Synthesis of DL-1-Amino Alkyl Phosphonic Acids and their Derivatives (DL-1-Aminoalkyl Phosphonic Acids와 그유도체들의 합성 (I))

  • DL-1-Amino-pentyl phosphonic acid, DL-1-Aminopropyl phosphonic acid were synthesized with good yield from caproic acid and butyric acid using the modified Curtius reaction and N-derivatives, N-acetyl-DL-1-amino propyl phosphonic acid, N-acetyl-DL-1-aminopentyl phosphonic acid, N-Benzoyl-DL-1-amino-propyl phosphonic acid, were also prepared by a variety of methods including the Schotten-Baumann reaction. In addition, the chemical and physical properties of the products were investigated. All the products were also identified by means of elemental analysis, Infrared spectrophotometry, Ninhydrin test, and the determination of the neuralization equivalent.

Evaluation of Fermentation Quality of a Tropical and Temperate Forage Crops Ensiled with Additives of Fermented Juice of Epiphytic Lactic Acid Bacteria (FJLB)

  • This study aimed to examine the fermentation quality of a tropical Elephant grass (Pennisetum purpuereum) and temperate Italian ryegrass (Lolium multiflorum) forages ensiled additive of fermented juice of epiphytic lactic acid bacteria (LAB) and to determine what factor affects the fermentation characteristics of the crops. In both species cell walls neutral detergent fiber (NDF) and acid detergent fiber (ADF) contents in silages were consistently decreased (p<0.05) with the addition of FJLB at ensiling more then Control treatment. The FJLB additive increased number of LAB (cfu) and lactate concentration in the silages in both species. The Control treatment without additive underwent a clostridial type of fermentation with traces of propionic, iso-butyric, n-butyric acids contents with higher (p<0.01) levels of volatile basic nitrogen (VBN %TN) and had appreciable decreased of nutrient in silages. FJLB treatment improved silage nutritive value with little contents of VBN %TN, ethanol and very small amount of dry matter (DM) and hemicellulose losses (p<0.05) between 2 to 5% and 7 to 3% respectively, in Elephant grass and Italian ryegrass species. The results in this study indicates that while among the factors affecting silage fermentation butyric type of fermentation was more pronounced in tropical elephant grass compared to the temperate Italian ryegrass, FJLB additive revealed a better silage fermentation products in both species.

Physicochemical Characteristics of Bamboo Smoke Distillates Processed by Mechanical Steel Kiln and Traditional Earth Kiln (기계식 탄화로와 재래식 토요를 이용하여 제조한 죽초액의 이화학적 특성: 식품처리제로서의 특성)

  • Fresh bamboo (Phyllostachys bambuoides sieb. et zucc.) was charred at the mechanical steel kiln and traditional earth kiln with subsequent condensation of its smoke to 10$0^{\circ}C$. It was settled down for 12 months to remove tar components and then the middle layer of the liquid was collected as a bamboo smoke distillates to analyze its chemical composition and physicochemical characteristics for use as food additives or processing aids. The gravity, transmittance, reflectivity, and viscosity were 1.008, 89.05%, 1.36%, and 12.48 cp in the bamboo smoke distillates processed by mechanical steel kiln (MBSD) and 1.012, 98.33%, 1.34% and 9.05 cp in the bamboo smoke distillates by traditional earth kiln (TBSD), respectively. The color of TSBD was brighter than that of MBSD. The pH and titratable acidity, tar and remains were 3.55 and 2.830%, 2.803% and 0.671%, respectively, in the MBSD and 2.93 and 3.470%, 0.051% and 0.004%, respectively, in the TBSD. The major phenolic compounds of bamboo smoke distillates (BSD) were phenol, Ο-cresol, p-cresol, and guaiacol and the major organic acids were acetic acid, propionic acid, iso-butyric acid, and n-butyric acid, and major alcohols were methanol, furfuryl alcohol, and maltol. The contents of phenolic compound and alcohol were more in MBSD than in TBSD whereas the content of organic acid was more in TBSD than in MBSD. Therefore, toxic compounds for the human body, such as methanol from BSD should be removed for use as a food ingredient in the future.

