Effects of Different Oils on the Production Performances and Polyunsaturated Fatty Acids and Cholesterol Level of Yolk in Hens

  • In order to understand the effects of different oils on the production performances and polyunsaturated fatty acids and cholesterol level in the yolk. 160 Hexices hens at 42 wks were divided into four groups randomly. Each group fed with control diet (CG), control diet+5% fish oil (FG), control diet+5% palm oil (PG) and control diet+5% soybean oil (SG), respectively. After three weeks' experiment, the results showed that: different oils showed no significant effect on feed/egg weight, egg white weight, body weight, C16, C18:3 n-6 and C20:4 n-6 contents in the yolk (p>0.05). But the egg mass of PG was higher than SG (p<0.05), the average egg weight of CG was lower than FG (p<0.05), and the of PG was lower than FG (p<0.05), during the experiment, FG gained more than SG (p<0.05), the cholesterol level in yolk of FG was lower than PG and CG (p<0.01), meanwhile the C20:5 n-3 content of FG was higher than CG and SG (p<0.01), and no C20:5 n-3 was detected in PF, as far as C22:6 n-3 in the yolk was concerned, FG was higher than PG (p<0.01), the C18:1 n-9 content of SG was lower than PG (p<0.05), the C18:2 n-6 content of SG was the highest than other three groups (p<0.01), and CG was the lowest, showed significant to FG (p<0.05), the C18:3 n-3 content of FG was higher than SG and PG (p<0.05), and the C20:1 n-9 content of FG was higher than other groups (p<0.01). The results demonstrated that fish oil could decrease the cholesterol and increase the n-3 fatty acids content in the yolk, and increase the n-3/n-6 level.

저온 진공 건조기를 이용하여 건조된 고등어의 투여가 마우스 혈청과 조직의 지질 및 지방산 조성에 미치는 영향 (Effect of Low Temperature Vacuum Dried Mackerel Intake on Lipid Profiles and Fatty Acid Compositions in Serum, Heart, Kidney and Adipose Tissue in Mice)

  • 본 연구에서는 기존의 열풍건조기계의 단점을 보완하고 높은 온도에 의한 영양소 손실을 막기 위하여 저온 진공 건조기를 도입하여 고등어를 건조 시킨 후 마우스에 섭취시켜 고등어에 의한 혈청, 심장, 신장 및 지방조직에서의 지방산 조성 변화와 지질대사 개선효과를 알아보고자 하였다. 고등어군의 혈청, 심장 및 신장 균질물에서 중성지질, 총 콜레스테롤 및 LDL-콜레스테롤의 함량이 대조군(control)보다 낮은 경향이었으며 HDL-콜레스테롤 함량의 경우 고등어군의 혈청과 심장 균질물에서 대조군(control)보다 높은 경향을 나타내었다. 혈청 지방산 조성의 경우, 고등어군의 총 n-6 지방산 함량은 대조군(control)보다 감소한 반면 총 n-3 지방산의 함량은 고등어군에서 대조군(control)보다 증가하였다. N-3 계열 지방산 중에서 특히 22:6n-3의 함량은 대조군(control)에 비해 185% 증가하였다(p<0.05). 심장의 지방산 조성의 경우, 고등어군의 총 monounsaturated 지방산의 함량에서는 대조군(control)에 비해 유의적으로 감소하였다(p<0.05). 총 n-6 지방산은 유의적 차이는 없었으나, 총 n-3 지방산은 대조군(control)에 비해 증가하였고 그 중에서 22:5n-3와 22:6n-3의 함량은 고등어군에서 대조군(control)보다 증가하였다(p<0.05). 신장의 지방산 조성의 경우, 총 지방산 함량은 고등어군에서 대조군(control)보다 감소하였고 총 n-3 지방산의 함량은 대조군(control)에 비해 고등어군에서 증가하였으며 그 중에서 22:6n-3의 함량은 105%로 증가하였다(p<0.05). 지방조직의 지방산 조성의 경우, 총 monounsaturated 지방산의 함량은 고등어군에서 대조군(control)보다 증가하였고 고등어군의 총 n-6 지방산의 함량은 대조군(control)보다 감소하였으나(p<0.05), 총 n-3 지방산들 중 DHA 함량은 고등어군에서 매우 높은 수치를 나타내었다. 이상의 결과로부터 n-3 지방산을 많이 함유한 건조 고등어 식이는 혈청, 심장 및 신장의 n-3 지방산의 함량을 증가시켰으며 이렇게 증가된 n-3 지방산은 각 조직의 중성지질, 총콜레스테롤 및 LDL-콜레스테롤 농도의 감소와 HDL-콜레스테롤 농도의 증가 경향과 밀접한 관련이 있는 것으로 여겨지며 향후 n-3 지방산의 급원으로 건조 고등어의 활용도가 기대된다.

