This study attempted to examine the sensory quality, color and moisture content of Ssooksulgis added with mugworts. In sensory quality, Ssooksulgis made by 100% rice flour added with 20% Mugworts showed the most favorite characteristics. In view of color, texture, after swallowing and overall quality, 10% Mugworts Ssooksulgis was preferable than those of other Ssooksulgis added 25% glutinous rice flour. Moisture contents was not different another reports. l-value on the control group which was not added mugworts was high, 86.78, 84.42 respectively.

Ssooksulgies and Ssookjulpyuns made with different levels of mugworts were attempted to analyze the Ingredients of amino acids and amylose The contents of total free amino acids of 30% Ssoohsulgi was 25.9mg% which was four times as much as that of 0% Ssooksulgi and the ones of total free amino acids of 30% Ssookjulpyun was 39.58mg% which was eleven times as much as that of 0% Ssookjulpyun. "Suck-injulmi" is one of the Korean traditional rice cake made from glutinous rice and mugworts. The optimun conditions for the preparation of "Ssuck-injulmi" were investigated. The best recipe of "Ssuck-injulmi" was 1) adding 240 g (80%) glutinous rice flour and 60 g (20%) raw or boiled mugworts by hand milling, or boiled mugworts after steaming glutinous rice by hand milling. 2) adding 210 g (70%) glutinous rice and 90 g (30%) boiled mugworts by mechanical method. The Moisture of "Ssuck-injulmi" was 43.39%-51.33%. The Hardness of "Ssuck-injulmi" was high in the order of 54,53, 52, 51 and The Cohesiveness was 53, 54,51,52 and The Elasticity was 51,53,54,52 and The Gumminess and The Chewiness were 54, 53, 51, 52 and The Adhesiveness was 52, 53, 51, 54. The value of ′L′ was high in the 52, the value of ′a′ was 54 and the value of ′b′ was 53.
Ssooksulgis made with different levels of Mugworts were tested to investigate the texture characteristics by sensory evaluation and mechanical test in this study. As a result of the sensory evaluation for Ssooksulgis with the levels of 0%, 10%, 20%, 30% and 40% , the consistency, texture, moistness and flavor were increased according to the increase of the added Mugworts. In view of color and overall quality, 30% Ssooksulgis was preferable than those of other mixing levels. In the texturometer measurement for Ssooksulgis, hardness tend to decrease, while springiness and cohesiveness tend to increase according to the increase of the added Mugworts. As for Ssooksulgis, the consistency and moistness in sensory evaluation correlated significantly with the cohesiveness and correlated negatively with hardness, chewiness, gumminess in mechanical test (p<0.01).
The objective of this study was to investigate the biological activities of fermented mugworts and their effects on the lipid metabolism in hyperlipidemia-induced rats. The proximate compositions of two kinds of mugwort, Artemisia capillaris Thumberg and Artemisiae asiaticae Nakai, were compared before and after fermentation. In both types of mugwort crude protein and amino nitrogen contents markedly increased with fermentation. Thrombolytic activity determined from the size of the clear zone on a fibrin plate was higher for the Artemisiae asiaticae Nakai, especially in the fermented sample. Antioxidative activity according to DPPH(1,1-diphenyl-2-picrylhydrazyl) radical scavenging effects was higher for Artemisia capillaris Thumberg but no significant differences were found between the samples after fermentation. The body weights of hyperlipidemia-induced rats that were fed the mugworts for 4 weeks were lower than those of the control group. In all the mugwort-fed rats serum total cholesterol and LDL-cholesterol levels remarkably decreased. Furthermore the fermented mugworts were found to be more effective at decreasing triglyceride (TG) levels. It is also noteworthy that the highest HDL-cholesterol levels were observed in the rats treated with the fermented Artemisiae asiaticae Nakai. And fatty liver weights were higher in the rats fed Artemisia capillaris Thumberg. In conclusion the feeding of fermented Artemisiae asiaticae Nakai was effective for increasing thrombolytic activity and HDL-cholesterol levels as well as reducing TG levels in rats.