  • DL-1-aminoethylphosphonic acid(1-AEP) and DL-1-aminopropylphosphonic acid(1-APP) were synthesized from the propionic acid and butyric acid respectively using the modified cutius degradation. The following unreported derivatives containing peptide linkage were synthesized: N-phthalylglycyl-1-AEP, N-phthalyl-dl-alanyl-1-AEP, N-phthalyl-dl-phenylalanyl-1-AEP, N-phthalylglycyl-1-APP, N-tosylglycyl-1-AEP and N-tosyl-dl-alanyl-1-AEP These compounds were characterized and identified by means of elemental analysis, potentiometric titration, infrared spectroscopy and ninhydrin test.

Changes of Organic Acids and Volatile Flavor Compounds in Kimchis Fermented with Different Ingredients (재료의 종류에 따른 김치의 유기산 및 휘발성 향미 성분의 변화)

  • The changes of the content of organic acids, carbon dioxide, alcohols and carbonyl compounds of the various Kimchis which were made of cabbage with green onion, garlic, ginger or red pepper and fermented at $12^{\circ}C-16^{\circ}C$ were investigated. Nonvolatile organic acids identified were lactic, succinic, fumaric and malic acid. Volatile organic acids identified were acetic, formic, propionic, butyric, valeric, n-caproic and n-heptanoic acid. Carbonyl compounds identified were acetaldehyde and acetone. The content of lactic acid was increased with fermentation, and higher in Kimchis containing red pepper, garlic and green onion. The content of acetic acid was increased with fermentation, especially in Kimchi containing garlic. The content of carbon dioxide was higher in Kimchi containing garlic. Alcohols identified in all Kimchis was only ethanol. Carbonyl compounds had no direct effect on off-flavor of Kimchi.

Antioxidant Activity and Functional Component Analysis of Korean Mountain Ginseng's Different Sections (장뇌삼 부위별 기능성 성분분석과 항산화활성)

  • This study was conducted to investigate antioxidant activity and functional component analysis in different sections of Korean mountain ginseng (seed, leaf, stem and root). The major free amino acids were arginine, proline, $\gamma-amino-n-butyric$ acid, alanine and aspartic acid, and proline showed the highest content 22.98 mg/g in 80% MeOH extract of seed. Contents of $\gamma-amino-n-butyric$ acid and alanine were the highest in 80% MeOH extract of leaf, with 26.04 mg/g and 13.07 mg/g. Aspartic acid showed the highest content 23.42 mg/g in 80% MeOH extract of leaf. The major fatty acids were identified as palmitic acid, oleic acid and linoleic acid by GC. Content of total phenolic compounds were 737 mg% in 80% EtOH extract of seed, and 560 mg% in 80% MeOH extract of seed. The highest contents of ferulic acid and salicylic acid were $875{\mu}g/g\;and\;78{\mu}g/g$ in 80% MeOH extract of leaf, and $\rho-coumaric$ acid was $181{\mu}g/g$ in 80% MeOH extract of stem, respectively. The highest contents of ginsenoside-Rg1, Re, Rd and Rc were $14.5{\mu}g/g,\;48.78{\mu}g/g,\;27.57{\mu}g/g\;and\;4.87{\mu}g/g$ in 80% MeOH extract of leaf, respectively. Antioxidant activities by DPPH were 83.82% in water extract of leaf, 89.74% in 80% EtOH extract of leaf and 88.37% in 80% MeOH extract of leaf, and 92.81% in BHA (200 ppm). These results suggest that Korean mountain ginseng is very important as functional food material.

Improved performance of n-type organic field-effect transistor with a non-conjugated polyelectrolyte layer

  • We characterized the n-type organic field-effect transistors (OFETs) with non-conjugated polyelectrolytes (NPEs) interlayers as the electron injection layer. Novel NPEs with various ions (Cl-, Br-, I-) improved the electron mobility from $5.06{\times}10^{-3}$ to $2.10{\times}10^{-2}cm^2V^{-1}s^{-1}$ in OFETs based [6,6]-Phenyl-$C_{61}$-butyric acid methyl ester (PCBM) when $PEIEH^+I^-$ spin-cast from 0.6% solution was deposited onto the PCBM layer. Reduced electron injection barrier (${\phi}_e$) at NPE/metal electrode interface was induced by dipole formation and led to increase the electron injection and transport. These findings are important for understanding how NPEs function in devices, the improvement of device performance, and the design of new materials for use in optoelectronic devices.