Studies on Intake and Serum Concentrations of Fatty Acids in Korean Adolescents

  • In this study, we evaluated the dietary fatty-acid pattern and serum fatty-acid composition of middle school students (total, 355 ; male, 182 ; female, 173), who are vulnerable to excessive and unbalanced food intakes such as fatty acids and energy. In serum lipid levels, total Chol (p<0.05) and HDL-Chol (p<0.001) levels of female students were significantly higher than those of mal, students. The average fat intake was 23-26 energy % which falls in with the current recommendation level (15-25%) for adults. Although the average P/M/S ratio of dietary fat was 1.1/1.2/1.0 which approaches the recommended ratio, the average range of $\omega$6/$\omega$3 fatty acid ratio of dietary fat was found to be 12.0-16.5, which is higher than the presently recommended range of 4 -10. Some of the very high values found in this study were partly explained by the fact that the range of individual variation of $\omega$6/$\omega$3 ratios was very large. Mean daily intake of Chol was 357-361 mg. The n3 fatty acid intake of middle school students was higher in the LFHM (high fish low meat) group than in the LFHM (low fish high meat) group. EPA and DHA intakes appeared to be significantly higher (p<0.01) in the HFLM group than in the LFHM group as expected. Dietary total $\omega$3 fatty acids (p<0.05) and EPA (p<0.01) were also negatively associated with serum AA($\omega$6) levels. Interestingly, energy intakes and dietary SEAs such as 12 : 0 (p<0.05), 14 : 0 (p<0.01) and 16 : 0 (p<0.05) were negatively associated with serum AA ($\omega$6) levels. To lower the $\omega$6/$\omega$3 ratio of dietary fatty acids for children, frequent consumption of $\omega$3 series fatty-acid rich foods such as soy bean, bean products and fish is recommended. Detailed guidelines should be developed in recommending balanced food intake and qualitative fat intake for Korean adolescents taking heterogeneous groups into consideration. In accurately evaluating fatty acid intake, it is also necessary to have the fatty acid composition data of all foods consumed in each country.

  • This study was conducted to investigate the contents of dietary fiber (DF), compositions of fatty acids in lipid fraction and amino acids in salt-soluble protein from the functional food source such as Platycodi radix, perilla seed, evening primrose seed and aloe vera. The contents of dietary fiber, neutral detergent fiber (N.D.F) , acid detergent fiber( A.D.F) . kignin, hemicellulose an dcellulose in evening primorse seed were higher than those of other samples, except the content of cellulose .The ration of polyunsaturated /saturated (P/S) fatty acid in total lipids was 6.31 in perilla seed, which was higher than those of other samples. The content of linolenic acid (n-3) in perilla seed was 55.47%. The content of linoleic acid (n-6) in evening primrose seed was 71.88% , which was higher than those of other samples. The fatty acid composition in neutral lipids were the same as those of total lipids. The PUFA contents of fatty acid in glycolipids were 61.76% in perilla seed. And also, the ratio of n-6/n-3 in evening primrose seed was 15.19. The fatty acid compositions in phospholipids were the sameas those of glycolipids. The contents of PUFA in Platycodi radix were 62.96% . The essential amino acid contents of salt-soluble protein were 47 mole % in Platycodi radix , which was slightly higher than those other samples. The ration of essential amino acid /nonessential amino acid (E/N) was 0.9 and 0.66 in Platycodi radix and aloe vera, respectively.

비막치어(Dissostichus eleginoides) 근육 및 간의 식품성분 (Food Components of the Muscle and Liver of Patagonian Toothfish Dissostichus eleginoides)

  • Proximate compositions, fatty acid profiles, and total amino acid compositions of the muscle and liver of Patagonian toothfish Dissostichus eleginoides were studied. Lipid contents of the muscle and liver of the fish were 22.3% and 35.3%, respectively. Protein content was higher in the fish muscle (12.8%) than in the liver (8.7%). Moisture content was also higher in the muscle (63.6%) than in the liver (49.8%). The prominent fatty acids in the total lipids of the fish muscle and liver were 18:1n-9, 16:0, 20:1n-9, 16:1n-7, 22:6n-3 (docosahexaenoic acid, DHA), 18:1n-7, 22:1n-11, 18:0, and 20:5n-3 (eicosapentaenoic acid, EPA). The fish muscle and liver contained approximately 1,000 to 2,500 mg of DHA and 400 to 600 mg of EPA per 100 g of tissue. Therefore, the fish muscle and liver are good sources of n-3 polyunsaturated fatty acids. On the other hand, the total amino acid content of the fish was 11.7 g/100 g muscle and 6.53 g/100 g liver. The prominent total amino acids profiles in the fish muscle and liver were glutamic acid, lysine, aspartic acid, leucine, and alanine, which are similar to those in other fishes.