This study was attempted to analyze amino acids, fatty acids, vitamins and minerals, reducing sugars and dietary fiber of Artemisia mongolica Fischer to establish the value as an useful vegetable. Total free amino acids of mugworts plucked in spring and autumn were 1048.1 mg% and 2187.1 mg% respectively. The contents of linoleic and linolenic acids were 76.7% in spring mugworts and 69.5% in autumn ones. Mugworts gathered in spring and autumn showed 0.16 mg% and 0.15 mg% for thiamin, 1.81 mg% and 1.74 mg% for riboflavin, 5.34 mg% and 5.36 mg% for niacin and 26.12 mg% and 25.21 mg% for ascorbic acid. Mineral contents of spring and autumn mugworts were 17.8 mg% and 20.5 mg% for iron, 0.3 ppm and 0.4 ppm for selenium. The contents of reducing sugar were fructose 9.75 mg% for spring, 9.78 mg% for autumn and the contents of dietary fiber were 37.57% for spring and 38.41% for autumn.
The changes in quality properties and nutritional components for two mugworts, namely, Artemisia capillaris Thumberg Artemisiae asiaticae Nakai fermented by Bacillus strains were characterized followed by rapid pattern analysis of volatile flavor compounds through the SAW-based electronic nose sensor in the GC system. After fermentation, the pH has remarkably decreased from 6.0~6.4 to 4.6~5.1 and there has been a slight change in the total soluble solids. The L (lightness) and b (yellowness) values in the Hunter's color system significantly decreased, whilst the a (redness) value increased via fermentation. The HPLC analysis demonstrated that the total amino acids increased in quantity and the essential amino acids were higher in the A. asiaticae Nakai than in the A. capillaris Thumberg, specially with high contents of glutamic and aspartic acid. After fermentation, the monounsaturated fatty acid increased in the A. asiaticae Nakai and the polyunsaturated fatty acids increased in the A. capillaris Thumberg. While the total polyphenol contents have not been affected by fermentation, the total sugar contents have dramatically decreased. Scopoletin, which is one of the most important index components in mugworts, was highly abundant in the A. capillaris Thumberg; however, it was not detected in the A. asiaticae Nakai. Small pieces of plant tissue in the surface microstructure were found in the fermented mugworts through the use of the scanning electron microscope (SEM). Volatile flavor compounds via electronic nose showed that the intensity of several peaks has increased and additional seven flavor peaks have been produced after fermentation. The VaporPrintTM images demonstrated a notable difference in flavors between the A. asiaticae Nakai and A. capillaris Thumberg, and the fermentation enabled the mugworts to produce subtle differences in flavor.
This study examined the distinctive character and level of preference of SsookGae-Dduck which was produced with making 2, 3, 4, 5% of difference, adding 30% mugwort. In the sensory evaluation for SsookGae-Dduck, the bitterness, hardness and flavor were highly evaluated as the amount of mugwort powder was increasing. The sweetness and color showed the highest number in the adding group of 2% mugwort powder. In the being moistness degree, the 30% adding group of mugwort was the highest one, and 3% adding group in the mugwort powder. And the chewiness was highly marked in the adding group of 30% mugwort, and 5% adding group was highly marked in the mugwort powder. In the mechanical evaluation of SsookGae-Dduck, the hardness and adhesiveness were highly marked in the adding group of 5% mugwort powder, the adding group of 4% showed the highest number in the springiness, cohesiveness, gumminess and chewiness. Through these all studies, the mugwort powder should be used in the multi way of our food life and it was really necessary to be studies and to be taken interest in this area constantly.

This study was carried out to investigate changes in the compositions of fatty acids according to the different drying methods of raw mugwort. Raw mugwort from Kang-wha was dried with four methods such as sun-drying, shady sun-drying, heated oven-drying and freeze-drying. Total contents and fatty acid compositions of the ethyl ether extracts from the dried mugworts were examined. Total contents of the ethyl ether extracts showed remarkable differences with drying methods; freeze-dried mugwort had the highest content (5.60%), while oven dried mugwort revealed the lowest content (2.45%). Eleven fatty acids and four unknown peaks were identified by gas-liquid chromatography; major fatty acids were linoleic acid, linolenic acid and palmitic acid. Fatty acids of mugworts dried by 4 different methods were the same in kinds, but different in their compositions. The content of polyunsaturated fatty acids $(C_{18:2}+C_{18:3})$ was the highest and the loss of low volatile fatty acids was the least in mugwort dried by the freeze-drying method. The volatile fatty acids considerably decreased in oven-dried mugwort. However, the contents of polyunsaturated fatty acids were a little higher in oven-dried mugwort than in sun-dried and shady sun-dried mugwort, and the lowest in sun-dried mugwort.
