditions affect the physicochemical and sensory characteristics of fried laver snacks. In this study, we optimized the deep-frying conditions for laver snacks with gelatinized rice dough using a response surface methodology. The frying temperature (X1, 190-220℃) and frying time (X2, 10-30 sec) were selected as independent variables; the dependent variables were the overall acceptance (Y1, points), hardness (Y2, N), and oil content (Y3, %). The optimal values of the frying temperature (X1) and time (X2) as per the overall acceptance (Y1) were 208℃ and 23.1 sec, respectively. The predicted overall acceptance (Y1=8.0 points), hardness (Y2=98.74N), and oil content (Y3=27.69%), were similar to the experimental values under the optimal conditions. Overall, the acceptance was inversely proportional to hardness; the decrease in hardness caused an increase in the crispiness of the laver snacks.

  • Purpose: This study investigated the quality characteristics of vegetable pancake prepared with various levels of barley flour. Methods: The pH level and spreadability of the batters as well as the color, texture, and sensory evaluation of the vegetable pancake were analyzed. Results: The results show that spreadability of batter significantly decreased as the substitution amount of barley flour increased (p<0.001). The pH level of the batter significantly decreased as the substitution amount of barley flour increased (p<0.001). Redness and yellowness increased as the substitution amount of barley flour increased. For texture, the sample groups with substituted barley flour showed high characteristics of hardness, gumminess, and chewiness. Principal component analysis showed that the sample group with a high substitution amount of barley flour was characterized by relatively high darkness, roasted grain aroma, bitterness, astringent, and chalkiness. Acceptance test found that the sample group with 15% barley flour received higher acceptance than the sample group with 0% barley flour in terms of color, texture, and overall acceptance. Conclusion: Acceptance test found that the sample group with 15% or 30% of barley flour had significantly higher or similar acceptance attributes than the sample group without barley flour, which suggests the possibility of developing vegetable pancake with barley flour.

  • The popularity of cosmetic procedures has increased over the past decade. Korean consumers have shown different levels of demand for the two types of cosmetic procedures (surgical and nonsurgical). This study examines the effect of appearance pressure from family, friends, and social media on the internalization and face/body satisfaction that can determine the levels of acceptance for each cosmetic procedure among young Korean females. Data was collected from 379 females in their 20s and 30s, using an online survey questionnaire. Statistical analysis were performed using SPSS 24.0 and AMOS. The results indicated that only social media pressure significantly influenced young women's internalization of attractive appearance. Internalization was negatively associated with face and body satisfaction. Face satisfaction was negatively related to the acceptance of cosmetic surgical and nonsurgical procedures; however, body satisfaction was not related to the acceptance of cosmetic surgical and nonsurgical procedures. This study highlights the significant importance of social media and its powerful impact on developing young women's body image perceptions.

  • In the Chinese construction industry, the utilization of Building Information Modeling (BIM) aims to increase the total output of the construction industry by solving the problem of inefficient interoperability in the construction industry. In 2011, the Chinese Ministry of Housing and Urban-Rural Development despite the technical advantages of BIM and the government policy, the BIM adoption rate in China is lower than 45%. Meanwhile, as the South Korean construction industry is a step ahead of its Chinese counterpart in introducing and utilizing BIM, it is expected that BIM is more actively utilized and accepted in South Korea than in China. According to a comparative study based on the hype-cycle theory, South Korea is at a more advanced stage of introducing BIM, than in China. This study aimed to suggest how to increase BIM utilization rates in China. To this end, this study comparatively analyzed factors affecting BIM acceptance between China and South Korea. For the comparative analysis of the BIM acceptance factors between China and South Korea, literature reviews on the technology acceptance model (TAM) and BIM acceptance model were carried out, and based on that, the BIM acceptance factors were classified. Other BIM acceptance factors were also added and considered, as they reflected Chinese national characteristics and construction industry. As for the derived BIM acceptance factors, construction project participants, especially actual BIM users in China and South Korea, were targeted for the survey. A t-test using SPSS 22.00 was carried out to identify significant differences in data. Finally, based on the t-test results, this study suggested ways of improving the BIM utilization rate in China. Based on the findings, this study is expected to contribute to activating BIM adoption in the Chinese construction industry and also to set a theoretical foundation for future studies on BIM utilization in the industry.