지방산 조성이 다른 식이 지방이 흰쥐 간 미토콘드리아의 지질조성과 Adenine Nucleotide Translocase 활성도에 미치는 영향 (Effects of Different Dietary Oils on Hepatic Mitochnodial Lipid Composition and Adenine Nucleotide Translocase Activity in Rat)

  • This study was done to investigate whether dietary fats differing in their fatty acid compositions change hepatic mitochondrial lipid composition and thereby change adenine nucleotide translocase activity. Male Sprague-Dawley rats were fed 5 different wxperimental diets for 6 weeks, which were different in their fatty acid compositions. The dietary fats were beef tallow(BT), olive oil(OO), corn oil(CO), perilla oil(PO) and sardine oil(SO) as a source of saturated fatty acid, oleic acid, n-6 linoleic acid, n-3 $\alpha$-linolenic acid and n-3 eiocosapentaenoic acid+docosahexaenoic acid respectively. Body weight of PO group was significantly higher than that of either BT or SO group. This increase in body weight of PO group was due to the increase of food intake. Although there was no difference in liver weight, % liver weight per body weight of SO group was significantly higher than BT and OO groups. Analysis of mitochondrial lipid composition showed that dietary oils differing their fatty acid compositions altered mitochondrial fatty acid patterns, especially n-6/n-3 ratio, cholesterol/phospholipid ratio and phopsholipid composition. The n-6/n-3 ratio was highest in CO group but lowest in SO group whereas the ratio of Chol/PL was highest in SO group but lowest in CO group. Such changes in mitochondrial lipids did not lead to a significant alteration in the activities of adenine nucleotide translocase, which is embedded in mitochodrial inner membrane.

감마지방산 : 리뷰 (Gamma fatty acid : A review)

  • Essential fatty acids (EFA) are fatty acids that must be obtained from the diet because they can not be biosynthesized by human or animals. Gamma fatty acids contain gamma-linolenic acid (GLA, 18:3n-6) and dihomo-gamma-linolenic acid (DHGLA, 20:3n-6) as intermediate metabolites of linoleic acid (LA, 18:2n-6), which is an EFA found in vegetable oils. GLA is an important essential fatty acid that is required by human and animals to function normally. Recently, studies have indicated that GLA may be an essential component of the cell membrane, as well as an active component of dietary supplements and medicine. GLA must beadministered through the diet because it is converted into DHGLA in the body quickly and completely. DHGLA is a key material involved in the metabolism of LA. GLA is biosysthesized by the rate limiting step of ${\Deltac}^6$-desaturase, which is an enzyme that desaturates LA, there by allowing it to be converted into DHGLA via chain elongation. In addition, DHGLA exerts bioactive effects via action as a precursor of eicosanoid series 1. Breast milk contains an abundant amount of GLA; however, GLA is also available directly in evening primrose oil, black currant seed oil, borage oil and hemp seed oil. In addition, GLA enriched animal and plant can be produced using biotechnology, and highly pure GLA can be extracted using supercritical fluids, such as supercritical carbon dioxide, which will allow economically feasible production of GLA for use in medicines.

Fatty Acid Profiles of Various Muscles and Adipose Tissues from Fattening Horses in Comparison with Beef Cattle and Pigs

  • The present studies were designed to provide new information on fatty acid profiles of various muscles and adipose tissues of fattening horses in comparison with beef cattle and pigs. In the first study, the lipids were extracted respectively from subcutaneous, intermuscular adipose tissues, longissimus dorsi and biceps femoris muscles of fattening Breton horses (n = 8) with an average body weight of 1,124 kg. In the second study, the lipids were extracted from subcutaneous, intermuscular adipose tissues and longissimus dorsi muscle of fattening horses (n = 13), Japanese Black beef cattle (n = 5), Holstein steers (n = 5) and fattening pigs (n = 5). The fatty acids in the lipid samples were determined by gas chromatography after methylation by a combined base/acid methylation method. It was found that the lipids from horse subcutaneous and intermuscular adipose tissues contained more (p<0.05) polyunsaturated fatty acids (PUFA) which were mainly composed of linoleic acid (C18:2) and linolenic acid (C18:3) than those in the muscles. The weight percent of conjugated linoleic acids (CLA cis 9, trans 11) in lipids from biceps femoris muscle was 0.22%, which was higher (p<0.05) than that from the other depots. The horse lipids were higher (p<0.05) in PUFA but lower (p<0.05) in SFA and MUFA in comparison with those of the cattle and pigs. The percentage of C18:2 or C18:3 fatty acid in the horse lipids were respectively 2-8 fold or 5-18 fold higher (p<0.05) than those of the cattle and pigs. The percentages of CLA (cis 9, trans 11) in the horse lipids (0.14-0.16%) were very close to those of the pigs (0.18-0.19%) but much lower (p<0.05) than those of the Japanese Black beef cattle (0.55-0.94%) and Holstein steers (0.46-0.71%). The results indicated that the fatty acid profiles of lipids from different muscle and adipose tissues of fattening horses differed significantly. In comparison with that of the beef cattle and pigs, the horse lipids contained more C18:2 and C18:3 but less CLA.