  • 매실의 향기성분은 50여종 중 알콜류가 benzyl alcohol, linalool, 1,6-octadien-3-ol, n-haxanol 등 10종, aldehyde류가 2-hexenal, benzaldehyde, n-hexanal 등 3종, acid류가 butandeionic acid, acetic acid, 2종, 2-iodo-hexane 등 hydrocarbon류가 5종, butanedioic acid-diethyl estet를 포함한 ester류가 3종, B-ionone을 포함한 ketone류가 3종 그리고 기타 성분이 2종이었다. 매실이 성숙함에 따라 향기성분의 수가 증가하고 그 함량도 증가하는 경향이었다. 매실의 비휘발성 유기산의 조성은 succinic, fumaric, oxalic, malic, tartaric 및 citric acid이었다. 매실이 비휘발성 유기산은 성숙 초기에는 malic acid와 oxalic acid의 함량이 높았다. Citric acid의 함량이 증가한 반면에 대부분의 유기산은 감소하는 경향이었다. 휘발성 유기산은 성숙중에 formic acid함량은 감소하고 butyric acid의 함량은 증가하는 경향이었다. 총 유기산의 함량은 매실 성숙에 현저히 감소하는 경향이었다.

Effects Of the Inoculation Of Candida rugosa CY-10 OH the Reducing Odours in Pig Slurry Medium (Candida rugosa CY-10의 접종에 따른 돈분배양액내 악취저감 효과에 관한 연구)

  • This study was carried out to isolate and identify the yeasts from the the composts, which were effective to reduce odor of the pig feces, and to investigate their physiological properties. In yeasts, one of 30 isolates was obtained on 10% pig feces extract medium. Judging from the morphological and biochemical characteristics, the CY-10 isolated from the compost were identified as Candida rugosa. This isolated strain showed the deodorizing activity by reducing the concentration of $NH_3$ and R-$NH_2$ than that of the control. The CY-10 had completely utilizing butyric acid and iso-butyric acid including 10% pig slurry of the volatile fatty acids, which are the specific malodorous agents of pig feces. Compared to control, this yeast was found effective for decrease in $NH_4$-N, Soluble-N and BOD, 20%, 12.6%, and 9.82% respectively.

Alcohols and Volatile Organic Acids as Stimulants of Rhizomorph Production by Armillaria mellea (알코올 및 휘발성 유기산류가 뽕나무버섯의 균사속 생산에 미치는 영향)

  • To investigate symbiotic relationship of 'Chunma (Gastrodia elata) and the rhizomorph of Armillaria mellea, volatile organic acids and alcoholic compounds which were considered to be contained in Gastrodia elata were tested to determine stimulatory effects on rhizomorph growth on a chemically defined medium. Also, volatile organic acids were isolated from Gastrodia elata and analyzed by gas chromatography. The growth of rhizomorph was stimulated by the presence of alcohols and volatile organic acids, but acetic acid and methanol were ineffective. In the presence of valeric acid and ethanol, Armillaria mellea produced abundant rhizomorph at concentrations of 0.1 and 1%, respectively. Ethanol and valeric acid supplemented at regular intervals of 3 days as lower concentrations in the medium stimulated the growth of Armillaria mellea. The concentrations of ethanol and valeric acid as low at 0.01% added 3 days intervals for 15 days were more effective than initial concentrations of 0.1 and 1% in stimulating rhizomorph development of Armillaria mellea. Eight kinds of volatile organic acids were identified and quantified by gas chromatography. The major compounds were n-propionic, valeric, iso-carproic and caproic acids, and the minor compounds were iso-butyric, butyric, iso-valeric and hepatanoic acids. Valeric acid was the most abundant among them.