어유의 n-3 지방산이 흰쥐의 골밀도와 골격대사지표에 미치는 영향 (Beneficial effect of fish oil on bone mineral density and biomarkers of bone metabolism in rats)

  • 본 연구는 n-3 장쇄지방산이 풍부한 어유가 골격대사에 미치는 영향을 알아보고자 이유한 Sprague-Dawley 종 흰쥐 (수컷)에게 4주 동안 FO군, FICO군, SO군의 실험식이를 공급한 후, 혈액과 뇨에서 생화학적 골격대사지표와 대퇴골의 무기질함량 및 골밀도를 측정하였다. 부갑상선호르몬, 칼시토닌, 오스테오 칼신은 세 그룹 사이에 차이를 보이지 않았으며, 뼈흡수지표인 deoxypyridinoline도 그룹 간에 차이가 없는 것으로 나타났다. 반면에 골격형성지표인 ALP의 활성은 FO군에서 SO군에 비해 유의하게 높았고, 대퇴골의 골밀도 또한 SO군에 비해 FO군에서 유의하게 높은 값을 보였다. 그러나 FICO군과 SO군 간에는 차이가 없는 것으로 나타났다. 이러한 결과로 볼 때, 본 연구에서 DHA, EPA 급원의 어유 함량이 높은 식이는 ALP활성을 높이고 골밀도를 증대시킴으로써 성장기 흰쥐의 골격형성에 보호적인 효과가 있음을 알 수 있다. 그러나 식이 n-3 장쇄지방산이 골격대사에 미치는 효과를 규정하기 위해서는 적정식이수준이나 적정 n6/n3 비율과 관련된 많은 연구가 요구되며, n-3계 내의 각 지방산이 골격에 주는 작용양상에도 차이가 있을 수 있으므로 이에 대한 다양한 연구의 병행이 필요할 것으로 본다.

Effects of dietary supplementation with a combination of plant oils on performance, meat quality and fatty acid deposition of broilers

  • Objective: This study was to evaluate effects of mixed plant oils (identified as mixed oil 1 [MO1] and mixed oil 2 [MO2]) on performance, serum composition, viscera percentages, meat quality, and fatty acid deposition of broilers. Methods: A total of 126 one-day-old Arbor Acres male broiler chicks (weighing $44.91{\pm}0.92g$) were randomly allocated to 1 of 3 treatments with 7 replicate pens per treatment (6 broilers per pen). Dietary treatments included a corn-soybean basal diet supplemented with 3% soybean oil (CTR), basal diet with 3% MO1 (a mixture of 15% corn oil, 10% coconut oil, 15% linseed oil, 20% palm oil, 15% peanut oil and 25% soybean oil; MO1), or basal diet with 3% MO2 (a combination of 50% MO1 and 50% extruded corn; MO2). The trial consisted of phase 1 (d 1 to 21) and phase 2 (d 22 to 42). Results: Compared to CTR, broilers fed MO (MO1 or MO2) had greater (p<0.05) average daily gain in phase 1, 2, and overall (d 1 to 42), redness in thigh muscle, concentrations of serum glucose, serum albumin, saturated fatty acids (SFA) and n-6/n-3 polyunsaturated fatty acids (PUFA) ratio in breast muscle, while these broilers also showed lower ($p{\leq}0.05$) drip loss and concentrations of C18:3n-3 and PUFA/SFA ratio in breast muscle. Broilers fed MO2 had higher (p<0.05) liver percentage, while broilers fed MO1 had lower ($p{\leq}0.05$) feed conversion ratio in phase 1 and increased (p<0.05) contents of C18:2n-6, C20:5n-3, C22:6n-3, and n-3 PUFA in breast muscle compared to CTR. Conclusion: Mixed plant oils had positive effects on performance, serum parameters, meat quality, liver percentage and fatty acid deposition in broilers, which indicates they can be used as better dietary energy feedstocks than soybean oil alone.
